Chicken Curry in a Hurry

It’ssummertime! That means everyone is moving towards cold salads for dinner and staying away from the heat of the oven. This is a great recipe for anyone that has leftover chicken sitting in the refrigerator and you’re just asking yourself, ‘What am I going to do with this?’ This chicken curry salad is also great for a weeknight meal when you don’t have a lot of time on your hands. It’s creamy, but not heavy and has a sweet heat kick. This can be served over a bed of lettuce or wrapped in a tortilla (my personal favorite). It’s fancy enough to serve at a party and casual enough to take on a camping trip. I personally have done both. Stay cool out there this summer, my friends.
Quick Chicken Curry Salad
Serves 4-6
Time- 15-20 min
You will need:
• 2 large fully cooked skinless chicken breast,
• Or 4 cups of cooked diced chicken breast
• 2 TBS of mild curry powder (I use Japanese curry powder)
• 1/2 C. Mayonnaise
• 1 C. Plain whole milk Greek yogurt
• 2 cloves garlic, minced
• 1/2 teaspoon of jalapeño, finally, minced (optional)
• Juice from half of a large juice
• 2 TBS Honey
• 3/4 C. Red cabbage, shredded
• 1/2 C. Craisins, chopped
• 3 Green onion, sliced
• Salt and pepper to taste
• Garnish with Almonds, cashews or pistachios, finally chopped
Putting it together:
In a medium size bowl, combine all your ingredients, except the chicken, and whisk together until thoroughly blended. Continuously taste and adjust your dressing until it is to your liking. If you’d like a stronger curry taste, add more curry powder. If you’d like it sweeter, add more honey. Dice the chicken into small cubes and add it to the dressing. Mix thoroughly. Cover and chill for at least one hour. Top with chopped nuts before serving.
