ts hard to believe that September has already come and gone, it just seems that there are never enough daylight hours to do all we need to do. But I’m just happy we’re into the warmer months and in celebration of the sunny days ahead, our travel destination takes us to Istanbul where we visit the Topkapi palace, shop at the Grand Bazaar and dine at Mikla, rated the best restaurant in Istanbul. Locally, we’re loving Makaron at Majeka House in Stellenbosch and I’m pretty sure you’re going to love it too. This month, we welcome a new beauty contributor to our pages, Fathima Rinquest Gierdien, she’s been involved in beauty for a long time and I know you’re going to enjoy her ‘finds’ each month. We explore the sensual dance expression of Bellydancing and it seems a great way to lose some of those extra kilos we gained in Winter as well as keep us fit. The festival of light, Diwali is almost upon us and we shed a little light on this festive colourful occasion for our non-Hindu readers. Diwali Pretty soon our Hindu neighbours and friends will be sending over those delicious treats and their homes will be lit up with light in celebration of the festival of Diwali. But what does this Festival of Light really mean?

Diwali, actually a contraction of the word Deepavali, which literally means “ROW OF LIGHTS” will be celebrated this year from the 3rd-7th November. The five day celebration has a multitude of symbols, rituals and reasons for celebrating, but in short it is a time when Indians worldwide rejoice and celebrate the triumph of light over dark, truth over falsehood and goodness over evil. A FEW OF THE IMPORTANT REASONS OF CELEBRATION ARE The return of Lord Rama to his kingdom after 14 years of exile The victory of Lord Krishna over the demon Narakaasura The day Bhagwan Vishnu married Maha Lakshmi THREE ASPECTS OF THE DIWALI CELEBRATIONS

1. Celebration of Light - Homes will be

adorned with clay lamps and lanterns, families will light fireworks and children will run around with sparklers. The purpose being to glorify the light of God, dispelling the darkness of mans ignorance. Diwali for Hindus, is a festival of the light which shows the way on life’s journey.

Marking of a New Year - some mark the day of Diwali as the beginning of the New Year, others mark the day after .Homes and offices are spring cleaned, new diaries, calendars and cheque books are started. All symbolising a ‘fresh start’ to a New Year.

3. Most importantly, is the worship of Maha

Lakshmi. Maha Lakshmi is the Hindu goddess of wealth and prosperity. On Diwali, worshippers pray to her asking for prosperity and blessings, not necessarily the wealth of possessions or material pleasures but also the prosperity of light in their lives and an abundance of faith.

Shopping for the perfect pair can be pain staking to say the least!

an’t figure out which style is the most flattering? The answer lies in your body type or body shape. We often do not take this into consideration, as we tend to be drawn to what is on trend. I am sure for a lot of you; the skinny cut comes to mind. Some steer very clear, yet others would not look at anything else. The main factor to consider when wearing this cut, is comfort above all else. You don’t want to be sitting at a dinner party talking in a high pitched voice because you cannot breathe. Buy them with 1 to 2 % stretch in them, and most importantly, the correct rise is vitally important, to avoid the unappealing muffin top! Balance them with a looser top, as all tight can look a little “Mick Jagger” On the opposite end of the scale, there is the “boyfriend cut” .Think old, oversized, cuffed and patchy! Although they don’t sound too glamorous, they are all over the glossy magazines! They must fit well over your rear, and have a relaxed fit on the leg. The more distressed look suits a smaller figure, and those that are darker and evenly dyed would work for a fuller figure. Dress them up with a gorgeous pair of heels and a smart blazer, or for a more relaxed look, a fitted t-shirt and pumps would work well. For those choosing practicality over fashion, the good old bootleg or flare cut works for almost all woman, but fit again is key. Be aware that the darker the denim, the more formal. Balance your body’s proportions by complimenting what’s on top with what you have on the bottom. If you find that perfect fit, stick to it. I believe that once you have done this exercise, you won’t want to do it again. Buy 2 pairs in the same style, maybe just change the colour.

Durban Fashion Fair came to town in August with all the glamour and excitement one would expect from a fashion studded, style filled event such as this one. International designer Diego M brought a touch of European flair with his collection and I had the chance to have a chat with both him and his wife, Manuela amidst the chaos and frenzy that accompanies any fashion show. His charisma and her charm make them a fabulous couple and it was a delight to find out what they thought of our local talent. innovative ideas. In the year 2003 the brand DIEGO M came to life and portrays, through its name, the complicity that has always characterized the couple formed by Diego Mazzi and his wife Manuela Botrolameolli (she’s the M of the brand).

Recognition is hard to come by and for this reason he applauded the Durban Fashion Fair for giving young designers a platform to showcase their lines. The positive feedback from a renowned designer the calibre of Diego M generates a feeling of great pride in our local designers and a real sense of being “Proudly South African”. Our designers have certainly proved they are ‘world class’. Diego did say that he was most impressed with the work of DAVID TLALE, his comment was: ” That collection would not be out of place on any international runway” He thought DAVID TLALE’S designs were superb and he could most definitely see them working in Europe. Diego and Manuela are humble and friendly and though our languages differ, and the conversation was a little challenging for all of us, there were two things he was very sure I was clear of; One, is that he loved Durban and spirit of the people and would definitely return. Two, our designers are definitely going places and he was both surprised and excited to see more of what SA had to offer. We look forward to seeing more of Diego M not only in Durban but in our other cities as well.

DURBAN FASHION FAIR I was fortunate enough to receive a backstage pass to DFF and was in awe of the stunning makeup looks that emerged from the hands of the superbly talented MAC Events Team who flew in from around South Africa. For those of you who have always wondered how the stunning, artsy makeup looks emerge on the runway – here is a RUNDOWN from BACKSTAGE: The artists are shown a makeup demonstration by a Key Artist, where they sketch out and jot down key points as to which products are used and where they are place on the face of the model on a face chart. This is called THE LOOK

Each designer works in collaboration with the M.A.C. Senior Artist: Michelle Collins, to design a specific makeup look for their collection. Sometimes due to the limited time between shows there will be such a quick crossover that the look will only be changed very slightly. Some gloss highlight added to the check or the lip changed. I have chosen two very different makeup looks to showcase to

2 The skin was organic matte in texture For the Male models the focus was on the brow. Brows were huge, bold and monochromatic. Brows were brushed up and striped using a mix of M.A.C. brow pencils and acrylic paints in black and white. The face was contoured heavily using cool shades. The show featured only one female model. Tatum’s eyes were the focus with clever brushstrokes also in black and white – with her lip a sharp ombre using Diva and Rebel lipsticks by M.A.C

But what of belly dancing as a form of exercise? The natural movements and freedom of expression encouraged by Belly dancing is not only liberating but also a great way to stay in shape. Belly dancing has been around for centuries but it wasn’t until Hollywood began to glamorise it in the 1900’s that it began to gain in popularity. Yes, there are various forms and types specific to different countries like Egypt and Turkey but we are just concentrating on the exercise aspect this time. We now have bellydancing classes all over South Africa and it is fast becoming a fun, lively way to keep fit and have a good time all at once. The basis of the core moves is always the centre - just below the navel - or the second chakra (hara) or simply ‘the centre’. Bellydancing is similar to Yoga and Pilates in that the focus of the energy is on the ‘centre’ and the breath.

Physical fitness is greatly improved

It helps firm and tone the muscles in a gentle way, especially the abdominals, arms, upper back, hips and thighs. A more vigorous bellydance ‘workout’ lasting for at least thirty minutes, practiced 3-4 times a week, will certainly improve muscle tone and overall fitness. Bellydance can be seen as a fun and energetic form of aerobic dance.

We all have different requirements, but whether its just a fun outing or a you really want to learn the secrets of belly dancing, just try a class and feel the difference. For me, there is no greater expression of life than dance and belly dancing is a true expression of femininity. Working out to fast paced, repetitious music with spicy tabla rhythms will make the exercise more enjoyable. A series of constant stepping moves, lifting and alternating arm poses and shimmies is the basis for a safe, low impact workout. However, as with all forms of exercise it is important to warm up first. Gentle shoulder rolls, arm lifts, basic step/points and circular moves which then allows you to gradually increase speed and repetition of moves, and after the workout remember to stretch and cool down.

Olives or Olive Oil Its been a food source, used for fuel, timber and medicine and the humble Olive Tree has even been seen as a symbol of peace and wisdom. The fruit of this ancient tree has also given us oil and a delicious snack. Whether picked green and unripe or allowed to fully ripen on the tree to a black color, the Olive has become a favourite on dinner tables and in lunch packs the world over and the oil has become a healthy alternative for cooks everywhere. So is there a difference in the two?

Do olives and Olive Oil have the same health benefit?

High in monounsaturated fats, both olives and olive oil are both healthy foods. It has been noted that cultures whose diets are rich in this type of fat tend to have lower rates of heart disease, cancer, and obesity—even when their total fat consumption is on the high side. Monounsaturated fats also seem to be less likely to contribute to clogged arteries and heart disease.

Green or Black?

Green olives, which are picked before they ripen, tend to be higher in polyphenols. Black olives, which are allowed to ripen on the tree, generally have a higher oil content. Olives straight off the tree are hard and bitter and definitely not pleasant too eat., even if ripe. They need to be cured in salt or oil or pickled in brine to make them edible. Curing removes the ‘bitterness’ and softens the fruit, but also adds a fair amount of sodium. Generally though, black olives will have about half the sodium of green olives.

Pomegranate Juice Made from the fruit of the pomegranate. It’s used in cooking both as a fresh juice and as a concentrated syrup, particularly in Persian cuisine. May play a role in reducing the risk of cancer, reducing serum cholesterol, and protecting arteries from clogging. The anti-clogging effect of pomegranate juice, is the result of its concentration of antioxidants, and are similar to the effects shown in studies of red wine, black tea, and purple grape juice. However, with almost 30 grams of sugar, a glass of pomegranate juice has more sugar than an equal size serving of some soft drinks, such as Coca Cola and roughly equal to two servings of a sweetened breakfast cereal.

Make Your Own Pomegranate Juice

Of course, homemade is by far the best. Simple and easy to do, yet so good for you.

1. Cut open the pomegranate and

remove the seeds placing them in a bowl filled with water.

2. The seeds will sink to the bottom while the white membrane floats to the top.

3. Discard the peel and membrane,

leaving only the red seeds and strain out the water and place the seeds in a blender.

4. Blend the seeds, strain the seed mixture into a cup.

You now have a very potent, concentrated, tart but tasty drink. Just add water and sweetener to taste. Of course fresh is best, but if pomegranates are not in season or you enjoy the juice but don’t want the hassle you can always buy it in a supermarket. Just be sure the labels says “100% Pomegranate Juice” The real stuff is often much more expensive than other juices so be prepared to pay a little more for it than regular juices. And, avoid any juice which contains “malic acid” or “citric acid” as these are commonly added to hide the fact the product has been watered down.

The main difference between handmade Turkish rugs and rugs made anywhere else in the world is that Turkish rugs are double knotted. Each piece of yarn is looped twice through the weft, making the rug sturdier and more durable. Rugs elsewhere are tied with a single fibre per vertical thread.

Silk Carpets

The most valuable, beautiful, and costly Turkish rugs are made of silk threads, filament-thin yet one of the strongest natural materials known to man. Typically, silk carpets hold 400 threads per inch. An expert weaver can knot as many as 1200 silk threads per inch into a carpet. The silk used comes from cocoons rather than silkworms. Farm raised, then shot with steam to shock the incipient butterfly within, cocoons are then soaked in a vat of water. Using a wide brush, a worker teases out a hair-thin thread from each cocoon and affixes it to a spinning wheel that extracts all the silk from the casing. It is then twisted, dyed, and ready for weaving.

Wool Carpets

Since wool carpets are made in primitive village houses or in tribal tents, sizes are smaller than other combinations. They can be quite long but their widths are limited due to the size of the wooden looms. All three parts of Turkish wool carpets like warp, weft and pile are from pure wool. Differences in climate and flora effects the quality of a woollen carpet. Rugs made in various regions of the country show different types of weaving. Lamb wool from the east part of Turkey is thicker because of cold climate with the result that rugs from this region are thicker. Rugs from the west coast of Turkey are finer as wool is thinner due to the warmer climate.

Inspiring

Istanbul Being so full of history Istanbul has loads to offer so if you’re short on time, decide what it is that you most want to see and do and stick to those because once you get there you suddenly realise that there is so much more. Istanbul is relatively cheap for South Africans, with the exchange rate being 1Turkish Lira= R4.90, so definitely value for money. We stayed at The Lares Park hotel which is conveniently situated close to Taksim square and close to the bus route. I especially loved the little tea room right across the road and we made sure we had tea there every evening, its crammed with stuff you might want to bring home. Don’t make the mistake I did, my frustrated husband had to go shopping in the middle of the night for a new suitcase just for the loads of not necessary things I bought. But, the people are friendly and inviting, extremely helpful and would be happy to show you around their city. Yes, there is much poverty but there is also an air of just being happy and content. I thoroughly enjoyed Istanbul and that visit has made me want to visit Pamukkale, the World heritage site, for their salt deposits, Ankara for its rich heritage and Bodrum for its beaches. This small taste of Turkey was a pleasant surprise and I can’t wait for more.

In 2010 Istanbul was named the European Capital of Culture and it is no wonder why... Just the historical aspect of a visit could be enough to keep you enchanted with the city but there is so much more. seum, this beautiful building is not only an architectural marvel but also a great reflection of the two different cultures that once ruled the city. During Ottoman rule the church was converted to a mosque but recent restoration shows perfectly preserved murals and paintings underneath layers of plaster. The building has always been special and is now even more so with ancient history coming alive. TOP KAPI PALACE

The Palace of Felicity, a glance into the splendour and excess of a time gone by. 2140 years after the establishment of the city, it was conquered by Sultan Mehmet. This was to mark the beginning of centuries of Ottoman rule from the late 15th to the middle of the 19th century.

The transformation of an impoverished, nomadic society had begun and Top Kapi was the central point. Top Kapi was home to the Sultans, their wives and their harems until 1853. A tour through the palace will give you an idea of what life must have been like back then but as for me, I was left in awe at the many gifts received by the families over the years, the weapons collection, the porcelain collection, the clock collection, the treasury with its authentic collection of jewellery, and as for the Emerald collection, I have never seen stones that size in my life before. In fact it was just so mind boggling that if one were to calculate the value of all the items in the palace and then realise it was just a portion of the wealth at the time it would make you realise how it was that the Ottoman Empire gained its reputation for ‘excess’. The Islamic history collection is even more awe inspiring. After the conquest of Egypt in the 16th century many Sacred Relics were brought here including the bow and swords of the Prophet Mohammed, his cloak , his seal and an original letter from him. The swords of many important Islamic fighters of the time, including Hamsa can be found here. Be prepared to plan for a few hours and then end up spending an entire day wandering around.

SULTAN AHMET OR BLUE MOSQUE

Built by the Sultan to rival the Hagia Sophia the mosque is nick named The Blue Mosque because of the distinctive, handmade, Iznik tiles used throughout the building. Iznik is a small village outside of Istanbul which had a flourishing ceramic industry during the Ottoman empire. Today Iznik ceramicware is very difficult to come by and is very expensive. There is also the Sulaimanye Mosque and the eerie subterranian Sunken Palace with its 9700sqm underground cavern with 360 illuminated pillars. So, as I was saying the historical aspect of Istanbul is simply breathtaking but what about the shopping, the nightlife, the culture. A visit to a hammam is a MUST, yes the hotels offer perfectly luxurious and clean hammams but a visit to an old, authentic hammam is a different experience altogether. I visited the Cagaloglu Hamami near the Hagia Sophia and boy was this an experience. There’s nothing quite like being pummeled by a maseusse the size of a rugby player to wake you up and keep you alert. It smells musty and old, and the thought of lying naked in front of other women while being thoroughly soaped and sudsed can make you think twice, but a visit to this hammam, which is one of the “1000 things to do before you die” was definitely a memorable experience. My husband on the other hand had a slightly different opinion. Though I must add that modern Turks frown on the idea as something only Turks without baths and tourists would do.

THE GRAND BAZAAR AND THE SPICE MARKET is another ‘other worldly’ experience. Be prepared to

My hubby was offered a leather jacket for 500TL which he declined and the seller followed us at least a block, by which time the price had dropped to 50TL. So yes, the bazaar is crazy, colourful and chaotic but it is definitely a great experience. Beautiful amber jewellery and Turkish tea cups and leather items can be found to bring home as trinkets or gifts. Both the Grand Bazaar and the Spice Bazaar can be quite expensive so be careful when shopping here. And of course, there are the many Turkish carpet shops...now this was thrilling. We were invited into the inner sanctum of one of these glorious shops where the carpet merchant unrolled

so many carpets for us to look at that to leave without buying any felt a little embarassing. Perhaps, this is the objective. You also get offered a little glass of that Turkish tyrant, Raki. All I can say is, after a few of these you will be saying:

“I can’t remember the question, but the answer is raki” This stuff is potent so

go easy with it, similar to the Greek drink ouzo, it is just as deadly. The merchant will explain the differences between silk and wool carpets, how they’re made by hand and how the value differs depending on how many knots its takes to create a pattern. He will tell you about hand knotted and flat woven types, the entire experience is quite enriching, whether you buy or not. Hand-knotted rugs can take years to complete and if you look at the back of the

carpet you will find a few imperfections. This is a quick way to determine if the rug was made commercially or not, as commercially made rugs will be smooth and perfect at the back. The difference between them is the price, hand knotted rugs can be extremely expensive. Most of the “touristy places” are on the tram line or you could even take a bus, we did and it was pretty simple to get around. WARNING: if you’re inclined to use the taxis, remember this city has more than 15 million citizens so just imagine the number of vehicles on the road that the driver has to avoid. The taxi drivers are something else, I have never been in a taxi anywhere in the world where the driver is in a hurry to get you to your destination, until I went to Istanbul. Turkish delights from Haci Bekir, close to the Grand Bazaar. Buy some to bring home but indulge in the kaymakli lokum (turkish delight stuffed with clotted cream. This shop has been here since the 1700’s.

Turkish coffee from Mehmet Efendi, the oldest and largest coffee company in Turkey.

Visit the leather district of Zeytinburnu, if you love leather then you just have to visit. Slightly outside of Istanbul, but a scenic drive away by taxi, get a look at the old walls of Constantinople along the way. This area has rows and rows of shops selling stunning leather and fur items from jackets to pants to bags to shoes, at a fraction of the price. Derimod has quite a large selection to choose from.

Stroll around Taksim Square, and enjoy a ‘hooka’ at one of the many cafes that line the streets. Or try some of the Turkish baklava at the very first shop on the left ( the name evades me ) but this stuff was heavenly. If you’re eating at one of the many restaurants make sure you get a table on the top floor, you get a great view of the square and the open air is a relief from the heat.

New additions to the a la carte menu include SASSI (South African Sustainable Seafood Initiative) green-listed hake with miso, roasted sweetcorn puree, onion, carrot butter and the surprise crunch of spekboom; free-range crown roasted chicken with mushrooms and nasturtium puree; pan- seared springbok with celery root and leaf and a chive oil; and grass-fed veal with sweetbreads, cauliflower, thyme and chive. Even the Makaron bread board has been reinvented. Always interesting, it now includes sourdough rolls, Swedish knäckebröd and dainty cheese tuilles served with organic farm butter, goat’s butter and caramelised naartjie butter. The star studded Chefs who Share gala evening, which took place on the 5th September 2013 at the Cape Town City Hall, raised R1 195 000 for youth development. The crème de la crème of the South African social scene was treated for an evening of glamour, culinary artistry and fine art in Cape Town’s stately City Hall for the first ever ‘Chefs who Share – the ART of giving’, an event in aid of youth development. Chefs who Share raised a total of R1 195 000 from ticket sales and an art auction which saw ten art pieces, donated by top South African artists, auctioned off by Cape Town businessman Iain Banner on the night. All proceeds raised by this prestigious event will go to MAD CHARITY (Make a Difference) and Laureus Sport for Good Foundation. Veggie Boxes piled high with fresh ingredients donated by Woolworths destined for soup kitchens to feed underprivileged children, were also sold on the evening at R1000 per box. Chefs who Share hope to make this an ongoing initiative. Well-known television personalities Bonang Matheba and Dr. Michael Mol were the MCs for the night and entertainment was provided by Elvis Blue and Nash Reed. The evening attracted a star studded audience including popular socialites, accomplished business people and sporting heroes such as Morné du Plessis and Francois Pienaar. The real stars of the night, however, were the 14 chefs from the country’s top restaurants who treated guests to an evening of absolute indulgence. As the temperature and humidity changes so to do wines, and their chemistry is altered by these factors. Serving wine at the correct temperature will definitely improve the experience. 1. TEMPERATURE| You often hear it said that Red wine should be drunk at room temperature but the truth is in the South African context red wines should be served at around 18 degrees., so the ‘room temperature’ rule makes perfect sense in European countries but not here. 2. DECANT| This allows for the wine to breathe, exposing it to oxygen and allowing the natural aromas to be released. Decanting goes a long way in improving the taste of a wine. This applies only to red wines, whites can be served straight out the bottle. 3. USE THE RIGHT GLASS| Red wine glasses have a bigger mouth than white wine glasses. This is to allow more oxygen in. When serving a ‘good’ red you’ve been nurturing for a while, make sure you use the correct glass, it will make a big difference to your enjoyment. A ‘fat’ glass with a ‘wide’ mouth will give the best results for red wine. 4. Red wine needs to be ‘SWIRLED’ to release its bouquet. With this in mind, leave room in the glass to allow you to do this. Never fill a wine glass to more than two thirds.

Seafood Pasta INGREDIENTS

• In a pan add 50gr Butter and the garlic, now add your prawn meat and sauté till just done • Add the cleaned prawn tails and the mussels and cook till done, deglaze the pan with the white wine and add the Tomato & Onion mix, now add the béchamel and fish spice simmer till all cooked through add the cream and mixed herbs • In a separate pan melt remainder of butter and sauté pasta till hot

• Cook off the pasta till al dente as per package instructions • Cool off, coat with a little Olive Oil and set aside

Tuna Pate INGREDIENTS

300gr of tuna 2 tablespoon of capers, drained 4 tablespoons of freshly squeezed lemon juice 2 teaspoon of anchovy paste 2 teaspoon of minced roasted garlic 300gr cream cheese

METHOD

Combine the tuna, capers, lemon juice, anchovy paste, garlic, and cream cheese in the bowl of a food processor or blender and puree until smooth

INGREDIENTS

1 (375g) packet ready rolled shortcrust pastry sheets 750g thinly sliced tinned apples 1 lemon, juiced 110g light brown soft sugar 100g caster sugar 2 teaspoons ground cinnamon 1/4 teaspoon freshly grated nutmeg 3 tablespoons plain flour 50g unsalted butter, chilled and diced 9 toffees, unwrapped and quartered or 3 tablespoons hot fudge sauce 1 tablespoon caster sugar

METHOD

Prep: 30 mins | Cook: 40 mins

• In a large bowl, combine apples, lemon juice, sugars, spices, flour, butter and toffees. Stir to coat fruit evenly. • Line a pie tin with one of the pastry sheets –make sure rolled thin and pressed thin into edge of 24cm spring-form tin. Spoon filling into tin and cover with second pastry sheet (whole or lattice).Crimp the edges. Place the pie on a baking tray. Poke fork holes over top. Sprinkle lightly with caster sugar and egg wash. • Bake at 180 C for 40 minutes. If you notice overbrowning after 30 minutes, reduce heat to 170 C. Serve warm or at room temperature with Vanilla Ice Cream

Her kitchen is an industrious hub throughout the year, with almost everything that can be homemade produced on site by her small, dedicated team. Preserves, jams, chutneys and cured meats are all made on site. Tanja is particularly proud of Makaron’s resident baker, who produces pastries, breads, cakes, desserts and petite fours, including the prettiest, daintiest macaroons. TANJA KRUGER has been

the head chef at Majeka House since November 2011. Tanja’s true passion lies in ethically sourced, farm-totable cuisine showcasing the very best produce from the Stellenbosch region and beyond. Over the years she has evolved her own style, influenced by her reverence for fresh, seasonal produce sourced as close to ‘home’ as possible. Says Tanja:

‘I know where 95 percent of the ingredients used in my kitchen originate from, which feels likes like no small achievement. I will not accept anything but the best for the restaurant and go out of my way to find it. I am constantly on the hunt for new producers and suppliers.’ She delights in farmers knocking on her kitchen door with organic or unusual offerings of superior provenance for her to try.

When she was originally interviewed for the position of head chef, Tanja says she could hardly believe her luck when the well-travelled owners mentioned that they would like to see sweetbreads on the menu. ‘It’s

a pleasure working for owners who have a deep appreciation and respect for gourmet ingredients,’ says Tanja.

Since joining Majeka House, Tanja has benefited from regular exposure to cuttingedge food trends in Europe and has had the privilege of dining in a number of Michelin-starred restaurants, all thanks to regular working trips to the northern hemisphere during the South African winter months. In 2012 she spent time at Michelin-starred L’Arpege restaurant in Paris. ‘Working under chef Alain Passard at L’Arpege was a revelation,’ says Tanja. ‘His menu changes daily, depending on what is sourced at the market that morning.’

In 2013, she spent time in the kitchens of Restaurant Frantzen in Sweden, under Bjorn Frantzen; Geranium in Denmark, under Rasmus Koefoed; and Pierre Gagnaire in Paris, under the mentorship of the revered chef himself. Inspired once again by the incredible attention to detail she witnessed in restaurants, bistros and gastropubs across Europe, back in her own kitchen she is enjoying experimenting and playing with techniques such as burning, brining, pickling, juicing and jellies in a quest to intensify flavours. Prior to joining Majeka House, Tanja enjoyed a long and successful career as head chef of the five-star Hunter’s Country House in Plettenberg Bay on the Garden Route. The Relais & Chateaux property has since closed. While working at Hunter’s, Tanja won the Chaine de Rotisseurs Young Chef of the Year 2008. She has been a member of the South African Culinary Olympic team since 2009, and has competed at the IKA Culinary Olympics in Germany and Culinary World Cup in Luxembourg. As a graduate of the Institute of Culinary Arts (ICA) in Stellenbosch, returning to the town is a dream fulfilled for this dedicated chef.

WINTER VEGETABLES, ROCKET, GRANOLA, LABNEH INGREDIENTS

500g Plain yoghurt 5g Fine sea salt 500g Baby root vegetables 1kg Course salt 1 Egg white, whipped to stiff peaks 100g Rocket 100ml Cream 50g Cornflakes 50g Rice crispies 50g Pine kernels 50g Sunflowers seeds 100ml Honey 50g Butter

For the granola 1. Pre heat your oven to 200C 2. Mix the cornflakes, rice crispies, pine kernels and sunflower seeds together 3. Melt the butter and the honey together and pour over the dry mixture 4. Place the granola on a baking tray and place in the oven for about 5 min until golden brown 5. Leave to cool

METHOD

For the Labneh 1. Mix the yoghurt and the fine sea salt together, place it in a cheese cloth and leave to hang for 48 hours until it looks like soft cottage cheese For the salt baked vegetables 1. Pre heat your oven to 190C 2. Wash and trim the vegetables, but do not peel 3. Mix the whipped egg white with the salt 4. In a baking tray, spread a thin layer of the salt mixture at the bottom of the tray and place the vegetables on top of the salt. Cover the vegetable with the remaining salt mixture and bake for 45 min or until the vegetables are tender (the salt will form a hard crust) 5. Remove the vegetables from the salt crust, brush off any access salt and keep warm before plating For the rocket espuma 1. Blanche the rocket in a pot of boiling for 10 seconds and cool down immediately in ice water 2. Remove the rocket from the ice water , squeezing out all the excess water and place in a blender 3. Heat the cream and add to the blender with the rocket 4. Blend the cream mixture for 1-2min and strain through a sieve 5. Season to taste and place in s siphon (cream gun) and charge with 2x CO2 charges

For the plating 1. Place the vegetables in a bowl 2. Put the Labneh in a piping bag and pipe small amounts of the Labneh randomly around the vegetables 3. Sprinkle with the granola 4. Add two or three dollops of the rocket espuma 5. Garnish with a few beetroot leaves and sliced raw candy striped beetroot


YOGHURT SEMIFREDDO, GUAVA, SESAME SPONGE INGREDIENTS

70g Egg white 125g Icing Sugar 5 Sheets gelatine 500g Yoghurt 135g Whipped cream 80g Black sesame paste 3 Eggs 80g Sugar 1g Salt 20g Cake flour 200g Sugar 200ml Water 1 Vanilla pod 8 Guavas, peeled and cut in half

METHOD

For the yoghurt semifreddo 1. Whip the egg whites and the sugar together to soft peaks 2. Sponge the gelatine sheets in cold water 3. Heat the yoghurt slightly and melt the gelatine in the yoghurt 4. Leave the yoghurt to cool slightly to room temperature and fold in the egg whites and the whipped cream 5. Pipe in half sphere mould and leave in the freezer to freeze completely 6. When frozen, remove the yoghurt from the mould, place two together to form a sphere and set aside in the fridge to defrost slightly before serving For the sesame sponge 1. Combine the sesame paste, eggs, sugar, salt and cake flour and pass through a fine sieve 2. Place the sesame mixture in a siphon and charge with 2x CO2 cartages 3. Siphon the sesame mixture into a plastic cup with 4 holes pricked in the bottom and microwave on high for 40seconds to 1min. 4. Leave the sponge to cool down upside down for a minute or two before removing the sponge from the cup and breaking it into smaller pieces

For serving 1. Place some of the guava puree across the plate and drag a spoon through it 2. Place 5 of the yoghurt spheres on the puree 3. Arrange some of the guava slices and the sesame sponge in between the yoghurt spheres and garnish with some sugar shards.

BON VIVANT

For the guava 1. Heat the sugar, water and vanilla pod together in a sauce pan to make a simple syrup 2. Place the guavas into vac pack bags, add a small amount of the syrup and vacuum to full pressure 3. Sous vide the guavas at 85C for 15 min or until tender, but still firm and leave to cool 4. Remove the seeds from the guavas, slice half into 1cm slices and blend the other half with a little of the syrup to make a puree

NETTLE ROYALE, THYME BISCUITS, OSTRICH TARTARE AND PICKLED EGG YOLK

INGREDIENTS

85g Almond flour 250g Cake flour 125g Butter, diced 1 Egg Course sea salt 10g Thyme, picked from the stem 300g Stinging Nettle 125ml Cream 1 Egg 3 Egg yolks 200g Ostrich fillet, finely chopped (by hand not with a food processor) 5ml Dijon mustard 2.5ml Whole grain mustard Salt and pepper to taste 100ml White wine vinegar 100ml Cold water 4 Quail eggs, yolks only

METHOD

For the thyme biscuits 1. Pre heat the oven to 180C 2. Place the almond flour and the cake flour in a food processor and add the butter 3. Blend the mixture until it resembles bread crumbs 4. Add the thyme and the

egg and blend until it forms a ball and stop immediately 5. Knead the dough together lightly with your fingers, wrap in cling film and leave to rest for 30min 6. Roll the dough on a floured surface to 2mm thickness, cut out small rounds with a cookie cutter, sprinkle with course sea salt and bake for 10-12min For the nettle royale 1. Blanche and refresh the stinging nettle (this takes away the sting) 2. Pick the leaves off the stems and place in a blender 3. Heat the cream, add to the nettle and blend to a smooth puree, season to taste 4. Add the egg and the egg yolks and strain through a fine sieve 5. Place the royale mixture into buttered moulds and steam for 3-5min until just set and leave to cool 6. Cut the royale with a

round cookie cutter, slightly smaller than the thyme biscuits and set aside for serving For the tartare 1. Mix the chopped ostrich with the mustards and season to taste, set aside for serving For the pickled quail egg 1. Mix the vinegar and the water together 2. Drop the quail egg yolks in the vinegar mixture and leave to pickle for 1-2hours 3. Remove from the pickle just before serving For serving 1. Sandwich the nettle royale between two of the thyme biscuits and place in the centre of the plate 2. Quenelle the ostrich tartare and put it to the side of the nettle sandwich 3. Place the pickled egg yolk on top of the sandwich and garnish with baby salad leaves and a mustard dressing
