There may not be a more spectacular place in the U.S. than Dallas in the springtime. While New York, Chicago, Denver and Minneapolis are still shoveling snow and spinning on ice, warming temperatures and beautiful blue skies abound here in North Central Texas.

With that in mind, the theme of this edition of Dallas Hotel Magazine is fresh, new, rejuvenated, and reinvigorated. Couldn’t we all use a little more of that?

During a recent session with photographer David Woo, super couple Pat and Emmitt Smith flank Dallas Hotel Magazine publisher Pete Northway at the Westin Galleria.

Our cover story introduces you to a local power couple that may come as close to royalty as Texas has to offer.

Pat and Emmitt Smith are well known for her work on television and in fashion, his exploits on the gridiron and, of course, winning ABC’s “Dancing with the Stars” competition. However, the Smiths are also leaving a significant impact on their community through s series of philanthropic projects. We met the couple at the Westin Galleria in Dallas for the cover shot, and some lively conversation.

Fashion and design are essential components in the local culture. Dallas is home base for Neiman Marcus and a launching pad for some of the most sought after professionals in the industry. In this issue, we introduce you to a series of “up and comers.” Some have already developed a name for themselves, while others might still be a bit under the radar. Power pairs are everywhere these days. England has William and Kate, Posh and Becks, and Sir Elton and David. In the U.S., celebrity couples Brad and Angelina, Khloe, and Lamar, and Tom and Katie are all the rage.

But here in Dallas, Pat and Emmitt Smith are the city’s reigning superstar couple. The two are as close to royalty as Texas has to offer.

They are among the highest profile married couples in town, forever caught in the glare of the media spotlight. Behind the scenes, beyond the glitz and sizzle of the local social circles they are ultra community conscious, involved and connected to a variety of projects that impact and enrich lives.

It has been a long road to success for both Smiths, who have been married since 2000.

A native of Pensacola, Florida, Emmitt came from a large family with three brothers and two sisters. He enjoyed athletic recognition from an early age being named PARADE magazine’s “Prep Player of the Year” as a senior at Escambia High School. As a freakishly talented athlete, his celebrity took off while an All American football star at the

University of Florida. But it was his recordbreaking run as the NFL’s all time leading rusher that allowed him to parlay football success and an electric smile into worldwide celebrity status resulting in lucrative endorsement deals. In 2006, a year after his retirement from football, Emmitt collected a different kind of trophy. He won ABC’s “Dancing with the Stars,” creating a different brand of buzz. One of sports greatest heroes took the dance floor by storm in a sleeveless costume, tackling everything from jazz to classic ballroom dancing, exposing himself to an entirely new audience in the process.

“We danced seven days a week…every day,” he told an interviewer while reminiscing about the experience. Emmitt has continued to appear in commercials and on television programs such as “Oprah” and NBC’s “Who Do You Think You Are?” as well as network morning shows. He has lent his image selectively to companies promoting such products and services as VISA, Herradura Tequila, The Good Feet Store, and Just For Men hair gel. He most recently appeared in Academy Sports & Outdoor’s “Tailgate U” series of commercials. He also found time to write a book, “Game On: Find Your Purpose, Pursue Your Dream.”

Mentoring is an important part of Pat Smith’s community work. She created the outreach program “Treasure You” to honor women from different walks of life. “We want to support, inspire and celebrate women in their journey to discover their self-worth,” she said.

As he told ABC’s “Good Morning America” in a 2011 interview, the book has “spiritual overtones” and provides readers insight into his keys for success in business as well as life.

Pat is a former Miss Virginia USA, and was first runner-up in the 1994 Miss USA pageant. She is striking in appearance, tall and willowy with the grace of a seasoned model. Pat has appeared on network television in roles on programs such as “Beverly Hills 90210.” Last December D Magazine named her to its list of “10 Most Beautiful Women in Dallas.” But ask anyone who knows her and they will tell you she is much more than a pretty face. She has worked as a journalist, is a seasoned writer and has hosted television shows. While she is witty and sensitive, at the same time Pat is extremely business savvy and, much like her husband, driven to succeed.

“Pat is probably the single most positive person I have ever encountered,” said one local television executive. “Her tremendous sense of optimism fills any room she enters. And she has a unique way about her that puts everyone at ease.”

For all the bright lights, glamour, success and adulation however, the Smiths seem like one of the most normal couples in the neighborhood.

They are ultra busy parents juggling hectic professional lives with their five children. The youngest is Elijah who was born just after Emmitt’s enshrinement in the NFL Hall of Fame in 2010.

Like many public figures of his stature, Emmitt’s days in the limelight have not come without a few minor hullabaloos. When he speaks, people in Dallas and elsewhere are bound to listen.

And while he is far from a controversial figure, he has never been shy about what is on his mind.

For example, in 2008 while working for ESPN, Emmitt raised a few journalists’ eyebrows when he made an appearance on behalf of candidate Barack Obama, introducing the future President of the United States to a packed house at Dallas’ Reunion Arena. Last December as his former team prepared to take on the New York Giants in a game to decide the NFC East championship, he publically questioned the squad’s “mental toughness.” Turns out he had a point: the Cowboys were soundly thumped 31-14, and bounced completely out of the NFL playoff picture.

No one cuts across cultural lines quite like Emmitt has over the years in Dallas. Last January, he shared the stage at the Morton H. Meyerson Symphony Center with Dallas Symphony Orchestra music director Jaap van Zweden. A month earlier, Maestro van Zweden was named Musical America conductor of the year 2012.

The former Dallas Cowboy was there to offer his congratulations, leading a standing ovation that welcomed the DSO conductor back to town for his first major performance of the year.

Most days the couple leads an ordinary life shuttling kids back and forth to school, dance class, music lessons and sports activities. On a professional level Pat and Emmitt are in demand as speakers, and stay highly visible in Dallas.

They also stay connected to community issues through a series of charitable causes that are important to both of them. But ask the Smith children, and, like most kids, they will probably say it is just a normal life with mom and dad.

Pat is the president of the Pat and Emmitt Smith Charities, a nonprofit focused on the needs of underserved-children in the Dallas-Fort Worth area and other parts of the U.S. The emphasis is on education and enrichment opportunities, as well as resources dedicated to help kids reach their full potential. The Smiths have impacted a number of area organizations including Children’s Defense Fund of Texas’ “Beat the Odds Dallas”, Knowledge Is Power Program (KIPP), St. Philip’s School & Community Center, Foundation for Excellence in Education’s “Take Stock in Children”, Big Brothers Big Sisters of North Texas and the Northern Texas PGA Junior Golf Foundation. The Smith Charities have provided much-needed scholarships, handson educational and growth opportunities, and innovative mentorship programs. As a result children involved with these organizations have experienced things not possible without their support such as trips to New York City, donated scholarships to The Shelton School in Dallas and Bishop T.D. Jakes’ Clay Academy. The charities have even helped American media mogul Russell Simmons build a school in Africa through his Diamond Empowerment Fund.

Pat spends much of her time passionately devoted to women’s issues including a movement she founded a few years ago called Treasure You. Born out of sincere desires to recognize and renew the spirits of women, Treasure You has become one of her most important community efforts. One of the ways in which she has accomplished it is through a series of getaway retreats she hosts designed to bring women together to share stories, and learn in discussion groups from life experiences.

Some of the women involved are also married to high profile spouses, which comes with a unique set of rewards and challenges. Others are everyday people who have persevered through difficult circumstances to find deeper meaning in their lives. For several years Pat hosted a special Treasure You segment on a local television talk show, “Good Morning Texas,” introducing a broad based audience to women who exemplified the ideals behind the process.

We recently connected with Pat and Emmitt about the importance of family, community aspirations, goals and dreams for their own children, and how they are working to make a difference in Dallas and beyond.

DHM: How do you prioritize your busy lives? What comes first, and where do you spend the bulk of your energy these days?

Pat: We put faith ahead of everything.

God is first in our lives, then our marriage and then our children. If you don’t have your faith in line and the couple itself is not doing well, it affects your children.

We realize the importance of staying connected to God and to one another.

We’re trying to build our enterprise to create a legacy for our family. That’s our common goal.

DHM: Pat, talk about Treasure You and what it has meant to you and the women involved in the project?

Pat: The Treasure You retreats are a place for women to check out of their busy lives and take some important time to share conversations and make emotional connections with other women. I want to give women a place to share, to grow and to feel enlightened. It’s a passion for me to help women take the time to take care of themselves. It’s something that I’ve needed and looked for and had not been able to find. No matter what our backgrounds, we’re all feeling the same thing: that sense of sometimes 28

being overwhelmed and needing to let go and to share with other women. The response from the women who have attended the retreats has been overwhelming. After this year’s event, no one wanted to leave.

DHM: You seem so happy together. What is the secret to your successful marriage and a good family life?

Pat: Our commitment is to one another. Divorce is not an option. We’re willing to fight for our relationship. Faith and dedicated date nights are very important to us. Honesty with one another and communication also are crucial. And if something isn’t working, we’re not ashamed to sit down with a counselor or a therapist to work through it. We do a lot of maintenance work so we don’t hit a wall.

DHM: Emmitt, what was it like shifting gears from athletics into business and philanthropy?

Emmitt: It’s exciting. The game, the people and the camaraderie of football are things that I miss.

But I was able to accomplish what I wanted.

The hard work and determination that you bring to sports are common traits that you need in business. It’s a mindset. Football was always a stepping-stone to business. I’m doing exactly what I wanted to do.

DHM: Pat and Emmitt Smith Charities has impacted a number of deserving area

organizations in need of a helping hand. Tell some of the success stories that stand out for you?

Pat: There are so many. A few young people really stand out in my mind. Daniel Pipkin, a boy who attended a school where Emmitt spoke, really wanted to go to the New York Stock Exchange. Through some relationships that Emmitt had made he was able to take a group of kids, including Daniel, to New York City. Daniel went on to become a student government leader who now attends Brown University. Prentice Richmond, who we met through the Children’s Defense Fund’s Beat the Odds Program, was homeless. We just fell in love with him. He went to the Hall of Fame with us and he’s at Texas A&M University at Commerce now. Jasmine Gibson, another Beat the Odds Program student, is a Treasure You intern who’s going to the University of Oklahoma. Julie Negussie, who attends Georgetown University, came from a family of immigrants. We take all of them to lunch when they come home for Christmas.

DHM: Pat, you have said you feel “blessed.” Is that what drives you to reach out and impact your community as you and Emmitt have done?

Pat: We have both had people in our lives that gave us advice, taught us something or loved on us. One of Emmitt’s favorite scripture passages is, ‘For whom much is given, of him much shall be required.’ He’s had coaches who have really given him a lot. For me, losing my mother at such a young age, people really stepped up. Giving back doesn’t feel like an obligation.

DHM: What do you think is the biggest misconception about the two of you?

DHM: You are both accomplished so much: what are you most proud of?

Emmitt: We’re most proud of our marriage and our children…that is s a reflection of who we are. If you are the same person at home as you are out in public that is a huge testament to your character. And when someone comes up and says, ‘Your kids are great,’ that’s the fruits of your labor. They represent you.

Emmitt: That everything is perfect and that we don’t have problems. That’s impossible with five kids. People think that money solves everything, which isn’t true. Maybe the positive way we go about things sometimes seems like it’s easy for us. There are so many things that could have gone DALLAS HOTEL MAGAZINE

A mall is a mall is a mall, right? Not so fast. Dallas’ iconic NORTHPARK CENTER (8687 North Central Expressway), isn’t your ordinary mall. The sprawling shopping complex features fascinating works by world-class artists including Mark di Suvero, Joel Shapiro and collaborations by Claes Oldenburg and Coosie van Bruggen, whose depictions of ordinary objects on a monumental scale sets a marvelous tone for an afternoon inside the facility.

Sure, you’ll find a food court, haute couture, theaters and other places you’d expect to see in a mall. However, with its expansive green spaces, lawns and trees NorthPark has continually redefined the traditional mall experience since opening in 1965. It has introduced the masses to spectacular works of art by international luminaries such as Andy Warhol, Henry Moore, Roy Lichtenstein, Frank Stella and others. The rich graffiti of DEEP ELLUM (a play on how black musicians of the day pronounced “Elm” Street) still reverberates with the music of Leadbelly, Blind Lemon Jefferson and Robert Johnson to this day. In the 1920s the area was a well-known Mecca for the top bluesmen of the era, and featured influential artists performing on street corners and in bars.

Eighties favorites Edie Brickell and New Bohemians (“What I Am,” “Love Like We Do”) got their start here. Eric Clapton went so far as to record at 508 Park Avenue, the studio where Johnson reportedly cut some of his earliest and most significant tracks, to try and recapture the vibe and infuse it into his music. Artist Robert Glen’s magnificently gallant sculpture, THE MUSTANGS OF LAS COLINAS (5205 North O’Connor Drive, Irving), is a sight to behold. The intrepid monument of nine larger-than-life bronze horses traversing a stream engraved in the granite plaza of picturesque Williams Square boldly stands as the largest equestrian sculpture in the world. The Mustangs are named for the historic Carpenter family land on which they were constructed, El Ranchito de Las Colinas, which means the Little Ranch of the Hills. A museum is located in the west tower of Williams Square Plaza. There is a short film about the design, molding, and mounting of the sculpture. Other works by the artist are also on display. The Ballpark in Arlington

On April 1, 1994, a new era for the Texas Rangers began with the opening of Rangers Ballpark in Arlington. THE LEGACY OF BYRON NELSON

HP BYRON NELSON CHAMPIONSHIP The HP Byron Nelson Championship is one of the area’s biggest annual sports attractions, held May 1420 at TPC Four Seasons Resort Las Colinas in Irving.

This storied event offers world-class professional golf, a renowned social scene that includes post-play free concerts, as well as family fun. Proceeds benefit the Salesmanship Club of Dallas Youth and Family Centers, a nonprofit that is working to change the odds for local children and families.

THE LEGACY OF BYRON NELSON

HONORING A LEGEND Byron Nelson would have turned 100 this year.

He was a gentle man known as much for his character, his faith and his service to others as he was for his record-setting career in golf. In 1945, Nelson accomplished a winning streak that has not been challenged to this day and may stand forever. He finished that year with a total of 18 victories, including 11 straight, and established a record for the lowest scoring average (68.33), which remained untouched for 55 years. During his relatively brief professional career -- he retired in 1946 when he was 34 years old -- Nelson amassed 54 career victories, including the 1939 U.S. Open, the 1937 and 1942 Masters, and the 1940 and 1945 PGA Championships. His record of 11 consecutive tournament victories may never be broken, however Nelson’s legacy also includes the HP Byron Nelson Championship. He lent his name to this event in 1968, and the partnership he formed with the Salesmanship Club of Dallas has produced the most charitable event on the PGA Tour, raising more than $121 million for Salesmanship Club Youth and Family Centers since the tournament began. Nelson made it clear that these achievements off the course were more important to him than his many accomplishments on the course. “This tournament is the best thing that’s ever happened to me in golf,” Nelson said. “Better than winning the Masters or the U.S. Open or eleven in a row. Because it helps people,” he added. This year the tournament that bears his name will pay special tribute to Nelson in honor of his 100th birthday. The Salesmanship Club of Dallas will create a number of displays on the tournament grounds to chronicle Nelson’s accomplishments both on and off the course.

A RICH HISTORY OF WORLD CLASS PROFESSIONAL GOLF With its rich golf tradition in Dallas, including a U.S. Open and a pair of PGA Championships, the HP Byron Nelson Championship has a long history in professional golf that traces its roots back to 1944. That year, Byron Nelson won the Texas Victory Open at Lakewood Country Club by 10 strokes over his friend, Harold “Jug” McSpaden. This annual tournament became the Dallas Open for several years before the Salesmanship Club joined forces with Nelson in 1968 to create what was originally dubbed the Byron Nelson Golf Classic.

Over the years, the tournament has played host to every big name in professional golf—and has been won by most of them. The early years saw dramatic finishes by the likes of Arnold Palmer and Jack Nicklaus. Nicklaus was a two-time Byron Nelson champion, while Palmer never got to claim Byron’s trophy. His duel with Nicklaus 60

in 1970 is the stuff of legend—and many say one of the greatest Byron Nelson tournaments ever played. Deadlocked at 274 after 72 holes of regulation play, the game’s two greatest stars entered a sudden death playoff. Nicklaus prevailed in dramatic fashion, sinking an 18-inch birdie putt on the first extra hole. Palmer played a total of 12 Byron Nelson tournaments and enjoyed five, top-10 finishes, but his second place to Nicklaus in 1970 was the closest he got to the trophy.

Tom Watson was another larger than life presence at the early Byron Nelson events. With his mentor, Lord Byron, looking over his shoulder, Watson went on a tear at Preston Trail Golf Course in the 1970s. He finished second in 1974 and then won his first Byron Nelson the next year.

He won again in 1978, 1979 and 1980, and to this day is the only player to win the Nelson three years in a row.

Ben Crenshaw, Fred Couples, Payne Stewart, Ernie Els, Phil Mickelson, Tiger Woods, Vijay Singh, Sergio Garcia and Adam Scott are just a few of golf’s biggest names who have also claimed victories at the Nelson. In recent years, the champions of the Byron Nelson have come from the growing echelon of young stars on the PGA tour. Jason Day, currently the 7th ranked player in the world, claimed his first career victory at the 2010 Nelson. And last year’s champion, Keegan Bradley, was a relative unknown in his rookie year on the tour when he came from behind to beat Ryan Palmer on the first hole of a sudden death playoff. Bradley’s Nelson win catapulted him into the national spotlight and gave him the playoff experience he would need to win the PGA Championship just a couple months later. These two victories combined with a total of four top 10 finishes also landed him PGA tour rookie of the year honors.

SOMETHING FOR EVERYONE There is perhaps no better evidence of the success of this event than the attendance -typically around 250,000 -- that come out each year to enjoy the golf, the scenery, the concerts and the family fun at the HP Byron Nelson Championship. It offers something for everyone.

The Pavilion has become one of the best-known party spots in D-FW. Patrons often relax at the Pavilion during the day while following golf on large screens, then stay late on Friday and Saturday nights to enjoy live music in the Pavilion After Dark. All concerts are free with a tournament ticket.

Families looking for fun and affordable activities have several opportunities.

GOLF’S ELUSIVE ‘PERFECT SHOT’ Every photographer has a favorite shot, and this is one of mine. I remember that grey and gloomy, rather chilly February day in 1992 as if it were just yesterday.

I love sports, and was always a big fan of the two golfers. Like many kids my age that grew up in this part of the southwest, Byron Nelson and Ben Hogan were incredibly famous, larger than life Texas heroes to us. We all knew who they were and what they had accomplished. For a long time I had worked unsuccessfully to arrange a photo shoot with the two. Years later, Byron told me that this image was the only photograph of the pair together since the mid-1940s. I was truly honored.

They were scheduled to be at the Colonial Country Club in Fort Worth that day. I arrived at the pro shop early in the morning so I could scout a good location to pose the pair for a suitable photograph. I asked the golf pro if I could borrow a couple of clubs, and he was nice enough to help me out. I was then informed I would have only about 5 minutes to get my shot, and included that the time it took just to walk to the location.

I spoke with both men albeit very briefly, asking them to hold the clubs, and look back towards my lens.

Hundreds of corporate sponsors and nearly 1,000 volunteers come together each year to help support the event.

More than 7,000 children and families in the greater Dallas community are receiving a better education and facing brighter futures thanks to the money raised each year at the Nelson by the Salesmanship Club.

It’s not just about how much has been raised; the real story is what’s being done with the money and the lives that are being changed as a result.

Matthew is in the fourth grade at J. Erik Jonsson Community School. His favorite subject is science, and last year his state assessment tests results were impressive, in fact, he only missed one question on each test. Matthew’s family falls below the poverty line. He didn’t speak English until he started school at the age of three. Today, he is thriving at the Jonsson School, a place focused on changing the odds for at-risk kids.

The Jonsson School is a community laboratory school in Dallas, and is one of the programs of the Salesmanship Club Youth and Family Centers, the primary beneficiary of the HP Byron Nelson Championship. The real beneficiary, however, is Matthew, his two younger brothers, and the 230 other students who learn in an environment of trust and respect each day. When Matthew’s parents heard about the Jonsson School from a cousin, they were intrigued. They wanted their kids to get a great education, and saw that over 91% of Jonsson School graduates went on to graduate from high school, which was incredibly high compared to other students in their low-income neighborhood. When visiting the school, they

It’s the non-stop focus on student engagement, on hands-on learning, and on maintaining very high expectations that drive students to success. After leaving the Jonsson School in fifth grade, students move on to area public or private middle schools, high school and, in 85% of cases, higher education.

Ten miles away, in the northwest corner of Dallas, the Salesmanship Club Youth and Family Centers is helping even more families in a different setting. There, professionals ranging from licensed play therapists to psychologists work with kids of all ages and their families.

Families come to the Salesmanship Club for help with a variety of problems, such as abuse, anxiety, grief, depression, challenges at school, and much more.

Two-year-old Maria is one such child being helped by this organization. She had to leave her preschool due to temper issues and unsafe behavior. Her parents, both working full-time to make ends meet, didn’t know what to do. The preschool teacher told them about the Salesmanship Club and they made an appointment. They were able to join a therapeutic group designed to help families with aggressive toddlers. They learned parenting strategies from an educator, while therapists worked with Maria to learn to share, express her needs, and manage her overwhelming feelings. As part of the program, parents and their children came together and practiced their new discipline strategies and coping skills. Over the course of several months, they went from a family, feeling frustrated and at the end of their rope, to a thriving family, still struggling at times, but with the skills to take on the challenges and move forward.

A youth golf clinic will kick off the week’s festivities on Tuesday afternoon on the practice range. Admission and course side parking are free. Located just off the number two Tee, the KidsZone will offer an air-conditioned haven for families where kids can enjoy free activities such as bounce houses and miniature golf, plus arts and crafts. In addition, several family picnic areas are being placed around the course in prime viewing locations, offering quiet shady spots for families to take a break from the golf action.

loved the community feel and that there was a dedicated Parent Center where they could talk with other parents and have a monthly “coffee with the principal” to actively invest in their children’s education.

I knew I would be positioned about 40 yards away, and they probably wouldn’t hear my instructions due to a pretty stiff wind swirling around the 18th green where they stood. As on most of my photo shoots, I work with two cameras. In this case, one had a 300mm lens, and the other had a wide-angle lens. After shooting them full frame, from the waist up, with and without the golf clubs, I was told that my 5 minutes was up. It was the fastest 5 minutes I think I had ever experienced.

I was preparing to pack up my gear, and overheard Ben Hogan offering his old friend and fierce competitor his arm -- for support -- as they headed towards their cart, softly chatting about memorable golf games from years gone by. I was lucky enough to raise my camera and fire off a few more images, which is what you see here.

People have often asked if I knew I was shooting a significant piece of history when I took these photographs more than 20 years ago. Not really. I just knew it was a special moment between two special people, and I am honored I was able to capture it.

There are a number of schools of thought when it comes to understanding exactly what it takes to become a great chef. Tre Wilcox, executive chef of the tony Villagez Marquee Grill and Bar in Highland Park Village puts it like this: “You can choose it. Or it can choose you.” Sometimes it starts as “just a job,” said Wilcox, who started in fast food at age 17, before working his way into a series of high profile positions in some of Dallas’ top restaurants. “You may begin in the business for money, to make a living. And as the passion grows, next thing you know it’s your career. You put your head down, and run with it.” Others believe it is a calling, and that the best chefs are born, not made. That may be the case with executive chef Tiffany Derry, one of Dallas cuisine’s current-crop of young superstars.

Following a series of ultra-hyped appearances on Bravo TV’s “Top Chef,” the glare of the media spotlight focused on Derry intensified. These days the 30-year old chef and her business partners are basking in a different glow – the kind that comes from stellar reviews about their latest venture, a stylish new Dallas restaurant called Private | Social (3232 McKinney Avenue). Opened last September in Uptown, it is chic, tastefully appointed and trendy in tone, with a reputation that is all the rage among foodies.

Private | Social is open for lunch and dinner daily except Sundays, 11 a.m. to midnight Monday through Wednesday, 11 a.m. to 2 a.m. Thursdays and Fridays, and 5 p.m. to 2 a.m. on Saturdays. Her signature dishes are unique, with an interesting southern flair that reflects her South Texas roots. She is also creative with her cuisine, and presents customers with a series of colorful international tastes and presentations with personality.

“I never liked being bound to one type of cuisine, and so I would describe my cuisine as global,” said Derry in a recent interview. “I have been fortunate enough to travel around the world quite a bit. The three most significant and influential places for me have been Mexico, China and Paris,” she said. “The term ‘global cuisine’ has come up, and that’s what I am. Doing just one thing doesn’t spark my creativity. I am a global girl!”

Private | Social serves both “private,” as in traditional single entrees, and “social,” with a nice variety of share plates available. Price points range from $10 to $14 for starter courses and $21 to $44 for entrees.

The menu includes items such as bone-in filet with wild pea shoots and social steak sauce and grilled arctic char with artichoke and Serrano ham.

Interested yet? Perhaps the duck fat fried chicken sounds intriguing, or maybe the delicious Mamma Myint Thai salad rolls are more your speed. You can’t go wrong.

One thing is for certain: this is a fascinating confluence of flavors, and one that has serious Dallas food lovers and food critics talking…a lot.

After opening last year, reviews were good…even great. A food critic at The Dallas Morning News gave Private | Social four stars, and included the new restaurant in the paper’s top 10 of 2011 calling it “sophisticated, soulful and original.” D Magazine, The Dallas Business Journal and others followed suit with positive reviews of their own shortly after Private | Social opened.

As for the bright-eyed young chef with the sizzling smile, Tiffany Derry is on a roll. Ever since her appearances on “Top Chef” she is said to be fielding offers for more media exposure.

“My chef used to tell me, ‘Keep your head down. And just keep cooking!’”

Her culinary career started simply enough when she was 15 years old working in a local International House of Pancakes. In the span of two years the Beaumont native reportedly worked her way up the chain to become the company’s youngest manager.

“I learned to work super hard, and outwork anybody around me,” she said. “If anyone did something particularly well, I watched, I studied and I conquered. That was the goal.”

After high school Derry enrolled in the Art Institute of Houston to take courses in the culinary program. There she honed her skills, while staying active in organizations such as the Great Chefs Club and American Culinary Foundation Junior Chefs Team. “When I was at the Art Institute I went to Paris,” said Derry in a recent promotional video on the school’s website. “I was able to see the incredible produce, and the way they treated food. Before, it was about eating…now it’s 74

about taking care of (food). Knowing where it’s coming from and all the steps foods go through before you actually get it.” She graduated in 2003, and remains an ardent supporter and advocate for her alma mater.

“I had a lot of opportunity that I don’t think I would have had if I had not gone to the Art Institute,” said Derry. “By the same token, it took a lot work. I had two jobs…it wasn’t like I went to school and then -- poof -- I am where I am today. The Institute provided a great foundation for me to build upon through real world experience.”

“I learned how to be tough, and not so sensitive in a boy’s world…”

Derry’s first job out of school was at Pesce, a popular Houston restaurant known for its innovative seafood dishes served in an elegant, albeit high volume atmosphere.

It was here she found a culinary mentor in chef Mark Holley. “He was the first African American chef I saw doing fine dining,” said Derry. “That was very important for me to see.” Holley’s eye for talent paid off. “After culinary school, we reeled Tiffany in,” he said. “You know the great ones early on. One in a hundred…maybe a thousand…really has it. And when you see it, you know it.”

Holley believes you need to test the newbies early and often, which was the case with his young protégé. “You throw them in and see if they sink or swim,” he said. “Some have two left hands.” Derry thinks the experience strengthened her in a number of ways. “He was there to build you up, and sometimes to break you down,” she remembered. “There were days where I cried in the bathroom, shook it off, and came back to the kitchen to cook.” Under Holley’s watchful eye, Derry took advantage of advancement opportunities at the Houston restaurant working from garde manger to junior sous chef. “I was the only woman that had ever worked the line in his kitchen,” she said. “I learned to be tough and not to be so sensitive in a boy’s world.”

Holley watched the young chef learn and grow. “She navigated her way through our kitchen pretty quickly and mastered a lot of positions,” said Holley. According to Derry, Holley provided her first exposure to being “more then just a chef in a kitchen,” as she puts it. “He would work the kitchen in the back and go out and work the room in the restaurant. He greeted every guest in the house. I really liked that about him.” Even in those early years, Derry had an impressive career plan. “I knew when I met her she had a swagger,” he chuckled. “She had it all

It’s not every day you get to ask the area’s best chefs everything you have always wanted to know about food, but never had the opportunity to ask. Here are a few extra random questions for Chef Derry.

DHM: You call Dijon, Creole mustard, champagne vinegar, kosher salt and Creole seasoning the five indispensible ingredients in your kitchen?

TD: I like how they brighten up dishes. They can take something from being flat to full of flavor without adding salt. Herbs can only go so far for me -- without a good mustard or vinegar.

DHM: Talk about your home kitchen versus Private | Social: what are the similarities and what are the differences?

TD: There are definitely gadgets. You will find a lot Le Creuset and the color red in my home kitchen. Also, my kitchen does not smell like food because there is definitely nothing being cooked there. I spend so much time in the Private | Social kitchen!

DHM: We have interviewed some of Dallas’ top chefs, and always manage ask about their favorite hole-in-the-walls. When you have a free evening, where do you go that’s off the beaten track?

TD: ZENse (8600 North MacArthur Blvd) in Valley Ranch; the Thai food there is amazing.

mapped out…wanted to open a restaurant in her hometown, and be on The Food Network. She is a good example of hard work and dedication. I am not at all surprised by her success.”

“Top Chef was a game changer for me” She moved on to Grotto Cucina Napoletana across town were she worked as executive sous chef and began to see even more of the complexities of the business. “With the Landry’s corporation I was able to do that (open restaurants),” said Derry in the Art Institute video. “Before, all I knew was cooking. Then it became about the business side – how to run a restaurant and what it takes day in and day out.” In 2000 the young chef moved to Dallas, and began teaching culinary students at the Art Institute of Dallas. Then in 2008 she joined DRG Concepts’ (Dallas Fish Market, Dallas Chop House, Wild Salsa) popular Go Fish Ocean Club in Far North Dallas as chef.

While at Go Fish in 2010, Derry auditioned to become one of 16 contestants on Season 7 of “Top Chef” taped in Washington, D.C. She joined the cast and placed fifth. She was voted a “fan favorite” along with another Texan, Fort Worth-based chef Casey Thompson. Derry had already been a rising star in local cuisine circles when she was selected as a member of the cast, however “Top Chef” went a long way in introducing her to mainstream American foodies. “This was a game changer for me,” as she framed the experience in the Art Institute promotional video. Executive Chef Wilcox agrees, “Unless you are the kind of chef who comes out of the kitchen, and works the room like Dean (Fearing), people really don’t know your story. Tiffany wasn’t like that. She had not worked in that many restaurants.”

Can an appearance on a cable reality show such as “Top Chef” really be a life changing experience? “Yes,” said Wilcox, “depending on how you are portrayed on the show, and how it is edited.” In Tiffany’s case, he believes “Top Chef” gave her the opportunity to “show off,” as he puts it, in front of a national audience.

“The show shed light on her working at IHOP, the Art Institute, coming from a small town in Texas…her story,” he said. She was a hit with viewers, and later competed on another Bravo show, “Top Chef All-Stars,” making it all the way down to the program’s final four chefs. According to Wilcox, from the beginning Bravo’s recruiting pitch for prospective contestants was pretty clear: an appearance on the show opens a variety of significant culinary doors. “What you do with it after that is up to you,” he said. “It is an opportunity for a chef to be brand-able.” When she returned to Go Fish after her stint on “Top Chef,” Derry said she had become energized, telling The Dallas

Morning News, “I’m really determined to do new things, to step it up, you know, just the way I approach what I do. I feel this pressure, now that I’m going to be seen as this top chef. People are going to be coming in expecting to be wowed.” The restaurant closed a few months later, but Derry landed on her feet.

Has Derry taken full advantage of the new found visibility afforded her through national exposure on a big time television show…and would she do it again? “I did do it again,” she laughed. “I would do it a third time, but not any time soon. Almost every other chef that came back for ‘Top Chef All-Stars’ had a good amount of time from their first appearance on the show to the next. I had about a month after Season 7 ended and went right back into taping for Season 8. Everyone else was able to take things away from their first appearance on the show: things they needed to work on, feedback from the judges, and how the audience reacted to their food. They were able to take the time to learn from that and grow. I felt like I just went from one season to the next without a chance to work on my craft and internalize that feedback.

I would have liked to have that time between my appearances on the show, which is why I would wait some time before I would consider going back.”

“My mind now is completely different than it was before,” said Derry in the Art Institute promo, comparing her career before and after the “Top Chef” experiences. “I am forever creating. I wake up in the middle of the night and I am creating.” That creative spirit has also driven her to become a supportive, community advocate working with the Dallas Independent School District. She wants to help revamp school lunch programs to feature healthier options for students. “It is something I hope to take step-by-step, day-by-day,” she said.

“It is not one of those things that will happen over night. It is a process of me getting into the classrooms, cooking with the students and educating them on how to eat better. From there, I can start to slowly get more involved with working on the cafeteria menus. I am just so amazed with all the things they do in school cafeterias with the minimal budgets they have.

It is going to be a long process, but I hope to eventually get help from other chefs and other people who are willing to donate their time to

join me in this much needed transformation.”

For now, the bulk of her attention is concentrated squarely on Private | Social, which she designed and opened with associates Andy Austin and Patrick Halbert. “In the immediate future, my focus will be to continue to turn Private | Social into an extraordinarily successful restaurant,” she said. Judging by the reviews, and the early buzz, she is well on her way. But it’s never easy. Wilcox knows how difficult running a flourishing business in the dog-eat-dog Dallas-Fort Worth restaurant world can be. “There are 10,000 restaurants in the area,” said Wilcox. “And the average life span of a restaurant is only two years. It is the hardest thing I have ever done.” Based on Derry’s history she also appreciates the hard work, and knows that risk and reward intersect. “I want to own more restaurants, produce a digital series and television shows, share my voice on food, family and life at cooking and speaking events around the world, write cookbooks and launch a line of cookware, spices and more,” she said.

“I have a vision and a big plan to grow the Tiffany Derry brand into a household name.”

Back to the earlier question: are chefs are born, not made? “I really believe they are born,” said Holley in a convincing tone. “Passion, hand-eye coordination, mobility, pick things up quickly… and common sense, which isn’t all that common any more -- either you have it or you don’t.”

Legendary chef Dean Fearing, known as the father of southwestern cuisine, agrees. “Just her being humble is one of the greatest attributes any chef could ever have,” said Fearing.

“Tiffany has a wonderful personality that will take her far.”

Derry may be a bit more philosophical. “The true gift I hope to give to people is my voice,” she said. “When I get a chance to speak at events or talk to aspiring chefs, a lot of times it’s a story. One way to reach them is through the food, but it gives me an opportunity to talk about something greater.”

Renowned Spanish architect Santiago Calatrava provided the majestic vision for photographer David Woo’s dramatic shot of the Margaret Hunt Hill Bridge. The spectacular new 6-lane bridge crosses the Trinity River and connects Singleton Boulevard to the Woodall Rodgers Freeway in Dallas. Thousands watched as Mayor Mike Rawlings threw a ceremonial switch on January 11 to light up the city’s latest addition. On March 2 opening ceremonies included a concert with Lyle Lovett followed by a fireworks display. Rawlings addressed the crowd saying, “We’ve all been watching this amazing structure come to life for years, and we’ve finally arrived at this momentous occasion. Now this is your bridge. This is our new Dallas.”
