2 Tbsp (30 ml) Epicure’s Sweet & Spicy Mustard 1. Whisk first 4 ingredients together in mixing bowl. Mix in beef. Wet hands to prevent sticking and form mixture into 6 patties using Epicure’s Burger Press. 2. Grill on the barbecue over medium-high heat with the lid closed for 5 minutes. Turn patties and continue grilling for an additional 5 minutes. 3. Place onion rings on grill for the last few minutes of cooking. Barbecue for 1–2 minutes, until lightly charred. 4. Combine all topping ingredients. Spoon over cooked burgers and top with grilled onion rings. 1 cup (250 ml) finely grated carrot (approximately 1 large carrot) Frosting ½ — 8 oz (224 g) block light cream cheese 2 Tbsp (30 ml) butter, at room temperature ½ tsp (2.55 ml) Epicure’s Vanilla Extract ¾ cup (180 ml) icing sugar 1 Tbsp (15 ml) Epicure’s Maple Spice Fruit Dip Mix 1. Preheat oven to 350° F (175° C). 2. Lightly butter a 9” x 5” (23 cm x 13 cm) loaf pan. Coat with flour, tapping out excess. 3. Whisk first 8 ingredients in a large mixing bowl. 4. Whisk eggs and oil in a separate bowl. Stir into dry ingredients. 5. Fold remaining ingredients into mixture and pour into loaf pan. 6. Bake 50 minutes, or until a toothpick inserted into centre comes out clean. Let cool slightly in pan and turn out onto Epicure’s Cooling Rack. 7. For frosting, beat cream cheese until smooth, then beat in butter. Add Epicure’s Vanilla Extract, icing sugar and Epicure’s Maple Spice Fruit Dip Mix. Beat until evenly mixed.
