1. In Epicure’s Multi-Purpose Pot, cook pasta according to package directions. 2. Preheat oven to broil. 3. In a large mixing bowl, whisk together eggs, milk, 3 Onion Dip Mix and Pesto Herb Mix. Stir in pasta, broccoli and tomato. Season with Sea Salt and Black Pepper. Set aside. 4. Lightly spray Epicure’s large Eclipse® Coated Professional Frying Pan with vegetable oil and heat over medium heat. Pour egg mixture into pan, stirring with a heat-resistant spatula for 1 minute. 5. Reduce heat to medium-low and cook for 6–8 minutes. The sides and bottom should be firm, and the top slightly runny. 6. Sprinkle with Parmesan and place under the broiler for 3 minutes. Epicure’s Carrot and Yam Casserole Prep time: 15 minutes Makes: 4 servings

Cinnamon contains high levels of antioxidants (polyphenols), and is thought to help control blood sugar levels. 4 carrots, peeled and diced 1 large yam, peeled and diced ¼ cup (60 ml) maple syrup ¼ cup (60 ml) apple juice 2 ½ tsp (12.5 ml) Epicure’s Herb & Garlic Dip Mix, divided 1 Tbsp (15 ml) butter 1 tsp (5 ml) Epicure’s Cinnamon (ground) /4 cup (180 ml) breadcrumbs

¼ cup (60 ml) melted butter 1. Preheat oven to 350° F (175° C). 2. In Epicure’s 12-cup Multi-Purpose Pot, boil carrots and yams until tender. Drain and mash. 3. Heat maple syrup, apple juice, 1 ½ tsp (7.5 ml) Herb & Garlic Dip Mix, butter and Cinnamon. 4. Combine all ingredients and spoon into a lightly buttered casserole dish. 5. For the topping, stir breadcrumbs with butter and remaining 1 tsp (5 ml) Herb & Garlic Dip Mix. Sprinkle over carrots and yams. 6. Place on Epicure’s Baking Sheet and bake for about 10 minutes, until lightly browned.
