Gnarly Dudes – Old and Ancient Vines

Wednesday

In the mid-19th century a vine disease named Phylloxera ravaged European vineyards decimating the vines that had been planted and tended to for centuries. Most vineyards were uprooted and replanted with new vines grafted to North American grapevine species at the roots. Few vineyards throughout the world survived the plight of Phylloxera. Today, there exists small pockets in California, Spain, Australia and areas in Southern France where grapevines have reached the gnarly age of 100 years or older. These vines produce very small quantities of very high quality grapes chock full of complex characteristics and deep flavour concentrations. Not all vines produce quality wines with ancient vineyards but there are a select few that seem to thrive: Zinfandel, Grenache, Syrah, Carignan, Clairette are a few among others.

In 1914, the advance of the Germans on Paris was literally stopped by an extraordinary amount of Champagne. The Germans chose to drink in Champagne, celebrating their victories too soon. The French armies were able to regroup and force the hungover German army to retreat. For the next 4 years the vineyards of Champagne would suffer through artillery bombardments on a daily basis.

Italian Proverb One barrel of wine can perform more miracles than a Church full of Saints.

Seasonal One Pot Dishes The autumn and winter seasons bring a harvest of ingredients and a bone chilling cold. Here are some warm and comforting recipes that highlight these two seasons. These recipes are also one-pot creations, making execution, serving and clean-up a simple process. We’ve added our favourite pairings along with them

Alberta Fall Chowder 1 small chopped white onion 3 strips of bacon, chopped 1 potato, cubed 1 carrot, chopped 1/2 cup of water 1/3 cup chicken stock 1 cup milk

Beer and Bacon Steamed Mussels 1/2 cup corn kernels, canned or frozen few cracks of fresh pepper 3 teaspoons all-purpose flour splash of cold water 3/4 cup grated marble cheese

Brown bacon in a saucepan until crisp. Remove and place on paper towel to dry. Drain most of the fat, leaving a couple teaspoons. Sauté onions until tender. Add potato, carrot water and stock. Bring to a boil. Reduce heat and cover, simmering until almost tender. Stir in milk, corn and cracked pepper. Cook further a few minutes. Gradually whisk the soup. Increase heat and cook until desired consistency. Remove from heat source and stir in cheese until melted. Garnish with sprinkled bacon. This creamy texture requires a wine with a consistent texture. Stay away from tannic reds and pair with a creamy, buttery chardonnay, warm climate Viognier or contrast with a fresh and zippy Sauvignon Blanc to cleanse the palate.

2 lb fresh mussels 1 Tbs. butter 1 slice thick bacon, coarsely chopped 1 stalk celery, diced 1/2 small onion, diced 1 bay leaf

1/2 lemon for juice 1 bottle of Wit bier or similar style 1/2 handful of celery leaves, finely chopped 1/2 handful of parsley leaves, finely chopped

Wash mussels, pulling off any beards. Discard any non-living mussels; check by tapping. If they don’t close throw away. In a Dutch oven, melt butter over medium heat. Sauté bacon, celery, onion and bay leaf, stirring often and until vegetables are softened and aromatic. Squeeze juice from lemon into pan; add remaining lemon. Add beer and bring to boil. Toss in mussels, lower heat and cover to simmer until mussels open. Discard any that do not open. Discard lemon and bay leaf. Stir in celery leaves and parsley. Pair with your favourite Weisse Beer or Italian white for an ultimate pairing! For the adventurous try Muscadet Sevre et Maine.


Braised Pork Shoulder with Cider and Parsnips a heafty drizzle of olive oil a couple pounds of pork shoulder, diced 2 yellow onions, sliced 2 celery stalks, chopped 3 parsnips, cut into chunks

2 bay leaves 1 Tbs. plain flour 1 bottle or can apple cider no more than 400ml 1 litre chicken stock, low-sodium or no added salt chopped parsley, about a handful

Preheat the oven to 350°F. In a Dutch oven or deep and wide pot preheat and drizzle with oil. In a slow progression, sauté onions until translucent then add the celery, parsnips and bay leaves and continue to sauté for 10 minutes until golden brown. Sprinkle in the flour and stir assertively to incorporate. Add the pork and any juices back to the dish. Add liquids and vegetables to cover meat. Jostle the pot to allow vegetables to fall in between meat. Season and bring to a simmer, then cover and put in the oven for 2 hrs. Sprinkle with parsley and serve on its own or with long-grain rice, mashed or roasted potatoes, or even roasted yams. Ultimate pairings would include Off-Dry Riesling, oaky California Chardonnay or for the red lover, Oregon or Okanagan Pinot Noir. Juicy Zinfandel might do the trick here too!

BlackBerry Pie Pockets Recipe contributed by The Purple Pastry Chef

Pie Dough 2 1/2 cups unbleached flour 2 Tbs. sugar 1/4 Tbs. salt 1 cup cold unsalted butter cut into small cubes 6 Tbs. cold water

Filling 2 1/2 cups blackberries 2 Tbs. corn starch 3 Tbs. sugar 4 Tbs. creme de casis

Stir together flour, sugar and salt. Add butter and mix on low speed until the texture resembles coarse cornmeal. Add the water and mix until just incorporated. Chill dough for up to one hour. Roll dough and cut into 4-inch rounds with knife or cookie cutter.

In a bowl toss all ingredients together. Lay the dough rounds on baking sheet lined with parchment paper. Divide the blackberries evenly onto 6 dough rounds. Dampen the edges of the dough rounds with cold water. Lay the remaining dough rounds over the blackberries. Gently press the top of each dough round over the berries. Using a fork, press the edges of the dough rounds together. Refrigerate 15-20 minutes. Bake at 375°F for approximately 30 minutes until golden brown. Serve warm or cool. Makes 6 Servings.

Private Events • Our tasting rooms can fit 34 comfortably. • Basic room rental for private meetings with no alcohol served is $200, plus GST. • Private wine tasting for a minimum of 12 people with six wine styles and light snacks start at $45 per person. Rather than bartending services, we provide your guests with an educational tasting experience they won’t soon forget. • All private events can have customized themes. • Catering can be arranged through us. We have a selection of caterers that we work with and can arrange anything from simplistic to elegant. • Our tasting rooms have full hook-up for VGA connections.

Co-op Wine Spirits Beer Tasting Event Rules and Regulations All participants of Co-op Wine Spirits Beer events must be 18 years of age or older and may be required to show identification. Due to unforeseen circumstances, we reserve the right to postpone or cancel events. Customers will be notified as quickly as possible and given the option of being reimbursed for their tickets or rebooking into another event. We regret that we do not offer refunds for missed classes. Refunds or alternate events may be offered if notified 48 hours prior to the event. As all events involve the consumption of alcohol, we remind you that your well-being is of the utmost concern to us and ask that you arrange for transportation to and from the event should you require it. Most tasting events begin at 7pm unless otherwise stated. We ask that you please arrive promptly, so you and others can fully appreciate the event. We also ask that you refrain from wearing heavily scented perfumes or colognes. Thank you in advance for your cooperation. Class and event prices do not include GST.
