A factory uses sugar to make sweets. The factory buys sucrose but converts it into other sugars to make the sweets. An enzyme called sucrase (invertase) is used to convert sucrose into other sugars. The enzyme can be used in a liquid or it can be immobilised. Look at the graph. It shows how temperature affects the breakdown of sucrose using each type of enzyme.
