A survey was carried out in America, using 2491 woman. They found that on average a woman spends 16 minutes every weekday morning and 14 minutes on the weekend pondering her wardrobe. That’s a lot of wasted time over a year! Our clothes help us feel more confident and protected, and will make us either feel good or bad, depending on what we choose. Being able to dress each day in a way that makes us feel good, will open up doors socially, as well as in business world. So it really is worth investing a little time in drafting your appearance each day to ensure you are dressed appropriately for whatever you may be wanting to achieve. Waiting till the morning to figure this out is really not a good idea, as most of us are rushing to meet the deadline of getting out the door! The best place to start is with an organised wardrobe, where you have either similar colours together, work outfits together or seasonal garments together. We all will find different ways that work for us; the important thing is that there is a form of organisation. Mary Holroyd of Weigh-Less In her pursuit of a healthier, leaner body, Mary Holroyd wanted a “live-able, do-able and afford-able eating plan that would be founded on sound nutritional principles”. Those ideals have been the driving force behind Weigh-Less, one of Southern Africa’s leading weight management groups since 1975. As founder, chairman and brand ambassador, Mary has helped transform thousands of lives over the past four decades and continues to inspire people to not only lose weight, but change their lives.

With new diets, brands and methods coming out daily, Urban Life & Style set out to find out just what is it that makes 67-year-old Mary Holroyd’s Weigh-Less evergreen. When Urban asked Mary what her principals were, it immediately becomes clear, “Good relationships, on all levels. Fighting Talk We spent the morning with professional swimmer, adrenaline from the pool to the studio. Not only is he a really nice guy but about he keeps it all together.

It’s clear Alain loves the water because he went from competing for both South Africa and Switzerland as a swimmer and after an early injury ended his career as a professional , he went on the running a fishing charter business. But of course, fishing is a seasonal business and no fish means no business. “There is honestly no better way to spend your days than out at sea catching massive yellowfin tuna up and over 100kg.” During his years as a swimmer he remembers being interviewed by Damon Beard on the Drive Show and thinking that, this was something he would really enjoy doing. Alain never got the chance at that stage due to other commitments. Fast forward TEN years and Alain is exactly where he wants to be, in the studio. He made the decision to pursue his dream just over a year ago, packed his bags and headed for Durban from Cape Town and the rest as they say is history, Alain is really excited to be a part of the team at East Coast Radio and so far he says his most awesome experience was closing the recent Durban Day event with his good mate Sirshin Moodliar. “Not often you get to stand in front of over 16000 people and make then scream, shout and do pretty much anything you want” he jokes.

What he really enjoys about working with the brand is the relationship everyone shares. Alain describes it as “More of a family rather than just hamsters spinning on a wheel. So yeah, it makes you really proud when you get to represent such a great brand at every opportunity”


OCTOBER 2014 | SPORTS | www.Urbanlifenstyle.com Alain works super hard and plays just as hard. ”You only get to do things once so make sure they are done to the max” A huge adrenaline junkie and outdoors man he sees the East Coast as his playground. He enjoys everything from fishing to game farms, skydiving, surfing, motocross and tons more, clearly his weekends are jam packed with adventure. He adds that with Lake Jozini and Ponta da Oura just around the corner, it couldn’t get better than this. Alain has also been passionate about Martial Arts since he was a kid. He finds the various forms fascinating and started doing karate as a boy after watching one too many karate movies, as so many youngsters do. He moved on to Judo but had to put Martial Arts on ice due to his flourishing swimming career. After theinjuries he picked it up again but this time focussed more on Kickboxing. He also resumed Judo and Brazilian Jiujitsu. He made the Western Province Judo team in the Heavyweight Division. He loved this as Alain is a competitor at heart and with swimming no longer an option he was excited to able to compete again. These days he trains with a good friend Clint “ Grizzly” Walters, owner of Domination Fitness in Durban North. He says,” Clint keeps me in check these days with a mixture of Muay Thai and Submission Wrestling, two forms of martial art that really challenge you mentally and physically.” Alain is thoroughly enjoying this as the regime acts as an outlet and release from everything else going on around you. “When you are on the mat or in that ring, training, all your problems and issues you may be having that day just seem to go away” “I try to bring the martial arts aspect into my daily life, for example in Brazilian jiujitsu and submission wrestling there is almost always a way out of a situation, “Unless Clint has you in a neck crank” he laughs, So I use the same mentality in life. When things are tough or going wrong there is always a way to overcome it rather than lie down and accept it.

“Other than my crazy adrenaline junkie activities and late night radio chats, I love doing motivational talks to maybe help inspire others through some of the things that I have learned and experienced in my life which I haven’t mentioned in the is article. We would need days for that.”.

Born 18 September 2008, the beautiful animal called Bakkies was born at Doorndraai Friesian Stud, in Pretoria, the second best stud farm in the world. His owner Jean Larsen fell completely in love with him the minute she laid eyes on him and she knew immediately, he was going home with her. It didn’t hurt that her husband’s (Chris) favourite rugby player was Bakkies Botha. In 2013 Bakkies was ranked ‘star stallion’ and this year he was made National champion 2014 by The Friesian Horse Association of South Africa (FPSSA) in Class 29, Gelding In Hand. Not only is he a star specimen with an amazing temperament but Bakkies is now being trained for dressage. Occasionally described as “Horse Ballet”, Dressage is the highest expression of horse training where horse and rider perform a series of predetermined movements. The purpose is to develop a horse’s natural athletic ability and willingness to perform, thereby maximizing its potential as a riding horse. At the peak of a dressage horse’s gymnastic development, the horse will respond smoothly to a skilled rider’s gentle instruction. The rider will be relaxed and appear effort-free while the horse willingly performs the requested movement. Jean believes that with Bakkie’s nature he will excel at the sport. An avid horse lover Jean’s enthusiasm for all things equestrian extends beyond dressage. A visit to her sister in law in America saw her discover her latest new passion, “Reining” . This western style of riding where the horse is guided through a precise pattern of circles, spins and stops is performed at two gaits, the canter and the gallop. Reining has been likened to Dressage as both disciplines require the rider to perform a set pattern with finesse, demonstrating the unity of horse and rider. The ability to move quickly, change direction and be willingly guided on a loose rein is the trademark of a modern “reigning” horse. This is also where the name originates from. Jean spends as much time with her horses as possible, she has another, Cash, and when it seems that no one can find her, there is only place to look, the stables. The horses’ trainer, Margie Diesel, shares Jeans love and affinity for the animals and it’s clear that these two are some of the luckiest horses around.

Cast Your Fly What was once a past time for the older generation has recently become a pleasurable escape for a whole new generation of enthusiasts and there is no better place to chance your arm at it than the KZN Midlands. Initially developed as a method to catch salmon and trout, this form of fishing has become quite an art and has since been adapted to catch other types of fish such as bass. The difference between Flyfishing and Traditonal Fishing: Traditional Fishing: The line is a very thin, lightweight material and the lure or bait is the heaviest part. FlyFishing: The significant difference in casting a fly is that the artificial flies used to catch fish have very little weight to them. The rods are much lighter too, than traditional rods. So what is FlyFishing exactly: 1. An artificial ‘fly’ which imitates some sort of food the fish eats entices the fish to take your fly over the other food in the water around them. 2. The fly is cast using a fly rod, reel, and specialized weighted line. 3. The specialised equipment needed would include the purpose built fly rod, fly line, leader, tippet, and of course the fly. 4. There is a definite technique to fly fishing and it does vary from other forms of casting a line. 5. The hand tied ‘flies’ or ‘lures’ which look almost like a dragon fly, are designed to provoke the fish to strike. 6. Fly fishing can be done in fresh or salt water.

One of their tracks, Rock Paper Scissors has been featured on popular American tv show, One Tree Hill and when Coldplay toured South Africa, there could be no other choice for an opening act....it could be none other than The Parlotones. If one were to list all of their achievements it would take more than just one page to do so, such is their stature on the music scene. The multi award winning band has had tremendous success both at home and abroad, even spending a stint living and working in Los Angeles, California. But when we met with them, there was none of the showmanship or ego that so often goes along with stardom present. They were the nicest guys to talk to and the one thing that struck me most was the absolute humility of every member.

We have been fans forever now and to get a chance to have a conversation with the guys was an immense pleasure. We spoke of life on the road, family , tattoos and of all things technology and how storing information on the iCloud may or may not be a clever idea. The guys were completely approachable and what started out as an interview turned into a great conversation. The band has been touted as SA’s answer to Coldplay and we asked them about it. They understand that music lovers like to have a point of reference and accept this comparison as a huge compliment.

They told us of their time spent touring around the world and say they absolutely enjoy travelling to the East. They tell us that they love playing in Japan, though the audience differs so greatly from a South African one.

The trademark Kahn face paint was a burning question and up until now I’m not sure if we got the full answer, apparently it was all Neil’s idea and he ‘forced’ them all to wear makeup but just Kahn stuck with it.

The Japanese are quiet and show their appreciation by being silent as a sign of respect. A far cry from our festive South African concerts.

The Parlotones have recently struck out on their own,parting ways with their previous management company and going forward will be managing themselves. Their synergy and respect for each other will ensure that each member has a contribution to their mutual success.

They also had the unusual and exciting experience of performing 37000 feet above sea level on a Virgin Atlantic flight from Johannesburgto London and it’s clear that not even turbulence could have rocked the plane harder than the music did. It was for them a memorable experience, with First Class of course having the most space to bang out the beats but they played the entire aircraft with Neil at one stage even playing in the toilet. Being invited by Sir Richard Branson to play at Kensington Roof Garden was an honour and a privilege and though the man himself was not present, the band loved the thrill of it, playing to a full house.

The banter amongst them is a clear indication of their great affection for each other and though each is different it is easy to see how they have achieved what so many bands fail to, longevity. We wish the Parlotones continued success and many more years of making beautiful music.

Pack your overnight bag, make sure you have comfortable shoes and head off to open spaces and fresh air, on Route 103. The Midlands Meander has long been a favourite getaway for anyone wanting a short soiree or just some time away from the madness of everyday life but it seems that its more the visitors to our sunny shores that are enjoying the experience far more than the locals these days. We main reasons we could see for this is that with so many choices it’s not easy to decide how to pack it all in for a weekend. This can be a good thing though, it just means you have to go back, again. And again. We decided to simplify and just stick to the easy access and convenient stops along the beautiful drive that is the R103. Whether you’re from the Cape or Gauteng this picturesque route can easily be fit into your calendar whether its en route to Durban or even as an individual getaway. The route we chose is perfect for a two or three day getaway to recharge those batteries and enjoy a bit of country hospitality. As for people in KZN this is ideal as it’s not too far from home yet you’re easily transported to another place in time. And besides, everyone needs just that small break away to re-energise and feel rejuvenated. We’re always talking about how amazing Cape Town is, yet the same is true for KZN, less than two hours away and you’re in paradise.

Hilton Quarry It was not just the friendly staff and great service that made us linger longer than we needed to, but the location at the old Hilton quarry had us enjoying the ambience of the early morning surrounded by blooming flowers and the sound of birds chirping in the trees. From here we were off to Waterford Manor in Rosetta and the main reason for this was so that we could pick out the places we wanted to stop at along the way and then make the stops backwards toward Durban.

But of course, you cannot drive the Meander without doing just that...so we meandered off the road every so often to greet the Howick Falls and to stop in at Fern Hill Hotel, where Chef Alex Poltera suggested we MUST make a stop at one, Farmers Daughter restaurant.

All the products are made on the premises and the aromas that greet you on arrival are heavenly.

Our next stop was Florentines Belgian Chocolate shop and to say this was chocolate nirvana would be an understatement.

Make sure you’re not in a rush because it’s not just the food that is amazing but the decor and setting are something else too. After a satisfying lunch it was off to the Mandela Capture site.

Right next door and just in time for lunch was Farmers Daughter, wow...this is all I can say.

This is of special interest as it is the exact spot at which Mandela was captured before he began his 27 year long incarceration. The sculpture with its 50 steel columns was erected in 2012 in commemoration of the 50 years since the arrest and capture of our beloved Madiba. This event was to change the course of our history.

The plaque on the ground which is quite faded now is the perfect spot to stand on in order to view the sculpture in all its glory.

The talented Italian artist Marco Cianfanelli is responsible for the remarkable design which when viewed from the road looks like just some steel columns rising up from the ground, but when you stand in the correct position, the profile of Mandela comes into view and makes for a spectacular sight.

For the moment though, it seems that the majority of visitors are foreigners or schools, we think everyone should go out there just to see this amazing marvel right on our doorstep.

The walk from the top of the driveway down to the monument is aptly called The Long Walk To Freedom, as it is quite a way down from the Apartheid Museum which serves as the entry way to the site.

We loved the quiet and serenity of the place and with construction ongoing to relocate the museum we’re quite certain that this will definitely be a stop on any trip to the area.

We chose probably the hottest day to make our Long Walk To Freedom so we were quite tired and thirsty after the trek and promptly made our way to Piggly Wiggly for some refreshments.

Now, Piggly Wiggly is unique in that it offers a taste of all that the area has to offer, there are candle shops and restaurants and clothing boutiques and of course, Meander Fine Wines is here too. The thing is though, so many people drive all the way out here and think, this is it, we’ve seen the Meander when in fact there is so much more than just this stop. Sure, spend as much time as you like here, it is pretty and has a really nice feel, but then go further. Just past Piggly Wiggly is Spiral Blue, now its not for everyone but this cute shop with its flavour of the East is a pleasant surprise. You can pick up beautiful silver jewellery or if you have a penchant for the ‘boho chic’ style there are harem pants and hair bands and all sorts of unusual items. I just loved browsing in this store, and may have bought an item or two.

We eventually made our way to Rosetta and checked in at the most beautiful Waterford Manor, along the banks of the Mooi River. After exploring the grounds a bit,we thought we would have an early dinner and then be back on the road early the next morning. Waterford Manor is a B & B so we set off to the Rosetta Hotel, a typical 1850’s colonial style property. The buildings have elements of their original charm and grace and is in the process renovation which we are sure will restore them to their former glory. As we arrived we were greeted by friendly locals who were happy to offer us a drink and made sure to make us feel welcome. Meals are supersized here, typical country portions I am told and the atmosphere was warm and welcoming.

This is no five star establishment, if you’re looking for a gourmet experience, this is not it. But if you want to meet local people, have a bit of a laugh and get to understand the area better, this is the place to come. We were told later, that if anyone in the area was looking for their plumber or electrician, chances are they would find them here.

Next up was The Wine Cellar, what a special place. Totally unpretentious and unassuming. It’s a family run business since 1996 and boasts some of the most special wines in the country. The daughter, Sarah, has spent many years in the Cape on various wine farms and is now back home and trying her hand at growing her own. She has some Cabernet Franc, Shiraz and two experimental vines of Chambourcin. The Wine Cellar also has its own, state of the art, wine tasting and preserving machine which guarantees that you get a fresh sample every time. You can also select whether you want a full glass or just a taste. The tasting room at the Wine Cellar is almost always fully booked and we’re sure it’s not just the wines that make it popular but the service from both mother Margie and daughter Sarah make this one place that cannot be overlooked.

Now what is wine without cheese, so without further ado it was off to Marrakesh Cheese. Greeted by the friendly smile of Chris we were straight into a cheese tasting that changed my mind about a few cheeses. At Marrakesh all the cheese is made from cows milk. Chris Coetzer, an accountant by profession traded in his suit and tie and opted for a slower paced life in the KZN Midlands and the cheese world is a better place for it.

Originally, he and his wife, Sue started out with their own herd of goats and made both goat and cow cheeses but Chris decided that his passion was in the actual making of the cheese and not necessarily the rearing and caretaking of the animals so he decided rather to ‘buy in’ the best quality milk he could get and concentrate on his passion. Chris gets all his milk from the Weston Agricultural College for boys. He has a few varieties including gorgonzola, creamy chevin and even a feta and pecorino. The cheeses are exceptionally good, I initially declined a tasting but had to try the chevin and was completely delighted by it. I also thoroughly enjoyed the brie. There is a variety of jams and preserves for sale, all made by Sue on the premises and my favourite is the strawberry jam. Marrakesh products are now available at Wonder Market in Durban if you really can’t make it to the farm.

Next up it was The Bierfassl for a quick lunch in Nottingham Road, well known for its German cuisine, how could we not stop. Their crispy eisbein is legendary and comes in three different sizes. Also on offer is a huge selection of international beers, but how can you come all the way to this area and not visit The Nottingham Road Brewery.

Not too far away and a stop that is definitely a must is Born In Africa, it offers everything from a wedding venue to the most delicious locally made liqueurs. Ask for a tasting and make sure the Chocolate Fudge is included, simply sublime. We’re told that some customers leave here with a bottle and a straw, so delicious is it. The large building past the wedding venue is where you can find all of these delights including some beautifully handmade leather bags and shoes. Everything is made right here on the premises and we were lucky enough to get a peek at the liqueurs still in the fermentation process and the area where the bags are made.

Route 103 has lots to offer all you need is a little time and some planning, but that’s not to say that this is all there is of the Midlands Meander, we just wanted to Ride Route 103 to find out how much fun you can cram in to 2 or 3 days. If you have more time though, or if you enjoy the R103 so much and must go back, then try other routes, there are places like Culamoya Chimes in Lidgetton where we’re told that not only do the hills sing to you but on a clear day the view is so wondrous you could probably see all the way to Durban.

Quietly elegant and sublimely cosy Waterford Manor was the perfect end to our busy day in the Midlands. The serene indulgence as we drove in felt like long, comforting arms reaching out to welcome us home. Nestled along the banks of the Mooi River, this country lodge offers more than just a luxurious night’s sleep, it feels more like a refuge from the madness that so easily becomes our daily lives.

The rooms are beautifully appointed with stunning bathrooms, so stunning you feel like moving your bed in there. So huge and comfy are the beds that we missed our appointment with the sunrise. In addition to the manor there are several self catering units on the property fitted with all the amenities to make your stay as comfortable as possible. Each one has its own identity and they are all separate from each other, this gives a nice feeling of privacy without feeling isolated. Keys to the rooms include a remote access to the property so we did not have to disturb anyone when we returned from our adventures.

With all rooms under thatch, you will be kept warm on those famously cold Midlands winter nights or cool on those long, hot summer evenings. The sunsets in this region are legendary and the rolling lawns and poolside braai area are the perfect vantage point from where to enjoy it. With the Drakensberg mountains visible in the distance, when the orange of dusk creeps in the sight is nothing short of spectacular. The manor house sits on 10 hectares of ground which includes a variety of indigenous forest and plants. All the flowers in the house are picked from the gardens and as we explored the grounds on a leisurely hike, the beautiful trees offered a cooling shade and breeze through the forest.

Flyfishing is a favourite pastime in the region and with the Manor House sitting alongside the Mooi River, it is the ideal location for a l eisurely afternoon spent enjoying a picnic along the banks and catching some trout. We did not try our hand at fishing but we did spend some time relaxing by the water, this is enough to help slow your brain down, drink in the fresh air and surroundings and help you feel ready to take on the world again. The gracious hosts for our stay were Tony and Lize Birkholtz. Their friendly and warm approach made us feel immediately comfortable and as Tony showed us around, his love for the place was clearly evident. Although, the manor is a B&B and does not offer dinner Tony and Lize were happy to suggest places close by

Breakfast is a true country style affair with large portions, all lovingly prepared by Lize, served in a gorgeous and inviting dining area. Make sure you have enough time to enjoy the experience. The common areas of the manor house have such an inviting feel about them, you may just want to relax in their glory for a while. Read a book, play some games and just enjoy the warm ambience that engulfs you. Waterford Manor has been operating as a Guest House for the past six years and such is its popularity that bookings are required quite a bit in advance.

A feeling of festive fun permeates the air and no its not Christmas, but the minute you enter The Farmers Daughter you get a sense of welcoming warmth that immediately embraces you. Chef Jen Pretorius and her team have created a little piece of heaven on this stretch of Route 103, from the aromas of heavenly baking bread drifting out of the kitchen to the charming and eclectic decor, The Farmers Daughter is visited along the route.

Jen is , as the name suggests, a Farmer’s Daughter, and her pride in her heritage and roots is evident by the lovingly framed picture of her dad on the front counter. The inviting feel of the place is enhanced by the mix of antiques and collectibles and lovingly restored furniture and pretty pastel colours that create a feeling of ‘coming home’ to a warm and inviting kitchen at mom’s house. We loved the old door now table top in the garden which invites you to claim it as your office for the day. The Farmers Daughter has its own garden from where all the greens are picked everyday and find their way to your plate in the most exciting ways. The salads are served in jars, so a quick shake and its dressed to perfection. Not only does the restaurant have its own vegetable garden but it has the most amazing herb patch, well, not exactly a patch but a seperate ‘garden’ where you can find every herb imaginable from lemon thyme to dill to chives. All of the produce is either picked fresh from the garden or sourced locally and every bite of every meal will have you wanting more. From the Tart Citron to the very politically correct brownies which you can have in either dark chocolate or white chocolate to the cherry pie served with chevin, as a meal not a dessert, every meal is a delight to the senses. The menu changes every day and reflects not only Jen’s personality but also what is in season. Jen says that her menu is one that makes you ‘feel good’ and has all of her favourite things on it. There is a certain amount of nostalgia in both the menu and the decor and the love that goes into both is so obvious you can almost reach out and touch it.

We absolutely loved our Farmers Daughter experience and are already looking for an excuse to go back as soon as possible.

Award-winning Teremok Marine opened their renovated and revamped Teremok Spa in June 2010. The boutique lodge opened in November 2003 with one treatment room as an add-on facility, but this side of the business has experienced such growth that an expansion and overhaul was deemed necessary. The Davidson family, consisting of Debbie Davidson and her daughters Tracy Gielink and Kim Davidson, who own Teremok wanted to create a space that was a true extension of the lodge, capturing its rich history and their personalities. Their vision was of an urban apothecary where clients can take refuge, and find comfort and remedies for their daily stress, and they commissioned M&M Space Design to realize this.

said Tracy. Vintage and antique stores were scoured to find an eclectic mix of old pieces that were to be juxtaposed with new furniture that was commissioned. This is seen in the Frida Kahlo grandma and grandpa chairs that are set against a wall length smoky bronze mirror and presided over by an elevated Buddha and collection of hanging lanterns; to the contemporary post office red ducoed refreshment station, and plywood custom-made reception desk branded with the Teremok stamp. The decision was made to create a boutique spa with only two treatment rooms in order to offer a heartfelt bespoke experience. Different points of interest were purposefully created so that clients continue to make new discoveries, and the treatment rooms were named to give each their own personality. Teremok Marine has found inspiration from it’s location at the sea which is paid homage to in the Aqua treatment room, while the Orchid treatment room draws its inspiration from the wild orchids nestled in the giant Milkwood that stands guard at the entrance to the lodge.

“Our aim in the Aqua was to create the feeling of being in a four poster bed, but practicality prevailed so the treatment bed is topped by beautiful canopy of organza ribbons bedecked with crystals and feathers, while the crochet wallpaper is reminiscent of foam from the waves,” explained Tracy. “The tone in the Orchid treatment room hints at romance – unique wallpaper was designed and layered with a painting and strand of wire and beaded flowers that creeps onto the ceiling. A collection of bird cages hangs in the room and soft candlelight causes their shadows to dance on the wall.”

“Teremok has taken my mom, sister and I on the most amazing journey, and creating a retail line gave us the opportunity to share some of the things that we love. Dubbed ‘The Trilogy’, we have used this name to curate a quirky collection of select items that will perhaps add a touch of glamour, a dose of humour or a little magic to your life. You will find anything from Swarvoski-studded crocodile cuff bracelets to bottles of old fashioned sweets, handmade sterling silver jewellery, and designer clothing,” elaborates Tracy. The Davidsons are also always on the look-out for new and exciting retail ranges to stock.

The Koi pond had become a focal point of the courtyard area where the Spa was located, so it became the obvious inspiration for the relaxation area which overlooks it. This area is brought to life by a bindi wallpaper that introduces geometric shapes and a joyous shade of purple that is toned down with white Koi fish hand-painted over them and muted hand-stitched silk armchairs. To make the room even more homely and to play with contrasts, crochet blankets and crochet doilies on armchairs were introduced which are reminiscent of a bygone era of craft and perhaps conjure up images of a grandparents’ lounge.

The Spa also has a changeroom that draws on the spices of the continent with a locker facility, while the wet room/shower has a giant mural embedded in the wall covering of an aloe that can be found in abundance along this coastline and are used for their soothing properties.

The retail space and Trilogy Collection was born to give an outlet for a personal selection of items that excite and inspire the three Davidson ladies.

Aaaargh!! TECHNOLOGY!!

Well, that’s my extent of knowledge of Social Networking Apps, thanks to exhaustive knowledge of my Anklebiters. I’m sure there are many more out there. Given my naivety about Social Networking I though twerking was something one did on Twitter.

Technology in its many forms certainly does baffle me, and not just in the social media realm either. I remember a time when you just turned the TV on…………. Now my Gr 1 kidlet has to tell me how to just change channels. You even get curved TVs these day!

I was shown the error of my ways about that and when I tuned in to MTV. Wow! You have to be pretty fit to pull that off. I don’t remember sex being anything like that. The image of me twerking would be enough to put an end to the twerking fad for all eternity.

Even in my little universe of expertise, coffee machines are constantly changing and I have managed to acquire just about every coffee machine known to man. In fact, I have an entire cupboard dedicated to them. Some so antiquated, I should start a coffee museum!

I am getting very used to the coffee-in-bed scenario. Now to just teach the Sprogs to use it………………………….. That would be ideal! The Middle Child has figured out how to use the milk frother quite quickly but, alas, I fear that could be to enhance the hot chocolate as opposed to making The Parents a cappuccino. Today we are all about rushing, barely having the time to sit down and enjoy coffees or even the moment. Everything is quick and easy and disposable. I do so utterly detest the commercial coffee filter machines so beloved by cafes and restaurants. Hurriedly made with no idea of the required measurements and then left to burn away at the top of the machine – Uggghh! What you then get in your cup is a bitter and burned beyond flavour coffee. And people pay for this... Astonishing!

All this said, it is with great interest that I have tried this bizarre contraption that produces coffee from a capsule no less!I mean if George Clooney is going to promote it, well then, I have no choice but to try it. I must confess to being suitably impressed and it’s so easy even the Husband manages to produce an impressive cappuccino, including a head of note. The other plus, is the huge variety of coffee choices available. I also love the tasting service offered at Nespresso’s offices in Windermere Rd. Free to the point of almost being abused by me, not to mention the huge picture of gorgeous George Clooney staring out at me. He can most certainly grind my coffee beans anytime. What does bother me about all this, is how ridiculously quickly all these gadgets become obsolete and then where will you get your capsules from? Anyone remember the Russell Hobbes Uno? Well, that seems to have been relegated to the Obsolete Pile! And can you still get the pods for them? I must admit, The Husband did enjoy that gadget, which made coffee making easy for him but he is becoming quite partial to the new Nespresso. Not that I’m complaining really.

However, there is nothing to beat the glorious smell of freshly brewing coffee. Especially if it is still done the old way with the percolator on the stove. You feel as if you really deserve that cup with all the love and effort you have put into it. Whilst the Nespresso doesn’t produce that fresh coffee aroma or emulate the wonderful taste of fresh coffee, it does very well with coming close to a great cappuccino. Right, I’m off to continue that eternal search for the perfect cuppa and sample a few wines along the way. A necessity in my day. But surprise, surprise it seems that I finally got one of my brood to try their hand at making me a cuppa...The middle child has grasped the workings of the Nespresso machine, and not just for frothing milk...I managed to get a proper cuppa out of him and in bed no less....Victory for the Mother! Bye for now my Little Coffee Beans

Inspired by a few days in the Midlands and how awesome the homemade jams and craft items like liqueurs were, and also my overgrown rosemary patch, we decided to share some quick and easy ideas for home crafting. Whether it’s for your family to enjoy or to share as gifts, homemade items always bring smiles of joy. This method of infusing oil is not difficult at all but it does take a little bit of time and requires that special attention to detail. ROSEMARY INFUSED OLIVE OIL… 1. Start with fresh herbs and beautiful bottles with a solid seal, make sure the bottles are thoroughly cleaned. 2. Ensure that the washed bottles dry out completely. Also, make sure the rosemary is clean by soaking them in water for about an hour. Rinse in a colander a few times. Then set out on kitchen towels to dry for about 48 hrs. (Your home will smell amazing.) 3. Now you’re ready to get infusing: - Pour half of the Olive Oil and about a dozen sprigs of clean rosemary into a large pot on low heat. - The oil should be luke warm and at no stage should it splatter. The herbs must not be deep fried so keep the stove on a low heat. - The mixture should infuse for about 5-10 minutes until the rosemary begins to wilt and start changing colour. Turn the heat off and let cool completely. - While the Oil is infusing, put a sprig or two of rosemary into each bottle. ( DO NOT use the same rosemary that you used to infuse the oil) - Once the infusion is cooled, use a funnel to pour into each bottle withou getting any of the ‘cooked’ rosemary into the bottles. - Fill each bottle about 1/2 way with infused oil and then fill the rest of the way with fresh oil. - Seal the bottles and allow to sit for at least a week for full infusion, two weeks for the oil to reach its peak. If you plan on keeping the oil longer please ensure it is kept in the fridge. (Try this same method with other herbs, just remember not to cook through)

◊ I always add fresh cream though be cautioned that if the mixture does not get finished it will go off. ◊ I never have that problem as it’s so yummy, people keep coming back for me. ◊ Do not be fooled by the delicious taste which always tastes like more, it packs quite a serious punch. ◊ The vodka I use generally is Stolichnaya as you can get a vanilla flavoured one which adds a nice twist, though the regular one is just as good. ◊ Be sure to use good quality vodka as you do not want to wake up the next day and wonder where that headache came from. ◊ Should you leave out the fresh cream, poured into decorative bottles, these can make pretty neat and fairly inexpensive gifts (with you scoffing down the rest)

Chef Jen Pretorius The Farmers Daughter

Meet Jen Pretorius, the energetic and bubbly young chef whose turning it up a notch in the KZN Midlands. After completing Chef School at Chante Cler in Hillcrest she gained experience in one on one. She then spent a long time being the caterer of choice for weddings in the Midlands. Jen’s expertise extends from planning the entire menu right up to creating the artisanal wedding cake of any brides dream. Such was the success of her venture into catering she decided to create a home base where brides to be and everyone else in between could come along and experience her mastery first hand, and so The Farmers Daughter was born. In addition to her love for cooking is Jen’s sense of social responsibility. She is a board member of an NPO for Hospitality Skills Development and 5% of her turnover goes to the program. The majority of the staff at The Farmers Daughter come straight out of the program and Jen’s relationship with each of them extends far beyond that of teacher. Their love for the industry unites the team but it’s Jens guidance and obvious love for all of them that it a joy for both the guest and the kitchen, resulting in an experience of being a part of the family as soon as you walk through the door. Jen’s business partner’s Dani Diesel and Ayanda Dube, each play a role in the business. Dani is her head chef and ‘go to’ guy for daily operations and Ayanda is in charge of staff and client liasion while Jen is away on business or indulging in her other love, gardening. Jen is a non-comformist and believes that people want to eat food that make you ‘feel good’, in this she has succeeded. To get a sense of her quirky personality, all you need do is take a look at the black chalkboard on the front counter and you immediately understand what Chef is creating here.

Ingredients: 1 portion of your favourite savoury pastry recipe 1 tin black cherries or 1 cup of fresh cherries, destalked and pips removed. 1 brie cheese 1 chevin goats cheese 1 red onion, finally chopped Crushed fresh garlic to taste 1 eggs, lightly beaten 1 cup grated parmesan Half a cup of cream 1 table spoon smoked paprika

Method : 1. Pre heat your oven to 200 degrees c. Line mini tart tins or one large tart tin with your savoury pastry. 2. In a heave based sauce pan fry your onions in butter with your crushed garlic. fry until soft. 3. Add your black cherries and keep frying for a further few minutes. 4. Season your mix with paprika and portion into your mini quiche bases or spoon the whole mix into your large tart base. 5. Mix your cream and egg together and pour over the whole mix. 6. Sprinkle over your grated parmesan cheese and place in the oven for 25 minutes if the tarts are little or 35 minutes for a large tart. 7. Finish by sprinkling crumbled chevin over the whole tart. ( Finish with balsamic caramel.)

Ingredients: 6 medium deviened and peeled prawns 1 hand full of baby spinach 1 cup shitake mushrooms, sliced Fresh crushed garlic to taste half a finely chopped red onion danish feta freshly chopped Italian parsley 2 table spoons cream cheese 2 slices of sourdough toast 1 perfectly poached egg Method : 1. Heat some butter in a heavy based pan. 2. Add your onions and garlic and fry until softened. 3. Add your sliced mushrooms and prawns and cream cheese, fry for a minute or 2. 4. Add a bit of cream and season. 5. Serve the royal mix on your toasted sourdough topped with a perfectly poached egg and chopped parsley

Method : 1. Soak your sourdough in the beaten egg. 2. Heat a heavy bases pan with the butter and sugar until the mix starts to bubble. 3. Add your banana and sourdough and allow all ingredients to caramelise. 4. Place your caramelised toast onto a plate and top with caramelised banana, strawberries, Nutella and fresh cream. 5. Finish this dish with vanilla syrup.

Jackie Cameron School of Food and Wine At last Jackie Cameron (who did her LEVEL 3 IVQ Advanced Diploma in Teaching, Training and Assessing Learning Awarded by The City and Guilds of London Institute in year 2010) is in the position to realise her dream of launching Jackie Cameron’s School of Food and Wine, scheduled to open in January 2015 in Hilton, KwaZulu-Natal. The school will offer an 18-month intensive internationally-recognised course with a maximum intake of 15 students. “Hands-on “ is Jackie’s philosophy and the students will be working alongside her, daily. The school will provide learners with the opportunity to experience all things foodie in a safe and secure environment. Ingredients:

300gr Onions 150gr Carrots 1sprig Rosemary 2kg Beef Meat, Chuck 200ml Red Wine 3L Stock-excellent quality 10 egg whites rosemary

1kg Springbok loin, sinew removed Cover meat with half amounts of red wine and half amounts orange juice Add two bay leaves Add 2 onions-sliced Rosemary sprigs

Method:

1) Leave this over night covered in the fridge 2) Pan sear these springbok loins quickly in butter and a splash of oil. Almost roll them in the pan so no one side is getting more heat than the other. Wrap tightly in plastic and freeze. Slice on service as needed

1) Chop the onions and carrots very finely. Heat a pan and caramelise these well in butter with a sprig of rosemary 2) Add the chuck and sear 3) Deglaze the pan with the red wine amount 4) Add the stock and bring to the boil 5) Add the slightly whisked egg whites together with semi crushed egg shells to the warm stock-stir and allow a raft (like an egg white topping) to form. Duck fat Method : 1. Debone and portion two medium-sized ducks removing all excess fat from the thighs and breasts as well as any extra fat on the carcass. 2. Place duck fat into a saucepan and cover with cold water. Bring to the boil and then reduce to a simmer. You may need to top up with water. Simmer until the duck fat pieces have released all the liquid fat. 3. The remaining duck skins will have become smaller in size and almost crispy. Strain the liquid and refrigerate for later use. The duck skin can be discarded or enjoyed later as a treat.

4. When cooked and tender, cover the pot with tinfoil and leave off the heat, at room temperature overnight. 5. Heat an oven to 260 °C. Trim and neaten the duck thighs. 6. Place on to a tray skin-side up and top with a sprinkling of Maldon salt. Add water to the base of the pan. 7. Place into the oven and cook until the duck thigh is crispy. This can take about 20 minutes.

Duck confit Ingredients : 4 deboned duck thighs fine salt duck fat (enough to cover the 4 thighs) Maldon salt Method :

Candied vegetables Ingredients : 1 cup water ½ cup white sugar 50 g sliced red and/or yellow peppers 1 small onion, sliced Method :

1. Lightly coat the duck thighs with fine salt and leave overnight in a covered oven tray. 2. Rinse the salt off in the morning and pat dry. Place the thighs into a heavy-based pot and cover with duck fat. If you find you do not have enough duck fat to confit the thighs, add equal quantities of butter and sunflower oil. 3. Bring the fat to the boil and then simmer for three hours. Never allow the duck fat to boil continuously – if it starts boiling, remove the pot from the heat and allow to cool slightly before returning to the heat.

1. Bring water and sugar to the boil. 2. Stir continuously until sugar crystals have dissolved. 3. Reduce heat to a simmer, add finely sliced peppers and onions and cook in syrup until candied – about 30 minutes. 4. Put aside and allow to cool in the fridge.

Ingredients : 750 ml popped popcorn 125 ml store-bought honeycomb candy, crushed 120 ml castor sugar 30 ml water 50 g butter

Method : 1. Mix the crushed honeycomb and popcorn together in a large mixing bowl until well combined. 2. Place the castor sugar and water in a small saucepan over low heat. Leave to dissolve. Brush off any sugar crystals that form on the sides of the pan with a clean pastry brush dipped in hot water. 3. Turn up the heat (do not stir again) and cook until the sugar caramelises. 4. Remove the caramel from the heat and add the butter. Be careful: it will splatter. Stir until dissolved. 5. Pour the caramel over the popcorn and mix through, using a ladle. 6. Press the popcorn together with your hands to shape into balls. Serves 4
