ELLA’S RECIPE FOR bECOMINg vEgAN a vegan diet and indulgence are not things you’d necessarily associate with one another, but former made in chelsea star lucy watson, is trying to change that.
The 27-year-old, who turned vegetarian at six, switched to veganism two years ago – but got bored of just eating salads and soups. “I was a bit clueless about what I could eat,” she said, “and I did miss indulging myself.” So, she’s put together her cookbook, Feed Me Vegan, to help make other people’s “journey to being vegan a little less daunting”, and prove “food can still be amazing, even if it’s vegan”. On what triggered her to become vegan lucy says: “This sounds silly, but I didn’t really realise cows didn’t produce milk naturally. “I forgot the fact they had to have a baby, and one day it hit me: What happens to that baby? What happens to the calf? “Because if we’re using all the

200ml almond milk 2tbsp light brown soft sugar 2tbsp wholemeal flour 1tbsp nutritional yeast ½tsp ground cinnamon a pinch of salt 2tbsp vegan butter 4 thick slices day-old white bloomer bread, sliced about 2cm thick For the spiced plums: 3tbsp vegan butter 3tbsp light soft brown sugar 6 large ripe plums, pitted and quartered ¼tsp ground ginger ¼tsp ground cinnamon
METHOD:
Begin by pan-frying the plums. Put the butter and sugar in a non-stick frying pan over a high heat. 1When it begins to bubble, put the plums into the pan. Sprinkle over the spices and cook for four to five minutes until soft, stirring occasionally. The plums should be well coated with the glossy syrup. Remove from the heat. Pour the milk into a bowl and add the sugar, flour, nutritional yeast, cinnamon and salt. Whisk well. Put a large non-stick frying pan over a mediumhigh heat. Put the butter in the pan and wait until it begins to sizzle. Take each piece of bread and dip both sides into the milk mixture until soaked well. Add the soaked bread slices to the pan and cook for three to four minutes on each side until golden brown and crispy. Put the plums back over the heat to warm through. Serve the plums on the bread, making sure to use up all the spiced buttery syrup.

He was like, ‘No, no definitely not, they don’t’, but I researched it and sometimes it is the case. “I was just like, ‘Oh my god, I can’t contribute to that’.” cutting out dairy, she says, wasn’t a challenge in itself, however, she does occasionally miss the ease of being able to walk into a restaurant and order anything off the menu. Between 2006-2016, the number of vegans in Britain increased 360%, and lucy reckons veganism “will eventually become mainstream”. Partly because “the planet can’t cope with the pressure we’re putting on it”, and partly because “we all have compassion within us”, she says. She believes we need to change how we talk about animals in relation to food. “It’s completely fabricated to us at school. If anything, we’re taught to love animals; we’re never taught the connection between them and dinner,” she
says, describing how distancing terms like beef and pork can be. “If we were educated from the get-go, I think many children would be opposed.” By adulthood, she says it’s often too late: “A lot of people don’t even want to know by then.” And what about her boyfriend, model and fellow MIc alumni James dunmore? He was a meat-eater, however, lucy reveals: “The other day he was like, ‘I’m going to go pescatarian’, and to be fair, he’s pretty much been pescatarian since. MUSHROOMY MAC AND CHEESE (Serves 6)
INgREDIENtS 500g dried macaroni 40g dried wild mushrooms 2tbsp vegan butter 250g chestnut mushrooms 2 garlic cloves, finely chopped 1tbsp thyme leaves sea salt and freshly ground black pepper For the bechamel sauce: 50g vegan butter 3tbsp plain flour 800ml almond milk 1/4tsp grated nutmeg 4tbsp nutritional yeast 200g vegan cheddar cheese, grated 50g vegan parmesan cheese, finely grated sea salt and freshly ground black pepper
For the topping: 40g vegan parmesan cheese, grated 2tbsp finely chopped flat-leaf parsley leaves
MEtHOD
Preheat the oven to 220°C (200°C fan, gas 7). Cook the macaroni in 1boiling, salted water according to the
packet instructions, until al dente. Drain in a colander and refresh under cold water until cooled. Put the dried mushrooms in a small heatproof bowl. Pour 150ml boiling water over them and leave to rehydrate for 15 minutes. Drain the mushrooms, reserving the liquid for the bechamel sauce. Roughly chop the mushrooms. Melt the butter in a non-stick frying pan over a high heat. When hot, add the wild mushrooms, chestnut mushrooms, garlic and thyme. Cook
for five to eight minutes until the mushrooms have browned well. Season with salt and pepper, and remove from the heat. To make the bechamel sauce, put a large saucepan over a medium heat, then add the butter and stir until melted. Add the flour and cook for one minute, stirring constantly. Whisk in the milk, and continue to whisk until the sauce thickens, then lower the heat and add the remaining ingredients. Stir until the cheese has completely melted. Remove from the heat and season with salt and pepper. Add the mushrooms and macaroni to the saucepan with the sauce and stir well until everything is evenly coated. Transfer to a deep 25 x 30cm ovenproof dish. Mix the topping ingredients together and sprinkle over the macaroni. Cook in the oven for 20-25 minutes or until the topping is golden brown and crunchy.

JuST Dance was just waiting for Switch. Forget button taps, this game simply demands you match the choreography on screen, yet until now it’s been limited to tracking movement with your right hand only. But on Switch, you can use both JoyCons in a new Double Rumble mode, however it feels like a missed opportunity that it isn’t compatible with Switch’s brilliant six-player option. The tunes are solid party hits, but the streaming subscription service seems cheeky at £4.99 a month (though three free months are included). If Just Dance 2018 was a more generous package, it’d be an essential festive accessory.

The original Warhammer Quest was so ponderous you could almost hear the 12-sided dice scudding around inside your smartphone. This sequel makes every attempt to tackle that glacial pace. But the first game’s shrewd tactical play won awards, while the commitment to Games Workshop’s fantasy universe won millions of fans. Warhammer Quest 2 has no patience for such slow-burn elements, instead streamlining the combat, magic, storyline, levelling, tactics (now a flawed stone/paper/scissors system), equipment and presentation, losing the original’s personality in the process. The new 3D visuals are welcome but look to have come at a high cost.

people will Talk finds the York quartet partying like it’s 1999 ... except i thought they burnt this disco down? what is perhaps missing is one of the band’s glorious slow numbers – better days does not quite hit the mark and the excellent Hold on To Yourself changes tack into a euphoric chorus.

evanescence are back with their fourth album, called synthesis, and one word encapsulates their musical offering: dramatic. the album has a few old favourites on it such as bring me to life and my immortal that have been revamped. it is a welcome return to the old, familiar sounds of the band and fans are going to be transported back to their original work. lead singer amy lee is back with a vocal performance that’s as powerful as ever. this album is proof that old can be the, well, new new and still be just as satisfying.
nick knowles (yes, the diY sos guy) is offering something disarmingly different from the usual swing or opera-esque releases from many of his tv star contemporaries. with these covers, knowles has been bold with his song choices, opting for beloved tracks from the likes of robert Palmer and Joni mitchell, and this serves him well. the strikingly deep timbre of his voice works well with so many of them. knowles offers up an album that will be enjoyed by those wishing to hear familiar songs performed with an as-yet unfamiliar voice.
were bradley walsh an unknown trying to make it in the music industry, it is perhaps unlikely this record would be made. this latest is a classic of the celebrity crooner genre. big band? tick. largely cruise ship-friendly covers? tick. Prefacing a musical interlude with “take it away, lads”? tick. the album is dripping in cliche but walsh is not trying to rewrite the rule book. he is, after all, the biggest selling debut artist of 2016. hackneyed, but inoffensive fun.
tears for fears offer two newly recorded tracks on this greatest hits record. it documents the duo’s highflying eighties from the hurting’s mad world and Pale shelter to the seeds of love’s advice for the Young at heart (and five singles from songs from the big chair to boot). the two new tracks, the danceflooor sound of i love You but i’m lost and the haunting accoustics of stay, which feels at ease on the band’s biggest hits record, with the promise of a whole album of new music round the corner, perhaps some things aren’t always best left alone.

moTHeR SHoW A TRiumpH WITH a dream team of writers, including Father Ted’s Graham Linehan and Catastrophe’s Sharon Horgan, the new BBC2 sitcom Motherland has no right to be mediocre. And thankfully it isn’t. Focusing on a group of mums as they navigate through the maternal minefields of everyday life it was full of moments that I’m sure will strike a chord with all of the mums out there. Thankfully you don’t need to have given birth in order to find the show an absolute triumph. All the characters acted in ways that were at times reprehensible and selfish – and that’s something we can all relate to.
Well WoRTH deTeCTiNg a enjoyable: STRANgeR THiNgS ReTuRNed FoR A SeCoNd SeRieS
TELEVISION comedy doesn’t get much more comforting than Detectorists (BBC4). Toby Jones and Mackenzie Crook have such chemistry that everything about it feels effortless. Over the course of three series the friendship between metal enthusiasts Lance and Andy has gone through ups and downs but we as viewers never stop rooting for them. I get the feeling that the deadly dull title and BBC4 timeslot means Detectorists is not on most people’s radar. I urge you to get that sorted. There are so many rubbish British television comedies out there, we should celebrate when one is this perfect.
TWO episodes into the new series of Stranger Things and I had forgotten why I enjoyed the first series so much.
I am a frequent sufferer of “televisual seasonal amnesia”, a condition that means I can’t remember a thing about the previous series when it comes time to watch the new instalments. (The worst example of this came while watching Game Of Thrones, when the condition reared its ugly head on a weekly, episode-toepisode, basis). I remembered vague flashes about how the first series of Stranger Things ended – Eleven went away (I couldn’t remember why she went away or if she was dead), Will got rescued from the evil world (I couldn’t remember how though, or any specifics of the evil world) and it finished with a twist (involving Will, but my mind goes blank after that).

Sadly the new series didn’t open with a “previously on” montage – a godsend to other TSA sufferers. I have to admit the first two episodes were a bit of a slog to get through as the plot mechanics were laboriously moved into place and new characters introduced. But once all that heavy lifting was out the way and the series quickly settled into a dumb, but enjoyable, storyline that was part Gremlins, part Aliens. The truly thrilling penultimate episode, in which the gang escaped the secret military base while battling hordes of face-munching

His new series, Road To Mexico (BBC2), takes him from California to, er, Mexico and it was a mouthwatering journey that made me want to book a plane ticket right away.
creatures, was a high point not just for this series, but the last one as well. Although the final shot teased more adventures in the “Upside Down” world next series, I’m a bit Upside Downed-out. I’m happy if creators the Duffer Brothers want to give us more adventures with the Stranger Things kids, but I really hope they give the bad guys a different vibe and don’t keep returning to the same well of story. Evil scientists and mind-controlling aliens have been done to death now. Show us something new next year.

Other parts are tougher to watch, as the anger between mum and son boils over, but you never once forget how deeply they love each other.

| WATCH peaky blinders has earned itself a cult following since hitting bbc two four years ago.
So much so that the show’s star, Cillian murphy, has seen pictures of fans with giant tattoos of his character tommy Shelby (yes, really). in the past three series of the gangster epic, set in post-World War 1 Birmingham, we’ve seen tommy move up in the world as the brains behind the most feared and powerful gang in the area, the peaky Blinders. run by him and his family, they make money from illegal betting, protection and the black market – while also making plenty of enemies along the way. ahead of the show’s return, murphy and co-stars Helen mcCrory and adrien Brody tell us about the danger awaiting the Shelby family this time round. murphy returns for another striking performance as flat cap-wearing, chain-smoking gang boss tommy. Series three ended with viewers wondering what tommy was playing at by turning four members of his family - his aunt polly, his brothers arthur and John, and cousin michael – in to the police. He’s always been the linchpin but now it’s business first and family second – or so it seems, as he remains unforgiven and estranged from the rest of the Shelby gang. “i don’t know if he is willing to walk, i think he’s really trying not to think about it, and he’s just getting

only option could be to reunite in Small Heath (the slum where tommy grew up). “the idea was to put them under the greatest threat that they’ve ever been (under) really,” explains murphy. the source of the threat is mobster luca Changretta, played by Brody, who is seeking revenge over an assassination in series three. of Brody, murphy says: “He just has incredible energy, which we’ll get to see as the show progresses; obviously it’s going to be a showdown at some point.” Skyfall and Harry potter star mcCrory plays matriarch aunt polly, who fiercely ran the peaky Blinders while the men were in the trenches of the first World War, and long ago made peace with the family’s criminal activities. But following nephew tommy’s betrayal - which led to her imprisonment - polly is a broken

| TRAVEL A child-free get-together with girlfriends being well overdue, my pals and i headed off to Wemyss Bay, on the firth of clyde for a few days, with our bicycles and walking boots packed.
Overlooking the Isles of Bute and Arran, and surrounded by the woodland trails and moorlands of Muirshiel Country Park, Parkdean Holiday Park looked like the perfect base for us to explore the countryside. Arriving in torrential rain, we soon settled in to our caravan. At this point, I had to banish all my preconceptions of caravans being “compact” and cold. This was a big space, with three bedrooms and a comfortable lounge area to just hang out. There was more than enough room for the four of us. Caravan parks are different to my notion, too. Parkdean has a fantastic range of facilities, from a modern sauna to a great pool, fit for families and those who just want to put in a few lengths. The park even boasts a bar/restaurant for those not wanting to do their own cooking or seeking an evening drink.

Up early the next day for a quick dip in the pool, and then, on recommendation of our friendly cafe owner the previous day, we decided to check out the island of Cumbrae, a short ferry ride from the charming coastal town of Largs. After a bag of chips and a stroll along the promenade we boarded the ferry with our bikes hoping the heavy mist around us would lift. We weren’t disappointed. As we arrived, so did the sunshine and we set off on a lovely cycle
around the island. There’s just one road which loops around the island, passing through the small town of Millport, and as we cycled around the island we took in stunning views of Ailsa Craig, Bute and the Cowal Peninsula, made

TImOTHY AND pRuNELLA’S TOp cANAL jOuRNEYS AcclAimed actor Timothy West and his wife Prunella Scales have just embarked on their eighth series of Great canal Journeys on channel 4, which is accompanied by a book charting their experiences, Our Great canal Journeys. Here, Timothy selects five of his all-time favourite waterways.
1. THE KENNET AND AVON
The canal went through a massive restoration programme in the 1980s and its 87-mile length from Reading to Bristol, was reopened in 1990.

all the more spectacular by the glorious sunshine and blue skies. With wild flowers putting on a colourful display along the roadside, oystercatchers nesting on the rocky coastline nearby and some of the most beautiful sandy beaches I’ve ever seen, this was a pleasant contrast to our tough ride the day before and I can see why it’s fondly referred to by some as ‘The Jewel in the Clyde’. Our final day arrived and we finished off with another island, this time over to Bute, catching the ferry just down the hill from the holiday park. The ferry port and railway station at Wemyss Bay is a charming A-listed building, with streams of

coast we found the more secluded Scalpsie Bay with its spectacular viewpoints perfect for taking in the scenery and wildlife, where we sat and watched seals basking on the nearby rocks. After another day of cycling in gorgeous sunshine, enjoying how beautiful Scotland can be when the sun makes an appearance, we were all in need of a cold drink! Did I mention that Wemyss Bay railway station also has a pub? A cosy little olde worlde and very friendly bar, the perfect place to end our day trip before heading up the hill to our comfy caravan. We were all in agreement that our caravan in Wemyss Bay was perfect for chilling out and enjoying the beautiful surroundings and we’ll definitely be back again, and might even bring the kids next time.

The Isle of Bute provided us with another beautiful cycle ride and, pedalling along the West Island Way, we admired the views of Arran in the distance, stopping to enjoy a rest and an ice cream on the long sandy beach of Ettrick Bay. Once at the small port of crinan, the couple transferred on to a clyde steam ship to begin their canal journey to enjoy uninterrupted views of some of Scotland’s most stunning rugged landscapes.
5. THE STRATFORDupON-AVON cANAL The couple’s route started at Kingswood Junction and ended at Stratford-upon-Avon, although you can go north to Kings Norton where it meets the Worcestershire and Birmingham canal.

a SHOrT STOrY Becky shook her head when her hairdresser sat her down and suggested she ought to go blonde.

“no, i don’t think so,” she said, peering in the mirror and wishing she didn’t look so old. “i’m a bit long in the tooth for something drastic like that.” “of course you’re not.” craig stood behind her, running his fingers through her brown tinted hair. “blonde hair would suit you, becky, and you looked really down when you came in, so i thought a change might cheer you up.” “it would take more than that. i still haven’t got another job, craig. i’m too old for everything.” craig frowned. “you’re not that old.” “no, i’m only 43,” becky whispered so all the young hairdressers in the salon couldn’t hear, “but i feel as if i’ve got one foot in the grave. i went for a telesales job yesterday and all the other applicants looked about 14 —and my experience didn’t seem to count for anything! i answered the phone in an office for years, but i didn’t even get a second interview!” “but it can’t have been because of your age.” “oh, i think it was.” becky broke into a wry grin. “and apparently i’m much too old to train as a fighter pilot now.” “Well, the uniform wouldn’t suit you anyway.” craig shrugged. “you need a job in another shop.” “i know, but the only shop with vacancies is that trendy boutique in the precinct. When i went in, they had loud music blaring. i couldn’t cope with that.” “i’m surprised you could hear it, what with you being so old!”
I CaN’T gO BLONde! is a change of colour a step too far for Becky ... or is it a fresh start on a new path?
“oh, there’s nothing wrong with my ears,” becky assured him with a smile. “but there’s no way i could work there, craig. The atmosphere’s really horrible. nobody asked if i needed any help. When i worked in a shop, i made the customers feel special, but i felt invisible in there. i felt like a total frump, too!” “so go blonde,” craig said,
taking a swatch of hair from a cupboard. “ash blonde. What do you think?” becky took the swatch from him and stared at it. “it’s lovely, but i’d have to have my roots done more often if i went blonde and i couldn’t afford that because i haven’t got a job.” “ok, we’ll stick to brown,” craig said. The phone over on the desk started to ring. “sorry, i’d

better answer that.” becky nodded, watching him rushing over to the desk. she was quite used to craig dashing off during her appointments. he owned the salon, so he had to answer the phone and greet clients as well as doing hair. he was always racing around, but he still managed to make her feel welcome and relaxed, and she loved her appointments at the salon. it felt good to be pampered, but it was amazing that craig managed to cope, she thought, as she watched him put the phone down and rush round the desk to take an elderly woman’s coat. “you seem to be very busy lately,” she observed when he returned. “yes, it’s the recession. People always go to the hairdressers more when things are gloomy.” “really?” really,” craig replied as the phone rang again. “listen, would you go blonde if you got staff rates?” becky looked puzzled. “staff rates?” she echoed. “yeah — i can’t cope!” craig exclaimed, nodding towards the phone. “i need a receptionist but i never get a spare minute to advertise for one.” a receptionist?” becky repeated, her eyes lighting up. “yes, somebody who can make clients feel special. and who’s good on the phone.” “and somebody who looks good.” craig grinned. “yeah — i wouldn’t want a frump.” “right, i’ll go for the ash blonde then!” becky grinned, peering in the mirror. it was funny, but she suddenly looked much younger — and she’d look younger still once she’d gone blonde. a By susan Wright

this book is essentially a 500-page rant that could be summarised in a single sentence: “i came from a large, nasty, bitchy family – and my mother was the worst of us.” it ought to come out as a confused mix of idle selfindulgence, yet it is, by turns, hilarious, infuriating, poignant and endlessly enthralling. Jay Justus, the narrator, is a fading writer living out his last good years in the shadow of his ageing and yet indestructible mother, and in close and toxic proximity to his six siblings.

the verbose forsyth uses charm and wit to breathe life into the booze-soaked sexual rites of the ancient egyptians, the sozzled symposiums that inspired great thinkers like socrates and, more recently, the rampant rise of saloon culture in the Wild West that was eventually crushed by Prohibition. Lesserknown historical figures, like the Mughal emperor Babur, are drawn in living colour, while forsyth dispels some of the myths surrounding medieval merry-making and even Jesus’ position on water versus wine.

froM the minds that brought us Maps – that huge, coffee-table friendly, illustrated book of the world, suitable for inquisitive children and interested adults – comes this collection of bizarre ideas and inventions that often look and sound silly. instead of being a3-sized like Maps, impossible inventions is half-sized and the layout suffers. the comic-strip invention explanations don’t have quite enough room to breathe but are witty and well crafted.
