Good Night Treat
Words spread on the internet that Hong Kong and Macau had
quite different tourism temperatures during the Labor Day holiday: On one hand, a long line of tourists waiting for at least 3 hours to pass the border of Gongbei Border. On the other, star hotels in Macau is seeing rapid revenue shrinking, there are also criticism against the new resorts to be launched soon. The future of Macau tourism has become quite a online topic. Hearsays could not be the answer, only on-site experience will give you the real picture of Macau. Now start a tour in Macau, you will receive an unforgettable experience for your own judgement. Here are what Macau really is to my friends and I: a city could be busy or quiet. It has luxury hotels, sleepless urban night, endless food stalls and small restaurants along the narrow lanes, even in deep night where the more intimate experience will be something you will never forget. It is why we search for places proving night treat for your taste buds. Ready, Let’s ramble to the night.

D
ragon boat racing is a traditional Chinese activity during the Tuen Ng Festival (the 5th day of the 5th lunar month), that is especially popular in Southern China. The festival is believed to be originated by the Chu Kingdom (B.C 1042- B.C 223) to memorize Qu Yuan, a patriotic poem who drowns himself in a river to protest the dark political environment. The dragon boat was said to be used to disturb the fish in the river in an attempt to keep his body complete. The race was later developed and spread throughout China. International dragon boat racing has now become a major annual event in many cities such as Hong Kong, Macau, Taipei and even Japanese cities. The Macau race will be launched on June 13th, 14th and 20th at Centro NĂĄutico da Praia Grande. Teams from both China and abroad will make the hot season even hotter. 10

ore authentic with more hints of Macau. That’s what we have to say about the new menu of Aurora in Altira Macau designed by new chef Mr. Francesco Greco. “Fettuccine, Suckling pig and Wagyu beef ragout, Vegetable Caponata is a combination of Japanese, Portuguese, and Italian elements,” suggested by Greco, “while our spaghetti, freshly hand-made, would taste even better with exclusive olive oil, Chinese melons and sweet pepper; a perfect choice for hot summer days. Another recommendation would be the Tiramisu, Mascarpone cream, Espresso Jelly and Piedmont Hazelnuts ice cream. Without the traditional look of Tiramisu, you will realize its originality when tasting it with other three desserts.” Francesco Greco hails from Milan and has over 27 years in the catering business. He has served in many prestigious hotels and restaurants such as The Galleria of Principe di Savoia in Milan, Palladio at the Ritz Carlton in Shanghai and Messina Il Ristorante in Hong Kong. His skills were even elevated further after being trained in Michelin Star restaurants in Italy and New York. Brand new chef, perfect Italian cuisine, all in Aurora!

015 is the 20th anniversary of the Beauty and the Beast, and to celebrate it is going on its first international tour. This marks the first visit to Macau for Hilary Maiberger as Belle and Darick Pead as the Beast, who have not only played a couple onstage in over 700 shows, but are also together in real life. They confess to falling in love at first sight, which explains the chemistry between them even on the stage. “I was worried about who would be picked for the Beast”, Hilary said with a sweet smile: “What if we were not meant to be onstage? But all of my concerns were gone as soon as we met.” Let’s get close to the two leading roles as well as the show: C: Cguide / H: Hilary / D: Darick C: Is Belle your dream role? I heard that you don’t have a casting agent, so how did you find this role? Would you mind sharing the magical story of Belle with our readers? Hilary: Belle is a dream role of mine and I am truly blessed to be playing such an amazing character. I saw the audition notice online and immediately sent in a tape. After a round of callbacks, I got the part! Belle is such an amazing role model. She is smart, independent, loving, courageous, and strong. But she is also your average teenage girl trying to figure out where she belongs, which makes her relatable. C: Besides Belle, do you have any other favourite Disney roles? H: I love Princess Jasmine! C: As a broadway singer, how do you maintain your voice and good health in your daily life?
H: I have to take care of myself. I make sure I get enough sleep and rest, and drink lots of water. I also continue vocal lessons to make sure my voice is in tip top shape and continues to get better. Darick: I will buy “Pei Pa Koa” which is cheap here, but expensive in America. C: What’s your favourite part of the play? H: I love the library scene in which Belle is teaching the Beast how to read. That is the moment in which she realizes they are equal and have more in common than she thought. D: I love dancing to the title song Beauty and the Beast while Emily Mattheson sings it. She is so wonderful at telling the story through that song, and you as an audience member can really feel the Beast and Belle falling in love. C: Do you have any must-see and must-eat lists in Macau? D: Yes! This is the first time I’ve been to Macau. I am excited about Senado Square and the ruins of St. Paul’s Cathedral. Quite honestly I am excited to be performing at The Venetian Macao. I know this is probably silly but I am so excited for the Chinese food there, especially the dim sum. H: This is my first time in Macau and I can’t wait to explore this city! C: What kind of message you want to deliver to audiences in Macau? D&H: Come be our guest and be part of this once in a lifetime opportunity and see this spectacular show! Hope to see you there!

Directed by Kirsten Dehlhom and performed by wellknown Danish troupe Hotel Pro Forma, War Sum Up is a mixture of opera, electric music, comics’ projection and many other fashionable design elements from Northern Europe. It is known as a cutting-edge musical work featuring unique visual design. When commenting on her team, which is regarded as “an international lab of visual musical performance and installation”, Kirsten, who started her career in the 1970’s, stated: “What we are doing is between exhibition and show; it is moving images based on visual effects.” The show’s Latvia debut won huge acclaim in 2011, partly thanks to the unique cross-board cooperation between Latvian composer Santa Ratniece and British pop band The Irrepressibles. War, to Kirsten, is not only the theme of the musical, but an eternal human subject. The audience would have deeper insight into the three-layer story of warrior, solider, and spy through the singing of 12 singers of rewritten ancient Japanese poetry and 3D projections.

he exhibition is hosted in a bright and vibrant gallery which will put a smile on everyone’s face. “They are not necessarily classically beautiful,” says Marco Szeto, one of the two artists we interviewed, “yet I was touched by the authentic emotions and smiles on their faces. They are living in sunshine, spiritually, in spite of the poverty.” The sincerity of Cubans was what he wanted to record through art: the innocent faces of children, the honest sincerity of the street artists, even the water glasses in the hotels and inns were his subjects. They are different, they are rare, in the material world. When asked about the most favored piece he has created, Situ replied without hesitation that it was the portrait of José Martí. He depicted the founding father of Cuba as a majestic yet kind man using layers of light that make him warm and inviting. Ms. Pan, the other interviewee and the student of Mr. Szeto, specializes in paper-cuttings, particularly on her favorite topic of children and street artists. The cartoon style of the figures in her works vividly reflected the liveliness of Cuban children. As for the street artists, she recounts, “This is the moment they have just finished the performance. The instruments are heavy, they are sweaty in the heat. But they still looked into my eyes and said good bye, sincerely. I was truly touched at the moment.”

The concept of this residency is “Equilibrium”, meaning the status of not being biased on one side. The equilibrium on this residency could be material equilibrium, social equilibrium, psychological equilibrium etc. This equilibrium will be expressed through various ways such as sculpture, installation, drawing etc. by reinterpreting such areas’ differences in Macau’s environment and social opinions. In addition, Mr. Lee will research to promote the fact that social opinions’ differences are just “differences” not “wrong thing” which is his prior interest. The exhibition also reflects his experiences in Macau such as visiting various areas, mutual exchange with the other artist etc. 12:00-19:00 Closed on Tuesday) Ox warehouse Free Admission
This exhibition will display 49 calligraphic works, and four Chinese paintings, a total 53 works by the artist; the aforementioned are mostly latest productions of Mio’s in order to demonstrate his recent arts style. Mio Pang Fei, born in Shanghai in 1936, settled in Macao in 1982, and is a renowned Macao artist. In recent years, Mio Pang Fei has focused on calligraphy. His calligraphy boasts a free style, while his strong brushwork resembles a powerful, impelling force. In addition, Mio’s calligraphy fuses his rich experience in contemporary art, blending the traditional arts with modern impressionism, adding pictorial qualities to the calligraphy while teasing out an amazing tension and energy that showcases his extraordinary personal style.
The focus of the Macao Annual Visual Arts Exhibition this year is on Chinese painting and calligraphy, genres which includes Chinese painting, calligraphy, seal-engraving and experimental ink and wash painting, among others. Five experienced artists from various places and fields were previously assigned as members of the adjudication panel. Following painstaking discussion, they selected 74 entries and 10 “Best Works” for the exhibition this year: Wang Sen’s One flower, One world, Ho Loi Seng’s The Swallow Poem to Liu Sou, U Wai Lam’s Jiangnan in February, etc. The hosting entity initiated the call for submissions from October last year, with 306 works responding to the call in all. 10:00-20:00 Closed on Monday) Free Admission +853 2855 5555

Time flies, as imagination and technology do. 22 years ago, Jurassic Park “opened its door” to the public. A trend was swiftly made, and almost everyone was talking about dinosaur back then. Also widespread was the difficult knowledge about dinosaur. 22 years later, the Park is reopened, in an even larger scale. The “expanded” Jurassic Park is now “Jurassic World”, equipped with the latest technology, hoping to avoid the “accidents” 22 years ago from happening again. Nonetheless, all’s well does not always end well. The new life centre of the theme park is responsible for nurturing a hybrid dinosaur – a very fierce type – that eventually escapes from the cages and chases after park visitors: a cornered fight, more precisely.

Oden Oishi! Oden is a very popular Japanese food spotted everywhere in the country; from yatai (food stands), to grocery stores, to kitchens. The small oden stand in Macau is run by Shinya Tsuji from Osaka who settled here for his love, a lucky Macau girl. To prepare a healthy and refreshing soup which is the essence of oden, Shinya uses dried fish and kelp as flavoring instead of adding cooking powders or other artificial flavorings. The food boils in this broth for 16 hours before being served. Some of the food are imported from Japan, though some are Shinya’s own creation. The Cheese & Mochi Wrapped in Tofu Sheet and the Chicken Wrapped in Cabbage are both Shinya originals. He favors radishes, which, after a long stew in the soup would soak up the best taste of the broth without losing its own. The dip made of plums and curry is also a special design for Macau. I bet you will love it as I did. www.cguidemacau.com | June 2015

Finding the right place for a midnight snack is quite simple in this city known for its entertainment facilities. The Red 8 at Wynn Macau is our recommendation for those seeking for Chinese flavors late at night. Red 8 is quite literally adorned in red to highlight the festive Chinese setting. The central kitchen’s 270 degree window allows every guest to enjoy the skillful cooking of the chef team, led by the chief Liang Weimin. They present authentic Beijing and Shanghainese dishes beloved even by visitors from the two cities. As for late night snacks, Cguide would like to recommend the Classic Beijing wood fire ovenroasted duck – Half a bird is MOP 188. It is toasted in a brick oven fueled with apple wood imported from California, which explains the unique fragrance of the meat. Another favorite is the Chilled marinated chicken with Huadiao wine– MOP 70 to match a cup of tea.

The stylish restaurant rebuilt from an old store has assigned different functions to its three floors. The second floor houses private rooms, while the third has a terrace for barbecues. The kitchen team is led by Chef Wang Zhenchang, a senior manager who has served for several star hotels and was honored to cook for Mårio Alberto Nobre Lopes Soares during the former President of Portugal’s visit to Macau. At La Festa, Wang is committed to presenting his innovations based on Shanghai cuisine while combined the cooking methods and ingredients of Portugal, Italy and France. Special favorites include the Green Salad in Japanese Sauce, Grilled tiger prawns with dry scallops in sea urchin sauce, Pan-fried veggies, and pork dumplings and Osmanthus flowers, among many others.

Among Chef Mum’s signature homemade dishes are Thai royal chicken dumplings and deepfried sea bass with chilli tamarind sauce. A nod to Macau’s rich Portuguese past, the Sala Pool at The Sheraton is the place to go to on Fridays and Saturdays thanks to an impressive spread of Portuguese-inspired barbecue dishes and great live music. The signature dishes included Bairrada-style suckling pig, grilled Chorizo sausages flambéed with Portuguese brandy, and Pata Negra (cured ham). For those who enjoy seafood, the Portuguese-style clams with white wine sauce are a must-try, as are the grilled octopus and tiger prawns with garlic and butter. www.cguidemacau.com | June 2015

This is a century in which wines pair well with Chinese cuisine. As the market leader, Cguide is bringing you a starry experience: triple award-winning delicacies.
P
rior to talking about this pairing experience, here is a brief introduction to three award winners. Chief Sommelier Kelvin So and Sommelier Eugene Tan were named champion and 1st runner-up respectively at the Ruinart Sommeliers Challenge Hong Kong 2015. So will soon visit Champagne, where he will have the unique opportunity to meet with other master sommeliers. Meanwhile, Chef and VP of Asian Culinary Simon Tho has recently won the prestigious Star Chef of the Year 2014 award at the International Exchange Association of Renowned Chinese Cuisine in Shanghai. Also invited to the podium were Martin Yan, chef and host of his own award-winning cooking show “Yan Can Cook”. For celebration, Galaxy Macau has invited the press to an “Exquisite Lunch” to sample the delicacies prepared by the three winners. Both sommeliers have chosen “Perrier-Jouet Blason Rose Champagne”, “Two Hand Bella’s Garden Barossa Valley”, and “Moscato d’ Asti, Nivole Michele Chiarlo”, to pair with Chinese delicacies such as Iberico Char-siu, Doubleboiled Fish Maw Soup, and a Ginseng dessert. According to So, Rose Champagne has the complexity to cope with Cantonese dim sum, while the red is rather full-bodied; its richness blends very well with beef, especially wagyu. The most noteworthy bottle is Moscato, which has sweetness that not only complements desserts, but also stands well on its own. The requisite sweetness highlights its fruity fragrance and smooth texture, unlike any syrup.

The first flagship store of H&M (Hennes & Mauritz AB) in Taiwan at the Breeze Center witnessed an endless waiting line of fans at its opening, which was quite a common scene for the Swiss retail brand across the globe. H&M is known for collaborating with top designers such as Rei Kawakubo and Alexander Wang, never being missed by street snaps. Now the fever has reached Macau in the form of two stores; the flagship will be at the Galaxy Macau. The opening date of the Venetian branch will be 13th June, don’t forget to save the date.

ince ART BASEL selected HK as one of its major exhibition venues, the greater China region has gained global attention as a promising new market for art. This is one of the reasons art has become a buzzword in Macau, as shown by galleries popping up in star hotels such as the Galaxy, Venetian, and the MGM. Meanwhile, exhibitions aimed at the general public can be enjoyed in public art museums and private galleries. The market is maturing. Although local buyers and tourists are mostly “window shopping, the trend is gaining momentum for a bright future.

When Art Meets Hotels As a committed supporter of art, the MGM Macau is a great place to admire an array of fine works. The Grande Praça holds major exhibitions, while the L2 Showcase works with Art for All Society(AFA), another active player in the community, to promote local Macau artists. Since the debut exhibition of Discovery – “A creative journey through the works of 20 Macau Contemporary Artists @ MGM MACAU” in 2012, L2 has served as a window into the Macau art scene. The rest of the world has been able to experience shows such as An Artistic Journey of Beautiful Macau, New York New York – The Colorful New York Art Journey, and the L’art Chinois Exhibition. Grande Praça and MGM Art Space have become popular venues for art exhibitions. For example, the Valkyrie Octopus created by Portuguese artist Joana Vasconcelos, a 35m-long and 20m-high octopus installation weighing 1200kg is featured proudly in the centre of the plaza. The earlier Biennial of the Lions celebrating the 50th anniversary of Sino-France diplomatic relations was another significant event giving opportunities to artists of both countries.

he Hotel has a classy and classic décor, in which the Portuguese bits and pieces are finely blended: off-yellow tones, curved staircases, massive chandeliers, etc, all emphasising the subtle blend between Macau and Portugal. This, however, is not all the Four Seasons Macao has to offer. Bar Azul is itself at a corner of the Hotel, appropriately distant from the main lobby. Its décor runs in stark contrast to the rest of the Hotel. The Bar is chic and modern with a brown and white colour scheme, with a hint of bright blue lights. Apart from creating a futuristic feeling, the lights are homage to the name “Azul” – the Portuguese word for “blue”. There is quite a long drink list, and from which we’ve picked three attractively colourful drinks. Every Friday, Bar Azul organises a “Wines of The World” promotion. At MOP150 (+15%) only, you can sample freely seven wines from various regions: it’s a perfect place for wine lovers.

Crossroads of China and Portugal The busy Senado Square in the central area is one of the most important venue for local events and festivals. It is also known as “the Fountain” among locals due to the central fountain built in 1970s. The whole plaza is a great example of South European architecture by the paved ground in waving patterns by Portugal-style pebbles and several Neo-classical buildings surrounded including the white façade Holy House of Mercy, General Post Office Building and Leal Senado Building. Walking along the Calçada do Tronco Velho, one of the oldest street in Macau, you will reach the peddle-paved St. Augustine’s Square, a small yet elegant and secluded spot near several photographing hot spots such as St. Augustine’s Church, and Dom Pedro V Theatre, Sir Robert Ho Tung Library and St. Joseph’s Seminary and Church which is close to the scale of St. Paul’s Church (now the Ruins of St. Paul’s). St. Lawrence’s Church could be the next convenient spot to enjoy by its classical Baroque beauty. A ten minutes walk will lead you to the Mandarin’s House, the residence of Zheng Guanyin, a modern Chinese philosopher. It is outstanding by the balanced mixture of both Chinese and western elements of architectures. Lilau Square beside the house used to be the settlment area of Portugal who left several gorgeous Art Deco styled houses and condominiums. Then come the last two sights of the route, A-Ma Temple and Macau Maritime Museum, the first themed museum in Macau. A-Ma Temple was believed to bless fishermen and sailors a safe trip, which explained why it was so welcomed here. It is also where the name of Macau came from. The museum exhibits everything about the fishing business and marine connection between China and Portugal in the long history.

A Legacy of Arts and Culture Macau Fisherman’s Wharf is a theme touring sight resembling those from the western world, presenting a beautiful and contrasting combination of eastern and western cultures, classical and modern architectures. Exhibitions and performances from time to time hosted here are mostly connected to the western world. The restaurants with outside dinning area are the excellent choices to enjoy both delicious dinner and marvelous harbor view. The cutting edge shape of Macao Science Centre nearby is a nice family destination. Designed by the prestigious American-Chinese architecture Ieoh Ming Pei, the building is divided into three parts including Exhibition Center, Planetarium and Convention Center where Exhibition Center consists of 14 exhibition halls covering themes of children, science, environmental science and life. The interactive methods are particularly welcomed by visitors to explore the world of science. The dome screen in the Planetarium will immerse the audience with special eyewear into the deep and vast space. The landmark of Macao Cultural Centre is the major place for live performance, the main venue of largescale annual events such as Macao Art Festival and Macao International Music Festival. The two auditoriums of different sizes have witnessed so many popular performances and musical theatres. Macao Museum of Art is the largest of the kind in Macau. The five-storey building is designed for exhibitions of different themes, the fifth for Chinese paintings, calligraphy and ceramics, forth for paintings of the 1900s and local art, third floor is a home of large-scale themed exhibition, while the second and first are also for short-term exhibitions. The on-site souvenir shop is where you can find aesthetic presents to keep the best memory forever. The neighboring Handover Gifts Museum of Macao is a great place to relive the historical moment of handover of Macau to the mainland by the gifts from other Chinese cities and HKSAR, as well as the development journey of Macau ever since. A casual walk along the seaside to the Kun Iam Ecumenical Centre could end the visit of the history and art where the sculpture of the goddess in 20 meters height is standing, showing her elegance and scared beauty. The Buddhism Center of two floors on the base of the sculpture is a rich reservoir of documents and books in the fields of ancient Chinese philosophy.

Macau in Wires Text by Yan

n the eyes of Tang Kuok Hou, the red lines of electric wires interwoven through the buildings and skies of Macau are clues to the relationship between the people and their city; a medium through which the development and change of human relationships and the old urban scene are recorded. Tang’s initial intention of taking photos 8 years ago was to record daily experiences before a systematic study of the arts when learning multi-media design in a Taiwan School. He believes that cameras, whether traditional or digital, are just tools. It is the concept and content that are

the soul of the pictures. As he explained: “The essence of photography is still restrained by the definition of ‘recording.’ My mission is to find a new direction. What amazed me the most about photography is the blurred boundary between artistic creation and reflections of

Line, an exhibition by tang kuok hou The 32 works on exhibit were photographed by Tang Kouk Hou since 2013 with traditional and digital cameras. Each picture was printed on canvas before being hand-sewn with red threads. It is the Macau debut of the exhibition since its first launch in 2014 at the Pingyao International Photography Festival.

the true world.” Time, space, nature and existence are his favorite topics because of the underlying infinite potential for imagination. His solo exhibition Line received great response when launched in the Pingyao International Photography Festival last year. When discussing his works involving red threads sewn onto the black and white backgrounds, he said they were the result of his roaming through Pátio da Casa Forte. He was in search of sights which connected his heart and mind while reflecting the spirit of the city, the change of human relations and revitalization of old
urban scenes. He deconstructed and drilled down the topic further after the debut in Ping Yao, Shanxi. “Red lines,” Tang explained, “ relate to the relationships between people in Chinese tradition . By forcing them onto the background of black and white, I visualized the traditional relationship among urban residents into a interlacing net. Black and red are also the colors to reflect my complicated feelings towards the town. As society develops so fast, human interaction will be virtualized, formalized and advanced yet distant. It is actually an ongoing creation.”

Part of Macau’s charm lies in the harmonious co-existence of yesterday and today in terms of both architecture and culture. Of the 20 world heritage sites across the city, the lighthouse and the Colina da Guia chapel are especially unique. They both record the growth of the former small fishing village and the spread of western religions from Macau to the mainland and the rest of the Far East.

The 1622 Guia Chapel devoted to Nossa Senhora da Guia is a unique religious venue, as it symbolizes cross-cultural integration. The white and yellow building is shaped like a rectangular cube with a barrel-vault roof; there is a sacristy to the right of the main altar, and a narrow cloister on the upper floor. A mural found in 1996 during restoration was a significant discovery which portrays biblical figures and stories using Chinese painting methods.

Guia Fortress
Built in 1622, the Guia Fortress is on the top of the highest peak in Macau, overlooking the city panorama and the mouth of Pearl River beyond. The 800 square meter area has a granite wall of around 6 meter tall. Once a closed military area equipped with a watchouse, arsenal, and other facilities, the fortress took a strategically important position against any attacks until the Portuguese withdrew from Macau in 1976. The fortress’s lighthouse and chapel have been listed as World Heritage Sites. The lighthouse, which started operating in September of 1865, was the first of its kind in the coastal area of China. After a few decades of shut-down due to storm damage, it has been operational again since June of 1910. The cylindrical building has a base 7 meters in diameter and three floors connected by a spiral stairs, totalling 15 meters in height. It serves not only as a shining spot at night, but a Macau landmark on the world map.

The tunnel was built by the Portuguese army commanded by Sublieutenant Cunha in 1931. It is composed of three disconnected parts 52 meters, 207 meters and 456 meters in length. The tunnel once had a structured defense system including a watchtower, quarters, commanding office, communication office and other military facilities, some of which had access to the fortress. The two parts open to the public are perfect for military buffs who will be fascinated by the displays and the maze-like underground world.

There are almost 20,000 books for children separated into Chinese, English, other languages, and picture books.
