Dear Readers, After the briefest spring, the onset of summer is upon us this month. But before you start packing your woollens away with a sigh, there’s still hope if you want to catch the fading vestiges of winter by it’s coattails before it disappears altogether: we propose a quick trip to quaint Naukuchiatal in Kumaon where cool breezes are still blowing and mist still fogs up the windows every morning. In our India Traveller section we also look at another rare destination which is equally untouched by commercial development – the plateau of Matheran in the Western Ghats. In World Traveller, we take a quick dekko at neighbouring Mauritius which is going all out to woo the high-spending Indian traveller. The tropical island atoll has always been a popular honeymooner’s destination, but it’s worth considering as a family destination as well: check out some of the great travel and accommodation deals this summer. On the Luxury front, we pay a visit to the fantastic Aamby Valley which is a couple of hour’s drive from Mumbai. India’s first planned luxury township, Aamby Valley has become a popular getaway for the well-heeled and the rich and famous, and with good reason. With its own lake, championship golf course, and top-of-the-line condos and villas it makes quite an impression. Also in Luxury Travel are the exotic spas which Royal Caribbean’s Celebrity Cruises have launched on their Solstice Class ships. Luxury is one of the segments which is growing in India relatively unaffected by economic ups and downs. And that was evident by the good response we got at the GO NOW Luxury Travel Show last month at Delhi’s Ambience Mall: our participants, which included top hotels, spas, tourism boards and airlines, and travel companies, generated a fair bit of interest. Locally, our Living It Up section continues to rove through the Delhi we love (and love to hate!). This month we chat up Chef Saby – the celebrated gourmand at the city’s favourite Mediterranean restaurant, Olive Bar & Kitchen; discover a value-for-money gem in the unlikeliest of places – the Uber Lounge at GK2’s swishy M Block market; and find an all-night fine dining restaurant – India Grill. An interesting development has been the emergence of new venues which specifically target the wedding market. We pay a visit to the Regenta Hotel & Convention Centre on NH-8 which offers the whole deal – venue, catering, wedding planners, accommodation options and the like. The same facilities are offered by the Westin Sohna Resort & Spa although it would be unfair to put it in the same bracket. The resort, just an hour’s drive from Gurgaon, is a fantastic retreat in the true sense of the word with various outdoor activities, plush suites, spa and restaurants to boot. As a weekend getaway from Delhi, the resort is in a league of its own when it comes to facilities, accessibility, and most of all, its laidback, far-from-the-caresof-the world atmosphere. f you are a movie buff who also loves the mountains, its time to plan a trip to Lada kh. Preparations for the first ever Ladakh International Film Festival (LIFF) are well underway and it is time for you to start planning as well! LIFF (chaired by Shyam Benegal) celebrates cinema and the event aims to be a ‘melting pot for cross cultural cinematic experience to be cherished’. It is also the first ever ‘green’ international film festival in India and is already being promoted as the highest altitude film festival of the world at 13,500 ft above sea level. Schan – The Snow Leopard – is the mascot of LIFF. There are four sections under which the films will be screened – International (world cinema) section, Indian section, Competition section and Ladakh section. There will also be a Jury Grand Prize for the Best Film Entry. The festival is set to attract artists, directors, screenwriters, cinematographers, critics and film buffs from around the country. he United Way Miami Wine & Food Festival – four days of utter gastro nomic indulgence and delight – is here with craft beer, fine wine tastings and delectable dinners. It’s not all about gluttony: the festival also supports a cause with all the proceeds going to United Way of Miami-Dade (which supports more than 120 education, financial stability and health programs). Presented by American Express, the festival will open with the ‘Brews & Bites Craft Beer Tasting’: 50 craft beers and micro brews will be served at numerous tasting stations – reason enough to draw in throngs of visitors to get the fest started. The next day is dedicated to wine tasting. ‘Taste & Toast Fine Wine Tasting’ will bring over 65 wine producers and importers
together to display over 200 wines from across the globe. It will also serve as a forum where wine lovers get to taste select wines and interact with wine producers. ‘Food, Friends & Fun’ – an interactive dinner is next on the agenda with Bravo’s Top Chef Season 7 winner – Chef Kevin Sbraga – overseeing proceedings as visitors team up to cook dinner under his tutelage. Johnson & Wales culinary students will serve as Sous Chefs. The highlight of the festival, the grand finale will be an event called ‘Cellar-bration’ – good food and award-winning wines. GETTING THERE New Orleans is a major US port and metropolitan city in the state of Louisiana. The average flying duration is 20 to 33 hours (all flights have one to two stopovers). THE GRAND BAZAAR One of the largest and oldest covered market in the world, the Grand Bazaar in Istanbul has over 5,000 shops that sell hand-painted ceramics, jewellery, embroideries, spices, antiques and the ever popular Turkish hand-woven carpets.
T
he mere mention of Istanbul evokes an array of images even to people who’ve never been to the Turkish Capital. An ancient city which was once the Capital of the powerful Ottoman empire; old dhows trawling the waters of the Bosporus river; rooftop cafes lining the riverside and hamams (Turkish baths) around every corner; a maze of streets with hawkers and shop houses selling trinkets and antiques. Clichéd as they may be, most of these impressions are surprisingly accurate. Especially when it comes to the street bazaar The Grand Bazaar or Kapalcarsi is quite a sight to behold with no less than 60 streets abuzz with people speaking a smattering of languages. The 5000-shop walled bazaar sells pretty much everything the 2,70,000 people who throng it every day would ever need. With two mosques, four fountains, two hamams, and a large number of cafés and
restaurants, it qualifies as a mini-city in itself. The Grand Bazaar has had a significant role to play in the local economy for the past several centuries. Since 1461, to be exact, the bazaar has served as an important trading centre and continues to support international business. Prominent hubs in the bazaar include two ‘Bedestens’ (domed buildings). The central high domed hall of the Cevahir Bedesten is the older of the two (constructed in the 15th century by the order of Mehmed the Conqueror) and is known as the Old Bazaar. The Old bazaar sells precious stones, jewellery and valuable antiques. To bring a little order to chaos, many stalls have been grouped on the basis of what they sell like leather, carpets, and jewellery. While it’s likely that you’ll lose your way in the heart of the bazaar, finding your way back is a journey of discovery on its own
as you’ll encounter shops which you may not have otherwise been able to see. It is interesting to see how the Grand Bazaar actually became grand. What started with a small ‘Bedesten’ went on to become a huge shopping complex as more and more neighbouring merchants followed suit and covered their stalls. In no time the bazaar became a convenient hub to conduct business. Interestingly, the bazaar has suffered fire and earthquake damages multiple times over the centuries but has always bounced back after restoration and renovation. A day spent at the Grand Bazaar will involve tiresome haggling with shopkeepers, endless bouts of walking, and you’ll surely get lost. But at the end of the day you’ll come away with a unique experience of old-world Istanbul – a rare peek into the living history of a fascinating medieval city. by AARUSHI GUPTA

EXPERTSPEAK PAUL ROLL Paris is one of the world’s first cities in the tourism business. How do you make something which is already great even better? The state-authorities and the industry, not to forget – the people of this great city, have not only kept it alive, but have repeatedly re-invented and innovated to keep a constant buzz for the visiting traveller in the city. GO NOW caught up with Paul Roll – Managing Director, Paris Convention and Visitors Bureau, for a brief insight into how tourism in Paris is being promoted. Has there been any significant shift in the target audience for tourists as far as Paris is concerned? 2004 was the turning point in the history of tourism into Paris. We started looking beyond our traditional markets, and started looking at emerging economies. Our mainstay till then had been USA, UK, and parts of Europe like Germany and others. In 2004, we received two million US visitors and today we receive 1.8 million. But these numbers are increasingly being sustained by new markets, among them being China and India. How do you virtually keep the buzz going? The process continues. Tapping new markets is an ongoing process. Our list of top-10 markets still includes US and UK but it also now has China and India. Today we get a heady mix of first-timers and also repeat visitors. These call for us to adapt and adopt new trade and employee policies. We have changed our shopping and market timings. We stay open till later and have improvised new shifts for labour. Many great cities have a tendency to lure the traveller but that is where the buck stops. In London and also in New Delhi, the problem is always the challenge on how to distribute the traveller beyond? Going beyond Paris is always the endeavour. It also depends upon first-timers and repeat customers. As the markets mature, we find tourists going into the interiors. Depends also upon road and coach tourists – they tend to take in more of the countryside automatically. Those who enter by air, there is this challenge. How is the process developing? Are you succeeding? Generally we are getting tourists for two cities, even to start with. Indians are travelling more by train within France. Only a few take self-drive tours. We find the Indian tourists generally getting more adventurous and tak-
ing onto newer pursuits while in France. What is the profile of the Indian traveller coming to France? Profiling the Indian traveller is never easy, but they appear chilled and wise, and not loud at all. They tend to melt into a crowd. We have a good experience with them. France is getting popular by the day with Indian tourists. English is increasingly being understood and spoken through France. How are the numbers growing? Tourism is growing in double digits and Indians are among the higher growth markets. We find the mix of groups versus FITs also growing in terms of the latter, showing a maturing of the market. What do you make for tourism as an industry? How important is tourism for the city? Keeping Paris going for tourism is always our ongoing adventure. Without tourism, Paris may become a dead city. We have a motto for ourselves where the ongoing effort is to ensure that the city becomes more and more pleasant all the time for the locals. We believe that when the city, or any city for that matter, becomes more liveable for its own people, it will become a better place automatically for the tourists. It is the urban change that matters, where the effort is always to minimise, or remove perhaps, the ill effects of urbanisation or industrialisation. Like getting the city to become greener, reduce noise pollution, get more people to use city transport and have fewer cars on the road. We find in Paris there are more super markets where people like to go, instead of going to the large departmental stores all the time. Our subways and local shopping, and even the trains, run later now than they did ten years ago. Life is certainly pleasanter for the locals, and I should imagine also for the tourist. interviewed by NAVIN BERRY

They are always on time and the hostesses and pursers are always well turned out: Indigo’s reputation for punctuality and service is well deserved and now they're counting on it to bring them more business as the airline introduced new daily flights last month. Connecting the southern states, Indigo now operates
direct daily flights from Chennai to Visakhapatnam, Bhubaneswar to Visakhapatnam, Kolkata to Visakhapatnam (via Bhubaneswar) and Kolkata to Bhubaneswar. In the northern states, new direct flights have been launched on the Mumbai – Srinagar – Mumbai route. A

tuck somewhere on the evolutionary arrow between a hamlet and a town, Naukuchiatal is a place which you’re not likely to chance upon while travelling through the Kumaon hills. In fact, even the deluge of tourists which hits the Kumaon hills every year largely bypasses the town, heading instead for Nainital. It’s not as popular as it’s more vaunted neighbour for predictable reasons: Naukuchiatal has neither views of snow-capped peaks, nor the urban facilities of Nainital (or Ranikhet and Almora). It’s this relative isolation that gives the town its quaint charm, unspoilt air and

astonishing bio-diversity. Set in a verdant valley at 1218 metres and centring around a big lake (Naukuchiatal literally translates into a lake with nine corners) the town is truly far from the madding crowds. Travellers can paddle or swim about the lake, wander through the small villages on the hills on its periphery, trek about, go birding, angling and paragliding.
A BRIEF HISTORY Naukuchiatal’s history is deeply interwoven with Hindu mythology and the town finds a mention in the ancient Hindu texts – the
Puranas. Not surprisingly it was the Brahmins who were the original settlers in Naukuchiatal. Naukuchiatal came under Nepalese Gorkha rule in the 17th century until the British helped the Kumaonis overthrow the Gorkhas in 1815.

Café Orchid Fabulous location overlooking the lake and the best breakfast in town. Café Orchid at the Lake resort is a short walk along the periphery of the lake from the main dock. Opt for the Continental/ American breakfast but stick to the Indian dishes if you land up for lunch or dinner. Try the Black Pepper chicken and the fish curry but avoid anything from the Oriental menu. The restaurant doesn’t serve alcohol but you’re free to get your own. Midway Bar More of a tavern, this once-decrepit bar was recently remodelled and now wears a thin veneer of respectability. PLACES TO SEE Karkotak Peak Viewpoint: By far the best excursion in town if you’re looking for some exercise and breathtaking views. Karkotak is the name of the highest peak (1937mts) in the area and is accessible by a two hour walk from just past the Bhimtal bus stand. The walk winds through untouched traditional villages and breathtaking scenery. From the viewpoint at the top you’ll get sweeping views of Nainital, Bhimtal, Naukuchiatal and surrounding areas. The only time you shouldn’t attempt this is during the rainy season (JulySep) when leeches take over the trail. Good walking shoes are recommended. Ram Temple: The only reason this temple finds its way here is because you can’t miss it
and it’s certain to pique your curiosity. Although named after the Hindu God Rama, the most distinctive feature of this temple, located right on the Naukuchiatal road, is a massive statue of the Hindu God Hanuman. There’s also a pipe which has been modelled after an underground cave to take you into the temple premises. However the prayer ceremonies (5.30am and 6.30pm) are worth attending to get an insight into local rites. Naukuchiatal: It wouldn’t be an overstatement to say that there would be no town here if the lake did not exist. The cleanest, deepest lake in Kumaon – Naukuchiatal is also the prettiest. Nestled in a valley and surrounded by wooded slopes thick with oak and pine forests (and hardly any people) the spring-fed lake is ideal for travellers looking for a break from the rigours of travel. There’s ample scope for angling, paddling, swimming and bird-watching (the lake attracts scores of migratory birds during the winter).
factfile GETTING AROUND Whether you want to circumnavigate the lake (3.5 km) or explore the surrounding hills – you’ll find it most interesting on foot. Just as well because there’s no public transport to speak of except for a couple of buses that come in twice a day (see Getting There & Away). There’s no car rental either but you can hire a private taxi for the day (Rs 800) – shorter rides within the area will cost anywhere from Rs100-300. H
ere, yesterday is today as it will be tomorrow. Matheran’s charm is that it really is a once-upon-atime place. Even the hoteliers have respected its unique ambience. Our old friend Francis Wacziarg’s organisation, the path-breaking Neemrana Hotels, has the elegant Verandah in the Forest and an old Parsi family runs the delightfully Edwardian, cottagey, Lord’s Hotel which is just an amble away from the main street of the town. Incredibly, there are no cars, buses, taxis, coaches or vehicles using internal combustion engines. So we take it easy: walk, stroll, ramble, get lost in the woods. There are plenty of winding, forested, roads with little paths meandering through the trees, plenty of shady, secluded, places to dream your dreams away and forget the hurrying world far below. Even journeying up to this little hill-station in Maharashtra is, for us, a slow, pause-movepause, experience. We chug in on a little hill train that chuffs up a really narrow track winding up the mountains and terminates at a tiny station in the heart of the hill-station. On our first visit,
when the, so-called, ‘toy-train’ had deposited us at the end of its slow and strenuous climb , we stepped across the tracks and looked at its first mini-engine. It’s now been installed on a pedestal, like the aggressive statue of a bantam-weight prize fighter. Sometimes it’s sent away to be spruced up so that it continues to look as tough as it must have been in its heyday when it hauled freight and passengers up the steep heights of the Western Ghats. This is a major success story. The Brits gave up trying to build a rail-link to Matheran. The challenge was accepted by the doughty Adamjee Peerbhoys. They succeeded in creating this miracle of railway engineering that has now become an ageless testimony to Indian skill and determination. Sadly, the plaque commemorating this amazing achievement, and the photographs of the doughty Peerbhoys, was covered in dust . Even the railway staff seem to have been caught up in the relaxed atmosphere of Matheran! The little town, just outside the station, is still very Victorian-era-ish. Matheran has not changed much since the wooded 1800’s. In
1850, the Collector of Thane District, Hugh Mallet, rode up here and was enchanted. Thanks to his encouragement, roads were made, cottages built by rich Brits and Parsis seeking to escape the muggy heat of Bombay. In 1907, the Governor proudly opened the mountain railway. Matheran had arrived on Bombay’s getaway social scene. Thanks, however, to these far-sightedness and influential settlers, Matheran never became a noisy, tinsel, town. Its main street is still a happily dusty place with drifting groups of tourists, horses, rickshaws and shops like the Nariman Chikki Mart which also sells honey. Then there are the vendors of genuine, hand-made, leisure footwear ranging all the way from chappals and sandals to ... naturally... chappals and sandals. If you wear Oxfords and heels in Matheran you’re too uptight. Chill out, as we always so, unwind and set your heartbeat to the long, slow, relaxed cadence of Matheran. You’ll find yourself listening to birdsong, thrilling to the sound of the wind whispering through the trees, catching the really meaningful, lilting, cadences in your companion’s voice: they

say much more than words do. If you can hear.. really hear .. the emotion behind the words you’ll find yourselves responding in ways that you can’t discover in the rasping, raw, edges of the workaday world. In fact, it’s so far from the honking, blinking, concrete-canyon metro world that its major attractions are still the horizon-stretching ‘lookout points.’ Self-proclaimed ‘guides’, bristling with enthusiasm, still offered to show us all the ‘Points’: places with impressive views at the edge of the plateau on which Matheran stands. Panorama Point is the best. It’s only five kilometers from the Post Office and, if it’s fairly clear, you should be able to glimpse the Ghats to the north, Neral… from where the toy-train starts… and Mumbai, though we’ve never been able to see that great city from there. Hart Point and Monkey Point give the best views of the plains. Then there’s Echo Point for those who like to hear the sound of their own voice. Being Argumentative Indians, this retort-filled place has many enthusiastic takers. If it’s reasonably clear, we carry a light picnic snack and head for the quiet, pale-green, spread of Charlotte Lake. It’s the source of the town’s drinking water so we’re very careful not to litter. We’ve heard a guide spin a yarn
about the ghost of Charlotte haunting the place. Not true, absolutely not true. But as long as it keeps away the yahoos and the noise-makers the tale has served a great purpose. Enjoy the stillness and the cloud-reflecting serenity of the place: we always do. Essentially, Matheran is what hill-stations used to be. It still has gravel roads winding through green tunnels of trees. It still has little cottages sitting snugly in their own tiny gardens. It still has aware citizens who are
neighbours in the hotel and they gave us a tale we often tell to show the effect Matheran has on even the most fashionably blasé. They had checked in as a very Gothic, 20’s something, couple: black clothes, heavy black eyeliner, mournful expressions as if they had just been resurrected from a tomb, extremely funereal. Clearly they believed that they had all the experiences that the world could offer them: they were emotionally burnt-out cases. Three days later, they were

prepared to fight to preserve the character of their little town. The wonderful thing is that you don’t have to do anything in Matheran. You don’t have to visit the Points: they’ve been there for centuries and they’ll continue to be there till the Western Ghats crumble. And the cool, retro, atmosphere of Matheran is so all-pervasive that even the hyper-frenetic Generation Now of Mumbai find themselves unwinding when they get to Matheran. We had an interesting conversation with our
resurrected and had, also, been shopping: jeans, bright tees, faces scrubbed clean of the cadaverous vampire look. In their new avatars they were vivaciously human and they smiled at us. We said: “You look different” “We feel different” said the male un-Gothic His companion laughed. “Matheran is so.. so..” “...natural!” he added. She nodded: “It’s so naturally, vibrantly, alive..” They were still vibing with Matheran April 2012 GO NOW

when they joined us in the little mountain train to make the trip half-way down to Neral, the terminus station at the bottom of the hill. All the passengers in our compartment were tourists, in a festive mood after their holiday and so they clapped when the guard blew his whistle, cheered when the driver had the engine give its mournful diesel bellow, some even stood up and danced when the train lurched into motion and began its clickety-clack journey out of the station, through the forests, past the last of the cottages on the outskirts of the hill-station. They settled down when the train began threading its way down a spider-web of a track between a cliff and a precipice. The views were spectacular and often as dizzying as if we were riding on a roller-coaster, Craggy peaks and escarpments fell away to the plans, far below. When our train curved around a bend we could see passengers in other compartments peering out of the windows eager to miss nothing. We passed through a short tunnel and over bridges that spanned deep gorges. At one point a colourful idol of Ganesh stood on the crest of a ridge offering an auspicious start to a particularly hazardous stretch of 32

track. Or so a young girl informed us very solemnly. “My dada, my grandfather, worked here as a boy. He said that the engineers almost gave up when reached this place. But then a sadhu appeared and he said that if you put up a murti of Ganapathi Baba then the work will succeed. They did and the work went forward.” It seemed a reasonable explanation for the presence of the image. Then the rhythm of the train began to slow and we knew that our journey was coming to an end. We got down at a single platform halt called Water Pipe. Presumably this was where the old steam locomotives replenished their tanks. They don’t use boilers any more but the train stops here anyway. We wished the girl and the reformed Gothics goodbye. The thin, taciturn, driver boarded his cabin. The station master ...yes, Water Pipe has a station master, apparently... waved his green flag; the guard waved his green flag; the locomotive moaned; the hill train went clickety-clacking away and vanished round a bend. We felt a little sad, as we always do: we had to face the real world again. But then, when the pressures become too much, we

Suburban Gem Inspired by the ‘Jantar Mantar’, Devi Ratn is the only concept-based hotel in the city which makes it hard to miss. A fairly new property (six years old), the Le Méridien has established itself firmly as a leisure and business hotel. Ideally located on the NH-8, the hotel gets the majority of its guests from Delhi. The hotel has an inventory of 126 rooms (20 villas, nine deluxe suites and one presidential suite) and each has more than enough walking space (despite the deluxe King-size bed). Another striking feature is the way the rooms are designed each room is architecturally different from the other. The hotel’s restaurant – India Grill – benefits from the mall location by drawing shoppers and mall visitors (in addition to hotel residents) to its stylish ochre lit interiors. The restaurant is unapologetically upmarket: the entrance lobby serves as a mini-art gallery displaying works by a number of well-known artists (provided by Art Laureate) The ambience is easy on the eyes – chic and elegant without being ostentatious. We’re guided to our table by the usher who evinces the kind of hospitality which you’d expect in a top-class hotel rather than a standalone restaurant. In the centre of the restaurant lies the bar area - smartly cordoned off by ochre-tinted lampshades which imparts a striking contrast of a quiet bar right in the middle of a bustling restaurant. And if you come in on any day besides Tuesdays, expect the house band - ‘Heartbeat’ - to belt out classic pop while you enjoy your repast. Diners can make requests to the band, and going by the number of youngsters in the eatery, the band is a big draw for
couples out for a romantic evening out.
Chef’s recommendations
The Chef, Avinash Handoo, suggested we pair the starters with Jacob’s Creek Chardonnay.. Although a bit dry, the crisp wine’s fresh citrus aroma went very well with the Lamb Barra, Lassoni Murg Tikka, Murg Afghani Tangri and the absolutely delicious Ajwani Fish Tikka. For the vegans, the Achaari paneer is highly recommended: the paneer tasted absolutely fresh and had a delightful tangy aftertaste. To check the multi-cuisine options we tried the four-cheese pizza which wasn’t quite up to the same standard: the cheese was a trifle bland and the thin-crust was not easy to slice. We stuck to Indian food for the main course and weren’t disappointed. The Kadhai chicken, Dal Makhani and Palak Corn Malai were pretty good (although not great). But the Keema Mutter Makhana, on the other hand, was absolutely succulent.
Costing Considering that this is a hotel restaurant, the prices are on the higher side but still competitive. Expect to pay 2500+ taxes (with alcohol) and 1200+taxes (sans alcohol) per
person on an à la carte basis which is par for the course for a restaurant in this segment.
Special offers Not surprisingly, to woo its late-night clientele, the restaurant has a special midnight menu. There’s also a 24hrs happy hour (one plus one) on selected brands.
USP India Grill is a hotel restaurant which is open 24hrs a day. That alone is a massive advantage when it comes to drawing diners: partygoers looking for a place to eat late at night already frequent the restaurant regularly. NO FUSION PLEASE Opening a multi-cuisine restaurant is akin to hedging your bets – trying to cater to as large a clientele as possible. Predictably, a large number of such restaurants fail to deliver authentic cuisine and are lost in the clutter of forgettable eateries in the city. GO NOW went to ‘Auma’ at the DLF Emporio with a healthy does of scepticism, chatted up Chef Bhagirath Ujjainwal and came back as a convert. This restaurant is no pretender!

s far as settings go, ‘Auma’– Charu Munjal’s fine-dining restaurant in the DLF Emporio Mall – makes an instant impression: chic urbane interiors cloaked in warm brown and orange hues and low-decibel ambient music draw you in just as you exit ‘Oma,’ – the adjacent lifestyle store associated with the restaurant. Although not very large – the restaurant covers a modest 4,200 sq feet and offers 52 covers indoors and 16 outdoors – Auma creates a sense of space with a cavernous entry
Chef Speaks Auma’s Executive Chef, Bhagirath Ujjainwal has had more than a decade of experience in the industry and has worked with The Oberoi Hotel, New Delhi , LA Brasserie at the Imperial Hotel, the Royal Mirage, a hotel at Jumeirah Beach, the Ashoka Hotel, F-Bar and Crown Plaza among others. GO NOW talks to him about what makes Auma different. The restaurant serves three cuisines Mediterranean, Thai and Italian. How do you maintain authenticity in each cuisine? The difference lies in the quality and freshness of ingredients which we choose from the market. The main objective is to keep quality and consistency on high priority. We make sure that the quality of products is fresh and clean. The main secret of our authentic Thai food is our Chef Chang, who’s Thai and brings in his authentic cooking style. Also, the spices are imported from Thailand to bring in the original flavour which differentiates our food from other Thai eateries. Although there are many fine dining res-
taurants in the city, most of them have had to modify cuisines according to Indian tastes. How do you plan to cater to the Indian palate? We are quite confident of serving authentic cuisine as an integral concept for Auma. We intend to maintain that and not introduce any fusion elements in our cuisine. That said, we do make a few minor changes to suit Indian palates but even that is not done by changing ingredients. We might change the quantity of some ingredients but won’t tinker with the cooking technique or the recipe. For example, Indians don’t like bland food, so we try and add more spices or we would decrease the quantity of cheese in a dish. Which dish will you recommend as your signature dish from Auma and why? The Himalayan Trout with almond butter is our signature dish and one we would recommend to every patron.

hat does it take to become Chef Saby? Give us a brief rundown of your career culminating with Olive Bar & Kitchen. I graduated in Arts and Management. After I was certain that this is what I wanted to do, I trained extensively and underwent specialized Master Chef Courses in France, Australia, America, Middle East, Hong Kong and Singapore. My work life has been a long hard road, beginning with Hotel Guestline (Mumbai) winding through Mahindra Holiday Resorts all over India, Bowling Co and Sports Bistro-High Street Phoenix, Karma, Bellissima and Liquid Lounge specialty restaurants, and finally to Olive and Ai where I work now. Along the way I’ve also worked with top chefs and restaurants around the world including Chicago’s Charlie Trotters and Sydney’s Tetsuya. I was voted the Indian National Tourism Board’s Best chef 2011 and
It’s been quite a journey for a lad from small-town Asansol in West Bengal who defied norm and peer pressure to undertake a career in the culinary arts. Today, Sabyasachi Gorai, (or Chef Saby as he’s popularly known) is the Executive Chef at the Olive Bar & Kitchen, and has the likes of the Ambanis, Bachchans and Doshis literally eating out of his hands. Talking of Ai – you surprised even your most ardent fans by taking on Japanese cuisine when everyone thought what you really liked to do was Mediterranean cuisine. Is it a case of experimenting with a new cuisine? What excites you about Japanese food? Well it’s not as if I was ignorant about Japanese food: I have worked with some phenomenal chefs & restaurant including Chef Tatsuya & Chef Harunobu who are world-renowned Japanese chefs. That was where I was properly introduced to the cuisine and its basics. Experiments still can’t be done without the knowledge of the basics, nor can it be done at such a large scale. When you’re managing a huge clientele you need a rock-solid base and not necessarily experimentation. Japanese cuisine is one the world’s most dynamic cuisines where finesse and thorough knowledge of the ingredients is paramount. A person who works with the cuisine always gets a fine sense of ingredients and their uses and applications.
What’s your take on molecular gastronomy? Is it something you’ve already tried or will be dabbling with in the future? Molecular gastronomy is nothing but just an intense and more refined chemical and physical process that continues while we cook and prepare food. The reactions are sequenced and controlled to get desired results. At Olive we’ve already been serving dishes like liquid raviolis, balsamic caviars, nitrogen sorbets and many more during special occasions like Valentine’s Day and New Year’s Eve. We have touches of molecular gastronomy in our menus - it is mostly used in garnishes, amuse & petit fours.
What’s your advice to Mediterranean home cooks? Use best quality olive oil & sea salt you can get. Start with some nice pasta, try gnocchi & pizzas.
Are the ingredients you use freely available in India or do you still have to import them? Due to globalisation of the food industry most of the ingredients are now available in India but still many are not manufactured
here. Even then you will easily get them as they are imported by different suppliers.
Do you consider your cooking a form of expression? Tell us a bit about your experimentation with colours and flavours. Yes, for me cooking is an art and the ultimate form of expression. I love to work with colours and create something natural, unique and exotic. All my dishes have a balance of colour and flavour. I love to use seasonal vegetables, fruits and grains which are then paired with meats, poultry & sea produces. This is very evident in all my current menus. Apart from colours & flavours, I love to work with texture. Tenderloin with blue cheese, tiger prawn paired with lobster ice cream & tomato jelly, black & white seafood linguini, wine leaf wrapped lamb, oasis on the plate which has fresh Yubari melon, honeydew melon panna cotta and musk melon sorbet are a few selections from our recent menus which play with different textures and flavours.
Where does your inspiration come from for the menus? My menus are inspired by some of the great chefs I’ve worked with. Every international tour
I make teaches me something new about food – the learning phase of a chef’s life never ends. So I keep getting ideas from new techniques, age old recipes, innovations by great chefs and even from home-cooked food which my hosts on these international tours serve. In my current menus the pasta and risotto is inspired by my recent tours of northern and southern Italy, where I had the opportunity to spend time with Chef Roberto. Similarly my inspiration for a French menu (which we did for a festival in one of our restaurants), came from my visit to a French culinary school in Paris and from great chefs like Chef Pierre Garniere and Chef Joel Robuchon.
What are the main ingredients for this season? Seasonal fresh fruits & vegetables, with a special emphasis on mangos and melons.

With two dramatically different seating levels, reasonably good food, and one of the best-priced selections of wines and spirits in town, Uber Lounge is thriving in the supercompetitive locale of Greater Kailash’s M Block market.
T
he margins may be great, but the competition is equally fierce: F&B is not a business for the faint-hearted. And certainly not in South Delhi, where new restaurants, bars and lounges sprout up every week. Not only does a new outlet need to have a clear USP, but that selling point needs to work week after week, staving off competition until the outlet establishes its unique brand identity and acquires a set of ‘regulars.’ Not surprisingly, for every one establishment which makes a go of it, numerous sink into obscurity. ‘Uber Lounge,’ as a name sounds fairly

UBER BARGAIN nondescript – and when you walk into the establishment in the U-shaped hub of GK II’s M Block market, it seems even more random: modern pod like chairs scattered around a few tables, an open bar at the far end, punctuated by two couched cubicles facing the street. The ‘lounge’ element comes into play in the basement area which is radically different from the café-like seating on the
ground level: sprawling couches (and even a couple of beds) dim lighting and ambient music (which progresses towards full-blown house as the evening wears on). It’s a Saturday evening, and the two levels attract two very distinct kinds of people: the ground floor is full up relatively early with people downing a few drinks and heading out to party elsewhere while the lounge, a party destination in its own right starts buzzing as the evening wears on. What draws the crowds in is apparent when you glance at the wine list: a wide selection of beers, single malts, wines, cocktails and

mocktails. The menu, though not spectacular, has decent Italian and Indian fare.
USP But what really grabs attention are the honest-to-goodness prices. A glass of Nine Hills wine will set you back Rs 350, and if you decide to nibble on the Champagne prawns (which we recommend you do) then add a very modest Rs 225 to your tab. The selection of single malts can be had for a pittance (Rs 350, 30ml) and no cocktail costs more than Rs 325. Heck, if you’re feeling flush then try the Smoked salmon Caviar. Even that is a meagre Rs 275.
Costing You can wrap up your entire evening for two in less than Rs. 2500 (drinks included), or Rs 1200 if you decide to eschew the alcohol. With recent hikes in VAT and other taxes, going out in Delhi has become an expensive proposition. And that is why value-for-money establishments will never go out of fashion. t’s a common lament, and one which Delhi residents often bemoan of – there’s no quick getaway from Delhi. Not unless you’re prepared to drive six or more hours to head for Uttarakhand or Rajasthan – hardly viable when all you can spare is one precious weekend. No one really considers Haryana – the state doesn’t exactly conjure up images of laidback bliss. And Sohna in particular, for most, is just a town at the end of a very dusty road on the outskirts of Gurgaon. Which is why this write-up has more pictures than text: no matter how much this writer may wax eloquent, visuals do much more justice to the 37-acre retreat. Obviously this writer is gushing a bit but it’s difficult to write a descriptive review of this resort as if it were another city establishment: it isn’t. And since its milieu is different, the regular standards don’t apply. Even if they did, the Westin Sohna can hold its own: a five-star property with 97 guest rooms spread over a yawning 37-acres, an array of eateries, a sprawling pool, a fullfledged spa, 6500 sq feet of meeting and

When you’ve got 37 acres to play around with then space is not really much of a limitation. Ergo, the cricket field, and the basketball court, football ground, tennis courts. If you’d prefer not to walk then golf carts will ferry you about the property, or if you’d prefer something a bit more old fashioned then perhaps you’d like to see the resort on horseback? For couples with kids, the resort offers a convenient escape from the rigors of parenting. Get them along by all means, but once you’re there, let them loose at the resort where trained personnel can take them off your hands for a host of adventure activities including ‘Commando net,’ ‘River Crossing,’ ‘Double Rope,’ ‘Flying fox,’ ‘Burma Bridge,’ Ladder climbing,’ ‘Jummaring,’ ‘Mowgli walk,’ Paintball, Tug of War, Aqua Zorbing and so forth while you and your significant other get some precious together time. It takes a truly well-rounded venue to stand out, literally, amongst the thousands in the NCR's competitive market. GO NOW visits the Regenta Hotel & Convention Centre – which has managed to do just that.
C
hattarpur may still be the preferred hub of weeding venues, but newer establishments on National Highway No. 8 are gaining popularity as the NCR continues its expansion southward. Among the establishments along this stretch of highway, The Regenta Hotel & Convention Centre, which opened just a couple of months back, has already garnered a significant amount of interest (and business) from the wedding venue market. A lot of it can be put down to pedigree: the establishment is part of the well-known Royal Orchid Hotels Group. And the rest can be attributed to the single-pronged focus on marketing itself as a wedding venue that Regenta’s promoters have displayed. Positioned as a ‘wedding hotel,’ Regenta’s infrastructure and facilities are tailor-made for the wedding market: three banquet halls and lawns, a spa, and ancillary services including wedding planners, theme planners et al are par for the course. Anshu Malik, GM, Regenta, explains that the brand strategy has been to provide all

possible facilities which could be required for an Indian wedding under a single roof. “Regenta is a one stop shop for any wedding party, there are wedding planners, theme planners, a spa and a beauty parlour that will come up in a month’s time and spacious lawns,” he elaborates. Not surprisingly, there’s no dearth of space: the largest of the three lawns – ‘Tulip’ – can accommodate up to 1000 people while ‘Carnation,’ can host up to 800 people. For even larger gatherings, there is an option to use both lawns simultaneously. And by industry standards, Regenta has already struck a chord with the city's denizens: even though these months are not considered prime marriage season, (and

coupled with the fact that it just opened for business), Regenta is hosting an impressive 15-20 weddings this month. Location is another advantage: Regenta’s proximity to the Indira Gandhi International airport and Gurgaon is a distinct convenience. Also, Regenta isn’t a spartan venue but rather an urban retreat in its own right spread over 6 acres with a water body and a swimming pool to boot. “Our strength is the space that we offer; the property is built on 6 acres of land, with appropriate breathing expanse allotted to the rooms, lobby and the 24/7 restaurant,” says Malik. The pool and the water flowing from it into the adjacent water body when it’s lit up at night does make a pretty picture. The property is centred around the pool with most of the rooms facing the poolside. JASHN - An Artisans Collective
WEAVING LIVES A joint initiative by the NGO Khushii and the Art of Living Foundation – JASHN – saw the creation of a new platform for marginalized artisans from different parts of India. The exhibition drew together designers, artisans, children, models and socialites.

ven from a distance, the event on the front lawns of Delhi’s Ashoka Hotel lived up to its name. ‘Jashn,’ looked like a celebration all right: with colourful stalls, designers displaying their work, glittering jewellery, home interiors, bright dresses (with intricate embroidery) and gorgeous wedding trousseaus. Even the general mood amongst those present – designers, artisans, members of Kushii, guests, kids and parents – was decidedly sunny. The event had all the right ingredients: a good cause – promotion of the unorganised artisan sector across India; children walking the ramp; riveting cultural events; famous designers; ethnic artisans; and celebrities! The overall effect was very carnivalesque with a unique amalgamation of the contemporary and traditional, ethnic and modern aesthetics.
The opening day began with an inauguration by Princess Diya Kumari of Jaipur with Khushii’s Chairman – Kapil Dev in attendance. The festivities began before noon and the full day's schedule–which comprised of cultural performances like Kalbelia of Rajasthan and Jugalbandi of Khartal – went on almost till midnight. The highlight was designer Ritu Beri’s show in which her collection ‘Baby Beri’ was modelled by kids. Beri’s designs incorporated some interesting weaves that came from participating artisans at JASHN. Fashion house Janak and designer Charu Parasher also showcased their latest collections. News spread fast, and the second day saw a huge turnout and the lawns were choc-abloc with shoppers checking out the designer and artisan stalls.
The grand finale of the event, again, more than lived up to its name: the biggest names in the designer fraternity – Rohit Bal, Varun Bahl, Ashima Leena, Rina Dhaka, JJ Valaya, Abraham & Thakore, Madhu Jain, Rajesh Pratap Singh and Namrata Joshipura collectively showcased an exclusive collection put together with the weaves of participating artisans. Some of the weaves that made it into the collection were Cotton, Tussar Silk, Ikkat, Ajrak, Chanderi and Kanjeepuram Silk. The clothes were modelled by socialites and celebrities like Niki Duggal, Sunil Sethi, Karan Kumar, Mona Mallya and Saba Ali Khan. With the participation of over 120 artisans and 150 exhibitors, JASHN has bigger plans for its next edition. DELHI JAZZ FESTIVAL Jazz it up some more!

On a perfect March evening, hundreds of Delhi’s music aficionados, sat around waiting patiently in the verdant environs of Nehru Park for the opening act of the Delhi jazz Festival. The smashing success of the event was the final word in the argument - Jazz is very much alive in the Capital, and it’s legions are growing. For the second year in a row, Jazz enthusaists in the city had something to cheer about as the biggest expostulation of Jazz in the city – The Jazz Festival – was held at the Nehru Park. The festival is arguably as much about the music as it is about the ambience and charm of the fantastic green belt in which it’s held: a fabulous coming together of music in an outdoor setting just in time to enjoy the fading vestiges of winter. The festival organised by ICCR in collaboration with ‘Seher’ saw three days of performances by nine bands from around the world. Given the sanguine locale of the park, it was appropriate that the opening band didn’t explode into a full-blown performance. Wojtek Mazolewski, a Polish quintet started 70

subtly with their trademark romantic wistful melodies immediately setting the tone for the festival. The mainstay of the quintet is Mazolewski who started off with a determinedly punk rock style in his youth and has now grown to become one of the most significant musicians on the contemporary jazz scene in Poland. He is also a pioneer of ‘Yass,’ a locally-bred style of music distinguished by an emphasis on improvisation, blending elements of jazz, punk rock and folk. The band played some classical numbers from their second album – Smells Like Tape Spirit – which were infused with smooth, natural sounds in the style of true, disciplined jazz but interspersed with wild, thrashing bursts
of energy and incredibly thrilling, unexpected melodies. “The inspirations for the pieces are all drawn from life,” said Mazolewski, adding that their music has definite Indian influences. “We have grown up listening to Indian music and Pandit Ravi Shankar is my personal favourite.” The band that followed – HFT from India – only upped the ante with their unique mix of jazz, fusion and world music. Based out of New Delhi, and with Arjun Sen on the guitar, Lew Hilt on bass and Suchet Malhotra on percussion, the band gave an accomplished performance embellished by sublime guitar melodies, basslines and cymbal work and complemented by a fusion of ragas and world music of the Afro-Latin drum grooves.

“We have experimented with the fusion of Indian classical with jazz and there has been a tremendous response,” said Malhotra who likes to be known as a drumcussionist. The showstopper on the first day was the Louis Banks Matrixx Band, with music that was highly energetic and s ubtly dynamic. On the second evening, there were three bands - Dini Virsaladze (a quartet from Georgia, Moonarra (India) and EOL TRIO from France. Dini Virsaladze’s lead singer – Virsaladze – in particular, made a big impression. With a charming personality and a voice to match, she had the audience spellbound with her rendition of Voyage and Umbrella among other pieces. With two albums – Mysterious and Smiling Face – already under her belt, Virsaladze is already working on the third in collaboration with the Amit Chatterjee Alliance (a collaboration of musicians from India, Europe and America). Virsaladze, with her combination of melody and harmony and impromptu improvisations
captivated the audience. The concluding day of the festival witnessed performances by Magos Herrera from Mexico – the only crooner in the festival, the Bica-Daerr-Stick Trio from Germany and Elkano Browning Cream from Spain. If there was any doubt that Jazz as a music form is disappearing from the city then those fears were quelled by the thousands of people who dropped by for the final day’s performances. The German band’s onstage chemistry between Carlos Bica on the double bass and Carsten Daeer on piano was evident. “It was amazing to come here and perform,” said Bica after his performance, “People in India have an eclectic taste in music and it gives me great pleasure to see that jazz is no longer treated as American.” And as the fest ended with a rousing performance by the Spanish band, there was only one thought that seemed to be on everyone’s mind – jazz it up some more. over frank and open debate
T
he India Today Conclave this year, the first that I attended, had every thing going for it – dynamic discussions, representative of what we aspire for India, in its apparent continuing churning process. First, free but responsible liberty and the right to speech, with an emphasis that debate is the essence of democracy. Which is what promoter and chief editor, Aroon Purie highlighted both in his inauguaral speech, and also in the summing up at the end. It was therefore unfortunate that some of the speakers opted out, just because Salman Rushdie was attending. We would like to believe that some of them would have attended, were it not ‘mandated’ for them to keep a political posture, in keeping with populist sentiment and their fear of losing this vote. After all, for some one like Imran Khan, their electorate can always be very tricky and they would prefer not to take chances. And perhaps the same, too for young politicians like Akhilesh Yadav – they might have had more to lose 72

than gain by attending. Be that it may, the overall quality of dialogue was stimulating and involved a free and frank debate. Speakers who backed out were replaced, some proving to be even more topical than the original. We were therefore delighted to meet a frank and fearless politician in Dinesh Trivedi. Speakers cut across the national spectrum – from cricketers and film stars to young and old politicians, spiritual and wellness gurus, industrialists – some of them showed there was more to keeping their brand flying than just sexy looks – young Kareena Kapoor showed off brains and quick wit, too. Salman Rushdie was a delight – with his presence of mind, flow of delivery and quality of mind. There were stellar performances from astute politicians like Anwar Ibrahim from Malaysia, and industrialists like Rahul Bajaj – he showed little patience for hypocrisy and with people for not calling a spade a spade. There were also some disappointments – like young Sidharth Mallya who did not say much, though it was commend-
able that he did turn up, in times like these that are far from ‘Good Times’. Or, for that matter Henry Kissinger, who was barely audible, and so incoherent, that one wondered how India Today could have made this mistake of inviting him. The Conclave was another milestone, an impressive annual journey that the nation has come to look forward to. The event was well organized, competently driven and spread around the convention halls at Taj Palace in the capital. Sponsors like Great Britain and Chivas Regal did a splendid job of hosting tea and drinks. The clout of the India Today Group was visible both in terms of execution as well as the star turnout. As an event, it brought together some 800 to 1000 professionals and concerned individuals representing impressive segments in society. There was much to take home – some anguish, some despair but more, an assuring sentiment that tomorrow’s India is in as safe hands as is India today. by NAVIN BERRY
