PUBLISHER’S NOTE
W
ow, the holidays are already upon us! Like the past 20 or so years of my life, 2018 has passed so quickly, reminding us how important memories and traditions are to our family lives. In part that is why we decided the first “Fergus Falls, The Magazine Holiday Edition” should be about what people hold dear to their hearts. For me, that is time with family. My family like all others had its traditions, most of which I have passed on to my children. We always have ham on Christmas Eve and make breakfast omelets out of the leftovers. We have turkey on Christmas day and every kind of soup you can make from leftover turkey and ham for the next week. Another one of our traditions is to open Christmas gifts from each other on Christmas Eve and on Christmas morning, the children would get a present from Santa and their stocking stuffers. While living in Texas this tradition caused us a bit of anxiety. The neighbor’s tradition was that mom and dad gave the child one gift to open on Christmas Eve and everything else came from Santa the next morning. Now you try to explain to a 5- and 7-yearold why Santa would bring the neighbor boy Toby so many toys while he left them only one. Inside this edition, you will get to experience some of your neighbors’ favorite traditions, memories and recipes.
Our main feature is a heartwarming story of how a tradition can be passed down from child to parent and not just the other way Mitzi Moe around. It is one of the most uplifting stories I have heard in ages. In my younger years, my mother was an amazing cook and baker. She learned from her mother who I am sure learned from her mother. I cook a lot of those same meals and they will often trigger memories of getting together with aunts, uncles, cousins and grandparents to enjoy the holidays. We have asked several area chefs to share some of their favorite recipes. We are hoping you will try some of them and they will simmer up new delectable memories for those in your family. Traditions for all families are different with the exception of one; spending time together and making memories. We hope you enjoy our first ever Holiday Edition and use the ideas inside to create many happy memories for you and your family for years to come.

I’m Jeremy Petrick. I was born in midwestern North Dakota, and then grew up:) Along the way I went on to graduate school where I learned about important things . . . like student loans. I spent 10 years in the corporate world . . . to pay off those loans, and now finally doing something a lot more enjoyable. I’m a simple guy. I love to spend time with my wife and kids and I have a fancy camera! A favorite holiday dessert in our family was steamed cranberry pudding, but it was really fun searching for new ways to enjoy this beautiful and delicious fruit in its fresh form. My husband, Dan, and several neighbors were willing taste testing panelists. – Sandra Thimgan

Comfort. It is something that is needed during difficult times in our lives. Some reach out to others to talk, others deliver a much-needed necessity to get those through a rough patch. For James ‘”Jessy” Haberman, empathizing with other children by providing toys during their stay at hospitals was something he had done for him and he wanted to pass that comfort on.
D
uring this season of giving, the Haberman family is looking to continue the legacy of their son, Jessy. Keeping her promise to her son, James “Jessy” Haberman, who passed away Feb. 19, 2018, Heather Haberman and her family have dedicated themselves to making sure that every child in the hospital has a moment of comfort and joy all throughout the year. Jessy’s Toy Box was started by the Haberman family when Jessy was going through treatment for an undiagnosed syndrome. After being diagnosed at a very young age, the family was told that he would never walk or talk. Jessy proved them all wrong. Heather shared that Jessy turned out to be very chatty, was a great speller in school and told plenty of good jokes.
At four years old, Jessy was diagnosed with a low iron count and need to have an infusion. The infusion was near Christmas and the young boy was quite nervous, as one would expect. Luckily, the nurses gave him a new Power Ranger toy. “It took him out of the moment for just a little bit. He wasn’t scared, but it was enough to make him feel good,” Heather said. This was the moment Jessy realized that he wanted to make sure that other children received a toy as he did. The very next year, near Christmas again, Jessy needed another infusion. His family posted on Facebook that if anyone wanted to donate a toy that they would bring it up to Sanford Roger Maris Cancer Center in Fargo, where Jessy was being treated. That first

Cities all around Minnesota, North Dakota and South Dakota have brought a “Jessy’s Toy Box” to their community to collect toys for children in their area. year they fi lled an entire van full of toys. Radio and TV stations started picking up the story and ever since that first year, the amount of gifts has grown. According to the Jessy’s Toy Box website, the nonprofit organization: “Collects toys, gift cards, and other items that help kids that are at the hospital through infusion treatment or surgical procedures. This was started by Jessy himself, in 2015. Our goal is to distribute toys to hospital and infusion centers all over the United States.” “His goal was for every child to get a toy every time,” Heather said. “Because he wanted somebody else to get that smile.” Tragically, after open heart surgery this past February, Jessy passed away. Before the surgery, he spoke with his mom and dad, Jim, about Jessy’s Toy Box. Wanting to know if he could continue giving toys if he got better, his parents promised that no matter what, he would be able

“...our hearts need to be bigger and open up all year long, not just during Christmas” – Heather Haberman organization. One memory was when they were bringing toys to a hospital and there was a particularly large box that needed to be carried in. Jim, Jessy’s dad, grabbed the box and was quickly stopped by his son. “Dad, this isn’t your job. This is my job. I will take this in,” Jessy said. Even now, the entire family is invested in this organization. Heather and Jim have three other children, Mason, McKinnlee and Brystol. Bringing these toys to families in need has become not only a holiday tradition but a year-round tradition. “We used to do it just during Christmas and now we do it 365 days a year,” Heather said. “One thing we all have to remember is, yes, it’s great that we remember once a year to give but I think we all need to step back and realize that we need to give more than just once a year. Because people are sick all throughout the year and our hearts need to be bigger and open up all year long, not just during Christmas.” The family also celebrates the holidays with their own traditions at home. Heather described how the family decorates three whole Christmas trees, each with their own set of ornaments. The first tree has the “pretty decoration,” the second shows off the kids’ ornaments and ones that they have made over the years, and the third tree has any family ornament and gets fi ve new ornaments each year, one for each family member. “We all take time during this and remember where and why we got these ornaments. It’s fun to hear what they remember and what I remember,” Heather said.
Jessy Haberman—who passed away in February 2018—created “Jessy’s Toy Box” after going through treatment and realizing that bringing a toy to someone in the hospital can brighten their day.
For more information about Jessy’s Toy Box, visit their website at jessystoybox.wixsite.com/website or their Facebook page, “Jessy’s Toy Box.” “Jessy’s Toy Box” was started in 2015 and hopes to bring toys to hospital and infusion centers all over the United States. HOLIDAY 2018 • FERGUS FALLS • 15

As a child I remember the excitement of getting ready to go to Grandma’s house for Christmas. Every year we packed up the family and presents, headed to spend Christmas Eve with my Dad’s family (The Larsons) and Christmas day with my Mom’s family (The Clasens). Christmas Eve at Grandma Larson’s house always started with ham, scalloped potatoes and lutefisk (which I never ate!). We would have veiling for dessert. Before any gifts were to be opened we had to wash the dishes and then Grandma always required us to sing carols. Dishes washed, songs sung, now for the moment of anticipation – presents! This didn’t come without its own form of what we felt was punishment, Santa. Our Santa was frightening - he wore a red gown and a plastic mask. Today they could have been hired as Freddie Krueger for the movie. My brother, Clayton (2 years older than me) was absolutely terrified of this man. In the photo above, Grandma Larson is gently pushing Clayton towards the red gowned man just out of sight. I am standing to the side of my brother with my Uncle Gary – we both have a look of relief on our face as we had retrieved our gifts and now stood and watched poor Clayton straining to reach his gift without having to take one step closer to Santa. – Mitzi Moe
Skiing in the land of Sky Blue Waters. I was told my Dad, James, had me on skis at 2 years old… it’s what Spidahls do when it snows. I remember, in grade school years, running out each half hour during snowstorms, with a ruler to check the depth. Christmas vacations? That meant helping pack Old Smokey, give lessons and “schuss” our lighted Ski Hill that operated for some 40 years. First dates were “ski trip dates” and Christmas wasn’t much without cold and snow because most of the revenues from Spidahl Ski and Sport Shop came with ski and skate sales. Funny memories? A two-hole outhouse at Halloway Hill!! Now, I can pass on to my grandkids the joy of “dancing on the snow” and celebrate a tradition invented by my ancestors near Telemark, Norway. Water – we get to enjoy it in all forms in Minnesota. – Rod Spidahl
It was the Christmas or two after my Grandfather died. Grandma (Hilma Halvorson) and I were talking about what we would do that weekend and some how we talked about visiting Santa. Neither Grandma, in her late 90s, nor I, in my 20s, had ever “sat” on Santa’s lap. For Grandma, it was not something they did when she was younger. We had the best time that night and Grandma could hardly believe she was going to be sitting on Santa’s lap at her age. I told her, you’re never to old for Santa. – Deanna Forkey
Our daughter, Aasne Vigesaa, 7, decorated her little brother, Erik, with bows and ribbon. Erik, 3 looking at the presents under the tree. His curiosity was getting the best of him, but there was church to go to, supper, dishes to wash, and a few carols and Christmas story to do fi rst before the presents could be unwrapped. These pictures were taken at my sister and brother-in-law’s home, near Hagen, Saskatchewan Canada. – Connie Vigesaa

Have a Berry Merry C hristmas
Your family is gathered around the holiday table, filled with the bounties of the season. Flavorful dishes are being passed to you, one after the other and suddenly there it is . . . you remember — that plate of sliced, jellied, canned berries!!! You know the one — it even has lines on it from the can! Ewwwww, run away! We are NOT going there — we are venturing into the delicious world of fresh cranberries — beautiful, nutritious, and the tangy flavor that sings in your mouth. By Sandra Thimgan Photos by Daniel Thimgan
ROASTED CRANBERRY AND GOAT CHEESE FLATBREADS Roasting this cranberry mixture heightens all the flavors and results in the bonus of caramelization — double the recipe and experiment. 1 1/2 cups fresh cranberries 3 T. pure maple syrup 1 T. fi nely chopped green onion 1/2 tsp. chopped dried thyme 1/2 tsp. salt 2 flatbreads (such as Stonefire®) 1 - 4 oz. pkg. fresh goat cheese, crumbled 1/4 tsp. red pepper flakes (optional)
Preheat oven to 375°. Mix cranberries, maple syrup, onion, thyme, red pepper flakes, and salt in an 8” x 8” baking dish. Roast, stirring once or twice until the cranberries burst and the mixture is bubbling and caramelizing along the edges, about 15 minutes. Remove from oven and stir until the berries have broken down and the mixture is thick. Set aside. 18 • FERGUS FALLS • HOLIDAY 2018
Lay each flatbread on work surface. Spread the hot cranberry mixture over the flatbreads, dividing evenly and top with goat cheese. Bake directly on oven rack until the cheese is softened and the flatbread is crispy, 8-10 minutes. Cut into wedge or strips. Serve warm or at room temperature. Equally good for an appetizer or light lunch.
We associate fresh cranberries with the holiday season, and with good reason. They are usually only available from October through December in their fresh form! 98% of world production of cranberries comes from the United States, Canada, and Chile. Cranberries are high in prebiotic fiber for a healthy digestive system and are packed with antioxidants. Beautiful and good for you — we should all be so lucky!
CRANBERRY SALSA This may look like the same old cranberry relish at your holiday table, but, trust me, this is a salsa, the racy cousin of that relish. Spiced with a Mexican flair, the combination of sweet and hot make this salsa an incredible dip for chips or a great addition to any sandwich (like the Turkey, Brie & Cranberry Quesadilla included later). 12 oz. fresh or frozen cranberries, chopped 1/3 cup sugar 1/4 tsp. cumin 3 green onions, chopped fi nely 3 T. cilantro, chopped 1-2 large jalapeño peppers, seeded, fi nely chopped (adjust to your heat level) Chop cranberries in food processor until medium sized. Combine with all the other ingredients. Let sit for at least three hours before serving, allowing the flavors to blend.
TURKEY, BRIE, & CRANBERRY QUESADILLA The soft texture of melted brie pairs perfectly with the tangy berries — it’s a party for your taste buds! 4 - 7-8” flour tortillas 1 small wheel of brie cheese, cut into 12 slices 3/4 cup roasted cranberry sauce or cranberry salsa, (both included in this article) 12 slices deli turkey or leftover cooked turkey Kosher salt, to taste Spray both sides of tortilla with cooking spray. Tortillas will be folded so only put fi llings on half the tortilla. For each tortilla, spread cranberry sauce of choice on half the tortilla, top with three slices of brie, three slices of deli turkey, a little more cranberry sauce, a sprinkle of salt to taste, fold over and fry in a nonstick skillet over medium-high heat. Fry 2-3 minutes per side until browned and crisp. Slice and serve. These are fi ne served at room temperature as well. HOLIDAY 2018 • FERGUS FALLS • 19

Cheers! Shiner Holiday Cheer S Lucky for b be beer drinkers, the holidays abound with seasonal brews. As the nights get shorter, the ales get darker. One of my favorites is the Shiner Holiday sho Cheer. A German Dunkelweizen-style beer, the pour is a satin amber with an off-white head. The immediate (and delectable) aroma teems with the abundance of Fredrickburg peaches and Texas pecans. Smooth and drinkable, if you are a fruity beer fan, Shiner Holiday Cheer will enhance your celebration. ABV 5.4. IBU 22. Shiner Beer is brewed at the Spoetzl Brewery in tiny Shiner, Texas (population around 2,000) – halfway between San Antonio and Houston. The brewery has been in operation 909. since 1909.

My Favorite Christmas!
By Eleanor Tingelstad
A Tribute to LeRoy The World War II was over! Our family was waiting for LeRoy to come home. His older brother, Milan, had returned from the war. It was late fall and we expected him any time. I was in the seventh grade and was 12-years old. I was up early one morning. It was still dark out. As I walked by a window, I saw a soldier walk by. I hurried to the entry to get the first hug from my brother. Then I hollered, “LeRoy is home, LeRoy is home!” Down the stairs came the three brothers, Alvin, Herbert and Loyal. They had stopped to put their trousers on. My mother and dad came and little sister Dora, who was in second grade. We had a joyful morning, not going to school that day. One sad thing was that the older bother at home had to leave for his stint in the Army Air Force that day. But first he and the next brother walked with LeRoy downtown to show him off. We were living in Pelican Rapids then, having moved from rural Vergas. We were so happy to have LeRoy “home for Christmas!” He went shopping for gifts for all of us. I still have the manicure set I got from him, minus a couple of pieces. My oldest brother had also come home home safely from the war,. He had a wife - and son (who he hadn’t seen). It was certainly the best Christmas I remember! It was my favorite Christmas! LeRoy, 18, and Milan Tin

Each year on Christmas Eve, Curt, the kids and I spend the evening driving all ov over town looking at the Christmas lights and decorations. Of course, we make su sure to stop by the Computer Hero Christmas Light display if it’s hosted for what may be the third or fourth time that season. m Once we get home for the night, Corban and Quinn get their Christmas Eve ggift from us – one present to unwrap together containing new Christmas PJs, a new DVD, hot chocolate, and popcorn. WELCOME TO THE
TABLE Table settings showcase a variety of styles
In the home of Stacy McGovern, a fondue station is set up for the holidays. McGovern and Cindy Carlson worked together to create two unique table settings for this holiday season that highlighted stylish and unique pieces.

Fun pieces, such as this penguin, can be swapped out for other appropriate themes that can extend the use of the table setting into other seasons. McGovern suggested using turkeys for Thanksgiving.
F McGovern and Carlson named this table, “Cozy Copper Christmas.”

or many, the holiday season brings many opportunities to host family and friends to share in a festive party and some yummy food. But with everyone coming over to your home, it can quickly become overwhelming. Stacy McGovern and Cindy Carlson shared their tips and tricks for setting a spectacular dining room table that guests are sure to fall in love with. The two set out to prepare two very different table settings to showcase a variety of styles. It was important that the task not break the bank. “We did not go out purchasing. It’s a combination of what we own,” Carlson said. “Naturally, we love decorating so we have these things.” Using items from both of their homes, they created a table for a more elegant dinner and another for a more casual affair. McGovern and Carlson titled their first table, “Cozy Copper Christmas,” as it featured round copper ornaments and classy Moscow Mule copper mugs. Though the metallic pieces and white fur make an elegant appearance, “It looks fancier than it really is,” Carlson said. With natural elements weaved throughout, the setting showcased McGovern’s love for the outdoors. “It’s comfortable. It’s just very elegant but it’s comfortable enough to ‘oohh’ and ‘ahh’ about it,” Carlson said. The theme of the first table was created around the soft white fur pieces. McGovern and Carlson highlighted the variety of textures on the table. “We definitely like to use different texture,” Carlson said. Bringing in soft, glossy, smooth, rough and other textures can add interest to the setting. Adding a scented candle
and putting on some soft Christmas music in the background can help stimulate all of the guests’ senses to tie the entire theme together. They also brought up the need to consider the heights of your decor. They suggested bringing in a variety of heights for interest, but keeping the sightline open between guests for easy conversation. With red plaid and reindeer as far as the eye could see, McGovern and Carlson put together a more casual and warmer look for the second table setting. Again, they displayed a variety of heights and textures in their pieces. They added in some quirky features that would be fun for the kids with the name tags for each plate having one of Santa’s reindeer written on them. “We like to throw something in that is unexpected,” Carlson said. Both tables had the option to swap out certain pieces in order to get more use out of the setting. McGovern said that they wanted to show a table that someone could integrate into New Year’s and winter just by taking a few things away and adding some things. For example, the first table featured penguins on the table and the fondue station, but they could easily be replaced with a turkey to be set for Thanksgiving. “I feel like it is easily transformed through the seasons,” Carlson said.
In the home of Cindy Carlson, an energetic and warm table setting featuring red and black plaid was set. The real key to setting out the perfect place setting? Preparation. “Giving yourself some time and doing this ahead of time so if you’re entertaining you can focus on the rest of it and enjoy your guests,” McGovern said.
Fun details, such as table name tags with the names of Santa’s reindeer, can create interesting talking points for holiday meals. HOLIDAY 2018 • FERGUS FALLS • 29

Christmas W at the Kirkbride
Christmas Program at the Fergus Falls State Hospital
By Missy Hermes Photos courtesy of Otter Tail County Historical Society
hen writing his book describing the perfect state hospital, Dr. Thomas Kirkbride left out no detail. From sanitation to food, clothing and architecture, he covered all aspects of a patient’s life - except how to celebrate the holidays. Staff and patients at the Fergus Falls State Hospital created their own holiday traditions. Here’s a sample of remembrances of Christmas at the Kirkbride. In 1898, Miss Bertha Fick of Elizabeth was training as a nurse at the hospital. In this excerpt from a letter home she describes the Christmas preparations. We are practicing songs for Christmas. Mrs. Dr. Welch comes over to the practice room every evening to practice with us. On Christmas morning, the Choir will go to all the wards and sing, in the afternoon they will have exercises and in the evening they will have a tree in the dining room. I do wish I could be with you all for Christmas, but really I will have a nice time here. Love and kisses from your affectionate sister, Bertha From its very beginning, the hospital hosted legendary Christmas programs and meals and the Fergus Falls newspapers reported on these celebrations. In 1896, every patient received a Christmas present, such as a pair of mittens, a hat, handkerchief, pipe or something of that kind as well as candy, nuts, etc.. Small Christmas trees were also placed in each of the sick wards. A great deal of credit is due to those who have had the hospital exercises in charge. The patients’ Christmas dinner at the hospital was an elaborate affair. The bill of fare consisted of turkey, cranberry sauce, boiled potatoes, boiled rice, breads, butter, mince pie, apples and mixed nuts. Some idea of what is meant by this will be gained from the fact that nearly 800 pounds of turkey, 250 mince pies, a barrel of cranberry sauce and other things in proportion were prepared for this dinner.

By 1906, the Bijou Theater in Fergus Falls had started a new hospital tradition, showing “moving pictures” of the story of “Ben Hur”. Movies would become a regular part of the activities of the hospital, enjoyed by staff and patients alike. News about movies and other happenings at the Fergus Falls State Hospital appeared in their own weekly newsletter, The Pulse. In 1942, the newsletter told of Christmas trees brought in from Perham. It also recognized community members who added to the holiday enjoyment at the institution. They included service groups like, “the Kiwanis Club members who spring out of bed at 5 o’clock, gather up the Campfi re Girls for a breakfast of cocoa and doughnuts and then visit all the hospitals of the city to bring cheer and Yuletide music to shutins.” Even into the 1990s, community members donated gifts for residents at the Regional Treatment Center and volunteers wrapped the presents for distribution. For many years, a car ride to see the decorations at the “Castle on the Hill” was a holiday tradition. Start your own holiday tradition and take a winter walk on the grounds, celebrating Christmas at the Kirkbride.

Why I Love the Holidays
Klara Beck Klara Beck, executive director of the Kaddatz Galleries in Fergus Falls, shared why she loves the holidays with Fergus Falls The Magazine. From seeing family to eating lots and lots of food, there was no shortage of special Christmas memories. Q: What is your favorite part of the holiday season? A: “I like being able to spend time with all my family.” She went on to say that she especially enjoys seeing her three younger sisters. With family spread all over the world, including one sister in Norway, the holidays are a special time for them all to get together. Q: Do you do anything special for Christmas/New Years? A: “We usually do. We have a lot of nontraditional eating habits in my family.” Beck explained how each year her family often serves fondue and “Christmas nachos” which she described as basically regular nachos but with colored tortilla chips to make it more festive. Q: What is your favorite holiday memory? A: Beck shared about the year her family put together their own Family Murder Mystery party. “I had to come up with all these different characters. We all dressed up.” Q: Do you decorate for Christmas? What do you do? A: “At my parent’s house, we have a sparkly fake white Christmas tree that we decorate every year.” She continued, “My husband gets into decorating for Christmas. … He does seasonal framed records.” Beck’s husband, Andy, switches these framed records throughout the year to fit the season. Q: Do you go out for Black Friday shopping, why or why not? A: “If I’m going to go Black Friday shopping, I will only go to local stores. ...On Friday we will generally go downtown get coffee and look at all the shops.” Beck said that they also like to participate in Small Business Saturday by shopping at local stores as well. “I’m not a big fan of the commercialism.”
