HAPPY HOLIDAYS

For busy moms or dads, these sliceand-bake logs are a cinch to make. Let the kids have a field day making them look like Christmas. Number of servings: 3 1/2 to 4 dozen (2 1/2 inch) cookies Ingredients: 1. Thoroughly stir together, then set aside: • 375 ml (1 1/2 cups) all-purpose flour • 7 ml (1 1/2 tsp) baking powder • 1 ml (1/4 tsp) salt 2. Using an electric mixer, beat until very fluffy and smooth: • 160 ml (2/3 cup) unsalted butter, softened • 160 ml (2/3 cup) sugar 3. Add and continue beating: • 1 large egg

• 10 ml (2 tsp) vanilla • 1 ml (1/4 tsp) finely grated lemon zest (optional) Method: Beat in the flour mixture until just smoothly incorporated. Cover and refrigerate until slightly firm, 20 to 30 minutes. Place the dough on a long sheet of wax paper. With lightly oiled hands, shape into an even, 28 cm (11-inch) long log. Roll up the wax paper, twisting the ends to keep from unrolling. Place on a tray and freeze until completely frozen, at least 3 hours. Use immediately or transfer to an airtight plastic bag and freeze for up to 1 month. To bake: preheat the oven to 190 ºC (375 ºF). Lightly grease cookie sheets. Carefully peel the wax paper off the log. Cut into 0,25 cm (1/8 inch) thick

slices, then immediately transfer the slices to sheets, spacing about 5 cm (2 inches) apart. Bake, 1 sheet at a time, on the upper oven rack for 7 to 10 minutes, or until cookies are golden all over and just slightly darker around the edges. The longer the baking time, the crisper the cookies. Transfer sheets to wire racks and let cookies firm up slightly. Then, transfer the cookies to wire racks to cool completely. CHRISTMAS TRADITION

SUPER CHOCOLATE FUDGE 1 package (350g) semi-sweet chocolate chips 1 can sweet condensed milk 1 1/4 cups icing sugar 1 tsp vanilla 1/2 cup nuts (chopped) pinch of salt In saucepan, over low heat, melt chocolate chips with milk. Stir in remaining ingredients. Spread evenly in a waxed paper lined 8inch square pan. Chill 2 to 3 hours until firm. Turn fudge onto cutting board. Peel off paper and cut into squares. DID YOU KNOW? Many Christmas traditions are older than some celebrants might think. The tradition of lighting up a Christmas tree, for example, dates back to the days before Christmas lights. Before electricpowered twinkle lights were invented and even before electricity was discovered, people used actual candles to adorn the Christmas tree. As one can imagine, having an open flame next to a dried-out tree made for some fast fires. That’s why it was customary to keep a bucket of water next to the tree as well. As if fire wasn’t enough, the tinsel used

to decorate trees was made from strips of silver and even lead -something that is now known to be a health hazard to adults and children alike. Although we’ve come a long way from candles and lead, trees that are overly dry paired with lights that have frayed wires can just as easily lead to fires. Plus, plastic tinsel can be a choking hazard for children and pets. One Christmas staple that has lost its status as a safety hazard is the poinsettia plant. Poinsettias are a tropical plant that have become a fixture during the Christmas sea-

son. It has long been thought that poinsettias are poisonous to people and animals. While there is some toxicity to the plant, it would require the ingestion of hundreds of leaves to get a toxic dose of a plant’s poison. Ingestion may simply cause a case of vomiting or diarrhea instead. But poinsettia leaves are said to have an unpleasant taste, so one bite and most children and animals will probably turn away. Perhaps one of the biggest hazards come Christmas -- both then and now -- is not having enough turkey or eggnog to go around for holiday guests!

ALMOND TOFFEE BARK Created by Almond Board of California Ingredients: 4 cups (1 L) sliced almonds 1/2 cup (125 mL) unsalted butter, softened 1 1/2 cups (375 mL) sugar 1/3 cup (60 mL) water 1/2 teaspoon (2 mL) vanilla 1/4 teaspoon (1 mL) salt 1 pound (454 g) fine-quality bittersweet chocolate (not sweetened) 1/2 pound (227 g) fine-quality semi-sweet chocolate 3 oz. (90 g) milk chocolate or white chocolate (optional) Preparation: • Preheat oven to 400°F (200°C) degrees and oil Merry Christmas from our house to yours.

Let cool. • In a large heavy saucepan bring butter, sugar, water, vanilla, and salt to a boil over moderate heat, stirring with a wooden spoon. Boil mixture, without stirring, until deep golden, about 12 minutes. • Remove pan from heat and stir in 2 cups (500 mL) of the toasted almonds. Immediately pour onto reserved baking sheet. Spread evenly

and then place into the refrigerator until set. • Chop chocolate. In a hot double boiler, melt chocolate until smooth. • Pour chocolate over cooled almond toffee and spread evenly with an offset spatula. Sprinkle top with remaining almonds. If desired, drizzle top with melted milk chocolate or white chocolate for contrast. Chill uncovered until firm, about 1 hour. • Break toffee into pieces of bark. Keep layered between sheets of parchment paper in an airtight container at cool room temperature or chilled for 1 week.

BRUSCHETTA WITH SMOKED CHICKEN AND GRAPES (NC) — Bruschetta can tingle the taste buds when given a modern California twist. Ingredients: 3 cloves minced garlic 1/2 cup extra virgin olive oil (125 mL) 1/4 tsp salt (1 mL) 1 French bread baguette 8 oz smoked chicken breast (250 g), either shredded or cut into bite-size strips 12 oz grated Fontina, Port Salute, or Monterey Jack cheese (375 g) 1 1/2 cups red, green or blueblack halved California seedless grapes(375 mL) 1 tbsp snipped chives (15 mL) 1/2 tsp freshly ground black pepper (2 mL) Directions: 1. Pre-heat oven broiler 2. In a small bowl combine garlic, olive oil and salt. Set aside. 3. Slice baguette into 1/2inch (1.5 cm) thick slices. Brush baguette slices with garlic oil and place on cookie sheet. Toast in broiler about 1-2 minutes on

each side until golden brown. Remove from broiler. Bread should be crisp on the outside, but still soft in the centre. On each slice of bread place about 1 tbsp (15 mL) chicken breast and 3 grape halves, then top with 2 tbsp (25 mL) grated cheese. 4. Place cookie sheet about 8 inches away from broiler and broil for 2-3 minutes until cheese is melted and bubbly. Place on serving platter and sprinkle with snipped chives and pepper. Makes 24 pieces.

MISTLETOE Most people have heard of mistletoe, particularly at Christmas time. It is a plant which often grows on other trees and shrubs. The white berries are full of a sticky juice. There are lots of legends and traditions surrounding mistletoe, the most well known and popular being the kissing one. It was believed that kissing under the mistletoe would lead to marriage.

In ancient times the Druids believed that mistletoe would bring good luck and health. Although it has been used to treat some ailments, the berries are in fact poisonous and should not be touched by children. Mistletoe has also been associated with fertility, a good crop being a sign that the following season’s harvest would be a good one. www.comoxvalleyrecord.com

Ingredients: • 30 ml (2 tbsp) olive or vegetable oil • Cornmeal, if desired • 3 or 4 fresh rosemary sprigs • 12 frozen white bread doughrolls (from 1.5 l (48 oz) package), thawed • 15 ml (1 tbsp) grated Parmesan cheese Directions: Brush 2 cookie sheets with olive oil; sprinkle

Break 36 small clusters of rosemary leaves off rosemary sprigs. Using 3 clusters for each breadstick, insert stem end of each cluster 0.5 cm (1/4 inch) deep into top of breadstick. Sprinkle cheese over dough. Cover loosely with plastic wrap and let rise in warm place about 30 minutes or until almost double. Heat over to 175 °C (350° F). Bake 12 to 15 minutes or until light golden brown.

CHRISTMAS TREE

The practice of tree worship has been found in many ancient cultures. Often, trees were brought indoors and decorated to ensure a good crop for the coming year. Trees have also been linked to divinity. Egyptians associated a palm tree with the god Baal-Tamar, while the Greeks and Romans believed that the mother of Adonis was changed into a fir tree. Adonis was one of her branches brought to life. The modern Christmas tree was likely born in the 8th century,

when St. Boniface was converting the Germanic tribes. The tribes worshipped oak trees, decorating them for the winter solstice. St. Boniface cut down an enormous oak tree, that was central to the worship of a particular tribe, but a fir tree grew in its place. The evergreen was offered as a symbol of Christianity, which the newly converted Germans began decorating for Christmas. Prince Albert, who was German, introduced the Christmas tree to England after his marriage to Queen Victoria in 1840. German immigrants to Pennsylvania brought Christmas trees to America.

SCOTCH SHORTBREAD 1 cup butter (soft) 1/2 cup sugar 2 1/2 cups flour (sifted) Mix butter and sugar together until creamy. Sift flour, stir into butter and mix. Chill dough until cold. Roll out to 1/2 inch thick. Cut into fancy shapes with cookie cutters. Bake on ungreased baking sheet at 300F. For 20-25 minutes.

In small bowl, beat eggs, brown sugar and salt until thickened, about 3 mins. Stir in remaing ingredients, mix well, pour into un-greased (8inch) square cake pan. Bake at 350F. For 20-25 min. Cool, cut into squares. Recipe submitted by Louisa Jones

SWEET AND SPICY CAJUN ROASTED PEANUTS (NC)—Drop-in guests are the best, but it’s nice to have something on hand to serve with a drink. These dressed up peanuts go perfectly with beer or cocktails. More great recipes can be found online at www.peanutbureau.ca. Prep time: 5 minutes Roasting time: 20 minutes Makes 2 cups (500 mL) Ingredients: 1 egg white 1/4 cup (60 mL) granulated sugar 1 tsp (5 mL) Kosher salt 1 tsp (5 mL) dried thyme leaves 3/4 tsp (4 mL) each cayenne and garlic powder

2 cups (500 mL) unsalted peanuts Directions: 1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. In a medium bowl, whisk egg white until frothy. Then whisk in sugar and seasonings (if you only have garlic salt, add only 1/4 tsp (1 mL) salt) until blended. Add peanuts and stir to coat. 2. Spread peanuts out on prepared baking sheet. Roast in preheated oven, stirring a couple of times until nuts are golden brown and mixture is barely sticky, 20 to 25 minutes. Taste, adding a little more salt if needed. Cool completely, breaking up nuts as they cool. Store in an airtight container for a couple of weeks.

RUDOLPH THE RED-NOSED REINDEER Rudolph, “the most famous reindeer of all,” was born over a hundred years after his eight flying counterparts. The red-nosed wonder was the creation of Robert L. May, a copywriter at the Montgomery Ward department store. In 1939, May wrote a Christmasthemed story-poem to help bring holiday traffic into his store. Using a similar rhyme pattern to Moore’s “’Twas the Night Before Christmas,” May told the story of Rudolph, a young reindeer who was teased by the other deer because of his large, glowing, red nose. But, When Christmas Eve turned foggy and Santa worried that he wouldn’t be able to deliver gifts that night, the former outcast saved Christmas

by leading the sleigh by the light of his red nose. Rudolph’s message-that given the opportunity, a liability can be turned into an assetproved popular. Montgomery Ward sold almost two and a half million copies of the story in 1939. When it was reissued in 1946, the book sold over three and half million copies. Several years later, one of May’s friends, Johnny Marks, wrote a short song based on Rudolph’s story (1949). It was recorded by Gene Autry and sold over two million copies. Since then, the story has been translated into twenty-five languages and been made into a television movie, narrated by Burl Ives, which has charmed audiences every year since 1964.

The Poinsettia is a popular holiday plant, native to Mexico. It is noted as having large, red star-shaped flowers. In Central America it is known as the Flame Leaf or Flower of the Holy Night. Legend has it, Pepita, a poor Mexican girl with no gift to offer the Christ Child on Christmas Eve picked a bouquet of flowering weeds along the roadside. When she placed them at the foot of the nativity scene they burst into red blossoms. From that day on, the bright red flowers were known as the Flores de Noche Buena, or Flowers of the Holy Night.

HOT CHOCOLATE TRUFFLES Serving: 3 1/2 to 4 dozen truffles These hot truffles are not burning hot, just a warm mouthful of melted chocolate encased in a sweet crusty shell. Ingredients: • Chocolate ganache: • 450 g (1 pound) semi-sweet chocolate • 250 ml (1 cup) hot whipping cream • For frying the truffles: • Peanut oil Coating: • 500 ml (2 cups) sifted flour on a plate • 3 eggs beaten with a pinch of salt in a wide bowl • Crumb mixture on a plate: • 375 ml (1-1/2 cups) fine white bread crumbs • 375 ml (1-1/2 cups) sugar • 60 to 80 ml (1/4 to 1/3 cup) cinnamon Directions: Ganache: Melt the chocolate over hot water. Stir the chocolate until it is completely smooth, then stir in the cream. Remove the chocolate pan from the water pan

and let set half an hour, then cover and refrigerate until chilled. Truffles: Scoop out 15 ml (1 tbsp) gob of chocolate with a melon baller and roll in the palms of your hands to make balls 2,5 cm (1 inch) in diameter. Arrange the balls on parchment-lined cookie sheets and place in the freezer for 1-1/2 hours. Remove the chocolate balls from the freezer and roll 4 at a time in the flour, then roll one at a time in the palms of your hands. Next, roll the balls in the beaten eggs, coating them completely. Finally, roll the balls in the crumb mixture, coating them completely, and then one by one roll them firmly in the palms of your hands. Freeze for an hour. Heat the peanut oil in a heavy saucepan to 175 ºC (350 ºF). Lower 4 truffles at a time into the hot oil; let brown and crust for about 10 seconds, then drain on paper towels.

CHRISTMAS CAROLS When St. Francis of Assisi created the first “creche” or Nativity (manger) scene, he and others sang the first carols. Most carols were handed down by word of mouth for hundreds of years. Most of the early carols were about Mary, the shepherds, the Magi and the birth of Jesus . Later carols were sung by groups of people who would go to homes and sing in harmony.
