Murphy’s gelato makes impression North Dakotan lands a spot on the Forbes 30 Under 30 list By Jerry Nelson

CARRINGTON, N.D. – A North Dakota woman’s farmstead gelato business has earned her a coveted spot on

the Forbes 30 Under 30 list. One of Maartje Murphy’s most cherished childhood memories is enjoying gelato with her grandparents. Murphy was born in the Netherlands where her parents, Corne and Conny van Bedaf, operated

their family’s 50-cow dairy farm. “There were gelato shops near our farm, and my grandparents would take me for a gelato almost every day,” Murphy said. In 2001, when she was 7 years old, Murphy and her family – which includes her brothers Piet and Dries – pulled up stakes and started dairy farming in Canada. In 2008, the van Bedaf family made another big move by starting a dairy

operation near Carrington. Carrington is located about two hours northwest of Fargo. The van Bedafs grew their dairy operation from about 200 head in Canada to its present size of 1,500 head. Piet and Dries have also joined the operation. Murphy earned a nursing degree at the University of North Dakota and began to work full time as a registered nurse. But a mother-daughter getaway would change her life.

“Mom and I went to Chicago and took a week-long course about making gelato,” Murphy said. “The gelato brought back memories of enjoying a cold, tasty treat with my grandparents. I thought that this would be something great to bring back to North Dakota.” Murphy and her husband, Casey Murphy, purchased gelato making equipment and installed it in a garage on the Turn to MURPHY | Page 4

Murphy began to make gelato with fresh milk that came from her family’s herd of Holsteins. She calls her business Cows & Co. Creamery and has named her lineup of dairy treats Duchessa Gelato. “We make gelato using the traditional Italian hot process,” Murphy said. “I put raw milk into the vat and slowly heat it to the point where it becomes pasteurized. Then I add cream and sugar to let it age overnight. This allows the avors to develop and merge with one another. In the morning, I will mix in a avoring base and start churning gelato.” Murphy is quick to point out that there are some major differences between ice cream and gelato. “Gelato has about half as much fat as ice cream,” she said. “Gelato contains less air than ice cream because it’s churned slower and at a warmer temperature. Ice cream can contain up to 75% air while gelato has about 15%20% air. That’s why gelato tastes so rich even though it has less fat than ice cream.” Murphy began to cater gelato for special occasions such as graduations and weddings. She purchased a bicycle pushcart that had been used to sell gelato in Italy. “I love to experiment with avors,” Murphy said. “We have made at least 100 different avors of gelato. We try to use as many local ingredients as possible, such as honey or berries that are in season. When we cater a wedding, the bride and the groom will often choose to create their own avor. Some of the avors have been quite fun and interesting.” It was not long before word got out about Duchessa Gelato and demand began to grow. Murphy quit her nursing job so she could focus her full attention on her gelato business. “We bought some more equipment, and Dad’s car lost its side of the garage,” Murphy said. “We began to make our gelato available at local coffee shops and grocery stores. Gelato is best when eaten fresh, so I tell people to not let it linger in the freezer for more than a couple of months. Once people try our gelato, keeping it for too long usually isn’t a problem.” Several months ago, Murphy received an email that appeared to be from Forbes. “I at rst thought it was junk and almost threw it away,” she said. “But I decided to open it and discovered that I had been nominated to be included in the Forbes 30 Under 30 list. Simply being nominated was an honor.” After lling out her application for the Forbes list, Murphy began to watch

When I scrolled through the press release and saw my picture, I couldn’t believe it. It truly took my breath away. It’s a huge honor for a dairy farm daughter from North Dakota to make the list. It was also a very special moment for my parents.” Being named to the Forbes 30 Under 30 list has opened doors for Murphy. “I am looking forward to meeting new people who have heard about me and doing a lot more networking,” she said. Cows & Co. Creamery is making some major changes that will enable it to continue to grow. “Casey and I have purchased a neighboring farm that used to be a dairy farm,” Murphy said. “We are xing up the dairy barn and turning it into a creamery. We will make our gelato there and will soon start producing artisanal Gouda cheese. We are also planning to make butter, yogurt and cheddar cheese curds. My brother thinks that we should also start bottling milk from our dairy farm.” Murphy’s ambitions include educating the public. “We want our farmstead creamery and our family’s dairy farm to become an agritourism destination where people can get back to their roots and learn about dairy farming,” she said. “By this fall, we will have added a kitchen and a café to our creamery. We will also have a farm store where folks can buy locally produced items. And there’s a winery in Carrington that people can visit when they are in the area.” Murphy remains grounded despite her success. “I am deeply grateful for all the opportunities I’ve received,” she said. “But as we grow our business, I’m not going to cut corners. Everything that we make is going to be artisanal.”

Staying alive in an on-farm emergency

WISCONSIN DELLS, Wis. – Being prepared to deal with an on-farm emergency is crucial to the survival of the injured and the ability for emergency personnel to respond. That was the focus of Chris St. Pierre’s Hands-On-Hub presentation, “Stayin’ Alive: First Response,” at the Professional Dairy Producers’ annual business conference March 17 at Kalahari Resort in Wisconsin Dells. “One of the rst things that happens in the event of a workplace or on-farm emergency would be to place a call for emergency help,” St. Pierre said. “If you are the owner or you live at the farm, you probably know the address. But, do all of your workers know the exact address? Do all of them speak English well enough to communicate with the dispatch? There are a lot of different considerations, so developing a plan and having it in place is important.” St. Pierre recommended having a trauma kit available

According to St. Pierre, just as important as providing these tools is to provide adequate training to workers on the dairy farm. “What is important is to train and develop that safety plan,” St. Pierre said. “If you continuously train, you are

much more proactively prepared if an emergency should occur.” If possible, St. Pierre recommended establishing an on-site emergency response team of those willing and able to take the lead in the event of an emergency. Each member of the team should be aware of what needs to be done and what role they play in the re-

sponse. A safety plan should include detailed information, such as adequate directions. If possible, St. Pierre recommended sending a agger to the road to connect with and escort emergency personnel to the scene as quickly as possible. One way to help emergency personnel with reference

points is to letter buildings and number exterior doors sequentially. Inviting emergency response personnel to your farm for training and planning is another way to help save valuable minutes in the event of an emergency. “They can put a pre-plan of their own in place, so they know exactly where to respond when you say ‘Entrance No. 2’ or refer to the ‘North entrance.’ That can be a huge help, just being proactive and planning on the front end,” St. Pierre said. Once you have established a plan for contacting and assisting emergency personnel to the locations on your farm, the next step in an emergency response plan is to be prepared to provide assistance to the victim, as is appropriate. “If you can be able to provide signicant trauma and bleeding control while waiting for rst responders to arrive, those are vital minutes,” St. Pierre said. “If you have a plan in place and the equipment that is necessary to provide some of that initial rst aid and care, then you are way ahead of the game for yourself and your employees.” Injuries are categorized as traumatic or medical, according to St. Pierre. He said medical injuries can cause traumatic injuries and vice versa. In addition to those types of emergencies, there are also emergencies that would require specialized teams to respond, including those happening in conned spaces, elevated rescues or those with other hazardous conditions and materials. When attempting to care for the injured, St. Pierre cautioned you must ensure it is safe to approach the area the victim is in, taking care to look for any hazards that might cause you harm. “If you get hurt trying to help now there are two injuries, and you could potentially overwhelm the emergency response services that are in your area,” St. Pierre said. “If it is not safe, as difcult as it might be, the best thing for you to do is to step back and not do anything until the emergency response team arrives.” Once you have assessed the scene to ensure your

own safety, the next step is to assess the patient’s situation. St. Pierre recommended anyone who might serve on your farm’s on-site response team attend CPR certication training. St. Pierre demonstrated some items that might be included in a trauma response kit, including masks with one-way valves for rescue breathing, different types of bandaging, chest seals, splints, plastic wrap, instant ice or warm packs, blankets and a tourniquet. He suggested dairy farmers look into the feasibility of purchasing an automated external debrillator to have on the premises. St. Pierre noted that one challenge in particular that may face dairy producers is getting family members and long-time employees to embrace newly implemented safety protocols, such as the use of personal protective equipment like safety glasses, gloves, hearing protection and highly visible clothing. “Having them involved in your safety meetings and including them in the transition if you are just beginning to use PPE on a regular or mandatory basis is really important for getting them to buy in,” St. Pierre said. “If you have the owners and the veteran employees wearing PPE and following the safety protocols, it is much more natural for newer employees to follow suit. With consistent and regular training, you can make them understand how important safety measures are.”

This free, one-hour educational offering features Volker Krömker, a professor in the University of Copenhagen’s department of veterinary and animal sciences, Frederiksberg C, Denmark. The April 15 webinar will focus on factors to consider when contemplating selective dry cow therapy (SDCT) for a dairy herd and factors to consider when choosing a dry cow therapy regimen for individual cows. Key topics include practical decision making regarding drying off dairy cows, herd-specic mastitis monitoring, risk factors for new mastitis infections or mastitis cure, and decision criteria for selective dry cow treatment. Many healthy cows can forgo antibiotic treatment at dry-off and freshen with a low somatic cell count (SCC). This practice can help dairy producers save money. Get to know Isaac Kulzer of Greenwald, Minnesota

Isaac Kulzer Employer: Greg and Angie Kulzer Greenwald, Minnesota Stearns County 74 cows Senior at Melrose High School 18 years old Tell us your favorite experience of Isaac helping with chores. As kids get older, they get busier. I have always enjoyed milking with Isaac because I had a few hours every day that we could discuss sports, politics or just talk. What qualities does Isaac have that benet the farm? Isaac is patient which is important with cattle. He is also good at troubleshooting. He was probably 15 years old when he started taking apart the DeLaval pulsator because there was an issue with it. What are your responsibilities on the farm? For the most part, I deal with the milking. I milk most of the cows at night and help in the morning with milking as well as before school. When did you begin helping on the farm? Around the age of 6. How do you balance school, extracurricular activities and farm chores? I try to get most of my school work done in school, but sometimes I have to do it after chores. For activities, I do golf and cross-country, but as soon as practice is over, I head home to help with the chores. How has working on the farm shaped your character? It has helped me grow

If you had a farm, describe what it would look like. I would have horses, chickens, dairy cows and guinea hens. I would also have red, green, orange and purple tractors. I would have a milking barn, a dry cow barn and heifer barn. They would all be red. What is your favorite dairy treat? Milk and strawberry yogurt. My least favorite chore is caring for the calves because I would rather do stuff with Dad. What is your favorite animal on your farm? Our two dogs, Tillie and Dozer. Tillie is 3 years old, 150 pounds and is a Mastiff and Dane mix. Dozer is 2 years old, 120 pounds and is a Mastiff. What is your favorite subject in school? I like math because I like counting numbers. I also like reading and doing crafts. What is something you have learned in school recently? We are learning about counting money. What do you want to be when you grow up? A dairy farmer. If you had a farm, describe what it would look like. I would have 30 chickens, eight guinea hens, 15 horses, 200 dairy cows, 20 pigs, 10 cats and three dogs. I would also have a combine, haybine, corn planter, bean planter and 60 tractors that are green, blue, yellow, orange and red. I would milk my cows with robots. What is your favorite dairy treat? Mint chocolate chip ice cream. What is your favorite game to play at home/on the farm? I like helping Dad, riding my bike and playing like America ninja warriors in the calf barn. He is a half miniature longhorn and half miniature shorthorn that is 12 years old. I also like Orange Kitty and Curious, who is Orange Kitty’s baby. What is your favorite subject in school? Learning how to write letters. What is something you have learned in school recently? Circling the highest and the lowest number. What do you want to be when you grow up? I want to be a dairy farmer. If you had a farm, describe what it would look like. It would look like our farm. I would buy 69 more cows and a big tractor with 500 HP. I would also have 10 dogs and 20 cats along with pigs that I would buy a pen to put mud in. What is your favorite dairy treat? Cherry avored ice cream with a cherry on top. I also like yogurt. What is your favorite game to play at home/on the farm? I like to ride my bike, play on the swing set and play on the sand pile.

Position is a perfect fit for experienced techs who can perform diagnostics, troubleshooting, overhauls, clutch work, electrical and full service repairs on ag equipment. Applicants should have a valid in-state driver’s license with acceptable driving record, the ability to read and interpret written information and instructions, and be able to operate machinery for diagnostic purposes. Preferred Candidates will have prior experience with agricultural or diesel equipment. Having a Commercial Driver’s License (CDL) will also be a plus!
