Mezcal Mala Noche
Mala Noche is a mezcal with certified export quality, which allows it to have an international presence in different countries around the world.
The advantages of mezcal as an exportable product are: its artisanal elaboration, the 100% natural raw material and the high alcohol concentrations that characterize it and enhance its flavor.
Our elaboration process
SELECTION:
We select each agave individually, the plant must be mature (6 to 8 years old), our agaves are of the TEQUILANA WEBER variety, grow in the Denomination of Origin area and its cultivation is certified by the Mezcal Regulatory Council (CRM).
JIMA:
We extract the heart of the maguey (the pineapple-shaped core) through the traditional manual cutting process called “jima”, only expert jimadores work in our fields, local people, committed to the land and with a lineage of expert jimadores in their family clan.
COOKING:
The agave hearts are cooked in brick ovens, the slow steam cooking develops its aroma and sweetness.
MILLING:
Once cooked, the agave is ground in mass mills and the juice obtained is transferred to the fermentation vats.
FERMENTATION:
The agave juice is fermented in stainless steel vats with natural yeast cultures.
DISTILLATION:
The mezcal is distilled twice in stainless steel stills.
HOMOGENIZATION:
Finally, we graduate the mezcal to 40% Alc. Vol.
AGING:
Our Mezcal rests for 6 months in French oak barrels that had wine in them, which gives it this special touch to become Mezcal Mala Noche Reposado.
