Join us for a spectacular flight of premium Bordeaux from the 2012 vintage. If you love big reds and want a glimpse into the often-convoluted world of Bordeaux, then this should be right up your alley. A somewhat cool and wet vintage left some winemakers reeling, but we got our hands on some hidden gems that are turning out to be stunners. We will dive deeper into vintage conditions and share the stories of our favourite Chateau’s.

2012 MASI CAMPOFORIN 155051 Masi are regarded as the pioneers of the appassimento winemaking technique with the Campofiorin offering dating back to 1964. An extension of the Valpolicella red wine the ripasso process adds considerable depth of character to the wine and longevity. Made with Corvina, Rondinella and Molinara grapes the 2012 is also a unique value wine for the cellar obtaining a 5 star rating from all members of the Masi technical group who by proxy have to all agree that the vintage warrants the rating. I personally helped consume a 1997 Campoforin in December of 2015 that had a 5 star rating. This wine was a taste sensation. If you are opening it now the floral, cherry and fennel notes of the 2012 meld wonderfully well with a rich mushroom and meat pasta dish. $21.49*
To be, or not to be visiting the wonderful vineyards that wind through the hills of the Veneto to indulge in the wines of the region is the question. Maybe it can be as far as your deck or living room as the simplicities of Shakespeare’s Romeo and Juliet romance is compared to the complexities of online dating today. A comfortable chair and a good book or great company and a dinner, all a good reason to say “Ciao bella Veneto”, and “Which wine your majesty divine?” BISOL JEIO DESIDERIO PROSECCO VALDOBBIADENE 738859 Prosecco is a sparkling wine made mostly from Glera grapes. It’s a refreshing bubbly on its own or with appetizers to get your dinner evening rolling, or as you reminisce about your drive along the Prosecco trail, the Strada del Vino Prosecco in Treviso. Prosecco is also one of the main ingredients along with white peach puree and a little cherry juice that make the classic Venetian cocktail, the Bellini from Harry’s Bar in Venice. $18.39* 2015 SOAVE CLASSICO PIEROPAN 713671 Showing elegant mineral and fresh fruit flavours this white wine that comes from the hills of the Soave appellation near the city of Verona. Referred to as Classico wine due to the vineyards being situated in the original stipulated area that produced Soave wine before they were expanded. Pieropan have been producing wine in the region since 1880, they use 85% Garganega grapes and 15% Trebbiano di Soave (aka Verdicchio). Pairs well with pork, duck and risotto dishes. $18.99* 2014 BOLLA VALPOLICELLA CLASSICO 731027 Valpolicella red wines are generally at their prime when opened early. Vibrant fresh red fruit and subtle mineral notes from the earth in the hills north of Verona make this an easy sipping medium bodied wine that pairs well with barbecued meats, salmon and rich pasta dishes. 2011 ZENATO AMARONE 413179 Year in year out the Zenato Amarone delivers a powerful taste experience rating consistently with critics across the board the 2011 garnered a 93 point rating from Wine Spectator plus numerous other accolades. The power in Amarone comes from the concentration of sugars that come about by the drying process of the grapes prior to pressing and fermentation. A wine of full bodied concentration, ripe black fruit, licorice and chocolate come to mind, as the end result pairs superbly with roasted meats and mature cheeses. 80% Corvina, 10% Rondinella and 10% Oseleta grapes make the 2011 Zenato Amarone. $49.79* 2011 TOMASSI FIORATO, RECIOTO DELLA VALPOLICELLA 745966 A delicious dessert wine that can accompany many fine chocolate offerings or simply dunking your biscotti in it is delightful. A sweet Amarone that comes from a small area called Fiorato the grapes are dried for 5 months before pressing and the wine fermentation is stopped before the wine becomes fully dry leaving an amount of residual sugar that makes the wine sweet. A blend of Corvina, Rondinella and Molinara grapes the wine has a wonderful bouquet and flavours of red fruit, plums, cherries, licorice and all spice. $31.99*

The decisions that we make in our daily life tend to be motivated by our mood, weather and schedules. The cool fall air brings change to the foods we cook, the clothing we wear, and wine we drink. Fall in Calgary is not dependable and we can still have a warm days followed by a light dusting of snowflakes. I find comfort in looking at freshly fallen snow as it gives me an excuse to curl up in a comfy blanket with a full bodied glass of wine. The styles of wine that I tend to open don’t require a lot of decanting time as the fall and winter seasons are busy with work and family. These wines are easy sippers and don’t need food therefore this typically leads me to warmer climate red blends. One that I recently opened for Value Wines Under $20 was the Bogle Essential Red. This wine is a California Red Blend that is not only a great sipper but one that I can imagine with a savoury crock pot meal. Other regions that fit into the warm rich style of blends are Southern Rhône, Chile, and Emilia Romagna in Italy. These regions offer a wide range in styles and varieties as well as price points that are sure to please the novice to experienced wine drinker in your life. BERINGER QUANTUM RED 765115 – USA Cabernet Sauvignon, Merlot and Petit Syrah make up this medium to full bodied wine. The flavours will fill your glass full of rich dark fruit with notes of dark cherry and ripe plum. There is a hint of mint that brings a nice freshness to the wine and the lush silky tannins round out this amazing wine. This is a wine that you don’t need to have with food, however, a pork roast drizzled with a red wine reduction would be a fantastic compliment. $65.29* DEERFIELD RED REX 720657 – USA If you are sensitive to sulphites, this organic wine may be what you are looking for! Low in histamines and sulphites but does not lack in flavour. The Red Rex is a soup *Prices Subject to change

pot of varietals that the winemaker plays around with to create a master blend. The flavours of ripe cherries, dark berries and a hint of eucalyptus make this rich full bodied sipper a staple for pairing with a wide variety of fall favourites such as roast beef or eggplant curry. $33.99*
CELLAR MASTER’S DELIGHT VINTAGE WINES & LARGE FORMATS
UMBERTO CESARI LIANO 927707 – ITALY This Italian wine is a blend of Sangiovese, Cabernet Sauvignon from Rubicone. The Cabernet Sauvignon adds richness to the leaner style Sangiovese. The flavours of raspberry and cherry are balanced with hints of coca and espresso. This is a wine that does not need food but will pair nicely with roast meats and savoury lasagna. $32.79* ANTU SYRAH 360275 – CHILE Made of 100% Syrah where the climate is warm and dry, but cooled by ocean breezes. The rivers created by the runoff of the Andes Mountains irrigate the vineyards. It is a dark ruby red with hints of purple in the glass. On the nose there are aromas of ripe black fruit like blackberries, sweet smoke spices and cedar. Juicy and elegant, there are flavours of blackberry and plums with subtle touches of green olives and spice combined with round and powerful tannins that make this wine to linger on the finish. We think this would go nicely with Wednesday taco night! $18.79* TORRES CELESTE 754090 – CRIANZA A modern style of Tempranillo comes from Ribera del Duero in Spain. Intense aroma’s of Blackberries and Blueberries waft from the glass with hints of spice that continues to that palate and may remind you of warm jam with a touch of cinnamon. The tannins are well integrated but definitely present. We do recommend a quick decant on this wine as it does improve with air. We found a vegetarian dish for Cauliflower Steaks with Olive & Herb Salsa on ohmyveggies.com that would be a fantastic pairing. $27.29*

CRAZY 774484 – FRANCE Born and raised in an area called Tropez in the Mediterranean region of Provence. The warm southern climate balanced with a cool wind that is common this region, allows the grapes to ripen, while maintaining a nice balance of acidity. The grapes are 100% Merlot and offer aromas of dark fruit and spice. On palate, it is full bodied, with a nice round texture. This producer also makes a rosé and white wine made from the Rolle grape. We recently tasted the white in our Wine Wednesday class and it was a class favourite. This wine goes nicely with BBQ meats, sweet potatoes, or a vegetarian chickpea & spinach curry. $ 18.39*

Here are six wines from South Africa that deliver great quality as well as price: SPIER CHENIN BLANC 2015 659037 – WESTERN CAPE
Here is a delicious white wine at a great price point. Chenin Blanc is South Africa’s white grape of fame, producing almost every style, from sparkling to dry to sweet wines. This wine is made in a dry and refreshing style with notes of apple, pear and oranges along with mouthwatering acidity on the finish. This is perfect for a hot day and will pair nicely with lighter dishes, such as salads and grilled fish. $13.99* ERNIE ELS SAUVIGNON BLANC 2015 779605 – WESTERN CAPE
Sauvignon Blanc is well-known as coming from New Zealand and France, but don’t forget about South Africa. Some argue that this is one of the best climates in the world for growing grapes and Sauvignon Blanc does very well. Stylistically this is dry and zesty with tons of enticing tropical fruits and juicy acidity that make this ideal for pairing with cream-based dishes. $19.99* RUSTENBERG CHARDONNAY 2012 732922 – STELLENBOSCH
This is one of our favourite producers and one with a wine-growing history going back to 1682. They have two gardens on their property that are a testament to sustainability. The Schoongezicht Garden dates to 1814 and is open to the public and would make an ideal setting for tasting this rich and tropical wine. With notes of ripe pineapple, vanilla bean *Prices Subject to change
The 1976 Judgment of Paris played a vital role in the development of the wine industry in California, showing the world it had the capacity to produce ultra-premium wines. BOER & BRIT THE FIELD MARSHALL 2012 758711 – COASTAL REGION
The story to this winery is almost impossible to believe; the Boer & Brit refers to the two great-great grandfathers of the owners of the winery today, who were bitter enemies 110 years ago. Today, the two families work together to produce well-made wines at great prices. This wine is a blend of Mourvedre, Shiraz, Cinsault and Carignan that is full of ripe plums, savoury tobacco and a mix of spices perfect for the BBQ. $18.29*

RUST EN VREDE CABERNET SAUVIGNON 2011 722274 – STELLENBOSCH
Wine has been produced off and on over the last 321 years at this estate but it is only in the last 32 years that they have focused on making world-class red wines. In my opinion this is one of the best under $30 Cabernet Sauvignon in the market, offering tons of black fruit, dark cocoa and smoked tobacco along with ripe tannins and a rich delicious finish. Pair with your favourite meat dish. $27.49* THE CHOCOLATE BLOCK 2012 716428 – FRANSCHHOEK
Boekenhoutskloof was established in 1776 and is located in the Franschhoek Valley. It takes its name from an indigenous Cape Beech tree prized for furniture making. You might be familiar with another of their wines called The Wolftrap which is priced at a more everyday price. The Chocolate Block is a blend that changes from year to year to best reflect the vintage. In 2012 that blend was 70% Syrah, 13% Cabernet Sauvignon, 10% Grenache, 6% Cinsault and 1% Viognier and the result is a wine full of ripe fruits and well-integrated tannins that make this perfect for the cellar. HI-FIDELITY WINES
A GEOLOGICAL SURVEY OF WINE WITH JON NOAD A variety of factors influence the taste of a glass of wine: soil, location (slope degree and orientation, altitude and the resulting climate), the grower and the winemakers touch. The soil one of the main factors affecting the taste, and for this “geological” tasting we will ask you to make up your own mind about the impact of the soil versus of the other factors. world’s great wineries to own vineyards all across the globe. Mondavi’s vision has resulted in a global wine community that is friendlier and more diverse than when he started – one of his truly great legacies.
NEW WORLD ICONS
But in the end, it is all about the wine and Robert Mondavi championed the idea that the Napa Valley could make wine that could give the best of Burgundy and Bordeaux a run for its money. His wines, like the 1973 Cabernet Sauvignon Napa Valley Reserve, help give restaurateurs options other than France, Italy or Spain for their wine lists. The fabulous variety we now enjoy in wine retailers and on wine lists would not have been possible without advocates like Robert Mondavi. He handled skeptics with grace, and won over his detractors with hospitality.

he wine community will be celebrating a special man and an important anniversary this year. 2016 marks the 50-year anniversary of the Robert Mondavi Winery. Although he passed away on May 16th, 2008, Robert Mondavi’s impact on the international wine community is still being felt today.
Pictured above: Robert Mondavi; robertmondaviwinery.com
In 1966, when Robert Mondavi first opened his winery at the age of 52, it had been roughly 30 years since a new winery had been built in Napa. At that time, wine lists were overwhelmingly French, and the reputation of Napa Valley wasn’t even poor, it was nonexistent. Fast forward to today, and the spirit of this pioneer lives on. 12 Sips | Fall 2016
More and more, the wine-buying public is becoming open-minded to wine regions they never would have considered. Robert Mondavi, through his entrepreneurial spirit and fierce determination, will always symbolize why we should always give the new kid on the block a chance. Have you had a wine from Slovenia, Brazil, or Vancouver Island? You should. They are just a few examples of what the Napa Valley was 50 years ago. Today, the Napa Valley now has some of the most expensive agricultural real estate on the planet. But before Napa was “Napa,” Robert Mondavi understood that it had to raise its quality level in order to compete with Europe’s best. Soon after opening his winery, Mondavi traveled throughout Europe’s winemaking regions, learning and tasting everything he could. His charm allowed him to form formidable friendships during a time in which the wine industry was quite secretive and insular. Maybe the most famous bond he formed was with Baron Philippe de Rothschild, of the famous Chateau Mouton-Rothschild in Bordeaux. Mondavi convinced the Rothschild’s to invest in the Napa Valley, and together they opened up the now legendary Opus One winery. It took time for Europeans to concede that the New World could not only produce good wine, but also be a great investment. It is common today for the
Robert Mondavi lived well. He was renowned for his generosity and kindness; it is impossible to find record of another member of the wine world that spoke poorly of him. He constantly used all of his resources to benefit the greater good, donating millions - most notably to the University of California Davis, and the American Institute for Food, Wine and the Arts. So, as we remember the 50th anniversary of the Robert Mondavi estate, let’s raise a glass to a man that continues to change our preconceived ideas of what wine is, and what is can be. Cheers to Robert Mondavi!

Pictured above: Wolfgang Franz Otto Blass
n 1966, while Robert Mondavi was trying to change the perception of the wines of his native homeland, Wolfgang Franz Otto Blass, born in Germany in 1934, was changing the wine culture of his new home – Australia.
THE EARLY DAYS Blass initially moved to Australia after taking a three-year job to transform the fledging wines of a large co-operative. Blass made a huge impression within the Barossa Valley – Australia’s most well known premium grapegrowing region – during his first three years in the country. So much so, that he was hired on as a consultant for 8-9 wineries, which, at the time, was a rare position in the wine world. And then, in 1966, as he was working for a winery named Tolley’s, Blass decided to make his first wine under his own label – a rich, spicy blend of Shiraz from Langhorne Creek, and some Malbec from the state of Victoria. But Tolley’s saw Blass selling his own wines as a conflict of interest, and gave him an ultimatum: stop making your own wines, or leave. He left, and the rest, as they say is history. THE JIMMY WATSON TROPHY Whereas Mondavi may have been trying to place his wines on an international stage, Wolf Blass was just trying to compete with the big players in the Australian wine scene. Back in the 1960’s, most of Australia’s wine medals and trophies consistently went to large, famous wineries like Penfolds, McWilliam’s and Lindeman’s. But after earning wine competition success while working for other wineries, Wolf Blass gained recognition for his own estate when his won the 1974 Jimmy Watson Trophy – the country’s most prestigious wine award. His winning wine was the inaugural vintage of his Wolf Blass Black Label – a blend of 80 percent Langhorne Creek Cabernet Sauvignon and 20 percent Eden Valley Shiraz. Wolf Blass Black Label then went on to win 1975 and 1976 Jimmy Watson trophies, and the foundation for the winemaker and his winery was established. A record 4th Jimmy Watson Trophy was earned in 1999 for his 1998 Black Label. THE RISE The growth of Wolf Blass during the 1970’s and 1980’s was massive. Blass ensured that the domestic market was saturated with his wines, while he also became one of the country’s best Australian wine evangelists to the rest of the world. Blass took his company public in the mid-eighties. The company then underwent multiple mergers before finally being sold to the Fosters beer company in 1996 for an incredible 560 million Australian dollars. *Prices Subject to change
THE WOLF BLASS LEGACY The paths of Robert Mondavi and Wolf Blass crossed most notably in 1992 at the International Wine and Spirits Competition. After over 25 years of service to the Australian wine industry, Wolf Blass won the Robert Mondavi Trophy for Winemaker of the Year – the trophy was presented by Robert Mondavi himself. Now, at over eighty years old and as the Global Ambassador for the brand bearing his name, Wolf Blass continues to fight for the Australian wine industry. 2016 marks the 50th anniversary of his purchase of a barrel of Shiraz and a barrel of Malbec that went into that first Wolf Blass red. It’s a moment to thank one of the great pioneers of the new world wine world. THE JUICE 2014 WOLF BLASS CHARDONNAY “GOLD LABEL”

WINE AND THE SINGLE WOMAN
F
or those of us who may be romantically challenged, choosing the right wine can be an important part of single woman’s life and I’m here to help. Unfortunately, I can’t help you pick the right date. You’re on your own for that. But I can ease your mind when it comes to pairing wines for the right mood or occasion – and maybe even the right person. It’s easy to stick with what you know or even to go back to something familiar after you’ve walked away. Sometimes you can allow that in your dating life, but please don’t do that with wine. There are literally hundreds of thousands of wines out there for you to try and they are all pleading with you to get out of your comfort zone and take a chance on something new. We tend to go back to the same handful of wines when we browse the shelves while rejecting other recommendations. Maybe the label isn’t what you’re used to. Maybe you’ve never heard of that grape. Try it anyway. You just might fall in love with an unusual – and perfect – new addition to your collection. I recommend a bold Italian… like Nebbiolo. Looks can be deceiving with this one. At first glance it’s light and thin, but it’s no withering flower - trust 14 Sips | Fall 2016
me, this is a robust Italian wine that will make your mouth water. Let’s face it. Break ups are never easy, no matter what the situation is or who made the decision. So it’s important to make sure you’re ready for anything as you deal with picking up the pieces and moving forward. If I was you (and actually I am) I would grab a box of tissues, throw in P.S. I Love You, make some sweet and salty kettle corn popcorn then pair it with a lightly oaked California Chardonnay. My recommendation: Freemark Abbey Napa Valley Chardonnay (729287) $33.49*. Unlike you and your last partner, these two belong together. You’re having a gathering and the theme is “Congratulations, you didn’t marry the wrong person.” What’s the best wine for this happy occasion? Bubbles! Celebrate being single with a bottle of Prosecco. The style of this Italian bubbly is light and lively – which is exactly how you feel knowing you didn’t settle for someone who wasn’t good for you. Besides the new pair of shoes you recently purchased thanks to retail therapy, what goes with absolutely everything? Rosé! It’s the right wine for every mood and any food. Feeling
cheery? Rosé works. Feeling down? Rosé will lift your spirits. Having grilled salmon? Pair it with Rosé. Strawberry tart with coconut meringue? Yup, it goes. A pint of Ben & Jerry’s Cherry Garcia while watching re-runs of Sex and the City? You bet! My favourite: 50th Parallel Rosé of Pinot Noir (759020) $19.99*. Let’s get serious. Your new love interest has invited you over for dinner. You offer to bring wine because you have an expert in your pocket (me) you can ask for assistance. Don’t ask me for advice about the date – I can barely put my own oxygen mask on first before I help you with yours. But I’m always happy to lend a helping hand when it comes to wine. It doesn’t matter whether you’re being treated to Tenderloin or Mac N Cheese, I can alleviate the stress of finding the perfect match. Are you trying to impress or are you more concerned about your budget? There are so many options for an independent woman you have no need to settle for anything other than exactly what you want. Like a good wingwoman you can rely on me to see you through your wine needs. Tracy-Lynne MacLellan Sommelier Co-ordinator, Shawnessy *Prices Subject to change

RHÔNE RIVER RUN North Vs. South
T
he Rhône Valley is home to some of France’s most crowd-pleasing wines. In contrast to Burgundy’s lighter, acidic whites and reds, or Bordeaux’s sometimes overtly bitter style, the wines of the Rhône have always been loved in Alberta because of their fruity and soft personalities. One of the first things you should know about the Rhône Valley is that it is split into two parts – north and south. Lying just south of Lyon, the northern Rhône Valley is made up of steep granite hillsides that yield only 4-5% of the Rhône Valley’s total wine production. The climate here is cool and continental, and the river valley is narrow. The reds are spicy, elegant 16 Sips | Fall 2016
wines made from Syrah, while the whites are rich and oily-textured from the grapes Viognier, Marsanne and Roussanne. As the Rhône River winds its way further south, its valley expands out into the wine region we know as the southern Rhône – a valley with a more Mediterranean vibe. Here we find the grape that gives the Rhône its widespread appeal – the red variety Grenache. The wines of the south can be made from a variety of grapes into a myriad of blended combinations, but it is the grape Grenache that makes up the bulk of the red wines most of the time. Other grapes like Syrah, Mourvedre and Cinsault are used to balance out Grenache’s sometimes simple, fruity
persona. Although the wines here are produced in a warm climate, they tend to suit the frigid temperatures of Alberta. Grenache is one of those rare red grapes that can yield rich, warming reds without a huge level of bitter tannin. This results in wines that can cozy up with the hearty types of meals we tend to enjoy in the fall and winter months in Alberta, while still being velvety enough to enjoy on their own when paired with a warm fire, a delicious novel, or your latest bingewatching addiction. Understanding European wine labels can always be tricky – the Rhône Valley is most easily understood by learning about its three tiers of quality.
COTES-DU-Rhône When you see a wine labeled Cotes-duRhône – white, rosé, or red – then you can expect an easy-drinking wine perfect for everyday use. Here, the grapes can come from all over the Rhône Valley, but mostly the grapes will come from the south. Over half of the wines from the Rhône are labeled Cotes-du-Rhône. 21 different grape varieties can find their way into Cotes-du-Rhône labeled wines, but expect the reds to be that classic combination of Grenache, blended with other grapes like Syrah and Mourvedre. Whites are dry and fresh, without being acidic, and the rosés are dry, refreshing and incredibly versatile. COTES-DU-Rhône VILLAGES Wines that are labeled Cotes-du-Rhône Villages are a step up in quality from Cotes-du-Rhône. The grapes can only come from a smaller defined area, while the standards of production for the wines are higher than the region’s entry-level wines. These wines offer incredible value, and will often reward short-to-midterm cellaring – 3-7 years. THE CRU There are 8 villages in the north, and 10 in the south that have been acknowledged to produce wines of unique quality and character. Famous regions like Hermitage and the Cote-Rotie in the north produce some of the most sought-after Syrah’s (aka Shiraz) on the planet. Further south, Chateauneuf-du-Pape, Gigondas and Vacqueyras, among others, have put the Grenache, Syrah, Mourvedre blend on the proverbial wine map. Finding the word Rhône may be difficult to find on these wines, as the name of the smaller cru will be highlighted. Moreover, the grapes can only come from the small cru stated on the label. Only around 20 percent of the Rhône Valley’s production is made up from these wines that account for the highest quality wines of the Rhône. THE WINES 2014 CHAPOUTIER COTES-DU-RHÔNE BLANC “BELLERUCHE” (COTES-DURHÔNE) 725770 This is a highly quaffable white with loads of tangy citrus and peach flavours. Once upon a time Riesling was the king of wines. On the Titanic the most expensive wines were those of the Rheingau and Mosel in Germany, not the Bordeaux and Burgundy it offered. For some inexplicable and some completely comprehensible reasons, Riesling has seemingly fallen out of favour for the broader audience. Yet those with a deeper intrigue in wine tend to revel in it and sing its praise. Riesling is indeed one of the most age worthy wines if made to be so. They are not all sweet and overdone. It can be swift, graceful, elegant and completely exacting at the same time. Come and see why Riesling should hold the throne. CROWFOOT: OAKRIDGE:

The world of wine is diverse and daunting. The task of gifting wine and making an impression can be troublesome. Whether it is your boss, a wine enthused friend or family member, a great bottle of wine can win major brownie points. Forget scouring our vast array of options and key in on one of these high quality, dynamic and sure to impress wines that can be drank now or cellared for further evolution. 2011 LA JOTA VINEYARDS CABERNET SAUVIGNON 750175 – HOWELL MOUNTAIN This is a classic Howell Mountain Cabernet with very obvious notes of sage, under brush, pencil shavings and cedar. It is expressive Cabernet Sauvignon in high definition. So expressive that on the nose it could easily be confused with a very high quality Bordeaux but one sip will rectify that thought. Offering black forest cake and kirsch notes with firm and integrated tannins. It is rich and a big, bold wine drinking experience that will only become more integrated and more complex with some time in the cellar. Drink now through 2025. $92.99* 2011 MONTES PURPLE ANGEL, PEUMO 719304 – CHILE A purple angel indeed. This utterly viscous and sheer staining opaque wine is a glorious culmination of pure, deep and velvety dark fruit expression and a gentle *Prices Subject to change
hand of winemaking. Carmenere may be a new experience for some and this one will leave them jaded. The cream of the crop and a cherubic experience for any bold red wine lover. $69.99* 2007 VALANDRONA #754956 I always recommend Italy for wine as a gift. And this is one of my favourites. It will satisfy the red wine lover with its bold presence and deep fruit concentration but it also shows some classic character and old world funk. Merlot, Cabernet Franc and Cabernet Sauvignon this Tuscan wine is loaded with complexity, earthy aroma’s and lots of structure. An intriguing wine that is drinking very well now. $64.99* 2013 ROMBAUER CHARDONNAY 720650 – NAPA VALLEY If it is uber buttery, boisterous, bombastic 2x4 in the face Chardonnay that is loved then look no further. This is the biggest and most exotic one we’ve got. This is so tropical and plush it even turns “no Chardonnay” drinkers into “Chardonnay cravers”. Go big or go home Alberta. $52.49* 2002 HANS LANG HATTENHEIM SPATLESE RIESLING 772784 – RHEINGAU, GERMANY Looky, looky what we have here. Hiding on our vintage shelves at our flagship locations is a little know gem that is heaven on earth, in a glass. This 14 year old Riesling is loaded with apricot and petrol notes. It is luscious, silky and bright with fresh acidity. In the glass it is turning deep in colour, a golden hue but there is a long life ahead of it. Perfect with cheese plates and even Fois Grois! $34.29* 2010 MAYACAMUS CABERNET SAUVINGON 782299 Exclusive to Co-op Wine Spirit s Beer this gem has a storied past. CIAO BELLA VENETO Visitare il VENETO (Visiting the VENETO)
T
his picturesque and historic northeast Italian region stretches from Venice in the east to Lake Garda in the west. The lake is an intense hue of blue glacier water and is Italy’s largest. To the north, the Veneto borders the cool and rugged Dolomite Mountains while its southern limits push along the border of Emilia-Romagna on the Po River. There are seven provinces here and home to nearly 5 million people and of course some down right excellent wines to be explored. Veneto and Venice are both named after the Veneti tribe who inhabited the area around 1000 BC. Early seafarers, traders and raiders such as the Phoenicians and Greeks called Italy “Oenotria” The Land of Wine. Along with the Etruscans they all made wine, but it was the Romans whom were improving cultivation, production and quality all the while planting vineyards all over Europe including England and Germany. 20 Sips | Fall 2016
WHAT DOES THIS HAVE TO DO WITH VENETO? The majority of the Veneto region gradually became part of the Republic of Venice, being an independent state from 697 – 1797. From the 9th to 12th centuries Venice developed into a city-state, and a center for international trade with its neutrality recognized by Frankish Kings and Byzantine Constantinople. Trade rather than raid was the state policy with territory in Dalmatia (Croatia), Cyprus and Crete picked up along the way, a powerful navy and formidable army discouraged would be invaders. When visiting Venice in the Veneto you will learn fascinating details of the region’s history. Venice itself being unique as its roads are waterways with 118 small islands connected by bridges and canals, the port of Rialto was a key hub for commercial trade during medieval times, with grain, spices, silks, glass and wines making it very wealthy.
Interesting facts about Venice and Verona: • Verona Arena large Roman Amphitheatre constructed 30AD • Rialto, staging port for the Crusades. • Marco Polo born in Venice 1254. • High heeled shoes thought to have originated here, by attaching wooden platforms to their shoes, locals found a practical way to walk on sludgy and muddy footpaths. • 1291 Isle of Murano developed as a centre for glass production, relocated from Venice itself due to fear of glassmaker fires setting wooden buildings on fire. Fiaschis (straw weaved baskets to carry glass vessels in) arrived around this time, it was a practical solution to protect the glass bottle from breaking, today seen more as a nostalgic decorative candle holder. • 1453 fall of Constantinople (now Istanbul) to the Ottoman Turks brought periods of hardship due to conflict with the Turks blocking the port at different times throughout the 15th and 16th
• • •
centuries, the republic developed the hinterland of the Veneto for agriculture (including wine) for self sufficiency. 1482 known as the centre for world printing and the development of paperback books. Winged Lion of St. Mark and the Horses of St. Mark came to rest in Venice after Constantinople was sacked in 1208. Artistic Movement during the Renaissance (Verona – Romeo & Juliet)
Wine production in the Veneto saw a number of indigenous grapes establish identities, producing good wine by the 17th century, advancement of the industry during the 18th & 19th centuries did not keep pace with the rest of Europe, preference for selling bulk wines as opposed to the emergence of cork stoppered bottles elsewhere (practicality of internal transportation over hills and mountains) and constantly changing borders and political uncertainty as the powers of Europe established colonies world wide. The fine wines of France and Germany dominated the market along with the fortified wines of Spain and Portugal. Currently in Alberta we see wines mainly from the Treviso hills area, which is sparkling Prosecco made from the Glera grapes. If you are driving through the windy hill area of Treviso the Strada del Vino Prosecco (Prosecco wine route) is a must see and do. White wines from Soave near Verona are made with Garganega and Verdicchio grapes and also near Verona the Valpolicella hills produce fantastic red wines from the Corvina grape (the main contributor in the blend), three specific wine styles are made – Valpolicella reds, Ripasso and Amarone. Production methods and specifics Appassimento method is of Greek origin, the grapes are partially dried to concentrate the sugar and acidity levels and lose about a third of their size as they raisinate, special temperature controlled drying rooms are used by most producers with the grapes laid out on bamboo mat shelves. After the drying process standard wine fermentation procedure follows taking a longer time due to the high concentration of sugar. Notable appellations (DOCGs) that use the Appassimento methods are: Amarone della Valpolicella (generally fermented to dryness), Recioto della Valpolicella
and Recioto di Soave (fermentation is stopped to leave residual sugar, resulting in a sweet dessert style wine). Recioto translates to ears, traditionally the ears of a grape bunch were most sort after as they were the sweetest grapes due to more sun exposure concentrating a higher level of sugar, these grapes were selected to make a specific sweet wine, today the whole bunch is generally used.

The resulting wines can have a dried fruit and raisin flavour, high alcohol and port like concentration. Ripasso means to pass over again, revisit or re-pass over, lees/ pomace (grape skins, seeds, stems, yeast and tartrate remnants) left over in the barrels or tanks from the fermentation of Amarone and Recioto wines, have fresh, young Valpolicella wine (a blend, with Corvina being the main grape) added. The active yeast cells still present in the sediment bring on a second fermentation, this process adds additional alcohol and tannin to the wine, the tannins added can be a little bitter creating a bitter dark chocolate and dried cherry flavour, some producers reduce the bitter flavours by adding partially dried grapes to the wine as well for its ripasso fermentation. Ripasso della Valpolicella is now a recognized appellation designate. With wine food is a must and the Veneto have an abundance to offer from cheeses such as Grana Padano, Provolone and Asiago, cured meats, and main staple dishes centered around polenta, bigoli pasta and risotto. GRAIN TO GLASS Eau Claire Distillery is a True Locavore Spirit
F
arm-fresh ingredients and historic hand-crafted methods define Eau Claire’s rightfully artisanal spirits that redefine taste, one ‘grain-to-glass’ experience at a time. Alberta is witness to the craft beer revolution or as we believe, reunion. It only makes sense that Alberta will endeavor to have a vibrant, healthy and expansive beer industry. After all we are 22 Sips | Fall 2016
perhaps the world’s largest producer of top quality barley, the most important ingredient in any brew. Likewise it only makes sense that Alberta could, should and will become a renowned producer of whisky and distilled spirits in general, again because of our easy access to fine barley. So here we are on the precipice perhaps, of an Alberta spirit rebirth
and Eau Claire Distillery in Turner Valley is setting the bar like a true western pioneer. The focus is small batch, handmade products from the field, in the “still”, during maturation and right through to bottling. It all begins with Alberta barley, some of which is sourced from heritage sites along the Cowboy Trail. Most of which comes from the distillerie’s own farming operations making it a
“Certified Farming Distillery” which is quite rare these days. The distillery then is similar to a wine estate caring for, harvesting and producing from its own raw materials. The barley is sourced from each site each vintage for specific spirits allowing for some vintage variations in the final product. Eau Claire fields are plowed with horse and tended to by hand. The “beer” produced prior to distillation is done in micro batches and distillation takes place in a hybrid, copper still custom built to fit into what used to be the town dance hall. A hybrid still and access to quality grain makes Eau Claire a nimble distillery. There are currently 3 full time distillates on offer with guest appearances from seasonal and one – off creations. Three Point Vodka Three Point Vodka is named for Three Point Creek, a tributary to the Sheep River. It is on the banks of Three Point Creek that one of our Founders, farms some of our ingredients using a team of horses and a 100-year-old plough. This Vodka is exceptionally smooth with wonderful soft touches of sweetness and hints of citronella. Balanced and near full bodied it is happy to be the star of the show in a Martini or in your favourite cocktail, a truly top shelf Vodka. See recipe for Moscow Mule on page 23. Parlour Gin The distillery call this a Parlour Gin to reflect the great history of prohibition era gin parlours throughout the world, and to honour gin’s place in generating social conversation, friendship and pure, animal enjoyment. It can be enjoyed from parlour to patio, happy hour to hopping bar. Enjoy yours by itself, in a martini, or with your favourite mix. A truly aromatic Gin that is vibrant, lively, fresh in its delivery and ultrasmooth. This botanical drink needs to
be enjoyed in all its glory served up in a classic or dirty Martini or over a small bed of ice, citrus fruits and a gurgle of tonic water.

TAPPING THE ADMIRAL RUM!
The Rum category keeps growing with more and more delicious offerings for us to choose from. This storied spirit has been around since the 17th Century and is no longer the ‘kill-divil’ it once was. Referred to as ‘a hot, hellish, and terrible liquor’ in a 1651 document in Barbados, today it can be a rich and complex drink that rivals whisky and Cognac. We will discuss and taste several styles of rum, from white to spiced to dark as well as small production pot still versions that are sure to make you a rum lover.
How it’s made: Quintessential Alberta this sweet elixir showcases Prickly Pear Cactus, along with a special blend of spring flavours. See recipe for Blonde French on page 23. Alberta Whisky Coming 2017! Canadian laws state that whisky must be aged for a minimum of three years. Eau Claire Distillery is but an infant in what will be a long life having just opened its doors in 2014. There are a few dozen barrels of its first whisky sitting quietly in a dark, damp barrel room resting until maturation. We are a proud supporter of Eau Claire Distillery and all our local partners.
