CONSERVATION CONVERSATION HHM hunts for answers with Dallas Safari Club executive director Ben Carter.

A

n avid hunter and conservationist, Ben Carter is the executive director of the Dallas Safari Club. The organization is a member of the IUCN, the United Nations’ globally respected International Union for the Conservation of Nature. Carter oversees implementation of the Dallas Safari Club mission: conserving wildlife and wilderness lands, educating youth and the general public, as well as promoting and protecting the rights and interests of hunters worldwide. HHM: The organization has a local name but states a global purpose. What exactly is DSC? BC: Dallas Safari Club is a hunting conservation organization whose mission is conservation, education and protecting hunters’ rights around the world. We have more than 6,000 members with about 40 percent of those in Texas. The rest are from all over the United States and around the world. Each year in January, we have a convention that is our main fundraiser, and its success has allowed us to grant more than $5 million during the last five years to support conservation, education and hunter advocacy worldwide.

HHM: How does the continued hunting of these animals actually contribute to the survival of the species?

HHM: What is the biggest threat to hunting at this time and how does DSC combat it?

BC: Sustainable-use hunting is the source of most conservation funding. It gives measurable value to wildlife. In Africa, for example, there is a saying, “If it pays, it stays.” Many species are tolerated on private lands there only because hunters are willing to pay to hunt them. Wildlife disappears from places where hunting is banned to reduce depredation on cattle and crops. It costs a lot of money to manage wildlife and conserve habitat. Under The North American Model of Wildlife Conservation, which we follow here in the United States, wildlife conservation is funded solely by sportsmen’s dollars, through the Pittman-Robertson Act, which is an excise tax on hunting-related goods, and also through license sales. Those two sources of revenue provide the bulk of the funding for state fish and wildlife agencies. But in Africa, wildlife management and the protection of species from poachers is financed entirely by huntinggenerated revenues and grants from organizations like DSC.

BC: The biggest threat is a lack of knowledge. We’ve become such an urban-centered society and the hunting tradition isn’t passed on like it was. The best thing we can do is to educate people on how wildlife management works and how people who hunt are the ones who truly support it. Watching animal shows on TV or threatening hunters via social media doesn’t help enhance wildlife at all. We understand and respect the fact not all people hunt nor wish to be hunters, but people need to understand hunting is a vital part of wildlife management and the only way wildlife can be preserved for the future. HHM: The DSC Convention shattered attendance records last year and is scheduled for January 2016. Is the DSC Convention just for safari hunters and what draws so many people to the event? BC: The DSC Convention is an outdoor show with exhibitors from all over the world. There are hunting and fishing outfitters from all over, acclaimed artists, firearms manufacturers, optics makers, clothiers, furriers, jewelers—something for everyone.

That’s what brings people in and what brings them back and why the show contributes so much to the local economy. HHM: What will the future of hunting look like, both here in the United States and around the world, especially in African countries? BC: If countries around the world are serious about keeping wildlife they will continue to allow hunting. All they have to do is look at what happened in Kenya in the 1970s. Kenya used to be home to the richest game populations on the continent, if not in the world. When anti-hunting groups pressured the government to ban hunting, all of that quickly changed. Today, more than 75 percent of Kenya’s wildlife is gone. Those animals have been killed by poachers. There are so many people who desire a real, natural world, not a world where wildlife can only be seen on TV and in zoos. A natural world can exist only if hunting is allowed to be the driving force for sound management and conservation practices. So, while the threats to wildlife and hunting probably will always be there, I believe hunting in the U.S. and abroad will continue.

Cafeza Artsy New Coffee Bar Brings Eclectic Flair to Houston’s First Ward by leah cast

hen envisioning your next meal, it may be hard to imagine how downhome Southern hospitality could co-exist with the elegance of Europeanstyle artisanship, or how artsy American street vibes could live parallel with the romance of Spanish and Latin tradition. But then again, this is Houston. In a city that thrives on its cultural diversity and eclecticism, you don’t have to look far to find a unique blend of the paradoxical effectively at work. And fortunately, Cafeza

is one of those places. Tucked in the heart of the city’s budding First Ward district just outside downtown, Cafeza is no ordinary coffee bar. While it has all the comfortable and homey elements you’d expect to find in a neighborhood coffee shop, its menu takes you around the world. The delicious coffee selection pays homage to Texas, featuring a variety of rich local roasts, while staying true to the artisanship that comes will making traditional European-style espresso drinks the right way. From foamy

macchiatos to creamy cappuccinos, you can’t go wrong with anything that comes in a cup here. Cafeza becomes so much more than a coffee shop when you explore its diverse food and drink menu filled with Spanish and Latin influences. Here, you can sip sangria while taste-touring through the selection of tapas-style bar bites. If you’re really hungry, you can chow down on classic street-style tacos and traditional Spanish bocadillos while having a refreshing Mojito. without a fresh hot order of the delicious “churros y chocolate.” This, my friend, is cultural fusion at its best. “My wife and I have been fortunate to travel around the world and have been inspired by the cuisines and cultures we have encountered,” Cafeza Co-founder Ryan Hazen says. “The concept for our place really came from café experiences we’ve had in Barcelona and Buenos Aires as well as the neighborhood cervecerias and refresquerias that are ubiquitous in the diverse Hispanic communities in and around downtown Houston.” With all of its influences, perhaps the most charming aspect of Cafeza is that it still embodies authentic Houston. Its artsy atmosphere and vintage-inspired decor screams First Ward, which is home to the city’s Washington Avenue Arts District and the highest concentration of working artists in Texas. This artistic community

has certainly played its part in the personality of Cafeza, whose exterior brick sidewall is home to a massive blackboard bearing the title “Grateful Heart” in painted graffiti-style letters along with scores of messages etched in chalk by those who frequent the shop. Inside, you’ll find comfy chairs where you can sit and listen to live music. You’ll find walls decorated with hanging art – including a gigantic, stand-out collage mural – painted by local artists. And, perhaps most importantly, you’ll feel right at home all while undoubtedly aware that you are very much in H-town.

holiday getaway to a tropical destination may sound unconventional, but on Galveston Island, the experience is surprisingly full of

tradition. Located just 50 miles south of Houston on the Gulf of Mexico, Galveston’s mix of historic charm and modern family fun have made it a regional favorite for the Christmas season. From lighting festivals and Santa sightings to holiday shopping or indulging in what is arguably the best pecan pie in Texas, Galveston offers plenty of reasons to visit this November and December.

1. Dickens on The Strand The first weekend in Decem-

ber, the majestic iron-front buildings found in Galveston’s historic downtown district will make the perfect backdrop for the 43rd annual Dickens on The Strand. This holiday street festival transforms the area, particularly Strand Street, into the Victorian London of Charles Dickens complete with costumed characters, street performers and vendors, parades, holiday food and drink, Victorian-inspired crafts and more. Each year, descendents of Charles Dickens travel from London to be a part of the festivities, and attendees are

encouraged to join in the fun by dressing in period costumes.

2. Festival of Lights Nothing will put you in the holiday spirit more than a magical walk through Festival of Lights at Moody Gardens. ice skating or “snow tubing” (yes, they make snow), listen to carolers or visit with Santa. The trail wraps from around the Moody Gardens pyramids and along Offatts Bayou, providing a beautiful waterfront view. The festival will take place from Nov.12 to Jan. 8.

3. ICE LAND It’s hard to imagine a 28,000-square-foot ice sculpture wonderland being able to thrive in tropical Galveston, but there’s a science to it and Moody Gardens has it down. Its ICE LAND exhibit – made from 2 million pounds of ice – is truly something to see. Here, you can walk through the attraction to view stunning

ice carvings, from traditional holiday figures to characters from popular cartoons. Some of these sculptures stand up to 30 feet tall and there is even a 100-foot-long ice slide the kids can ride. ICE LAND will be open from Nov.12 to Jan. 8.

Victorian Charm With Galveston being home to one of the largest collections of Victorian architecture in the country, it’s not hard for the island to put you in a nostalgic state during the holidays – especially on the East End Historical District’s Victorian Christmas Homes Tour. Held the first weekend in December, this event allows you to tour through several of the district’s private historic homes as they are decked in traditional holiday décor. And, if you’re not in town that weekend, the 1895 Moody Mansion museum

8. Live Holiday Entertainment For holiday entertainment, Galveston certainly won’t disappoint. The Grand 1894 Opera House, which is a gem in the island’s historic downtown district, offers no seat further than 70 feet from the stage for its exciting lineup of live holiday shows happening throughout November and December. Here you can catch shows like Elf The Musical, Charles Dickens’ A Christmas Carol, and Rudolph The Red-Nosed Reindeer The Musical as well as performances by Loretta Lynn and Jerry Jeff Walker. New this year, the Moody Gardens Hotel will host the Cirque Joyeux Noel Dinner and Show Dec. 16-25. This one-hour Christmas spectacular features an exciting

performance from a cast of international circus and variety talents plus a sumptuous holiday dinner.

9. The Santa Hustle If you’re a runner or just like to dress up, you’ll get a kick out of the Santa Hustle, one of Galveston’s wackiest events. More than 5,000 half-marathon and 5K runners are expected to convene in Galveston Dec. 18 for this jolly race where participants are provided Santa attire – including a Santa suit shirt, Santa hat and beard – to wear along their journey. The route is lined with speakers playing holiday tunes and fuel-up stations serving cookies and candy. Yum!

Were you acquainted with him before taping the show? JJ: I had never met Chris until (Season 20). While on “The Bachelor,” we would chat briefly here and there. However on my season as “The Bachelorette,” Chris was always around and definitely turned into a confidant for me. HHM: To some viewers, his role seems minimal, however, for contestants it’s likely another story. Tell us about Chris’ involvement in the show?

JJ: We traveled together, ate together, would sometimes hang out during hair and makeup, therapy sessions -- you name it. He truly cares about each person that comes onto this show and is the type of person that -- when he cares -- he will have your back forever. Love him. HHM: During Season 12 of “The Bachelorette,” there were a number of men from the Lone Star State in your group. Did the Texas bachelors have any special advantage over the other guys? JJ: I certainly love my home state, that’s for sure! But I didn’t let that affect any of my decision-making when figuring out who was the right guy for me. HHM: One of the bachelors in your

group of guys wore a kilt, while another donned a big red Santa Claus suit complete with a flowing white beard: how did that strike you?

JJ: (Laughs). You know what -- I loved it. I can appreciate anyone who comes onto national television and can make fun of themselves … it’s endearing. Oh, and the fact that I wore a unicorn mask on my first night with Ben … I don’t have much room for judgment. HHM: There seemed to more testosterone than usual flowing on the program your season as “The Bachelorette.” Looking back on it all, tell us how you felt about the fighting between the guys?

JJ: Well, it seemed like the testosterone overload came mostly from one individual rather than the group as a whole … but as far as the fighting, I didn’t realize it was as bad as it was! I thought it was a bit much. HHM: There’s also been a lot of conversation about one bache-

elor in particular, Chad Johnson, and his behavior on the show. Looking back on the experience, what’s your take on him? JJ: Chad is Chad. I don’t even have the energy to get into that … I’m definitely over the Chad drama. HHM: So far, there has not been a mixed race couple on the show. Why do you think that’s the case, and do you believe it’ll change at some point? JJ: I’m not sure. I don’t believe it comes down to race, but rather there being a connection or not with certain individuals. I certainly foresee that happening though. HHM: Between “The Bachelor” and

“The Bachelorette,” quite a deep alumni base has developed since ABC began producing the program in 2002. Have you remained friends with some of the cast and/ or crew you met while shooting the two shows? JJ: Of course … I found such a close group of girlfriends from Ben’s season … we all keep in touch and talk often. Becca (Tilley) has become one of my best friends! And the crew is amazing; they are like family to me now. HHM: You’re a successful real-estate developer in North Texas; can you talk about your career and how you got to where you are today? JJ: Real estate kind of just hap-

pened … I was a Pre-Med major in college (at Baylor University) so I didn’t necessarily foresee this happening. HHM: And your family? JJ: My family has always (been involved in) real estate on the side; my mom owned apartment complexes; my brothers were always were involved in different real estate ventures. When I was in college, I decided to build a house, with the help of my parents, to live in and lease out to my friends so that we had a cool place. After I graduated, I wanted to expand on my own. So took out a loan, and began building my next student housing.

It eventually got to the point where I knew the market, loved what I was doing, and just wanted to keep going. Then the idea of flipping houses came to mind. I’m still learning the ins and outs of that process. But I love the hands-on creative aspect/vision of that. HHM: You have three older brothers and a sister. Your mom and dad (they are both physicians) live in North Texas. Tell us about your family and the role they play in your life? JJ: My family is everything to me. I am so incredibly lucky to have them in my life. Not only are they my best friends and my support system,

THE FINAL ROSE: “Jordan, will you accept this rose?” JoJo asked, after saying yes to his marriage proposal, and opening the door to a fairy tale love she’d told the world she’d deeply desired. JJ: My family is everything to me. I am so incredibly lucky to have them in my life. Not only are they my best friends and my support system, but they also all inspire and motivate me. My entire family is full of the hardest workers I have ever seen. It’s amazing. Not to mention incredibly smart, loving, and kindhearted. I’m very proud. HHM: Were they good “sounding boards” during the show? JJ: Unfortunately I wasn’t able to talk to any of my family (while the shows were being shot). But having them there, in Thailand during those final days, meant so much.

HHM: You are a Baylor Bear, graduating with a B.A. in Medical Humanities. Did you want to follow in your parents’ footsteps? JJ: I did! I grew up wanting to become a doctor. I spent a lot of my time in high school shadowing dermatologists and plastic surgeons -- it fascinated me. But by the end of my senior year, I knew I had lost the passion for it. That’s the type of field you have to love what you do in order to make it out alive. I didn’t have that anymore. HHM: What’s in the Waco water system that’s spawned so many recent TV careers such as Chip and Joanna Gaines of HGTV’s hit show, “Fixer Upper”?

JJ: For me, it made sense to do it in Waco because as a student, I noticed the demand for houses that made you feel more at home as opposed to the typical student apartment complexes. That’s how it (first) started. I also think Waco initially was a little behind in development and therefore made for a great market to start. Plus there are so many cute little homes that are perfect for remodeling. I love Chip and Joanna!

Hidden Land Vacationing in Cuba could soon become a reality. Here’s what Americans need to know. BY THOMAS FORRISTER & ANGELA YOUNGMAN

A

mysterious country that has been closed to Americans for over 50 years could soon be open for travel. In a historic move, President Barack Obama has opened diplomatic relations and begun loosening travel sanctions for Americans visiting Cuba. What’s more, the U.S. Department of Transportation recently awarded six domestic airlines to begin scheduled air service to Cuba from five U.S. cities. While service to Havana is currently off limits, Cuba’s nine international airports in other cities will be open for business. Most authorized airlines plan to begin their services in the fall and winter of 2016 and 2017, with tickets likely available much sooner. But don’t rush to buy a plane ticket – you could find yourself prevented from boarding the plane. You need permission from the U.S. and Cuba to travel. Each approved

airline must follow the laws and regulations still in place regarding travel from the U.S. to Cuba. Always check with the carrier directly if you’re thinking of buying a ticket. The six approved carriers are: American Airlines, Frontier Airlines, JetBlue Airways, Silver Airways, Southwest Airlines and Sun Country Airlines. So far, travelers will be able to fly to one of Cuba’s nine approved airports from Miami, Fort Lauderdale, Chicago, Minneapolis/St. Paul and Philadelphia. 90 daily round trips are approved, with more to come if Havana flights are later allowed. The decision on flights to Havana will be announced later this summer. So, what are the travel limitations, and how should you navigate them? General tourism to Cuba is strictly prohibited; and travel is limited to specific categories with individual and group tourism still banned. The

outcome of the next presidential election may determine how fast this situation changes – whether travel restrictions will continue to loosen, or whether the airline services will cease due to the current non-legally-binding arrangement. Currently, travel is limited to 12 categories, including religious, educational, journalistic or cultural visits. Family visits for Cuban Americans are easier to arrange, but you have to use agencies approved by the U.S. Treasury. Every U.S. citizen needs a visa to enter Cuba. Bringing back $400 worth of Cuban goods is allowed as long as it is for personal use, with just $100 accounting for alcohol and tobacco. Travelers from the U.S. should also pay for expenses while on the island in cash, using the Cuban peso – while U.S. debit and credit cards are legal, they do not yet function in Cuba. Visitors must also keep records and travel


receipts for up to five years after returning home. Despite all of the restrictions, many Americans are optimistic. A U.S. traveler to Cuba no longer needs a specialized license from the government to go, as long as the traveler fits one of the 12 categories – one only needs a general license, which is not a piece of paper, but more or less an honor-based presumption. And with a wide array of categories, travelers are happy to schedule educational and cultural excursions – meeting with Cuban people, visiting historic museums and exhibitions – as main events in their itineraries. However, it is still tricky to travel to Cuba as an individual, so your best option for traveling legally is to go as part of a small guided trip tailored to your interests – authorized travel agencies can help you navigate the limitations smoothly and arrange peopleto-people interactions so that

you need only relax and enjoy your stay. So what can you expect to find when visiting Cuba? This is a land that to some extent is still in a time warp. The pace of life is much slower. Technology and property development have only just begun to affect the Cuban landscape. You can take private tours of Havana in a 1950s Chevy without feeling out of place. Only 90 miles from Miami, Cuba was once the playground for the rich and famous, and U.S. citizens swarmed to the island. Organized crime even set its sights on the casinos and hotels, with the likes of leading mob bosses Meyer Lansky and Lucky Luciano. Havana was a haven for mobsters under the Batista regime, which profited from the extensive fees the crime lords paid for the privilege of running casinos. The American Mafia’s infamous Havana Conference in 1946 ran under the cover of

a gala party with singer Frank Sinatra as its entertainment. Others in attendance included Sam Giancana, Albert “The Mad Hatter” Anastasia, Carlos Marcello and the Fischetti brothers, who delivered a suitcase containing $2 million in cash to Luciano. In 1959, when then Prime Minister Fidel Castro gained power, Castro abolished gambling in Cuba and sent the Mafia scrambling. Now, among other possibilities should the U.S. and Cuba relations succeed, Cuba could see a return to U.S. executive-owned casinos – all legal, of course! “The most beautiful land human eyes have ever seen,” is how Christopher Columbus described Cuba when landing on its shores for the first time in 1492. Little has changed since then. Many of the beaches and mountainous, forested interiors would be instantly recognizable. This

“Cuba is a land of contrasts.” is a land of incredible beauty, of crystal clear waters and sun drenched beaches, of massive green rivers winding through forests to quiet beaches covered in sand of every color from pale pink to sparkling black. This is a tropical paradise perfect for romantic celebrations, relaxing vacations, as well as adventurous exploration. Cuba is a land of contrasts, from the tropical rain forest of the Sagua-Barocoa Mountains to the Zapata Peninsula, which is the largest wetland in the Antilles. The Cays house the second largest coral reef in the world, and at Cayo Largo del Sur, one of the most stunning sights of the natural world can be seen when hundreds of turtles come ashore to lay their eggs. There are miles of shimmering beaches protected by coral reefs. At night, the historic cities and towns of Cuba come

alive with music and dance. There are clubs, cabarets and street side salsas. Cuba’s capital city, Havana, is the largest city in the Caribbean, possessing a stunning historic neighborhood of Vieja Habana complete with castles, cathedrals and mansions. Numerous resorts can be found mainly within the Varadero, Jardines del Rey and Herradua Keys areas. Most hotels are owned by the Cuban government, or by overseas businesses such as Spanish resort groups. Located on a long narrow peninsula stretching out into the Caribbean, Varadero has been attracting visitors (including Al Capone!) since the 1870s. The soft, white sandy beaches are fringed with palm trees, and the azure blue sea perfect for scuba diving into stalagmite caves. Royal Service Paradisus Varadero is one of the most

luxurious hotels in the area. The stylish Hispanic architecture has its own special charm, with its canopy-edged beds and cream-and-brown décor with subtle splashes of color creating an oasis of tranquility. Choose the Royal Service option for the services of a personal butler and a private pool. When dining, guests are spoiled for choice since the restaurants cook up a plethora of A la Carte cuisines from Cuban to Italian, Mexican to Japanese. ROBOT HOTELS With friendly robot staff, facial recognition scans in lieu of key cards, and rooms tailored to each guest’s body temperature readings, some hotels offer high tech hospitality with a personal touch. BY ANGELA YOUNGMAN

re robots the future of the hotel industry? The Hilton McLean in Virginia now has a robot concierge. Powered by Watson, a cognitive computing technology platform enabling her to understand the world through learning and experience, Connie works alongside human team members to answer visitor requests, provide information, plan trips and make recommendations about hotel features, amenities and where to dine. The more guests interact with Connie, the more she learns, adapts and improves her recommendations.

All her knowledge is drawn from WayBlazer travel domain sites. “We’re focused on re-imagining the entire travel experience to make it smarter, easier and more enjoyable for guests. By tapping into innovative partners like IBM Watson, we’re wowing our guests in the most unpredictable ways,” says Jonathan Wilson, vice president of Hilton Worldwide. By using information gained from the log of questions asked and Connie’s answers, the hotel is able to improve guest experiences before, during and after their stay. Requesting items from the front desk at 10 hotels in America can result in a robot delivery. Savioke has developed a Relay robot, which takes orders from the front desk and then delivers the toiletries, linens and other sundries direct to guest rooms.


During 2015, it made over 11,000 guest deliveries with the most popular delivery being tubes of toothpaste. Relay also delivers coffee from the Starbucks in the lobby to guests at the Marriott Los Angeles LAX. Many of the Relays have been given names – the robot at LAX is called Wally, while at the Crowne Plaza it is called Dash. Over in Japan, one hotelier has gone one step further. Henn-na hotel in the Huis Ten Bosch theme park is staffed almost entirely by robots. Before booking in, guests are told by the hotel that they should “feel free to enjoy conversing with these warm and friendly robots as they efficiently go about their work.” Robots undertake the cleaning and provide room service. Luggage is taken by automated trolley direct to your room. No key cards are used, just facial recognition technology. Integral computer systems within each room adjust

Just ask the small pink robot with three hearts adorning its forehead seated beside your bed. It will also automatically turn the lights off when you go to bed, or on when you get up. Perhaps the most dramatic change is at the reception desk. Guests have to choose their receptionist with care. The 72room hotel is staffed by a trio of receptionists – including a robotic dinosaur. Fortunately the velociraptor is a friendly one. All three dinosaurs speak English, Japanese and Korean. Their appearance is quite

lifelike as they seem to breathe and blink as they politely greet guests. Hideo Sawads, president of Huis TenBosch, believes that “in the future, 90 percent of the hotel’s services could be carried out by robots.” What is certain is that robots do lack the personal touch. For non-techies, this could well be one step too far, especially if you want comfort, luxury and service.

Highland Village for the Holidays One of Houston’s most anticipated holiday season delights is the annual transformation of Highland Village retail center into a spectacular festival of millions of sparkling lights and elaborate ornaments. Founded in the late 1940s on the edge of River Oaks, HV has morphed into an upscale collection of fashion, home and dining establishments that form the epicenter of Houston’s inner-Loop shopping district. As HV has grown, so has its holiday décor, which is now a “must see” for Houstonians and visitors alike. This year’s celebration

kicks off on October 20th at 7 p.m. 2016 is the 20th anniversary of the American Cancer Society Holiday Shopping Card, and HV, one of the card’s original sponsors, is proud to have helped raise a total of more than $14 million during that time. Since 2000, HV’s signature decorations have included gigantic, lighted red bows perched atop buildings, as well as towering date palms shimmering with twinkling lights. And this year’s decorations will be the most elaborate yet, according to Brian Teichman, property manager for HV. “Our 2016

celebration brings cheer and calls attention to the Texas Children’s Cancer Center because, after all, the holidays are about children. We’ll have concerts, great food, special guests, and strolling carolers, jugglers, and elves. It’s our ‘thank-you’ to Houston for supporting us the year ‘round.”
