Seasoning cast iron plates Necessary for new plates. The operation takes between 60 and 90 minutes. A seasoned plate stops crepes from sticking and avoids bubbles forming.
Batter bubbles and sticks to the rake The plate has not been correctly seasoned. Season the plate by greasing at regular intervals. If surface is charred, scrape clean
1. Heat the plate to 270 °C. 2. The red light goes out once temperature is reached. Keep at this temperature. 3. Pour a tablespoon of oil in the center of the plate 4. Spread oil evenly over the plate using a rolled up cotton cloth. Leave for 5 – 10 minutes so that the plate is brown and completely dry. 5. Repeat steps 3 and 4 eight times, reducing the amount of oil each time, leaving it each time to cook for 5 – 10 minutes. 6. When the seasoning is done properly the coating becomes a shiny dark chectnut brown.

Cleaning the machined cast-iron plate After a while, a crust may form on the plate, which may give the impression that the metal is flaking off. The crust is cêpe batter, and can be removed with a metal spatula and rough sand paper or the special abrasive stone (use a circular movement). Once the plate has been cleaned, season as if new.

BUCKWHEAT CREPES Ingredients 180g buckwheat flour 4 eggs 400ml milk 200ml water 10g butter, melted 8ml oil 2.5ml salt
Preparing the batter 1. 2. 3. 4. 5. 6.
Mix milk, water & salt together. Whisk in flour. Add melted butter & oil. Lightly whisk eggs & add to mixture. Rest for an hour. Warm Krampouz Crepe machine to 200째C. Grease surface with a little melted butter. Ladle one spoon & spread with wooden spatula. Cook till lightly coloured & loose. Flip & cook till brown on other side.
Leave to stand for about an hour before making crepes.
