In a painting by the 18th Century French artist, Chardin, two young children are sitting down to eat.

It was very hot in Moree where I grew up, but Mum used to cook the most amazing things on the fuel stove.”

The table is elegantly laid with a white cloth and silver cutlery and the little ones are under the close supervision of a maid.

Russel has rather unfortunate memories of fuel stoves.

It is 1740 and they are learning table manners.

In her kitchen was a huge table taking up most of the room, and placed right next to the equally enormous fuel stove.

Meals were a social ritual, especially for the wealthier classes.

When Mrs Beeton wrote her book on Household Management in 1861, table manners were considered an essential part of one’s education.

This was a far cry from The Middle Ages when there was little ceremony attached to the consuming of food.

The one essential then was that you didn’t get too greasy when tearing meat apart with your teeth and fingers.

Not long ago, the Oral History group members examined their collective memories and looked at the way food and its consumption has changed in their lifetimes.

The 1940s, 50s and 60s were very different, both socially and economically from today.

Up until the early 1950s, there was no television, little refrigeration, and not everyone had telephones.

Life was very much more ordered with a definite division of labour in most households.

Mealtimes were generally at the same time each day, table manners strictly observed, and food changed little from day to day.

“We always had a clean tablecloth and said ‘grace’ before meals,” said Leslye.

“Butter was on a little plate and we were always warned not to take too much as ‘that is all there is’.

“I had a great aunt Millie who loved to invite the family for Sunday lunch.

There were ten at the table and we were served a roasting hot meal in the middle of summer with the thermometer at 110.

My Uncle Tom didn’t drink but he took pity on me and put four bottles of beer on the table, tops off, at room temperature! It took me a week to recover.”

Lyn lived in Yeovil and her father had an extensive vegetable garden. “ If it wasn’t in the garden, we didn’t eat it,” she told us.

This was echoed by most people in the group.

Everyone seemed to grow their own, even in Sydney where Bronwyn lived on the outskirts of the city.

“We had a veggie patch, chooks, and a cow from which we had milk cream and butter.

We were very self-sufficient, never had ‘take-a-ways’, and always took our lunch to school.”

“I was a Depression kid, one of four boys living in Sydney,” Stuart told us.

We had an extensive vegetable garden with a beautiful peach tree.

One of my best memories was of climbing that tree, picking a ripe peach, and sitting high in the branches to eat it.

Nothing tasted so good!

We had rows of potatoes, beans and peas and always had a baked dinner

Changes in FAMILY LIFE: No. 1 Food and Eating on Sundays.

There was a shop a few hundred yards away and I was given the job of taking the billy can after we’d eaten, going to the shop for several scoops of ice cream, and come running back with it before it melted.”

Monica grew up on an isolated property near Eugowra.

“My background was French/Italian so the food we ate was slightly different from the usual meals and spaghetti was an important part of our diet., she said.

“We had a huge vegetable garden and an orchard, and like most people, we ate what we grew.”

(Most of our group members could only remember eating spaghetti out of a tin , without the benefit of the delicious sauces that Monica was used to.)

Barbara, who grew-up in Cargo and was the eldest of ten children remembers a wonderful childhood, filled with big gatherings of aunties and uncles and cousins .

“There were 74 of us at the Xmas gathering of 1974.

Mum and her sisters were wonderful cooks and, because they all thought our fuel stove was the best, they came to our place to cook their cakes and puddings .

I can remember Mum taking the last cake out at 11pm.”

Owen probably had the best Xmas pudding story to tell.

“There were eight children in the family, but we didn’t eat with the adults and always went to bed early.

“My wife, Isabel, also had two sisters and the three of them prided themselves on their cooking. They were also very competitive about Xmas and took turns to entertain the family.

We mostly ate mutton and the occasional chook although we had a change when my oldest brother decided he wanted to grow peanuts.

This particular time it was our turn. The first course was a success and my wife and I went to the kitchen to prepare Aunt Mary’s pudding.

Unfortunately, the pig got into it and ate the peanuts, Dad shot the pig, and we all had a lovely lot of bacon.”

My job was to pour over the brandy and set it alight. I grabbed the brandy bottle, poured liberally, and then to my horror, discovered vegetable oil had been put into the bottle.

But It was at Christmas time that Mum would really excel.

“Our Xmas pudding would be made and hung in the back room about six weeks before,” said Tom. Everyone was enthusiastic about the silver coins which were put into the pudding in those days.

Independence the key Independence is a wonderful thing, September Council candidate, Melanie McDonell believes.

With her green credentials intact after her seemly split from the minor-major party earlier this year; Mel believes that the current 12-month extended Council has no mandate to approve removal of more than 500 trees from south Orange for the proposed sports stadium on the site.

The high-profile “mock councillor” from Orange City Life’s "Council Game" initiative, is looking forward to the local government poll, hoping to ride the wave of change that has swept the Colour City over the past four years.

“I’m now independent and I’ve got my No.2, Bridget Healey; and No. 3, Granton Smith; for my ticket,” Mel said excitedly, describing the public reaction to her dropping-out of the Green’s top-slot as “amazing”.

Serving a nine-year apprenticeship — returning to Orange after completing a nursing degree — on Council’s Environmental Sustainability Committee, she believes that the extraordinary meeting on Monday, June 28 to discuss removal of about 250 trees from the south Orange site of the proposed stadium, is an extraordinary-bad move from a Council lacking authority.

“I want to get Orange better connected,” she explains. “I’ve been here 10 years and we need better connectivity.”

“Absolutely, if COVID hadn’t happened (causing the 12-month delay to the local government elections) a lot of those councillors wouldn’t be there,” she said emphatically.

“There’s a lot of young families, and there’s simply no proper footpaths to get around on,” she said. “Kids won’t be able to ride their bikes to school because their parents won’t let them because it’s too dangerous.

She believes that splitting the tree removal from the approval process of the stadium proposal — unlikely to be voted on by this Council — makes it doubly-dubious.

“They shouldn’t be deciding on, in what is essentially a caretaker mode, such a divisive issue. It’s not just about the trees, it’s the traffic,” she about the proposed 8500-capacity rectangular football ground proposed to be built adjacent to the Hospital precinct.

“We’ve got specialists who, even now, complain about the traffic and getting to emergencies, how’s it going to be with a full stadium crowd emptying onto those streets in south Orange?” the private practice nurse said.

“These were the candidates I had in mind when I went independent, all the feedback has been incredibly-supportive; comments from people of all walks of life saying that parties have no role in local government,” she said.

“The tree removal should not have been separated from the stadium proposal, that was another mistake,” she said.

Orange’s booming suburbs, she believes are far too cardependent with such simple answers as good footpaths, bikefriendly roads, and regular bus services, lagging too far behind development.

“All throughout Orange, we need better connectivity.”

With an environmentally-sound house in west Orange (with a 7.3 environmental rating) Melanie believes in a practical approach to the local environment. “It’s super-insulated and I designed it myself to be as enviornentally-friendly as possible,” she explained.

With only one woman currently on Orange Council — first-termer Joanne McRae — she supports calls for more women and other less-well-represented groups to run for Council.

“I encourage other women to run for Council, it would be good to have a wider representation of people on Council,” she said.

“I’m still the same person with the same policies, but political parties have a lot of baggage attached to them, it’s why we’re getting so many independents in State and Federal Parliament.

Connectivity between the Colour City’s growing suburbs and the town centre is another key environmental issue facing Orange, Melanie believes.

“Currently, we don’t have a level of diversity on Council which truly represents the reality of the Orange community in 2021, which is 51 per cent female, includes many young families, tree-changers, First Nations families, people with a disability, and people from diverse cultural backgrounds.

“People are saying that they can’t identify with a major party and, being independent, you have so much more flexibility, people have been incredibly positive,” she added.

She said that, providing better integration between our old town centre and the new suburbs springing-up to the west and north of Orange, is a key environmental challenge facing the growing city.

“I would love to see some strong competition for the September Council elections, with each of these groups represented and a range of experience amongst the candidates.”
