Epicure's Oatmeal Cookies Prep Time: 20 minutes • Cook Time: 10–12 minutes • Makes: 36 cookies 1 cup (250 ml) all-purpose flour ¾ cup (180 ml) whole-wheat flour ¾ tsp (3.75 ml) baking soda ¾ tsp (3.75 ml) Epicure’s Baking Powder ½ tsp (2.5 ml) salt 1 tsp (5 ml) Epicure’s Cinnamon (ground) ½ cup (125 ml) non-hydrogenated margarine ½ cup (125 ml) applesauce 1 cup (250 ml) brown sugar ¼ cup (60 ml) sugar 1 Tbsp (15 ml) Epicure’s Vanilla Extract 2 eggs, or 1 egg + 2 egg whites 1 cup (250 ml) Epicure’s Cherries & Berries 3 cups (750 ml) old-fashioned or quick oats 1. Preheat oven to 350° F (175° C). 2. Combine first 6 ingredients in a small mixing bowl. 3. Combine margarine, applesauce, sugars and Vanilla Extract in a large mixing bowl. Add eggs one at a time, beating well after each addition. 4. Combine wet and dry ingredients. Stir in Cherries & Berries and oats.

5. Drop dough by heaping teaspoons 3” (7.5 cm) apart onto Epicure’s Parchment-lined Baking Sheets. Lightly press cookies down with a fork. 6. Bake for approximately 10–12 minutes, or until lightly browned around edges. Creative Cooking: Try Epicure’s Apple Pie Spice or Epicure’s Poudre Douce instead of Epicure’s Cinnamon. Health Tip: To reduce fat content in your favourite baking recipes, substitute applesauce for some of the fat. Epicure's 1, 2, 3 Wacky Chocolate Cake Prep Time: 10 minutes • Cook Time: 30 minutes • Makes: 8 servings Kids love making this easy-bake cake! 1 ½ cups (375 ml) all-purpose flour 1 cup (250 ml) sugar ¼ cup (60 ml) Epicure’s Pure Cocoa 1 tsp (5 ml) Epicure’s Baking Powder 1 tsp (5 ml) baking soda ½ tsp (2.5 ml) salt 1 tsp (5 ml) Epicure’s Vanilla Extract 1 tsp (5 ml) vinegar ½ cup (125 ml) butter, melted 1 cup (250 ml) buttermilk 1. Preheat oven to 350° F (175° C). 2. Sift first 6 ingredients into a 9” x 9” (23 cm x 23 cm) cake pan. Bang the pan on the counter and shake back and forth to level ingredients. 3. Make 3 hollows in the mixture with a wooden spoon. Pour Vanilla Extract into one, vinegar into another and butter into the third. Pour buttermilk over all.

4. Stir until well-blended and no flour shows. Bang the pan on the counter again to level batter. 5. Bake 30 minutes and leave in pan to cool. 6. Sift icing sugar over cake with a strainer. Chef Tip: No buttermilk? No problem! Combine 1 cup (250 ml) milk and 1 Tbsp (15 ml) lemon juice or vinegar and let stand 5 minutes. Voilà! Epicure’s Mini Flipper makes it easy to get the challenging first piece out of the pan! Serving Suggestion: Serve with ice cream.


Epicure's Blueberry Smile Pancakes Prep Time: 15 minutes • Cook Time: 6 minutes • Makes: 4 servings 1 cup (250 ml) each whole-wheat and all-purpose flour 1 Tbsp (15 ml) Epicure’s Baking Powder ¼ cup (60 ml) sugar 1 tsp (5 ml) ground Epicure’s Sea Salt ½ tsp (2.5 ml) Epicure’s Cinnamon (ground) 1 ½ cups (375 ml) milk ¼ cup (60 ml) butter or nonhydrogenated margarine, melted 2 eggs, lightly beaten 1 ¼ cups (310 ml) fresh or frozen blueberries or Epicure’s Cherries & Berries

1. Measure all ingredients. 2. Using Epicure's Mini Spatula, mix flour with Baking Powder, sugar, Sea Salt and Cinnamon. 3. Add milk, margarine and eggs. Spoon generous amounts of batter onto a lightly greased hot griddle. 4. Make a smiley face with the blueberries: two eyes and a big smile. Be careful, as the griddle will be very hot; junior chefs will need help. 5. Cook for 2–3 minutes, until large bubbles appear. Carefully flip over and cook for 2–3 minutes, until bottoms are golden.
