As we continue to strive towards our Vision to become Australia’s leading integrated resort company, The Star’s incremental refurbishments continue with capital works programs worth $500 million currently underway. The latest is the new-look Astral Residences with Level 16 suites now completed. With our new look also comes our new Guest Service training via our Star Qualities Program that many of you have or will take part in. I’m proud to hear about the many Star Players at The Star who continue to deliver thrilling guest experiences on a daily basis. Read up on some of the latest Star Quality Legend stories in this issue. On Monday, 25 July The Star Sydney partnered with Australia’s leading food rescue organisation, OzHarvest. Thousands of members of the public were offered a free hot meal in Martin Place as part of the 2016 Think. Eat. Save campaign.

The Star supports

OZHARVEST The national campaign, led by OzHarvest in partnership with the United Nations Environment Program (UNEP), aims to raise awareness of global food loss and waste reduction by showcasing some of the nation’s top chefs, politicians and celebrities united to take a stance against food waste. The Star hosted two stalls and the public were invited to enjoy a delicious, hearty meal of Milli Julli Sabji ‘everything in the pot’ vegetable curry served with Bhatura flatbread or rescued chicken pie with tomato relish. Meals were prepared by The Star’s award-winning team of chefs including Director of Dining, Uday Huja; Executive Chef, Jason Alcock; Osteria Balla Manfredi Restaurant Executive Chef, Gabriele Taddeucci; and Vincent Liew, Chef De Cuisine of the Sovereign Room along with a team of 15 volunteers from The Star’s Culinary, Banquet and Events teams. All dishes were made from surplus produce that would have otherwise been destined for landfill. A shout out to members of The Star’s Culinary, Banquet and Events teams who volunteered their time to support this important cause.

AUSTRALIA’S TOP RESTAURANTS AWARDS The Star plays host to nation’s top chefs, restaurateurs and producers

On Monday, 2 May 2016 the ‘rock stars’ of Australia’s restaurant industry made up of more than 350 chefs, restaurateurs and leading culinary commentators gathered at The Star Event Centre to celebrate The Australian Financial Review Australia’s Top 100 Restaurants. The best of the best in Australia’s food scene were there to reflect on their hard work and celebrate another year in the restaurant business. After the success of the inaugural event in 2015, guests eagerly waited to hear their ranking amongst Australia’s Top 100 Restaurants as voted by their peers.

Momofuku Sieōbo, suckling pig by Gabriele Taddeucci from Balla, ocean trout nigari by Chase Kojima from Sokyo, and Dany Karam’s beef tartare from BLACK by ezard. Adding to the theatrics of the event, a roving oyster shucker shucked fresh oysters for guests.

A total of seven Sydney restaurants were ranked in the top ten, with two from The Star making the Top 100 list; Momofuku Sieōbo ranking number 30 and Sokyo at number 94.

Guests were served a range of beverages including supersized gin & tonics with fresh blood orange from sponsor, Tanqueray Gin and Nespresso Saint’s Ristretto cocktails.

The Star Event Centre was transformed into a whimsical secret garden with styling from ByDesign featuring impressive floral and foliage displays including 6km of trailing ivy, and 7 tonnes of various styles of green foliage and plants which took a total of 250 hours for a team of florists to assemble.

As guests were ushered to the front of the room for formalities, a curtain was drawn behind them as the dessert set-up commenced. Following the Top 100 Restaurants announcements, the curtain opened to reveal roaming dessert service offering mascarpone cream dessert with Nespresso parfait and orange coulis, and giant platters hanging from the ceiling displaying cherry petit gateaux; morello cherry jam covered with cherry mouse and chocolate biscuit, and apple petit

gateaux; calvados jelly covered with granny smith apple mouse and crunchy citron biscuit. Also on display were three large trees with custom-made metal leaves holding fresh figs with goat’s curd, Iranian pistachios and clover honey. The event was a spectacular display of the multifaceted capabilities of The Star’s talented Culinary, Banquets and Events teams.

With team members from Poland, Brazil, Fiji, China, Hong Kong, Argentina, France, Thailand, Philippines, Romania, Czech Republic, Korea, Japan and Australia – The Darling Spa team organised a ‘cook-off’ to celebrate their different backgrounds.

Twelve masterchef’s from The Darling Spa prepared dishes from their home country and presented it to the judges: John Autelitano (General Manager Hotel), Rikesh Rajakulasingham (Executive Assistant Manager of The Darling Hotel), Chantal Jackson (HR Manager), Tania Young (HR Advisor) and Catherine Lazarou (Director of The Darling Spa) for the taste test. After tasting dishes from around the world, the judges announced the following winners:

1st prize – Siwa

Opassamutchai (Spa Therapist) with a dish from Thailand.

2nd prize – Kristine Chua (Spa Therapist) with a dish from Philippines. 3rd prize – Swartika Joti (Spa Supervisor) with a dish from Fiji.

Catherine Lazarou, Director of The Darling Spa, said: “this was a great event to bring all of our team members together. Our team have so many different backgrounds but are equally amazing star players!”.

TO THE RESCUE

We love giving back at The Star, so during this year’s annual shut down day, team members across our property stood up to give back to Chris O’Brien Lifehouse, Barnardos Australia and the Taronga Conservation Society Australia. Chris O’Brien Lifehouse The VIP Gaming team volunteered their time to our Charity Partner, Chris O’Brien Lifehouse, to support their volunteer art project ‘Arterie’. Arterie provides art lessens to patients – which gives them a welcome distraction during their treatment. Josh Coon, VIP Gaming Manager, said: “It was great to help roll up old skeins of wool for the project, and the team had lots of laughs along the way.” A big thank you to all our volunteers: Casey Green, Sue Lloyd, Azenith North, Steven Teixeira, Collen Hough and Mirjana Dragutinovic.

Barnardos Renovation Rescue A range of volunteers from Facilities, Asset Protection, Public Area, AV, Asset Protection, Property and Project Services, as well as long term contractors joined forces to perform a complete refurbishment at a Barnardos Children’s Family Centre. The Family Centre provides emergency housing for victims of domestic violence. “Unfortunately the units have become run down and unwelcoming. It was so exciting to think that when these units are completed, our families

8

will have a safe, happy and clean place to start over their lives,” said Alarna from Barnardos. The team painted the house units, replaced carpets, repaired doors and walls, added artificial grass, and delivered and installed a range of donated goods from The Star, including TV’s, fold away cots, mattresses, plants, furniture, and much more! “The team were simply outstanding. Their drive was incredible. A big thank you to everyone involved,” said Lucy from Barnardos.

Taronga Conservation Society Australia The complete Events team supported the Taronga Conservation Society Australia by getting their hands dirty on shut down day. Throughout the morning they removed weeds to support bush regeneration for vital wildlife conservation programs. Bush regeneration attempts to protect and enhance the floral biodiversity in an area by providing conditions conducive to the recruitment and survival of native plants.

Progressive Focus Centre in Africa receives

DONATION FROM SKY TERRACE Last summer the team at Sky Terrace donated 10% of each week’s tips throughout the spring/summer season to a village 30 minutes outside of Nairobi, Kenya – Njiri. Funds were donated through a charity called Progressive Focus Centre. Progressive Focus Centre is both an orphanage and a school caring for about 120 children from as young as 2 years old up to 17 years. This includes about 35 who are full time residents; 47 for whom there is no room at the Centre but who receive free education, material support, food and social support and about 36 who live with parents or guardians but come to the school and pay what little amount they can afford. The Centre provides all

these kids with food, shelter, security and parental supervision. So far the money raised has been used to buy land with a greenhouse containing a recently planted harvest to provide nutritional food for the kids and also potentially to sell. The initiative came about from Sky Terrace team member Alex Miteff who spent 18 months in Africa helping such communities as a volunteer. The Sky Terrace team starting collecting funds at the start of October 2015 later making the donation in March 2016.

Important donations such as those from the Sky Terrace team help to provide an entire school and an orphanage with the resources needed to progress their community out of poverty and into a life of equality and opportunity. The Star celebrates

WORLD ENVIRONMENT DAY To celebrate World Environment Day, the Sustainability Committee organised workshops in Eat Street to show team members how we, at The Star, contribute to a better world. Whilst enjoying a free oyster, our team members learned how Ocean Watch Australia and The Star are helping each other to turn wasted oyster shells into living shorelines at Sydney Harbour. Speakers explained more about the way we deliver left over hotel soap to Third World countries and how recycled coffee grounds give rise to mushroom farms.

Since 2013, The Star has increased recycling rates from 8% to 50%. We have twice exceed our recycling target, introduced over 10 new recycling streams, implemented a best practice waste contract and partnered with our waste provider, charities and start-ups to deliver recycling and reuse programs.

A new-look

ASTRAL TOWER & RESIDENCES The Star has exciting developments in the pipeline with capital works programs worth more than $500 million currently underway. Work in progress includes the refurbishment of Astral Tower and Residences, set for completion in mid-2017, offering contemporary opulence with high end suites, themed rooms, a lavish lobby lounge, state-of-the-art club lounge and new meeting rooms. The Level 16 suites at Astral Residences have been completed and are online and ready for our guests to book.

FEBRUARY AWARD WINNER – FRONT OF HOUSE

LOUREN KATAGUE Position: Recreation Attendant Tenure: 5 years, 4 months Louren has proven to be a trustworthy, reliable and positive member of the F&B Department possessing great ethics and welcoming everyone with a bright smile. While working in the F&B department, Louren was always happy to stay back when required and helped management by picking up extra shifts and often coming in early or staying late to assist during busy periods. Louren has been able to adapt to any environment and is a great asset to the F&B team.

Q: What does this award mean to you? A: This award is such a confirmation and reward for all the hard work and commitment I have displayed and will continue to display for this company. It means so much since I’ve loved working here for 5 years so far. From humble beginnings and moving around the place, it’s great knowing that I’m appreciated for the work that I do here. Q: What do you love most about your role at The Star? A: My role here really is the best; it’s my job to ensure guests have the best experience. I love taking care of people and making them feel good so there’s nothing better and more rewarding for me. In the end, it’s the smile and the thanks that I get. Like people say, “you get what you give” and there’s nothing more true than that. Q: How do you plan on spending your Star Gift Card? A: I am so excited for The Star Gift card, I really love Sokyo and all the great work Chase and his team do there. His creations are amazing so I’m excited to go there for an amazing dining experience. But I think I deserve something pretty so maybe I’ll get something else too.

Q: Who is the first person you will tell about the award and why? A: The first person I told was my partner. He is so supportive of me and my role here. I tell him all about the stories I have from work and he listens so it’s one extra thing for him to be proud of me for. Q: What’s the secret to your success? A: The secret? I don’t really have one – I just know that for as long as I’ve worked here I have given 110%, I have always been myself and loved my job. I think most people who know me, have seen my interactions with guests in general so maybe they know. Q: What’s one piece of advice you have for anyone who would like to be nominated for a Star Award? A: My advice is to enjoy your job, be professional, support the team that supports you and shines through. The hard work pays off and the reward really is the guest experience. Q: On a personal note… What’s one thing people would be surprised to know about you? A: I am a qualified Kinesiologist – so it makes sense that I care so much about people.

AARON WILSON Position: Surveillance Operator Tenure: 3 years Aaron has always shown strong skills within the Security responsibilities of the job, but his determination to grasp a thorough knowledge of the gaming aspect has been the most pleasing part of Aaron’s journey in Surveillance. Aaron is certainly well respected by his peers, always willing to help others out and provide training and guidance to new team members.

Q: What does this award mean to you? A: It’s not the monetary rewards but the verbal recognition, something I can hold onto for a lifetime!

Q: What’s the secret to your success? A: Just trying my best, attempting to help out where I can and trying to get my name out there in a positive way.

Q: On a personal note… What’s one thing people would be surprised to know about you? A: I’m an avid Japanese import car enthusiast (having owned 10 plus cars) and love motorbike riding, especially taking out the Triumph.

SAMANTHA VALENTE Position: Events Manager Tenure: 1.9 years Samantha is a great leader as she represents the Events team with great pride and integrity. She ensures her team’s best interests are catered for and recognised at the senior management level. Sam not only supports her team, but also provides invaluable advice to other team members throughout our business and to our clients regularly. Despite her busy schedule and workload she will make time to train, support and troubleshoot any issues – she is a problem solver! Her strong passion for events drives her to succeed and Sam is able to inspire her team whom she leads by example.

MICHELLE TRAN Position: Dealer Tenure: 2.5 years Michelle’s passion and positivity is infectious and there isn’t a day that goes by that Michelle arrives to work without a smile. Michelle has an amazing attitude, attention to detail and great deal of pride. She certainly stands out in a crowd and this is reflected through her continuous and numerous positive comments.

Q: What does this award mean to you? A: It means that my passion for delivering exceptional guest service face-to-face has been recognised. It goes to show that the efforts you put into your work do not go unnoticed at The Star. Q: What do you love most about your role at The Star? A: I love meeting new people and this role has enabled me to do so. I go to work excited with anticipation to whom I will meet. Each day is a new experience; and as I engage with guests and different coworkers I am forever learning something new and interesting from them. Q: How do you plan on spending your Star Gift Card? A: Mother’s Day is coming up! I will be getting my mother something nice. Q: Who is the first person you will tell about the award and why? A: I remember texting my close work colleague as I promised I would update her and she was SO happy for me.

It is so good to surround yourselves with people who are just as excited for your achievements as you are. Q: What’s the secret to your success? A: I would say it is my eagerness to learn. I’ve always believed that whatever I do, I can always do it better, hence why I’m constantly learning new ways to better my job by asking questions, being curious, learning from my mistakes and expressing my desire to acquire more skills. Q: What’s one piece of advice you have for anyone who would like to be nominated for a Star Award? A: To go the extra mile in providing Guest Service; and always challenge yourself to exceed The Star’s standards. Q: On a personal note… What’s one thing people would be surprised to know about you? A: I’m quite the foodie- I love finding new places to dine. My current food obsession is pasta served out of a cheese reel!

MARCH AWARD WINNER – HEART OF HOUSE

SUSAN INGLIS Position: Regulatory Affairs Coordinator Tenure: 4 years Susan is a quiet achiever and works hard at meeting critical licensing obligations and submissions on behalf of The Star. She is very patient and helpful with the constant stream of new employees as the business expands and leaves a lasting and motivation impression on staff. She has great rapport with Regulator counterparts and this is important in seeking co-operation in often changing circumstances for employees. Susan works constantly under pressure, she balances this constant flow of recruitment and other interruptions and this takes organisational and motivational skills. Her efficiency and diligence in getting tasks completed is a testimony to her self-discipline, leadership and motivation.

Q: What does this award mean to you? A: It’s great to be acknowledged for all the hard work I’ve put in. It’s also great to have the Regulatory Affairs team acknowledged for what we do as not many people know what our department does. Q: What do you love most about your role at The Star? Rose is an unbelievable asset to the Security department and shows what it means to be a model employee. She consistently demonstrates all of the values and her positive attitude spurs on the rest of the team to work to their full potential. She was recently described as ‘being the embodiment of what Star Quality is all about’ by the facilitator and other team members who attended the same Star Quality course as her. She trains new Officers and hands out her personal mobile number so that the new team members have someone they can speak to if they need help or guidance. On Friday 25 March, the Security team was alerted to a guest requiring medical assistance in the light rail/bus interchange. Rose sprang into action and led the initial response, which was later described by a Paramedic as amazing! Q: What does this award mean to you? A: It shows me how much The Star appreciates my work ethic and values that I have contributed to my department and the company. The outcome in this instance was the delivery of two campaigns that incorporated a full property experience for our guests. Scott has delivered a wide range of suggestions to ensure The Star delivers thrilling experiences to our guests and improving our service commitments.

Scott demonstrates true team work and often goes above and beyond of what is expected of him. On a number of occasions Scott has been called upon to assist with hosting events for our guests. For example, he represented the Gaming Team at the Melbourne Cup celebrations in The Star Event Centre. He greeted guests upon arrival, assisted guests to place bets via the TAB terminal, and ensured VIP guests received the required service when needed. Q: What does this award mean to you? A: It was a big surprise. It means my performance, effort and guest service has been recognised from my peers and management.

GALA DINNER On Monday, 18 July we celebrated the outstanding achievements and leaders from The Star at The Star Awards Annual Gala Dinner. The event saw The Star Event Centre transformed into a circus themed wonderland with performances by stilt walkers, snake charmers, aerialists, dancers, contortionists and much more. The event saw 394 nominees and 33 winners and special commendations from The Star Awards program from June 2015 – May 2016 in attendance with 159 of their close friends and family to witness the recipients for this year’s annual Guest Excellence, Heart of House and Leader of the Year Awards. Our Star Ambassador, Ian Thorpe greeted our finalists and delivered an inspirational speech congratulating them on their achievements.

INDRA MURLIYANTO – A LEGEND STORY – “I got a call on my morning off and was half asleep when the Assistant Manager of the Astral Hotel explained that VIP guests in the Penthouse wanted an Indonesian Breakfast... now,” says Indra. Indra kindly offered to speak with our guests directly as he speaks Indonesian and understood the specific requirements for the breakfast.

Chef de Cuisine at Oasis Dining “After rushing into work, I cooked up a meal for a group of VIP guests and personally delivered the breakfast to the Penthouses,” he says. Whilst presenting the dishes to the guests in his native tongue, it

became clear there was a similar request for tomorrow’s breakfast from the very happy guests. Indra was pleased to personally cater for the guests on the following day, with another traditional Indonesian breakfast. Indra truly showcased his Star Quality whist springing into action to be the perfect host to our guests.

MEL DE GUZMAN – A LEGEND STORY – “As we began to set the room I saw a tall gentleman entering, who was accompanied by an elderly woman. They seemed a bit lost and I took the initiative to approach them and asked politely if I may be of assistance. The man smiled and replied yes. I escorted both of them to their table and assisted the woman into her chair,” says Mel. The gentleman left for a few minutes, and Mel took the opportunity to engage with our guest in a conversation to make her feel more comfortable and see if she had any special requests. “Funnily

Banquets enough, she was our “scrambled egg” request mentioned in our pre-shift briefing, Mel enthuses.”

In the few brief minutes we shared together, I could see Doti became at ease in the large ballroom. During my brief moment of interaction with Doti, I realised this is what I love about my job in hospitality.

“Her name was Doti. After briefing my team and completing some other tasks, I went back to Doti to check if everything was okay.

You get the chance to meet so many different people, and learn about diversity, different perspectives, cultures and opinions and see how people behave. It also teaches me a lot about myself,” he says.

Doti and I had a short conversation about her dietary requirements, which turned into a story from her childhood and personal journey.

THE STAR’S NEW GAMING MACHINE TEAM Over twelve months ago, a decision was made to place more focus on the Gaming Machine side of The Star’s business, and re-introduce dedicated management for this area and team. The new department will assist with the continued progression of this significant area of the business. The new team consists of some old faces already working in Gaming Machines as well as some fresh faces from other areas of the business including Hotel & VIP services.

A: I wanted to gain in-depth knowledge of Gaming machines and be part of a great team. Q: How are you enjoying the new role? A: I’m enjoying learning a lot more about the Gaming Machine side of the business and getting fit along the way from a lot of walking.

Q: What made you want to join the Gaming Machine department? A: I am always curious to know more about other parts of the business and I really enjoyed cross training as a Gaming Attendant. It was a great opportunity for learning and development so I went for it! Q: How are you enjoying the new role? A: I still feel very new but I’m definitely finding it exciting and enjoyable. Q: How are you enjoying the new role? A: As we are in a bit of a transitional phase, we face different challenges on a daily basis but that’s what makes the role interesting and exciting. Seeing the new team members I have trained doing really well and enjoying the role

A: Joining the Gaming Machine department has been an exciting challenge. I believe I’m utilising my knowledge and experience to assist the new department in growing its VIP business. Q: How are you enjoying the new role? A: It’s fantastic! I’ve got supportive leaders and friendly team members in my department. I have learned a lot of new things in my new role.

Q: What keeps you sane and happy outside of work? A: When I have days off I like to go fishing with my wife. It’s good to be out amongst nature and get away from city life. Q: Name someone or something you find inspiration from in life? A: My wife Fiona Li. I met her at a Star colleague’s wedding three years ago, and after a few months she came to work at The Star by coincidence. We became friends, eventually lovers and now a married couple. She supports me and inspires me every day of my life.

Women at The Star Introducing Melinda Madigan, General Manager Marketing & Entertainment What was your first job? Marketing and Promotions Manager at Fairfax Communit y Newspapers – where I developed marketing programs to grow brand engagement, readership and revenue across seven newspaper mastheads. Greatest inf luence on your leadership journey? In my first role in the gaming industry my Managing Director instilled in me that the best leaders make unforgettable first impressions – but those first impressions should never be forced. It is more about revealing who you are and what you represent as a leader and over time earning the trust and respect of your employees and peers. What should team members do if they want to become a leader? Be intensely focused and curious - always seek out opportunities to learn and gain new experiences in both your work and personal life. Have a clear vision of what success looks like for YOU – believe in yourself and never deviate from that vision. What is the most valuable advice you have been given? Never be afraid to step out of your comfort zone. If you don’t continually challenge yourself, you will never truly grow. Plus it’s where the magic really happens! What advice would you like to give a young aspiring female leader? Develop your own unique personal “brand” and values to help position yourself as a future leader. Create a strong connected net work of like-minded, passionate females from various industries and engage mentors who can inspire and guide you on your path to success.

Sydney Winters are #nevergrey at The Star was officially launched on 15 June 2016 with an exclusive VIP event held at Sokyo Lounge. Friends of The Star celebrated with fashion, colour, fun and excitement. The night encapsulated a range of thrilling experiences on offer proving Sydney winters are never grey at The Star! Attended by The Star’s Winter Ambassadors, Daniel MacPherson, Grace Huang and Monika Radulovic and other celebrities including Kris Smith and Kate Peck, guests were treated to a glimpse of what winter will bring to The Star with specially made canapés and colourful cocktails.

TAA AWARDS The Star wows with Five TAA NSW Award wins On Thursday 21 July, The Star was awarded in five categories at the prestigious 2016 Tourism Accommodation Australia (TAA) NSW Awards for Excellence, held at Four Points by Sheraton Sydney. Guests gathered to celebrate the winners of the awards that recognise the achievements and high quality of the New South Wales accommodation sector. The Star was the proud winner in five categories, highlighting the property’s exceptional bars, restaurants, spa and team members. The TAA NSW Awards for Excellence are awarded annually to recognise tourism leaders across the state in more than 30 award categories. The Star was a finalist in 15 categories of the TAA NSW Awards for Excellence, taking home the title in five categories.

Snowball Pledge

TOUR DE CURE Cancer charity Tour de Cure celebrated their 10th anniversary in style at the annual Snow Ball which was held at The Star Event Centre on Saturday, 18 June. The Star Event Centre was transformed into a beautiful winter wonderland for the occasion. Tour de Cure raise funds for cancer research, support and prevention. The event was attended by influential corporate guests, community leaders and celebrity guests with an impressive $1.3 million raised for cancer research! Guests were entertained by special guest performances by ex-Pussycat Doll Melody Thornton, Frances Madden, Justice Crew and Julian Simonsz.

The Star made a $12,000 pledge to Tour de Cure with the funds going towards rehabilitation exercise bikes and upper body exercisers for young oncology patients at Sydney Children’s Hospital. To land in Sydney in your private jet, be driven to The Star in a luxury car and then greeted by a professional and hardworking personal Butler and Host, who’ll introduce you to your city view penthouse! How amazing would that be? In early June, a group of team members here at The Star were given a taste of this experience with a tour through the VIP guest penthouses, VIP gaming floor as well as the private gaming salons! The group were given behind the scenes access to various VIP rooms, salons and gaming floor sections of The Star where only those who hold a membership card can utilise.
