CUBA
Shedding the Mystique Cuba....still a mysterious island in the gulf of Mexico to many, Cuba has begun to shed the mystique as international tourism replaces its once thriving sugar industry and allows for the world to take a peek at its diverse culture and landscape. It appears that after more than 50 years of revolution, the island is still able to chart its own course and that is amazing considering the proximity to the US. When I first went to Cuba in 1992 the island had just recently been orphaned by the once rich and powerful USSR. The economy was in a tailspin with many of the
essential products drying up and a “special period” declared by the Castro administration. Bicycles were imported from China and replaced the costly and inefficient Russian busses and a much healthier Cuba emerged. It was rare to see obesity and pride, dignity and a desire to resolve any situation created a new spirit in Cuba and it exists to this day. With the collapse of the USSR, foreign enterprises began knocking on the decaying colonial door and it slowly and cautiously began to open to the new direction of tourism and international hotel
chains started to change the pristine landscape. Today the tourist industry is booming and fueling a bright, but controlled future for Cuba. It is a long way from being like Canada
or the US, but that in itself is a reason for curiosity. You can now fly into a number of international airports on the island, be shuttled to a three, four or five star hotel in a brand new, air conditioned “Yutong” bus from China and receive service and amenities to match almost
any other major tourist destination. But remove yourself from this insulated environment of the all inclusive resorts and you will be propelled back to a time in history when the American automobile ruled and plowing a field looks like a chapter out of ancient times. It is a truly

remarkable experience to get out into the hills and countryside of Cuba and witness the heart and sole of the country. Stop and be invited into a simple Cuban house and be offered a small cup of rich, sweet coffee grown in the surrounding hills. The sincere friendliness of the Cuban people, from all walks of life, is unmatched anywhere in the world and this in part can be accredited to Fidel Castro and the conditions under which they have all had to survive by relying on each other. Everywhere you travel in Cuba you will see groups of people standing, sitting or lying down waiting for transportation in and around towns and cities. They form a queue or “boteilla” (bottle) which is usually orchestrated by a man or woman in a yellow uniform holding a clip board and a small locked metal container for money. Transportation conditions have improved recently and continue to do so, but many Cubans still have to rely on the “boteilla”. The yellow uniform stops all government vehicles with blue license plates and asks where they are going and if they have room for passengers, if they have room and they are going to a destination that some of the people are going to , the people get in the vehicle, car, truck, bus, pay a small amount and off they go. Those remaining wait for the next government vehicle and this continues throughout the day. ...continued on page 3

CUBA - Shedding the Mystique ...continued from page 2 Another recent entrepreneurial activity cropping up around the island is the food stand with a diverse collection of seasonal fruits and vegetables and some with freshly roasted pigs which get carved and sold as pork sandwiches with a collection of homemade sauces to slather on. All these stands require a license with a monthly tax being paid to the government. They also are constantly being inspected for cleanliness and freshness of product. They are great places to stop and savor local fare. All of Cuba can be experienced by joining Tom Robertson of Cuba1tours. The traders had to pass through Petra from Gaza in the West, Damascus in the North, to reach Aqaba on the Red Sea and across the desert to the Persian Gulf. The Nabataeans also had the know how to control the water supply. They had dams, cisterns and water conduits that they used to store water from the flash flooding that the area was prone to, and hold this water to use in times of drought, or to sell to travelers on their journey through the dry lands of the Middle East. They had created a rich, watered oasis for themselves in Petra. In 1985 Petra was designated a World Heritage Site and in 2007 it became one of the wonders of the world after the controversial New Seven Wonders of the World campaign. Since then tourism had increased to an unsustainable level so the Petra National Trust was established in 1989, to help lower the impact and promote protection, conservation and preservation of Petra. Jordan is a beautiful country and is worth visiting for its other splendid sights Wadi Rum, Jerash, and Karak are just a few, but Petra is the jewel. As I sat down to write this article I was amazed at how difficult it was to put into words the beauty of Petra. Not just in the amazing feat of creating this city, but in the rock, the history and the kindness of the Bedouin people who still make Petra their home. Go see and marvel!

The first time I saw Petra was at night. Our approach through the Siq, a massive Gorge, to the Treasury was lit by over 300 candles in small paper bags giving you enough light to slowly make your way along the smoothed canyon floor. When the Treasury finally came into view we gathered in the courtyard sitting on woven mats drinking tea and listening to the haunting music of local Bedouins playing, our only light still the numerous candles scattered around us. This was a tremendous experience, I would recommend it to all visiting the city. Petra is a city completely carved, chiseled and bored out of solid iron-laden sandstone. This sandstone has the most stunning range of colours in it, from deep reds to the softest peach, which earned Petra the name” Rose –red city” in a poem written by John Burgon. This amazing array of colours is amplified and enhanced by the sun, so dawn is breath taking. As you enter Petra you do so through the Siq. This canyon was not created by water erosion but by tectonic plate action ripping the rock apart. Here you find one of the most photographed buildings in Petra, the Treasury, known locally as Al-Khazneh, it is astounding in its grandeur and had a staring role in Indiana Jones and the Last Crusade. Although the Treasury is actually a tomb for Nabataean King Aretas 3, it got its name from a story that a Pharaoh had hidden all his wealth in a large urn on the second floor. This story is obviously believed by some locals, as evidenced by the many riffle shot marks in the solid rock urn. Visit is that of the Monastery or Al-Deir. Petra was built in 1200 BC by the Nabataeans, Arabs who were prevalent in the region in pre Roman time. They created

Business Casual is the Standard for Work A collared shirt and slacks is the standard for business casual in most work environments.
In today’s economic climate, there are more job applicants than there are jobs. Landing or keeping a job with so much stiff competition means employees must take the necessary steps to ensure they’re a viable part of the company. Dressing the part may seem inconsequential, but it can say much about how seriously you take your work. A business casual dress code is standard across much of the white-collar business world. It has supplanted formal attire, sometimes called international standard business attire, in most companies. In the U.S., roughly 45 percent of employees arrive to work in business casual clothing. Still, many are not quite sure what constitutes business casual wear. Business casual clothing is neat, professional and classic. Although not a uniform, this type of attire helps to keep workers uniformly dressed in tailored and comfortable clothing. For men and women, khaki or dark-colored slacks are customary; women may choose to wear conservative skirts that are not too short. Pressed, long-sleeved, buttoned solid shirts are safe bets for both men and women. Short sleeves are customary during the warmer weather. Some companies allow collared polo shirts or golf Ts. Informal dresses for women and sweaters are also acceptable. Women should avoid baring too much cleavage, which
can be viewed as sexually forward. With both genders, clothing should fit well but not be too tight or suggestive. Depending on the organization, shoes should be closed-toe and modest. Many companies institute “casual Friday” attire, which is a variation on business casual by allowing jeans or sneakers to be worn. However, even on casual days, most companies frown upon wrinkled, ripped, too trendy, or revealing types of jeans. Shorts are often frowned upon as well. If women will be wearing dresses, spaghetti straps should be avoided in favor of thicker tank top straps or capped sleeves in warmer weather. Flip-flops and other flimsy sandals also should be reconsidered. In terms of accessories and jewelry, less is often more when complementing business casual attire. Avoid flashy items or pieces that may distract or inspire envy. The work environment is not a fashion runway, and dressing to stand out could make others feel intimidated. Not all companies employ the same rules and regulations concerning wardrobe. For those who are new to a company, it’s best to stick with conservative business casual basics and then observe what others are wearing. Keep in mind that attire worn by supervisors or business owners may not be what employees are allowed to wear. Just because the CEO is donning jeans and a T-shirt every day doesn’t mean it is acceptable for you. When in doubt, ask human resources or a personnel director if there are attire guidelines. Fellow employees whom you trust can also lend advice.
Tips when shopping for
BUSINESS CASUAL • Avoid large patterns because they are memorable, and these items will not be able to be worn frequently without risking the chance of someone recalling the outfit. • Invest in some blue, black, brown and tan pants and/or skirts. These basics can be worn with many different colored shirts and blouses. • A cardigan or blazer can instantly dress up a business casual outfit for a client meeting. • Gentlemen can stash a basic tie in their desk drawers to use should an impromptu meeting take place and more formal attire is required. • Avoid overly pungent perfumes or colognes around the office. • Companies may have policies on piercings or visible tattoos. When in doubt, take it out or cover up. Men may not want to wear earrings. • Facial hair and hairstyles should be kept well-groomed. It is always a safer bet to err on the side of conservative in any business environment unless you definitely know their wardrobe policies.

METHOD: Preheat the oven to 200 degrees F. Set the scones on a baking sheet and place in the oven to warm. Meanwhile, whisk together the eggs, milk, salt, pepper and green onions. Melt the butter in a non-stick skillet set over medium heat. Pour the egg mixture into the skillet. As the mixture begins to set, gently move a heat-proof spatula across the bottom and sides of the skillet to form large, soft curds. When the eggs are cooked, but still moist, remove from the heat. Cut the scones in half. Top the bottom half of each scone with a lettuce leaf, two slices of tomato, and 1/4 of the cooked egg. Top with the other half of the scone and serve.

Apple Basics In Season: apple-picking season begins in late August or early September and lasts through November. Selecting: whenever possible buy newly harvested local apples. Choose apples that are heavy for their size and feel firm when pressed gently. Look for unbroken skin with good color and no soft brown spots. Storing: Because apples continue to ripen at room temperature, store in the crisper drawer of your refrigerator. If you plan to eat them soon after purchase, they can be held at room temperature for a few days. Use within three weeks.. Preparing: Exposed apple flesh quickly discolors unless it is rubbed with lemon or other citrus juice. Since the skin of the apple contains so many nutrients, it is a good idea to leave it on when possible.
The fall is time for comfort food: warm yourself up by cooking more substantial dishes. When the warm summer sun starts to dwindle in intensity and the mercury drops, we begin to think of comfort food and the cozy smell of simmering fall dishes on the stovetop. Gone are quickly tossed summer salads; this is the time for “slow cooking”, when dried garden herbs and farm-fresh vegetables and meats offer the substantial calories and comfort that cooler weather requires. Warm-weather cocktails make way for steeped tea and full-bodied wine, although with a space heater or a thick blanket, one can still wrap up and enjoy a before-dinner drink from the deck or gazebo. In the kitchen, apple and squash take pride of place. Beyond the traditional apple pies and preserved apple sauce made to carry you through the winter, try adding apples to savoury dishes. Quartered apples are delicious when placed under a roasting loin of pork, along with sliced onions and a soy sauce and ginger marinade. Or try diced apple and halved walnuts in cooked rice or a green salad. All kinds of squash are available at fall farmers’ markets, including pepper squash, butternut, buttercup, acorn, spaghetti, or Hubbard. They are delicious cooked in bouillon and blended into a creamed soup or roasted slowly in the oven until tender. Their flavours marry perfectly with spices such as cinnamon, nutmeg, or even ginger. Meat pies and succulent slowly braised cuts of beef or pork can be made from traditional family recipes or bought prepared from caterers. Whatever your inclination, fall foods mean comfort and home.

INGREDIENTS: 6 large eggs 2 Tbsp. 2% milk 1 or 2 green onions, finely chopped 2 Tbsp. butter 4 cheddar scones 4 lettuce leaves 8 slices of ripe tomato Salt and freshly ground black The addition of scrambled egg pepper to taste and tomato turn cheese scones into tasty breakfast sandwiches.

Make a classic diner meal by serving these sandwiches with crinkle-cut fries (sold in the frozen foods aisle) and coleslaw (available in our deli). Or, create a lighter meal by pairing the hot sandwich with a bowl of mixed green salad dressed with your favourite homemade or storebought salad dressing.
METHOD: Preheat the oven to 425 degrees F. Place the pork in a roasting pan; season with salt and pepper. Roast 20 minutes. Reduce heat 325 degrees F; roast 45-60 minutes more, or until pork reaches an internal temperature of 160 degrees F. When cooked, place the roast on a plate, tent with foil and let rest 10 minutes before thinly slicing. Drain the excess fat from the pan and set on the stovetop over medium-high. Whisk the stock and flour together in a bowl. Pour into the pan and bring to a simmer; simmer 5 minutes. Divide the bread slices among plates. Mound slices of the pork on top. Drizzle with the gravy and serve.

Harvesting a Zero Carbon Footprint DUCHESS OF DIRT By Leslie Cox We live in a wonderful region of Vancouver Island. And at almost no other time does this sink home than right now…harvest time. Surrounded by farms as we are, it is all about the freshness. Local vegetables and fruits have superior taste because they are allowed to ripen where they should…on the plants instead of inside shipping containers. Not to be left off the menu…meat is easily accessible too. And no feed lots here. Cows, sheep and goats dot pasturelands everywhere just outside city limits. Another bonus to buying locally is the beneficial effect this has on our planet. Reducing the number of miles food has to travel to our plates, commonly translated into ‘food miles’, is an aspiring goal for many consumers who strive to lower their carbon footprint. Or are we? The scuttlebutt surfacing now argues that lower food miles does not necessarily mean a lower carbon footprint because the production costs are not factored into the equation. Many are saying they should be. The reasoning makes sense. There is an environmental cost to running farm equipment as well as in the production of synthetic fertilizers and food packaging materials. One report compared the cost of lamb produced in Great Britain to that produced in New Zealand and shipped via airfreight to
England. When production costs were factored in as part of the food miles, the New Zealand lamb came out cheaper. Surprised? We do not often think about the “hidden” costs incurred in food production. Perhaps it is time we did. But to be fair to the farmer, they have a tough time of it already. They need our support. Let’s hope they are also working to reduce their carbon footprint on the farm which would make the food miles on the end product low enough to suit everyone’s standards. Time…it marches on. You should be collecting seed for next year’s seedlings now. Look for ripe seed and stay away from plastic bags for storage. The handy zip-lock feature is enticing to prevent spillage but plastic promotes mould and mildew. Store seeds in paper bags or envelopes. Be sure to label each one promptly with plant name and the year. Noting the year is helpful because many seed types remain viable for at least two years. Some exceptions are: alliums (onions and leeks), parsnips, carrots and parsley. They are only viable for one year. Others such as broccoli, cabbage, beets and squash are viable for up to four or five years. One word of caution…and I know I have mentioned this before, but…doublecheck the varieties you are collecting seeds from are open-pollinated. As an example, most squash on the market these days are hybrid varieties specifically bred for improved flavour
and disease resistance. You can collect seeds from hybrids but the plants you grow next year will be a throw-back to one or the other of the parents…and probably nothing like the plant you grew this year. Want to keep the birds from stealing your sunflower seeds? Cover the seedheads with cheesecloth. The seeds are best dried on the plants and are easier to remove when the plant is allowed to die back naturally. As for all those green tomatoes on the vines… dig up the plants and hang them upside down in a cool, dark place to finish ripening. Another alternative… pick all the fruit and layer the tomatoes in a large box between sheets of newspaper. Just remember to check for ripening ones regularly. Or even better, make green tomato mincemeat…an absolute treat at Christmas time, especially with a generous splash of brandy added before sealing the jars and processing. Our summer was almost non-existent this year but the short burst of heat was enough to dry out the garden substantially. Keep an watchful eye on your shrubs and trees as many may suffer and/or die if we do not get enough rain this fall. Rhodos, for instance, will have a reduced bloom next spring if they do not receive enough water in the fall. And keep hedges hydrated, especially cedars. They are an indigenous tree species but our rainforest climate is slowly heading towards a drier one.

The positioning of artwork should be well thought out as it is a reflection of your own unique personality. A work of art can be the focal point of any room if it is hung in the right setting. The perfect positioning of a painting can transform a room into a place of beauty. Here are the three golden rules to unite art with decoration.
POSITIONING In the past, artwork was always supposed to be centered on the wall at eyelevel but this is certainly not the case these days. Sometimes, it can be interesting to distort the perspective. For example, in a decor which is overly harmonious, a piece of art can be placed off-centre, on a low piece of furniture such as a footstool, in order to change the perspective and to distract the eye from the overly structured aspect of the room. However, one rule still remains for positioning paintings: large pieces of artwork need lots of space. The bigger the painting, the more room it needs so that it can be admired at a distance. A large painting cannot be properly displayed if it shares the wall with other works.
LIGHTING Always choose lights that have been designed to illuminate artwork. Adjustable spotlights are useful for contemporary works. For more classic paintings, incandescent picture lights which give a softer, slightly yellow light can be very effective.
MOVE THEM ABOUT Renew your pleasure over and over again by moving artwork from one room to another. One day on the mantelpiece, the next on the staircase… but before you rediscover your paintings be sure that your colour scheme is understated, particularly for large works or colourful paintings.

Wood Furniture Shopping Nothing looks better than natural wood furniture to bring warmth and elegance to a room. A well constructed piece of furniture will last a long time and become an heirloom for generations.
There are questions you should ask yourself before you go shopping for wood furniture, also called case goods. The following basics should all be considered before you buy: budget, wood type, finish and quality.

When we purchase furniture the primary focus is on the type of wood. All wood furniture is made from either hardwood or softwood. Hardwoods are very durable and will stand up to wear and tear over time and are typically more expensive. Softwoods like pine or fir will scratch and dent easier and generally are used in more casual, less formal pieces.
More & more decorators are using an eclectic style – meaning mixing a number of styles within a room. A room can appear more ‘collected’, and add interest to the space if different styles are used within the space. Buy the style that you love.
You will discover a wide array of long lasting, top quality furnishings created with solid wood and genuine wood veneers. Conversely, ready-to-assemble furniture is the most cost effective because it comes in parts that have to be put together by the purchaser. In the event that low price is your priority, this is a good choice for purchasing home furniture.
6. What kind of finish is on the wood? The finish on furniture can enhance the natural look of wood or change it completely. Oil or wax finishes will let the wood shine. Lacquer is used for more durability. Gilding, painting and inlays can change the look of a piece as well. In any case, the finish should be smooth to the touch (unless it’s distressed). Inspect the finish from different angles: The finish should be clear and uniform in color with no visible lines, dark spots, dents, or bubbles.

Judith Moore Interior Design 250-941-0262 www.jmid.ca When my husband and I renovated we used stone extensively throughout the home - both of our fireplaces have it on their facades and on the outside we finished our chimney and arches with a beautiful brick. The fact of the matter is, we didn’t use “real� we used ‘faux’/manufactured’ stone because we loved the look. We subsequently discovered that our talented Master stone mason (Rick Girard) who is a purist, actually enjoyed working with the product - for several reasons: 1. Each piece is substantially lighter than the “real� thing (easier on the knees and shoulders when carting up a ladder), 2. Easy to cut and trim to fit in those awkward spots - (you don’t need the heavyduty expensive blades for cutting) and, 3. Most company’s create pieces with corners and edges ‘built-in’ which saves a lot of cutting, frustration and labour. 4. Each manufacturer has specific sizes and configurations that work for most applications Our contractor liked it as well. When he gave us a quote for doing all of the “stone work� we were pleasantly surprised at the reasonable price for product and installation. I am presently designing a fireplace, complete with over-mantle for a client and

as we will be using stone I knew it was time for me to do some research. Not only to find out if the “faux/ manufactured� product and/ or its specifications have changed but also to find out if we should go the real route for my clients fireplace. (The wife immediately suggested to her husband that we use River Rock in the Living Room - he visibly balanced as this wasn’t the look that he had visualized ! ! she was quite naughty as she knew that was his least favourite look for their home - a
gotcha moment). I found many more suppliers than when we did our renovation and they have designed and created an extensive range of styles and colours (I am still pleased with the choices we made five years ago). While doing my research I was told, in no uncertain terms, that I was in error by initially calling these stone products “faux/ manufactured� - CULTURED stone is the correct term (wonder if that means they were educated in Europe or have a Master’s Degree).
