SNAPDRAGON APPLE, WALNUT & CHICKEN SPINACH SALAD WITH FETA & CRANBERRY With its bright color, snappy texture and bursting flavor, SnapDragon Apples are sure to be a crowd-pleasers and this flavor packed salad will be a sure favorite for the whole family! YIELD: 4 SERVINGS PREP TIME: 20 MINUTES SALAD 10 oz baby spinach 3 SnapDragon apples, thinly sliced 1 cup chopped walnuts 4 oz feta cheese, crumbled 1/2 cup dried cranberries 1 lb. chicken tenders, grilled DRESSING 1 small red onion, sliced in thin strips 1/2 cup olive oil 2 tsp apple cider vinegar 4 tsp balsamic vinegar salt and pepper to taste

DIRECTIONS In a large serving bowl, combine spinach, apples, walnuts, feta and cranberries. Set aside. In a grill pan, over medium heat, cook chicken fully and until grill marks form. Once chicken is cooked, grill sliced onions until soft and slightly caramelized. Top salad with chicken and onions.
