Legatum Nostrum PATRIMONY IS THE CREATION OF BROTHERS Georges Daou and Daniel Daou, proprietors of DAOU Family Estates. Hailing from Lebanon by way of Paris, France, Georges and Daniel moved to the United States where they soon achieved success in business; but this however, was just the beginning of their journey. From their family history and worldview, the DAOU brothers imagined a fearless goal—to produce the world’s finest Cabernet Sauvignon, and to curate a lifestyle to match. From terroir to winemaking to architecture, they leave no detail unexplored, so that this wine, and this place, may never fail to astonish.

IN THE SANTA LUCIA MOUNTAINS west of Paso Robles is a gem cut from the rough of the coastal forest, ascending to an elevation of 2,200 feet. This is DAOU Mountain in the heart of the Adelaida District. Hailed long ago as a winemaking frontier of immeasurable potential, the Mountain nevertheless remained uncharted for decades. We were stunned to discover a terroir this pristine. It stirred the imagination, calling on us to unlock its long-held promise and to create a new benchmark in Cabernet Sauvignon. Patrimony is the culmination of this quest.

DAOU MOUNTAIN towers over the coastal range, its steep slopes reaching nearly 60 percent. The soils are composed of calcareous clay and comparable to Bordeaux’s Right Bank. The climate closely mirrors St. Helena in Napa Valley. This providential combination of elements produces some of the highest phenolics in the world—fostering an immensity of color, depth and structure that is enhanced by the exacting viticulture provided to Patrimony.
C U L T I VA T I O N
PATRIMONY FRUIT is handpicked from steep vineyard rows that exhibit remarkable character. Each grape undergoes state-of-the-art optical sorting to ensure absolute flavor integrity. Fermentation proceeds exclusively with wild yeasts cultured from DAOU Mountain, imbuing the wine with native texture and character. These wines are made entirely from free-run juice. Maturation unfolds for 30 months in the rarest of weathered French oak barrels. Only after further aging in the bottle for one year do all of these aspects coalesce into complete symmetry. The result is a most pure expression of the Cabernet Sauvignon grape—abundantly layered, extravagant in depth, and intricately poised to the end.

THE PATRIMONY AGING PROGRAM is built around the most coveted French oak barrels that are accessible only through personal relationships with top cooperages. Taransaud T5 barrels coopered from five-year seasoned staves cut from centuries-old forest trees. The Sylvain Futaie Artistique II barrels were made from over 350-year-old fine-grain oak, originating from a forestry program initiated during the reign of Louis XIV. The Tonnellerie Berger & Fils has been one of the most renowned cooperages for nearly 70 years. Their team created a custom barrel crafted specifically for Patrimony. Seguin Moreau ICÔNE Elegance barrels provide support in creating elegant and harmonious wines. Our proprietary DAOU barrel created from rare, super fine-grain pink oak, or bois rosé, that is also seasoned in the elements for five years. Additionally, we use custom barrels, cured for three years, with the finest grain available from the Forêt de Bercé, also known as Jupilles. These barrels are toasted with our proprietary toast to match the character of the wines. Collectively, these barrels provide for seamless oak integration and staggering complexity over a maturation period of 30 months, all without encroaching upon the pure qualities of our DAOU Mountain fruit.
