Hurrah!! the warm days are back and of course its back

to the beach and sipping ice cold cocktails by the water. Winter is always great for lazing about the house but it’s also exactly when we start piling on the kilos, so this month our friend in fashion, Tracey guides us through the swimwear selection for our body types after our long winter hibernation. Movember Yes folks, it’s that time again....Movember is back!! Bigger and better and changing the face of men’s health, one moustache at a time. So, yeah, November rolls around and guys all over the country grow their moustaches in solidarity. But how many really know the true meaning and purpose of Movember? What Movember is, is an annual moustache growing charity initiative which enjoys over 1.2 Million Mo Bros and Mo Sistas around the world who participate by registering on www.movember. com and grow moustaches to generate awareness by getting men to talk about their health issues for the month of Movember. So it’s a global campaign in 21 countries with a vision to “Change The Face of Men’s Health” – last year saw more than 30 000 South Africans sign up and together raise more than R6.4million for local men’s health programmes. Globally, the campaign raised more than R1 billion last year. In South Africa, Movember funds a number of Cancer Association of South Africa (CANSA) survivorship programmes that focus on care, counselling and support for men with prostate and testicular cancer, as well as advice and support to their families. From October 2012 to June 2013, over R1.2 million in Movember-generated funding has made its way to the Metropolitan Centre Survivorship Project.

Sizzle into Summer We are all feeling the season finally change, and yay summer has arrived!! New wardrobe for some, a few additions for others, but the daunting thought for most is an update on swimwear. The blessed few, who,have worked hard at keeping in shape don’t fear it as much as those who perhaps have let things slide a little through the colder months. Comfort food, later mornings and camouflage dressing. Well no more of this, the sun is out, and it’s

time to bear a lot more skin. The big question most face is what am I going to replace last years swimwear with? Holidays are around the corner and I need some beach wear.

Where to start?

I have put a few pointers together to help this be a little less overwhelming. First and foremost, live for now and the size that you are NOW!!! Don’t try and squeeze into last seasons ensemble if you have gained a little weight, it will just make things a whole lot worse. No one knows the number on the label, so don’t worry about it! Look at your body shape and proportions and consider what will be the most flattering for YOU.

Managing your middle

Look for dark colours, built in tummy support and side ruching. Vertical influence also slims down instantly. Stick to a full swimsuit.

Petite yet voluptuous

Tops fit, but bottom is too big and visa versa. The only solution here is to look at bikinis that are sold separately. This often allows for mix and match, which is a great way to introduce variety.

Plus size

Stick to a one piece or a 2 piece that has a boy short bottom and a full length top. Vertical influence, dark colours and high focal points will be most flattering. Match a sarong and accessories.

Tall

Stick to bikinis and choose pattern over plain. Solid colours can emphasize an extremely long torso.

Top heavy

Halter necks, with or without underwire give great support. Pattern can be distracting. Stay away from padding. In a one piece, look for detailing or draping at the hips, this creates balance.

Bottom heavy

Above-the-waist design elements draw the eye up. Don’t go too skimpy on the top, as this will only make the bottom area appear even large. Dark colours at the bottom.

Apply your EYE primer sparingly with a smaller flat brush to smooth the eyelid and ensure the absorption of eyelid oils. Coco Coco Coconut Whether it be Coconut Oil, Water or the chewy white flesh, the humble coconut has so many proven health benefits and is so versatile that it makes sense to include it in our diet. The nations of Sri Lanka and the Polynesian islands where coconuts can be found in abundance pay testament to so many of these:

1/Heart Health is improved

- Studies have shown coconut oil improves important risk factors like reducing bad cholesterol (LDL) and increasing good cholesterol(HDL), which may translate to a reduced risk of heart disease.

2/Weight can be controlled

- Eating coconut or cooking with coconut oil assists in speeding up metabolism. Also, the fatty acids present in coconut oil can significantly reduce appetite, which may positively affect body weight over the long term. Nuts and seeds are another fantastic source of protein. An excellent protein- rich combination is sunflower and pumpkin seeds. Capoeira - Dance not Duel What began as a basic survival tool for the many African slaves that escaped their masters in the 16th century in Brazil, soon developed into a powerful martial now known as Capoeira. But not only is it a martial art, in recent times Capoeira classes have become popular for working out too. Capoeira combines elements of dance acrobatics and music, and is sometimes referred to as a game. Known by its quick and complex moves, using mainly power, speed, and leverage for a wide variety of kicks, spins, and highly mobile techniques; at heart is the ginga, the back-and-forth, foot-to-foot movement that serves as the starting point for such leverage. Capoeira used in genuine self-defense situations incorporates many sweeps and low moves, whereas when played as a game there is more emphasis on high moves, demonstrations of acrobatics, full cartwheels (called au) for evasion, and flips or other exotic techniques by mestres (masters), and performing an entertaining match for the audience. Capoeira was originally disguised as a dance in order to prevent its capoeiristas from punishment or execution for learning how to fight and defend themselves, which was forbidden to those who were legally defined as property. It is nearly always practiced to traditional Brazilian berimbau music. Two individual capoeiristas engage in an act of sparring in a ‘roda’ (circle) which describes not only the sparring partners but also the many people singing, clapping and playing the musical instruments that set the tempo for the ‘game’.

GEEK NEWS Microsoft and Sony have finally shown their hands and revealed the next generation games consoles within. As the dust begins to settle, and these two tech heavyweights go head-to-head in the run up to Christmas, we take a look at who’s winning the battles, and who might win the war. Most Gamers are loyal to their favorite console, but as we take a deeper look into the might of these new releases, loyalties will be tested and we may see many a gamer switching to the “enemy” as both consoles up their game and bring the war a little more even. The good news is, SA gets the console after most other countries, which means we will have plenty of reviews and comments all over the web to give us gamers perspective on which machine has its nose in front.

We do at least know now what the PS4 looks like, and the answer is... a black box. Much like the PS3 in fact. And the PS2. The new box is aesthetically divided into sections but has an italic slant to it.

Like the original Xbox, this one is unapologetically boxy and the heft of the new console will be divisive but, be warned - the Xbox One will not stand up vertically. This machine is designed to nestle underneath your tv, rather than scooch up alongside it. So if you’re planning a new set-up for Christmas, take heed.

The Xbox One controller is noticeably slimmer than its predecessor. In use, the biggest difference is the front triggers. Vibration motors are now built in, giving haptic feedback even when you’re not using them. Thankfully the controller is now charged by micro-USB, and Microsoft has also invented its own wireless protocol to reduce latency.


CAMERA

The PlayStation Camera is a bit of a micro-Kinect, following in the best tradition of EyeToy. Like Move, it reads the light bars on the rear of the DualShock 4s so that you can manipulate items on screen with it, but also reads your flailing arms to interact, too.

BACKWARDS COMPATIBILITY

If you’ve managed to hoard a mountain of PS3 games over the last few years, we’ve got bad news for you – you won’t be able to use any of them with the PS4. However, lots of old PlayStation titles will be available to download digitally instead. And yes, in all likelihood that means you’ll be paying for them again.

PRICE AND RELEASE DATE

The PlayStation 4 will cost around R6300 - which only includes 1 controller. The camera will be an extra R800 with an additional controller being R999. The PS4 is expected in SA in the beginning of Dec in time for christmas, so get your PS piggy bank out and ready.

First off, the new Kinect sensor can support up to six players at once, which is a vast improvement on the two- player limit its predecessor could handle. Rather than reading the player as a wiry stick figure with boxes for hands, feet and a head, the new Kinect module can pick up muscle texture, the shape of the player’s head and register the difference between their thumbs and the tips of their fingers. It can even pick up strain on the player’s body parts. Voice activated commands are still part of the package.

BACKWARDS COMPATIBILITY

The Xbox One will not be backwards compatible either, unfortunately. That said, given the considerable online infrastructure that Microsoft already has with Xbox Live, Live Arcade and Marketplace, we fully expect that many Xbox 360 classics will be available as digital downloads.

PRICE AND RELEASE DATE

The Xbox One will cost you R7999, which is very steep in comparison but will include 2 controllers along with the kinect. The launch date for the Xbox One has not been finalized in SA yet, however will be available on eBay and similar sites from the end of November if you have extra cash to pay for shipping costs.

Belize it or not Its the time of the year when we’re either all planning or have already planned our summer vacations, but this month we bring you a combination of adventure and culture or a bit of sun and sea. We journey from the ancient ruins of Machu Picchu to the beautiful island of Belize. You can either take a trek through the mountains to discover the ancient Incan ruins or spend your vakay basking in the sun, soaking up some rays and partying the night away in one of the smaller and less populated countries in Central America.


MARCHING Machu Picchu Lets start in Machu Picchu Travelling all the way to Peru to enjoy the sights and sounds of what can only be described as a true marvel of architecture can seem daunting but the prospect of enjoying the culture of the Andean people and experiencing a hospitality so warm, a nation so true to their heritage makes it even more worthwhile. Now, while trekking through the jungle for days, without flushing ablution facilities may scare some, (like me) the prospect of jumping on a train to reach the same destination a lot quicker is a much more inviting and comfortable way to say, yes, Machu Picchu struck off the ‘bucket list’. To get to the magnificent ruins, you will have to start in the charming town of Cusco. By no means a ‘big’ city, Cusco is still quaint, still traditional and yes quite touristy. It does however, have beautiful five star accommodation like the stunning Libertador Palacio del Inka or the luxurious Casa Cartagena. But do remember, should you choose the ‘trekking’ option up to Machu Picchu, there will be no such facilities until you get back to town (but maybe trek up, and catch the train down) Cusco itself is 3400m above sea level so you may experience a little altitude sickness. It is also advised that you arrive in Cusco a few days before you visit the site but there is lots to entertain you. Shopping for trinkets and colourful mementos is a must. And of course there are plenty of bars and restaurants to try. If you’re feeling adventurous try the local delicacy called “Coy” or roast guinea pig at A Mi Manera, Triunfo

dishes but don’t particularly want to eat something that you once had as a pet, then check out Pacha Papa. Or if you prefer, just grab a sandwich at any one of the cafes and enjoy it on a bench in the beautiful garden of Plaza de Armas. From here you can make your way up to the top of the steep hill and into the neighbourhood of San Blas. You will find some of the more bohemian type citizens here and there are some great cafes and restaurants and it is definitely less noisy and less touristy. And then, its off.... Machu Picchu is calling.

Culture of Cusco

The ruins date back to the mid-1400s and is a marvel of mortar-free limestone architecture perched on a high plateau deep in the Amazonian jungle. To get there you can either catch a train from CUSCO or you can spend a few days on a hiking trail that will take you through deep Andean gullies and of course the most spectacular views.

It is believed that the Incans built Machu Picchu in around 1450 but abandoned it at around the time of the Spanish Conquest. Located about 80kms from Cusco it is surprising that the Spanish never discovered it and it was only in 1911 when Hiram Bingham, an American historian announced it to the world that the marvel of Machu Picchu came to light. But it is also because of its non discovery for all those years and the fact the vegetation had grown over it that much of the site was preserved. In 1983, Machu Picchu was announced as a UNESCO

World Heritage site. Machu Picchu is strategically located and could be easily defended but

what makes it so special?

One of the things which makes Machu Picchu such a marvel is the architecture for which the Incans have become well known, called ashlar. This is when

blocks of stone are cut in such a way that they fit together without requiring the use of mortar. The Incans were so expert at this, that not even a

thin knife blade can be inserted between the joints. Many of these

building blocks weighed 50 tonnes or more. The Inca were able to turn a site atop a mountain into a small but extraordinary city. Invisible from below and completely self-contained, surrounded by agricultural terraces sufficient to feed the population, and watered by natural springs. Two thousand feet above the Urubamba river, the ruins have palaces, baths, temples, storage rooms and about 150 houses, all in a remarkable state of preservation. These structures, carved from the gray granite of the mountain top are wonders.

One of Machu Picchu’s primary functions was that of astronomical observatory. The Intihuatana stone (meaning ‘Hitching Post of the Sun’) has been shown to be a precise indicator of the date of the two equinoxes and other significant celestial periods. The Intihuatana (also called the Saywa or Sukhanka stone) is designed to hitch the sun at the two equinoxes, not at the solstice.

At midday on March 21st and September 21st, the sun stands almost directly above the pillar, creating no shadow at all. At this precise moment the sun “sits with all his might upon the pillar” and is for a moment “tied” to the rock. At these periods, the Incas held ceremonies at the stone in which they “tied the sun” to halt its northward movement in the sky. Shamanic legends say that when sensitive persons touch their foreheads to the stone, the Intihuatana opens one’s vision to the spirit world. Intihuatana stones were the supremely sacred objects of the Inca people and were systematically searched for and destroyed by the Spaniards. When the Intihuatana stone was broken at an Inca shrine, the Inca believed that the deities of the place died or departed. The Spaniards never found Machu Picchu, even though they suspected its existence, thus the Intihuatana stone and its resident spirits remain in their original position.

Visiting Machu Picchu should definitely be on your bucket list as it is truly one of the most impressive archeological sites to date. Fly into Peru, enjoy a few days in Cusco then take the train up or if you’re feeling strong, hike the Incan trail up to the ruins and allow yourself to be transported back to an ancient time.

Organic Wines by Samuel Viljoen, Winemaker at Earthbound Wines

T

he fundamental idea behind organic wine is that making wine from grapes grown without chemical fertilizers, weed killers, insecticides, and other synthetic chemicals is better both for the planet and for the wine drinker because all of these things can damage the soil and the plant, and can end up in the wine as residue.

HOW DOES CONVENTIONAL VITICULTURE DIFFER FROM ORGANIC VITICULTURE?

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic farmers promote “biodiversity” and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil.

WINEMAKING?

In the cellar, “organic” suggests minimal processing and no use of chemical additives. Organic winemakers pay particular attention to three factors: the use of yeasts, the filtration/fining method, and the use of sulfur dioxide. The physical treatment of the wine (like filtering and fining) is kept to a minimum How do Organic Wines taste as compared to Conventional Wines? Organic vineyards choose organic methods to obtain the strongest and richest grapes possible, with the fewest detrimental effects on the environment, and their wines reflect that dedication to quality. At the 2013 Veritas awards, the Earthbound Organic Cabernet Sauvignon was awarded a silver medal and the Earthbound Organic Pinotage 2012 a bronze medal. These wines compete in the same categories than the conventional wine.

To answer the problem of weeds, conventional farmers use chemical weed killers. The organic alternative is to plant cover crops in the vineyards and spread bales of hay in between the vines. The cover crop is rolled into soil and provides good organic matter. It also improves soil structure and keeps soil temperature constant. Another benefit is that the moisture in the soil is captured.

Either wrap your wine in a cloth or keep them in a box to prevent them from exposed to light.

Diego Muñoz, Maître de Maison

This restaurant was founded 19 years ago and is managed today by Diego Muñoz. It epitomises Gastón Acurio and Astrid Gutsche’s dream of sharing their contemporary take on Peruvian cuisine with the entire world. Astrid & Gastón’s cuisine draws its inspiration from the traditions and the biodiversity of Peru, and yet never breaks its links with the world around it, responding first and foremost to the challenges posed by the future and by our environment. A living experience with a hint of magic and sensitivity. Diego Muñoz started out at university studying engineering, it took him a while to relaise it but in 1998 he realised that what he really wanted to do was, cook. He left Peru and headed off to Cananda to study to become a chef. He has since spent time in some of the most exciting and famous kitchens in the world including Mugaritz, known by the press as “the most important gastronomic phenomenon of the World in recent times” and the famous 3 Michelin starred El Bulli in Barcelona. In 2011, his efforts at Bilsons Restaurant in Sydney got both him and the restaurant nominated for Restaurant and Chef of The Year, respectively. Now, Muñoz is Executive Chef of Peru’s most acclaimed restaurant, Astrid y Gaston. His instruction in the kitchen and management of the restaurant helped placed Astrid y Gaston in the 14th place of San Pellegrino’s 50 best restaurants. These are big achievements – truly a master’s achievements. Diego says of his time at El Bulli, that it expanded his horizons both in the kitchen and with staff. He remains close to El Bulli and is involved in a collaborative effort for a new Astrid y Gaston.

La Bourgogne Hailing from the Bourgogne region of France it is no surprise that when Chef Jean Paul Bondoux opened his stylish restaurants that it would be an apt name. After the success of La Bourgogne in Uruguay came the new Buenos Aires addition to the family. Situated in the elegant Alvear Palace Hotel the restaurant specializes in French cuisine. The menu focuses on classical French cooking with heavy, cream-based sauces, like dorade en croûte de sel au beurre blanc (sea bream with a salt crust and white butter) and chateaubriand à la béarnaise (beef tenderloin in a buttery, egg sauce). The cheese cart contains 30 different artisanal selections from France and Argentina. In the dining room, curvy track lights hang over rows of tables with white linens and red leather chairs. The restaurant has a comtemporary feel with a minimalist design. Diners flock here to savour elegant classical cuisine.. There is also a choice of meats prepared at your table, with a selection of sauces. All of this to savour with the greatest wines from Argentina as well as Burgundy. La Bourgogne is the most talked about restaurant in Buenos Aires and reputed to be the best in French cuisine.

Jean Paul Bondoux Born in Luzy, in the region of Bourgogne, France, Jean Paul Bondoux is one of the most successful restaurateurs of Argentina and Uruguay. At the Age of 16 he travelled to Paris searching for adventure and opportunities. There he studied hotel business and started working at the Hotel Napoleon, where he learned the basics of French cookery. In 1975 he met his wife Evelyn. Together they went through France in search for experience. At the end of 1979 they moved to South America. Where they settled in Punta del Este Uruguay. METHOD

For the dressing 1. Place 50ml oil in a medium sauce pan gently heat over medium heat. 2. Add onion, garlic and ginger and cook for 5 min or until soft. 3. Add curry powder, turmeric, apple, cinnamon and bay leaf stir through and cook for 5 min. 4. Place in a jug blender, add the vinegar and blend until smooth, slowly add the remaining oil and blend until emulsified. 5. Place chopped beef in a bowl, add parsley, oil and coriander seeds mix through and season with salt. 6. Place in ring mould on a plate and gently press down, remove the mould. 7. Toss together the capers, rocket, red onion and sultanas and lightly dress with the Cape Malay dressing, place next to beef tartar and drizzle salad with more dressing. 8. Place a dollop of yoghurt on the plate.

PRAWN COCKTAIL, AVOCADO, BUTTER LETTUCE WITH GREEN CHILLIES INGREDIENTS

12 queen size prawns, heads removed and deveined 1 avocado, cut into 1cm cubes, coated in lemon juice 2 plum tomatoes, skin and deseeded, cut into 5mm cubes 2 green chillies, sliced into thin rounds 3 red radishes, sliced into thin rounds 100g butter lettuce, washed Cocktail sauce: 100ml good quality mayonnaise 20ml tomato sauce 5ml Worcestershire sauce 10ml brandy A dash of tobacco

METHOD

Place a medium sized pot of water over high heat and bring to the boil Cook prawns in boiling water for 3 min or until cooked, shock in ice water When cool, drain off water and pat dry. For the cocktail sauce: Mix all ingredients in a bowl until mixed well. Arrange butter lettuce in a glass top with tomato cubes and avocado cubes. Spoon the cocktail sauce on one half of the glass; arrange 3 prawns on the rim of the glass. Garnish with chilli and radishes.

DARK CHOCOLATE PAVÉ, GINGER MOUSSE WITH STRAWBERRY AND MINT GRANITA INGREDIENTS

50g eggs 230g castor sugar 4 tablespoon clarified butter 85g plain flour 50g cocoa powder For the chocolate genoise 1. Preheat oven to 160°C 2. Combine the castor sugar and eggs in a mixing bowl, whisk over a double boiler until sugar has dissolved. 3. Transfer to a electrical mixer bowl, using the whisk attachment, whisk on high speed for 10 min until the mixture is pale, light and has tripled in volume. 4. Gently fold in the clarified butter. 5. Sift the flour and cocoa powder 6. Fold in the base 7. Pour mixture into 25 X 20cm tin 8. Bake for 20-25 min until done 9. Transfer to a cooling rack For the pate de bombe 60g egg yolks 20g whole egg 45g castor sugar 30g water

METHOD

1. Combine egg yolks and eggs in an electrical bowl mixer, fitted with the whisking attachment, whisk until thick and pale. 2. Dissolve sugar and water in a sauce pan over medium heat, turn up heat and boil sugar syrup until 118°C. 3. With the mixer running add the hot sugar syrup slowly in a thin stream. 4. Whisk until body temperature For the pavé 160g parte de bombe 155g 60% dark chocolate, melted 200g cream, whipped until soft peaks form

1. Gently fold in half the whipped cream to the melted chocolate, fold in the pate de bombe and the rest of the cream. 2. Line a 25 X 20 cm tin with cling film. 3. Slice the chocolate genoise into a 1cm thick base 4. Place chocolate genoise base in the lined tin pour over the pave mixture 5. Place in freezer until frozen solid 1. Remove the chocolate pavé from the freezer 2. Gently take out the frozen pavé from the tin, removing all the cling film and place on a chopping board cake side down. 3. Trim off the edges with a hot knife and portion the chocolate pave into 4 equal sized portions. Keep in refrigerator. Ginger mousse 1 stick ginger, peel and sliced 165ml milk 35g castor sugar 4 gelatine sheets 165ml cream 80g castor sugar 45g egg whites 1. Bloom the gelatine in ice water 2. Place milk, sugar and ginger in a medium saucepan over medium heat and leave to infuse for 5 minute making sure that it doesn’t boil. 3. Add the gelatine to the hot milk mixture stir until dissolved. 4. Strain through a sieve into a mixing bowl set over ice. 5. Whisk the cream until soft peaks form. 6. Place sugar and 100ml water in a saucepan and dissolve sugar over medium heat bring to the boil and cook until the syrup reaches 118°C. 7. Place egg whites in a bowl mixture fitted with the whisk attachment, whisk until soft peaks form.

8. Slowly add the hot sugar in a thin stream and whisk until cool. 9. When the gelatine mixture is almost set. Fold in the Italian meringue an then the whipped cream until completely incorporated. 10. Line a baking tray with cling film and pour in the mousse and let it set in the refrigerator. Strawberry granita 200g fresh strawberries cut into quarters 100ml sugar syrup 2g mint, chiffonaded 15ml lime juice 1. Blend strawberries, sugar syrup and lime juice in a jug blender, strain through a sieve and discard the seeds. 2. Stir in the mint. 3. Pour into a baking tray and place in the freezer. 4. Freeze until completely frozen. Almond crumble 50g butter 50g brown sugar 50g flour 50g ground almonds 1. Pre heat oven to 160째C. 2. Place butter and sugar in a bowl mixture fitted with paddle attachment and beat until sugar has dissolved. 3. Mix in the flour and almonds until mixed through. 4. Roll out dough between 2 sheets of grease proof paper. 5. Bake for 20 min or until golden brown. 7. Let the almond crumble cool and crumble roughly. To assemble Place chocolate pave on a plate; sprinkle some almond crumble next to it. Using a spoon, spoon out piece off the ginger mousse and place on the crumbs. Using a fork, scrape the strawberry granite and place next to the ginger mousse.

GRILLED CRAYFISH, MUSSEL RISOTTO WITH CHILLI AND BASIL

INGREDIENTS

4 crayfish tails, butterflied 100g butter 120g shitake mushrooms, sliced 1 red chill, deseeded and chopped 1 handful basil, chiffonaded 32 mussels, cooked, shelled, debearded ½ lemon, juiced 1 onion, finely chopped 30ml olive oil 300ml Arborio rice 200ml dry white wine ± 1ltr fish stock 100g grated parmesan 50g butter

METHOD

1. Place butter in a sauce pan over medium heat when butter start to brown, add mushrooms and sauté until cooked. 2. Add chilli, basil and mussel and gently cook. For 1 min, add lemon juice. Reserve for later use.

3. Heat olive oil in a heavy based pot, add onion and cook over low heat until soft and translucent. Meanwhile bring fish stock to a simmer. 4. Add Arborio rice and toast for 2 min. Add white wine to rice and cook until alcohol has evaporated. 5. Add fish stock, ladle at a time, stirring continuously until the rice is cooked al dente. 6. While the rice is cooking heat a griddle pan and until very hot, brush the crayfish with oil and season with salt and pepper. 7. Grill the crayfish for 4 min, meat side. 8. First turn over and continue cooking shell side down until cooked. 8. To finish add ½ the mussel mixture to the risotto, fold through, add parmesan and butter until well incorporated. 9. Place risotto on plate, top with grilled crayfish and spoon the rest of mussel mixture over.

PAN-FRIED PRAWNS AND BABY SQUID ON AVOCADO AND PINE NUT SALAD INGREDIENTS

8 tablespoons extra virgin olive oil 2 cup baby squid, cleaned 32 medium prawns, cleaned and shelled 2 teaspoon sea salt 2 teaspoon black pepper ½ cup pine nuts 4 cloves garlic, shaved 2 avocado, peeled, stone removed and cut into 1cm x 1cm cubes 2/3 cup halved cherry tomatoes Warm vinaigrette 8 tablespoon extra-virgin olive oil 1 cup finely chopped spring onion 1 cup finely chopped celery ½ cup crimson raisins 4 teaspoons Cabernet Sauvignon vinegar 2 teaspoons sugar 1 teaspoon sea salt Pinch black pepper

METHOD

1. Prepare the vinaigrette. 2. Put the olive oil in the same pan in which the vinaigrette was cooked and bring to a medium-high heat. 3. Season the squid and prawns with salt and pepper. 4. Fry them in the oil, keeping the seafood moving and cook quickly. 5. When squid and prawns are half done, add the pine nuts, cook till crisp. 6. To serve, arrange the avocado cubes and tomatoes in the middle of 4 serving plates. 7. Divide the seafood mixture even. 8. Dress with the warm vinaigrette and serve immediately. Warm Vinaigrette In a large non-stick pan, bring the olive oil to a medium heat. Sauté onion, celery and raisins, then add the vinegar, sugar, salt and pepper to heat and mix well. Pour into a jug and keep warm.
