As the weather gets warmer and the sun starts to stick around a little longer, your grill will undoubtedly start to see more action. Get more out of the grilling season by following these simple tips from our experts. Your Go-to List for the Grilling Season: • Oaky wine styles and hoppy beers highlight the perception of smoke and charring in foods. The perception of smoke and charring in grilled foods is quieted and softened by some sweetness and acidity in wines. • Look for malty style beers such as Ambers or go full-boar with a Stout or Porter. The malty sweetness goes great with sweet and tangy BBQ sauce. • Aussie Shiraz has to top the list when it comes to backyard cuisine. It’s built for the outdoors and the bold flavours that come off the hot grill. • California Zinfandel has a backbone of ripe jammy fruit that can stand the heat, the spice and the outdoor kitchen. • Spanish Garnacha and Monastrell were born under the sun and love the BBQ - the savoury and the spicy! • Nothing compliments a sunny afternoon and backyard fare like a glass of well-chilled Rosé of Shiraz/Syrah, Grenache, Cabernet Franc or a Provençal Rosé from France. A hot sunny day can easily “bake” a light red wine so look for a big deep full-bodied red. Lighter wines, red or white are best enjoyed cooler than fuller bodied wines as they tend to have higher acidity and a refreshing characteristic.

The higher the alcohol content in wine, the more noticeable it becomes as it warms up.

The first vintage of the Grand Vin was released in 2001 to huge acclaim. Since then, they have helped spearhead quality in the Okanagan Valley. The 2008 is a delicious blend of mostly Merlot (60%) that is already drinking nicely with rich blackberry fruit and chocolate notes. The tannins are well-structured and smooth and this wine will keep cellaring through the next 5 years easily.

Jim Barry has been producing award-winning wines in the Clare Valley since 1959. The Lodge Hill Shiraz is named after the Lodge Hill property which was suppose to be entirely for Riesling, but Jim Barry thought the north facing slope would be perfect for Shiraz and he was right. This full-bodied wine is full of ripe cherry and blackberry fruit and drinking well today, though you could cellar it for a decade if you have the discipline.

Ceviche

Ceviche is a fresh, raw fish cured in citrus juice. It’s very popular in the Central and South Americas and often seasoned with chili peppers, chopped onion and cilantro. The addition of citrus juice denatures the raw fish so it appears to be “cooked.” Because this dish is not cooked with heat, it must be prepared fresh and marinated properly. There are many variations of this traditional dish with a variety of regional side dishes. Ask the Experts - White wines such as Vinho Verdhe or Albarinho pair well with ceviche. Almond Pecan Rainbow Trout with Mandarin Beurre Blanc Ask the Experts - Wonderful with a ripe California Chardonnay. 2 Rainbow Trout Breading: ½ cup flour 1 egg ¼ cup milk ½ cup pecans, chopped ½ cup almonds, sliced ¼ cup bread crumbs 2 oz. olive oil Sauce ¼ cup mandarin orange slices ½ tsp. orange juice 1 oz. Grand Marnier or Cointreau ¼ lb. butter Mix egg and milk in a bowl. In a separate bowl mix pecans, almonds and bread crumbs. Cover each trout with flour, then the milk mixture, then the pecan breading. Heat a skillet over medium-high heat with olive oil. Sauté trout for 2-3 minutes on each side. Remove trout from pan. Drain the grease from the pan, add orange liqueur and flambé. Add orange juice, orange slices and heat until boiling. Add butter little by little until melted then pour sauce over trout.

Grill your way to the best Executive Chef, John Humphreys

Great Cuts - your best cuts for grilling are those you probably recognize the quickest. T-Bone, Striploin (or New York Striploin), Tenderloin, Rib Steaks and Sirloin. These are the ones you find most commonly in great steak houses, as they’re the best for grilling. These cuts are naturally tenderer because they come from parts of the animal that do the least work. Cuts that come from harder working muscles in the front quarter need to be tenderized by grinding or low, slow cooking. The classic steak house cuts got to where they are today simply because they provide the best eating experience in the quickest amount of time.

Age does matter. Beef that has not been aged is called ‘green’, and is not ready to be eaten. Beef should be aged at least 14 days, but 21 or 28 is better. Best of all, of course is Dry-Aged Beef. If you can find a local retailer that carries Dry-Aged Beef it is the pinnacle of quality and flavour. Aging beef breaks down connective tissue and concentrates flavour.

Cattle breed is not typically something you get any choice on as a consumer. There are 24 breeds recognized in Alberta, with Angus, Charolais and Hereford being the most readily recognized. Choosing a steak for grilling is all about looking for great marbling. Choose steaks (T-Bone, Striploin, Tenderloin, Rib Steaks and Sirloin) that have marbling (fat that is distributed throughout the meat, not just on top) you can actually see. When you can see the marbling, you know you’re going to be able to taste it! That marbling is going to provide a relatively small amount of fat - but it’s enough to give you a juicy steak, and provide wonderful mouth feel that actually enhances the natural flavour of the beef. Fat carries flavour - it’s as simple as that. If you’re celebrating, choose a hand-cut dry aged masterpiece from a retailer good enough to carry one, and the experience will be even better.


Steak experience! Technique - I like simple and straightforward. Some of the best steak houses cook at temperatures up to 180°F. I take my steaks out of the cooler while I build up my coals or heat up the bbq, so they can come up to room temperature. Right before grilling, I season with some fresh ground black pepper, and some coarse sea salt. At the end, a little melted butter on top of the steak seals the deal. Oh, and wine. While you cook and while you eat.

Finishing - When I want to go a little bit further, to impress guests or get out of the dog house, there are some simple enhancements you can add to liven up your steak experience even more. • The simplest, which I particularly like with Tenderloin, is to brush my steaks with pomegranate molasses, just in the last few minutes of grilling. It complements the flavour of the beef beautifully, and it has a natural acidity that gets the mouth juices flowing. The molasses caramelizes quickly on a hot grill, so it only goes on right at the end, with a little more drizzled on right before you eat. • When I have a little more time on my hands, I like to make a gastrique, which for me is just a simple reduction of

vinegar, fruit, sugar and stock. You can vary the flavours here, but try a cup of sherry vinegar combined with a half cup of chicken stock, the juice of one orange and two tablespoons of brown sugar. Combine it all in a saucepan, and reduce it down to the consistency of warm honey. Drizzle over your steaks for a boost of flavour and some great acidity that balances out the richness of well-marbled steaks. • Finally, if you’re pressed for time, but still need to jazz up your steaks a bit, crumble some blue cheese over your steaks just as you serve them. A firmer blue will work better than a brie type, so think about Roquefort, Gorgonzola or even a simple Danish blue.

2 handfuls of ice Blend on low to desired consistency and garnish with an orange wheel.

½ cup blueberries ½ cup raspberries ½ cup cherries, pitted and sliced ½ cup cranberry juice 1 Tbsp. lime juice 2 handfuls of ice 2 Tbsp. sugar Your favourite fruit flavoured vodka. Add to desired strength. Easy as pie – blend it all up and sip from a tall glass. Lime twists make a colourful garnish.

4 limes cut into eighths

2 cups lemon sorbet

½ cup sugar

½ cup canned mandarins drained

1 cup cachaca (Brazilian Rum)

½ vodka

¼ cup pomegranate liqueur

Crushed or cubed ice Muddle the limes and sugar. Add Cachaca and liqueur and shake well. Pour over ice in rocks glasses and garnish with lime wedge.

Low and Slow

Sumptuous Brisket Ask the Experts - Your best pairing would be a California Zinfandel or try an Aussie Shiraz or Prosecco for white.

Red Cabbage Slaw

Generously coat the Brisket in Wild West Rub (page 31). Cover it with plastic wrap and leave in the fridge overnight to season.

1/2 head red cabbage, shredded

Preheat a smoker or grill to around 250°F and set up for cooking over indirect heat by placing coals and wood chips to one side. If using a gas grill place wood chips in a foil tin over the heat. Drop the rubbed brisket on the “cold” side and cook fat side up for 4 hours with the lid closed.

1 granny smith apple, grated

Remove the Brisket and slather with the grated onion. Using a double layer of foil, create a pouch/packet for the brisket. Add apple juice and beer and tightly seal the foil.

Salt and pepper

Place back in the smoker for another 2 hours, adding a handful of chips and 12 or so coals. After 2 hours, open the lid and let the brisket sit in the packet for another hour (you could finish this hour in the oven at 170°F)

1/2 red onion, grated 1 tsp superfine sugar 1 Tbsp. apple cider vinegar 2 Tbsp. extra virgin olive oil

Combine ingredients in a bowl and let stand for a couple hours refrigerated. Add mayonnaise for a creamy style slaw.

Thinly slice the brisket on a large cutting board. Serve family style with your favourite buns or rolls alongside a rich and flavourful BBQ sauce. Perfect sides include grilled corn on the cob and Red Cabbage Slaw.

Piri Piri Kebabs Using our Piri Piri Sauce recipe (page 31) slather prawns, chicken thighs or beef cubes with the Piri Piri sauce. Slide them onto skewers and cook over a smoking hot open flame or gas grill.

Grilled Tuna or Chicken Tacos with Mango and Chipotle Cream Sauce Use sushi grade ahi tuna steaks and we prefer boneless chicken thighs or breasts.

Chicken Bombs Cut fresh chicken breasts into large cubes. Marinate the chicken for 10 or 15 minutes in a bowl with your favourite sauce. The Piri Piri sauce would be great, BBQ sauce would work or even Honey Garlic or Teriyaki sauce would be tasty! Wrap the cubes in a cut piece of bacon and use a tooth pick to hold together. Drop the chicken bombs onto a seasoned (oiled) hot grill and close the lid. Remove when the bacon is fully cooked and enjoy. Be warned, they are addictive! Ask the Experts - A white or red blend with at least 3 different grapes would work very well here!

Combine all ingredients and season with salt and pepper. Let stand while preparing tacos. Alternate method: use the Wild West Rub (page 31) on your ahi tuna or chicken and grill over high heat. Let the meat rest and slice to add to your tacos. Build tacos and rejoice! Steak Tacos If it’s red meat you prefer, rub some Wild West Rub (page 31) on flank steaks and sear over high heat on your grill. Slice thinly against the grain and serve in your tacos. The Mango Salsa will not be great with beef so try an alternate like Salsa Verde and top with the Chipotle Cream Sauce. Ask the Experts - Try a Torrontes for a white wine pairing and for a red pairing try a Grenache or Garnacha.

Take your grilling experience to new heights with a rub or sauce Salsa Verde 1 small bunch fresh cilantro 1 small bunch fresh mint, leaves picked 1 clove garlic, peeled 1-2 fresh jalapeño or serrano chillies, seeded 4 large scallions, trimmed 2 handfuls green tomatillos, roughly chopped Juice of 1-2 limes 1 Tbsp. extra virgin olive oil Salt and pepper to taste Chop the cilantro (stalks and all) with the mint leaves, garlic, chiles, scallions and tomatillos until very fine. Sprinkle a pinch of the salt and pepper over the herbs, then add most of the lime juice and olive oil. Mix together in a bowl, taste and season with the salt, pepper, lime juice, or chile, and allow some time to macerate.

Simple Summer Dessert Chop a basket of fresh plump strawberries in half. In a bowl drizzle with white Sambucca or Ouzo and crack fresh black pepper over the fruit. Toss in the bowl to combine. Pop these yummy, boozy berries in your mouth as a light dessert. Take it to another level by adding chopped watermelon and a few sprigs of finely chopped mint. You could also serve over French vanilla ice cream. Ask the Experts - Perfect with a glass of Moscato D’Asti or even Prosecco.

Piri Piri Sauce A Portugese sauce that packs a punch of heat. Piri Piri peppers are very difficult to find so instead substitute red chili peppers. 3 garlic cloves minced or pureed 1 cup quality extra virgin olive oil 1/3 cup of white wine vinegar 6-8 fresh red chili peppers Combine garlic and vinegar and allow to sit together for at least 20 minutes. In a food processor combine garlic and vinegar mixture with the peppers including the seeds and pulse to roughly combine and chop ingredients. Drizzle the oil while pulsing and sprinkle with salt. Blend to a smooth texture. Pour the sauce in a glass jar, seal and refrigerate for a few days or best a week to allow sauce to macerate and develop. Slather the sauce all over your favourite protein but it is most famously used for chicken. This hot sauce is known as “Portugese Viagra” and will heat up any dish and liven up any gathering. Wild West Spice Rub 3 Tbsp. smoked sea salt 2 Tbsp. brown sugar 3 Tbsp. sweet paprika 1 Tbsp. mustard seeds 1 Tbsp. garlic powder 2 tsp. coriander 2 tsp. ground cumin 2 tsp. ginger 1 tsp. cayenne pepper Combine ingredients and rub over pork shoulder, ribs, chicken or your favourite steak cut. 27
