Vintage Wines The idea of cellaring wine is an old one dating as far back as 7,000 years ago. The Romans loved their wine and understood the need for a cool, humid place away from direct sunlight, and built underground cellars for their wine. In the 17th Century, the inventions of the bottle and cork to seal the wine properly, as well as fortification of wines to keep from spoiling, started a new era of cellaring. Fast-forward to the 20th Century, the modern era, and we see wine styles that were quite harsh upon release. There was less focus on cleanliness in the winery, less information about achieving grape ripeness, as well as very long fermentations that made wines tannic and less fruity. These wines were truly too young to drink when released and needed time to soften up. They were made in a different era of winemaking, at a time when the knowledge was a fraction of what it is today. Winemaking today is high-tech in nature with almost uniform ripeness in the vineyard, pristine winery conditions and temperature-controlled fermentations that keep the fruit fresh and lively. These wines are, for the most part, ready to drink as soon as they are released, and will only benefit from a few years of cellaring. There are, however, some wine styles that reward the patient wine enthusiast with time resting lazily in the right conditions. These conditions include a stable and relatively cool environment that is “Goldilocks” in nature – not too warm and not too cold. That environment should be as dark as possible and provide a high humidity. The right wine in the right conditions will evolve into an unforgettable experience. The wine grows complex layers of personality, becomes a soft-spoken storyteller and increases in its fidelity. On top of these storage conditions, size does matter. The larger the bottle format, the slower the evolution of the wine, allowing for a longer process. Magnums and double magnums age at a much slower pace, prolonging their life and providing an even better experience. Spoons

Pack a lot of flavour onto a small spoon with these delicious one-bite appetizers..

Seared Scallop & Bacon Spoons

Beef Satay Spoons

Pairs well with an Okanagan Pinot Gris or New Zealand Pinot Noir

Pairs well with a Torrontes for white or a California Zinfandel for red.

6 large sea scallops or 24 bay scallops 5 slices of bacon ¼ cup of sweet chili sauce Fresh cilantro

8 oz. beef filet Soy sauce 1 tsp. of grated ginger 1 tsp. of honey ½ cup of peanut butter

Preheat oven to 350°F. If using large sea scallops, quarter them.

Mix marinade using 1 teaspoon of soy sauce, grated ginger, and honey. Marinate beef filet in marinade for 5 to 6 hours.

Crisp 5 slices of bacon in the oven, cut into small pieces once done.

1 Tbsp. of chili sauce 1 Tbsp. of grated ginger 3 Tbsp. of water Red pepper Cilantro

Sear the scallops in a hot frying pan with oil until golden brown.

Mix satay sauce using peanut butter, chili sauce, grated ginger, water and 1 tablespoon of soy sauce. Warm satay mix in a small sauce pan.

Place ½ a teaspoon of sweet chili sauce in each spoon, add the scallop and put the bacon pieces on top with a sprinkle of diced fresh cilantro to garnish.

Heat a heavy frying pan to hot and sear marinated steak for two minutes on either side cooked to rare. Cut the steak into 20 to 24 cubes and place a cube on each spoon. Top with ½ a teaspoon of satay sauce and garnish with thin slices of red pepper and cilantro.


Lobster with Avocado Salad Spoons

Gin Basil Smash

Pairs perfectly with a rich and buttery Chardonnay

5 oz. of lobster meat 1 diced avocado 1 bunch of Chives Cilantro 1 Lime

4 tsp. of mayonnaise ¼ tsp. Tabasco or hot pepper sauce Salt & pepper

1 bunch basil ½ lemon ²/³ oz. simple syrup 3 oz. gin, we suggest London dry gin

Dice avocado, finely chop 1 teaspoon of chives, and grate 1 teaspoon of lime zest.

Stuff the basil into a cocktail shaker, followed by the lemon. Muddle the lemon and the basil, smashing the ingredients and squeezing the lemon.

Mix lobster meat with avocado, chopped chives, Tabasco or hot pepper sauce, 1 teaspoon of lime juice, lime zest, mayonnaise and salt & pepper. Taste for flavour.

Add simple syrup and mix. Try tasting your concoction to make sure you’ve nailed the proper balance of sweet and sour.

Place a teaspoon of the mixed salad on each spoon and garnish with a sprig of cilantro.

Fill shaker with ice, top with gin. Shake vigorously until very cold — about 30 or so seconds. A good rule of thumb is to stop when the shaker begins to frost over and it’s almost too painfully cold to hold. Double-strain into a rocks glass filled with ice, squeezing every bit of liquid through a fine mesh strainer with a bar spoon. Give the glass a stir and add more ice if necessary. Garnish with another basil leaf.

Bourbon ¾ oz. simple syrup 1 squeeze of lemon juice Wedge of orange Maraschino cherry Fill a cocktail shaker with ice, add bourbon, simple syrup and lemon juice. Both offer intense flavour profiles backed by racy acidity and firm tannic structure. Wine Battles – France vs. Italy In this premium event we pit the classic Bordeaux wine styles against its Italian counterparts. You may not know it but Cabernet and Merlot have thrived in Tuscan vineyards for more than 200 years. Bolgheri, vineyards on the western edge of Tuscany in central Italy produce ripe and complex wines. A premium tasting event of Bordeaux blends go head-to-head and you will be the judge. Asian Spiced Pork Ball Bites Meatballs with an Asian twist. This recipe makes two dozen and balances well with dry Riesling or GewĂźrztraminer.

Pork Ball Bites 8 oz. of ground pork 1 oz. of shallots finely copped 2 finely chopped garlic cloves 1 tsp. of brown sugar ½ tsp. of freshly ground black pepper 1 tsp. of finely chopped cilantro 1 Tbsp. of grated fresh ginger 1 Tbsp. of finely chopped mint leaves 2 Tbsp. of fish sauce Vegetable or canola oil to fry Sauce Squeezed juice from 1 lime 1 Tbsp. of fine grain sugar 2 Tbsp. of fish sauce 1 finely chopped jalapeno pepper (seeded) 1 finely chopped garlic clove 1 Tbsp. of freshly grated ginger Place all the pork ball bite ingredients into a large mixing bowl and thoroughly mix. Test fry a sample bite before molding all the balls in step 2. Heat a large non-stick frying pan coated with your chosen cooking oil, fry the sample bite on both sides for 2 minutes or until cooked through. Try the sample, add salt or additional fish sauce to the mix if necessary, and roll the mixture into bite-size balls. Fry the balls gently on both sides till cooked through; keep them warm in a medium oven until ready to serve. Mix all sauce ingredients together with 2 tablespoons of water, taste for seasoning and add chopped fresh cilantro as a garnish. 10

Pear or Apple Compote and Cheese topped Crostini

A quick, easy to make snack great for those drop-in-on-a-whim guests. Pair with Champagne or Prosecco.

Pears or apples (Bartlett or Granny Smith) peeled, cored and coarsely chopped Star anise or cinnamon stick Fruit forward white wine such as Pinot Gris, 2 ½ Tbsp. 1 Tbsp. of sugar Aged Pecorino cheese (4 to 5 oz. – 125 to 150 g) Cambozola cheese (6 oz. cake) Toasted crostinis or crackers (make crostini by slicing baguettes and brushing lightly with olive oil and seasoning with salt & pepper, bake at 350°F till golden brown) Combine pears (or apples), anise (or cinnamon), wine and sugar in a frying pan over low medium heat and simmer and stir till fruit starts fragmenting; cool to room temperature before serving. Place compote in a serving bowl and place on a large platter surrounded by the crostini and cheeses. Layer a slice of cheese and a dollop of compote on each crostini.

Prosciutto Bruschetta

A delicate finger food that pairs nicely with a light Sangiovese (Chianti) or Pinot Noir.

A baguette sliced into approximately 24 pieces 2 Tbsp. of olive oil 1 cup of fig jam or preserves 1 Ÿ cups of Ricotta cheese 6 slices of prosciutto cut into 4 pieces each Fresh ground pepper Preheat oven to 350°F and toast the bread after arranging the baguette slices on a baking tray and brushing with olive oil. Bake 10 to 15 minutes (till golden brown) and transfer to a large plate. To assemble the Bruschetta, spread each slice with a heaping teaspoon of the fig jam, followed by a dollop of ricotta cheese and the prosciutto. Season with pepper and serve.

Now To Feed a Multitude of Classic Bolognese

Irish Stew with Pork Ribs

A traditional meat sauce that goes well with your favourite pasta and a Tuscan Chianti, or Barbera from Piemonte.

Enjoy this fine stew with an Irish or American stout and seven of your favourite people.

3 Tbsp. of unsalted butter ¹/³ cup diced onion ¹/³ cup diced carrot ¹/³ cup diced celery Salt & pepper 1 lb. of ground beef chuck or pork

1 ½ cups whole milk 1 ½ cups dry white wine 3 (approx. 15 oz.) cans of diced tomatoes, drain and hold on to 1 ½ cups of the juice

Melt the butter in a large pot over medium heat. Stir in onion, carrot, celery and a teaspoon of salt and pepper; cook until softened 7 – 9 minutes. Stir in ground meat and cook breaking up the chunks with a wooden spatula or spoon till no longer pink, about 5 minutes. Add milk and stir till simmering. Cook until milk has evaporated and only clear fat remains (approx. 25 minutes). Stir in the wine, bring to a simmer then cook for another 25 minutes until it has evaporated. Mulch the tomatoes in a food processor until slightly chunky, then stir into the pot along with the tomato juice and bring to a low simmer. Cook gently over low heat until liquid has evaporated, this will be about 3 to 3 ½ hours. Taste and season with salt and pepper before serving over your favorite pasta topped with parmesan cheese.

6 lb pork ribs, separated and cut into 2” lengths 4 onions sliced 6 lb potatoes, one third sliced, 2 thirds cut into large chunks 3 lb carrots, peeled and cut into ½ inch pieces Salt & pepper Put the ribs in a large pot with salted water covering all of the pork and bring to a boil. Reduce the heat to low and simmer for approximately 12 minutes skimming off any foam that rises to the surface. Add the onions, carrots and sliced potatoes and cook for another 20 minutes. Adjust seasoning according to taste with salt and pepper, then add the potato chunks. Cover and simmer for about 2 ½ hours with the occasional stir.


Family & Friends Dutch Oven Tarragon Chicken Serve over rice alongside a lightly oaked, creamy Chardonnay.

2 Tbsp. of vegetable oil 1 ¼ lbs mini portobello mushrooms, trimmed and quartered 2 medium onions, diced 4 medium garlic cloves minced or pressed (approx. 4 tsp.) 2 tsp. of fresh thyme leaves or a ½ tsp. of dried thyme

Salt 1 ¾ cups dry white wine 1 ½ cups chicken broth 7 medium sized carrots, peeled and cut into ¾ inch pieces 3 Tbsp. Minute tapioca 2 Tbsp. soy sauce

2 Bay leaves 4 lbs bone in chicken (breasts or thighs) skinned and trimmed Black pepper 1 cup heavy cream ¼ cup minced fresh tarragon leaves

Heat oil in large frying pan over medium high heat, add mushrooms, garlic, thyme and a ¼ teaspoon of salt. Cook and cover, stirring repeatedly for 8 to 10 minutes. Remove the lid and continue cooking onions and mushrooms until they are lightly browned. Stir in the wine and simmer until thickened. Transfer the mixture to large stock pot (Dutch oven) and stir in the broth, carrots, tapioca, soy sauce and bay leaves until evenly mixed throughout. Season the chicken with salt and pepper then place in the pot and cook on low until chicken is tender (4 to 5 hours). Remove chicken and vegetables from the pot to a serving plate and cover. The remaining cooking liquid can now settle for a few minutes. Once it has, remove as much fat as possible from the top by skimming or pouring off. Remove the bay leaves, stir in the cream and tarragon, seasoning with salt and pepper to taste. Pour a cup of the sauce over the chicken and vegetables; the remaining sauce can be put in a serving jug.

The Elusive Truffle

“The diamond of the kitchen” as so named by French gourmand Jean Anthelme Brillat-Savarin. The white truffle is atop the list of the most expensive and rare culinary ingredients in the world. Among this illustrious list of gastronomical luxuries is Saffron, world famous caviars, the incredibly tender and perfectly marbled Kobe beef and the most unusual, unfamiliar and definitely expensive Densuke black watermelon. The record for the most expensive truffle purchase was set in 2010, when two large truffles whose combined weight was a little over 1 kg were purchased in auction for an astounding $330,000. The white truffle is found in its highest numbers in the Langhe area of Piemonte in northern Italy. More specifically, in the hills surrounding the twin towns of Asti and Alba. But it is also hunted in Tuscany, as well as parts of Croatia and even Greece. A member of the Ectomycorrhizal fungi family, the white truffle is usually found a few inches under the soil in woodlands as the nut like fungi grows best in the crowded roots of mixed vegetation and best under oak and hazelnut trees. The hillsides of the famous wine region Barolo are notorious for the elusive truffle where this earthy and pungent delicatessen is a key local ingredient in many of the regional dishes. Consequently, it turns out that Barolo is also a magnificent wine pairing with truffled dishes! It is here on this steep wooded terrain of the La Morra commune that local truffle hunters and their trusty canine companions search the dense and moist forests for the famed Tartufo. White truffles reap the highest reward but are only harvested in late October and into November. Black truffles, however, are a profitable and delicious alternative during the summer months and found in a higher abundance. These rare fungi are hunted by only a handful of licensed hunters using dogs to sniff out the culinary treats. Once a truffle is located beneath the soil, the dog digs gently until its paw touches the prize. 24

It is trained to stop digging so as not to damage the roots in hopes that another truffle will one day grow from the spores left behind. Hunting is typically done under the night’s sky so the hunting grounds remain a secret. White dogs are used to be seen by their master in the dark of night. Boars were once used but the greedy swine’s often gobbled up the truffle before they were surrendered or damaged them during their hasty excavation. Ironically, wild boar makes for deliciously truffled dishes, especially if the animal’s diet was supplemented with these jewels of the earth. Wine and Truffles

Truffles have to be one of the most unique and expensive ingredients in the world. These potently flavoured fungi grow beneath the soil in damp dark forests in only a handful of locations around the world. Chef Wade Patterson will create and serve his favourite truffled dishes as our in house sommeliers will look to make the perfect pairings.

Classic Mint Julep 2 ½ oz. bourbon 2–3 mint leaves 1 oz. simple syrup Ice cubes Crushed ice

For the mint simple syrup: ½ cup sugar ½ cup water 1 large bunch mint leaves

First, you’ll make the simple syrup. Combine the water and sugar and bring to a boil. Stir until the sugar has completely dissolved. Place the bunch of mint leaves in an old mason jar (or other heatproof container) and pour the syrup over the leaves. Place the jar in the fridge and let the leaves steep in the syrup for at least one hour. Strain the leaves from the liquid and set the syrup aside. Place your 25–30 mint leaves in a cocktail shaker and pour in the 2.5 ounces of bourbon as well as one ounce of your simple syrup. Top with a few ice cubes and stir. Fill your chilled glass with ice about halfway. Strain the liquid from the cocktail shaker into the cup. Pack crushed iced on top of the liquid to the top of the glass. Garnish the drink with a sprig of mint leaves and a straw.

The era of Prohibition actually led to some pretty creative cocktail creations, some of which have stood the test of time and become ingrained in our culture while others have disappeared. We will whip up some retro cocktails and see if we can discover some long lost recipes. Orange Hop-sicle This award-winning creation blends the bright orange peel flavours of curaçao and balances them with intense citrusy hops. 2 oz. Cointreau 2 dashes Peychaud’s Bitters ½ oz. simple syrup 3 oz. of your favourite Pacific Northwest IPA In a cocktail mixing glass, add Cointreau, Peychaud’s Bitters and simple syrup. Fill mixing glass with ice and shake and strain into wine glass. Top with IPA. Makes 1 serving.

Pink Lady Perfect for Valentine’s day! 1 ½ oz. gin ½ oz. apple brandy ½ oz. freshly squeezed lemon juice 1 egg white* 2 liberal dashes of grenadine syrup (approx. ¼ oz.) Place all ingredients in a cocktail shaker with ice. Shake vigorously for about 30 seconds and strain into a cocktail glass. Garnish with a maraschino cherry. *If egg whites faze you, you can leave this one out; however, we encourage you to give the idea a fair shake. The egg doesn’t affect the flavour of the drink, but does gives it a luxuriously frothy meringue-like texture.

Private Events • Our tasting rooms can fit 34 comfortably. • Basic room rental for private meetings with no alcohol served is $200, plus GST. • Private wine tasting for a minimum of 12 people with six wine styles and light snacks start at $45 per person. Rather than bartending services, we provide your guests with an educational tasting experience they won’t soon forget. • All private events can have customized themes. • Catering can be arranged through us. We have a selection of caterers that we work with and can arrange anything from simplistic to elegant. • Our tasting rooms have full hook-up for VGA connections.

Co-op Wine Spirits Beer Tasting Event Rules and Regulations All participants of Co-op Wine Spirits Beer events must be 18 years of age or older and may be required to show identification. Due to unforeseen circumstances, we reserve the right to postpone or cancel events. Customers will be notified as quickly as possible and given the option of being reimbursed for their tickets or rebooking into another event. We regret that we do not offer refunds for missed classes. Refunds or alternate events may be offered if notified 48 hours prior to the event. As all events involve the consumption of alcohol, we remind you that your well-being is of the utmost concern to us and ask that you arrange for transportation to and from the event should you require it. Most tasting events begin at 7pm unless otherwise stated. We ask that you please arrive promptly, so you and others can fully appreciate the event. We also ask that you refrain from wearing heavily scented perfumes or colognes. Thank you in advance for your cooperation. Class and event prices do not include GST.
