The Crew: t looks like its all happening in Durban this August, what with the Good Food and Wine Show, SA Craft Festival and Durban Fashion Fair all in the same month as Women’s Day, its looking like Durban is the place to be this month. We’re looking forward to James Martin, Vivek Singh and of course our SA’s own “Giggling Gourmet’ , chef Jenny Morris. This month we celebrate Fashion, and have a sit down with one of SA’s finest young fashion designers, Kathrin Kidger at her new store in La Lucia Mall, durban and explore the life of a male model, with Jay d’Engle, young, charismatic and a great ambassador for the industry. The International Hotel School had the finals of the “Ticket to Success” bursary competition and we were invited to be a part of the final judging panel, this was a very heartwarming experience. We take you on a journey to Hong Kong this month, a vibrant, bustling city that offers something for everyone an dgive you an inside view of Armani Prive and Aqua, two of the ‘hottest’ spots in Hong Kong. As always we have great competitions, Karkloof Spa and Fernhill hotel in the Midlands are offering a great prize to one lucky couple and we’re sure this one is going to create loads of excitement, and of course due to the great response last month to the Bottega competition we have decided to do another one, so you have another chance to win yourself one of these stunning hampers, Azura Handmade stunning jewellery up for grabs. WOMEN’S DAY “You strike a woman, you strike a Rock” The 9th of August is NATIONAL WOMEN’S tional Women’s Day which is held on the 8th March.

South Africa’s Women’s Day differs in that it came about as a tribute to the women who marched on the Union Buildings in 1956 to protest against the legislation that made it compulsory for African people to carry a “pass” which curtailed freedom of movement during the Apartheid era.

I

n light of this, we celebrate and commemorate all the Women of South Africa who made and are still making their voices heard in all walks of life. It brings to mind Helen Joseph and Lilian Ngoyi, both Human Rights activists who played a pivotal role in the march on the Union buildings and Frances Baard a Trade Unionist who was also actively involved in the march. Inspirational women of their time together with so many more.

In the fast paced daily run of our lives, how do we celebrate Women’s Day. Every year women around the country women get together to honour and remember the proud, strong women in their lives and those that went before. My group of friends have a theme and last year the theme was “Colours of a Woman” . Each one could invite a friend and the group soon swelled in numbers. The group was diverse and colourful, but the one common denominator that each shared was that they were: ‘Woman’, in all senses of the word, mothers, wives, businesspeople, intellectuals, socialites. Bonds were forged and cemented and as each speaker had their turn, all present were reminded of the power of the girl child. A small token of ‘remembrance’ was given to each lady, a crystal, which each was to keep as a reminder of the great day spent in the company of amazing women. A year later, and the crystal still shares the magic of that special day.

So what to do this year? How are we celebrating our “Women”? Whatever your plans, the important thing is to remember the magnificent women in our country, many of them unsung heroes and let us take the opportunity this year to thank them and honour them for the incredible role they play in our society. South Africa is fortunate, we have so many, from Navi Pillay in the United Nations to Professor Anshu Padayachee who together started The Advice Desk for the abused, to Carole Van Tonder of the Durban North Crisis Team to Dr. Precious Moloi Motsepe, Humanitarian, women who have made it their life’s mission to improving and helping the lives of others. Natalie Du Toit, Charlize Theron, Khanyi Dhlomo, Jackie Cameron, the list of amazing South African women is endless, in all walks of life. And then there are the unsung heroes, those many nameless women who have shaped us and inspired us along the way, either a teacher, a friend or even a work colleague. And most of all, lets not forget, probably the most inspirational woman in most of our lives, our mom’s. So I think for this year, the theme for Women’s Day should be “I AM, WOMAN” because its true, women are many things to many people….and they do all of it in Stilletos!

In my business, this is the type of styling we do on a daily basis as well as when shopping for clients, I try and mix it up where I can , whilst still aiming for that look of ‘glamourisity’.

Slow Fashion vs Fast Fashion Now every fashionista worth her weight in Louboutins already knows that in order to dress ‘fabulous’ there should be a combination of slow and fast fashion in her closet. Princess Kate duchess of Cambridge knows this only too well, she is often seen sporting such designers as Sarah Burton or Amanda Wakeley, but she’s also seen regularly in stunning pieces from Zara or Topshop

SO HOW TO GET THE “MIX” RIGHT? Audrey Hepburn is still considered one of the most stylish women of her time, , she believed that the first step to becoming a fashionista is to figure out which wardrobe basics will best flatter your figure.

“Slow fashion”

1/ Basic items, like the forever fabulous ‘little black dress’ 2/A tailored well fitted white shirt 3/ A simple black blazer 4/ Your heavy winter coat Just a few examples of where to spend a little more as these types of items never date and depending on how you accessorise, will always be ‘in vogue’ Yes, high end labels cost more, but they will give you more years of service. You will probably also find that the ‘fit’ of a more expensive piece is far more flattering than an inexpensive one. The trick is to pair your more expensive items well with the ‘throw away’ ones and still achieve a look of glamour and sophistication, and voila, you have harnessed your inner fashionista. It would be important to note that a more expensive garment doesn’t necessarily mean better quality.

“Fast fashion”

“Fast fashion” is the perfect solution for the youth, as they want to be on trend. With new styles popping up at supersonic speed, outfits are only loved for a short time and as soon as a new batch comes in, the wardrobe needs “recharging”. (Parents welcome it too as it saves a small fortune!) For mature women, a refined look is more age appropriate, and quality is important to achieve this. But this does not mean that there is no place for a bit of frivolity or ‘fast fashion’ Just use these items sparingly and restrict them to the one or two ‘fashionable’ pieces that are currently on trend. At the end of it all, I do believe that there is a small place in everyone’s wardrobe for a bit of both, as mixing the throwaway pieces with higher end garments can work really well. Whatever you do, remember the important element here is to get the balance right!

Questions to guide your purchases: • When will I wear this item? (is it an everyday garment, or will it be reserved for special occasions) • Do I want a lovingly created item in a luxurious fabric or am I not too concerned about the finish and quality? • Is this a fashion piece or is it something that will endure through many seasons in future? • Can it be paired with other pieces I already have in my wardrobe? • AND most importantly, How much money am I prepared to spend? Nailing It Nail art is trending across the globe and if you’re still sporting a classic but ‘oh so last season’ French manicure it’s about time you started having a bit of fun with the accessories at your finger tips. Finger nails are in full focus with nail art seen on the catwalk as well as the red carpet. At Fashion Week it wasn’t only the hands of models making a statement but nail art was seen on make-up artists and fashion week attendees alike. Celebrities like Katy Perry, Zooey Deschanel, Rihanna, and Giuliana Rancic are great supporters of this trend and their nails have been getting as much attention as they have. E! Q&A with Durban based nail artist Anelda Swart

1. How did you get into nail art?

I wanted to challenge myself, do something that I haven’t seen before. When I first started I used to google pictures and try to replicate them as best I could. I actually still do that today, there’s no fun in nail art if you stop challenging yourself!

2. What products do you use? I mostly use Bio Sculpture Gel.

3. How long does it take to do nail art?

It depends on how much intricate detail you put into the design. I mostly do gel overlays with nail art. This can be anything from an hour to 3 hours work in total.

4. How long will the nail art manicure last?

I have had clients that have had it on for 5 weeks, but generally (with the regrowth of the colours) clients redo their nails after 3 to 4 weeks on average

5. What is the craziest or coolest nail art you’ve done?

There are 3 designs that I absolutely loved doing: 1. My first design which was a leopard print. 2. Spongebob theme that had a different face on every nail and 3. A My Little Pony design.

6. What do you think the next craze will be in nail art?

Nail art has been around for a long time but this craze has only recently “hit” the shores of South Africa and come to people’s attention. In my opinion I think people will start tapping into the more “bolder” looks, stepping away from French and embracing colour.

7. Why nail art?

Because it reflects your personality and its fun! Anyone can have nail art done, no matter how old or “conservative” you are. A Model Life!

From the beautiful smile that can light up a room, to the model good looks Jay d’Engle certainly is ‘the package’ when it comes to being a successful model. But this is a model with a difference. We caught up with him to find out more about the man behind the face, and there is so much more to Jay than meets the eye.

Born in the Free State, having lived in Durban and Cape Town and recently back from Thailand, where he was a part of the ZOOM International Model Agency where he was included in major campaigns like Thai Superstars in Bangkok this young, beautiful South African model shares some of his journey with us. Jay started modeling with Glam Models before joining Ice Models and eventually moving to Cape Town where he modeled for FanJam. It wasn’t long before he was off to grace the pages and billboards of international ad campaigns. He has appeared on billboards in India for Megamart Clothing and Geoffrey Bean and was part of the TATA motor car campaign. He had been modeling part-time for five years when his mentor and coach, Durban fashion designer Haroun Hansrot, suggested 18.August 2013.deelishlifenstyle.com

that he was good enough to make it on the international scene. Of course, he took the advice seriously and realized that it would also be a great way to change perceptions about modeling. Today, Jay is a huge success in the modeling world and a true example of ‘living the glamour’ without the negative connotations. As a model, one needs to take care of one’s body and health and Jay has done this in a stellar manner. Both his parents are vegans and Jay was raised to believe that the body is the temple of the soul, so he grew up knowing how great the body feels when you eat well and exercise properly. Says Jay, “I was the skinny,

little guy who was teased about his strange diet of only vegetables. But thanks to that, I that skated faster and exercised harder than anyone else. I always had loads of energy, and this made me the fastest skater when I represented South Africa at the ice hockey World Championship in 2006.” He loves exercising and lives a clean

life - no smoking or drinking alcohol or using artificial substances. Having lived near the Vaal Dam for a while when he was young, Jay learned about and developed a love for sailing. He went on to be a full-time sailing instructor in Durban, coaching a development team for Sail Africa Youth Development School. Under his

guidance they placed 2nd at the Provincial Championships in 2011. The team did extremely well in the Recent Lipton Cup regatta in Durban. From being complete amateurs, they went on to place 2nd at the Youth national championships and won a race at the national championships recently, beating top South African sailors. One of the young girls Jay trained, Talia Naidoo, who was a novice when he met her, is now on the African sailing team. Jay’s eyes light up with pride when he speaks about ‘his’ sailing team. The love and passion he has not only for the sport but for the sailors is evident. A man of many talents, Jay is also a qualified International Latin American dance teacher. A few years ago he was part of a development project that taught dancing to kids in Soweto. Before his qualification Jay competed in many amateur dance competitions. He loves teaching dance, especially to bridal couples, and takes great pride when he sees them doing a great dance on the most wonderful day of their lives. Jay is happy to share his knowledge of the modeling industry and often hosts talks for young aspirant models too. He recently did a talk to a group of new models and loved being able to give them tips on how to present themselves with confidence.

Clearly this is a man on a mission and whether he’s modeling in some exotic destination or teaching dance to wedding couples or sailing on the open sea, I’m sure we will be hearing about Jay D’engle for a long time to come.

“I broke a bone in my foot in Bangkok, and had to come back for an operation. I really missed the wonderful fruit and vegetables here, and the sea, and the beach, and the people. But the truth is: There really is no place like home!”

Fast paced and frenzied this city that never sleeps has in the last decade seen a huge increase in South African travelers, not only on business but many of us have chosen Hong Kong as a vacation destination as well. Hong Kong….is exciting, mysterious and can become very, very addictive. The city offers all of the attractions of other big cities but then just a short ferry ride away and you’re catapulted into another time and place. The fashion in Hong Kong, well that in itself is another story. Everybody dresses up, for work, for play, for shopping… Young and old embrace the ‘fashion culture’. Hong Kong is a city where its easy to indulge both your shopping and food fantasies. With more than 30 Michelin starred restaurants to choose from and every fashion house in the world with a store in the city, its easy to see why.

FOR A FIRST TIME VISITOR TO HONG KONG, THERE ARE A FEW THINGS YOU SIMPLY MUST DO: The easiest way to see most of the attractions is to buy a “Hop On, Hop Off” Bus ticket , I would say get the 48 hour one because you won’t be able to take it all in, in just one day. These sometimes have tickets to certain attractions already included so it’s also great value.

1. Visit Stanley Market – your bus ticket includes transfers to Stanley and Aberdeen . Stanley is a quaint sea side village which has become a favourite for tourists. Definitely the place to buy souvenirs and gifts to take home, definitely not the place to buy antiques. Save that for Hollywood Road. Due to its popularity it is not the cheapest place but certainly worth the visit. Murray House, a former colonial barracks, which was moved here brick by brick from Central is now home to restaurants and bars as well as the HK Maritime museum. 2. If you have kids under 10 a day trip to Hong Kong Disneyland is great fun

and they will thank you for it.

Now first time visitors to Hong Kong should know that in fact often when you say Hong Kong, what you in fact mean is Kowloon. Kowloon is on the mainland side (China) and Hong Kong is a ferry ride away. However, the two are often interchangeable, but the difference is that when you stay on the actual Hong Kong side is that you probably pay twice the price. Hong Kong itself is extremely small and real estate is prime, hence the prices are exhorbitant. When you land in Hong Kong, the easiest way to get from Lantau, where the airport is , is to catch the train. The rail system is extremely efficient and if the train is due to leave at 12:03, it will leave at 12:03. Taxi’s are plentiful and getting around is safe and uncomplicated. The city is safe for travelers and women need never feel threatened. There are money exchanges everywhere in the city, no fuss, no drama when converting currency.

4. MongkokLadies Market – Well, cheap and nasty but an absolute delight. Fun items and as we call “Fong Kong” designer goods abound, but be prepared for a good round of bargaining. The stall holders expect it and you will get used to it by the time you get through the hundreds of stalls. Busy and crowded but you cannot miss it. 5. Temple Street Market – Named after the Tin Hau temple which is right at the centre of this vibrant market. When the sun goes down the traders are ready and waiting, the fortune tellers come out to play and the market comes to life. Leather goods, food stalls, sex toys you name it…you will find it here. Great place for gift buying. 6. Most hotels have live entertainment at night. Most of the singers are from the Phillipines and have made Hong Kong their home. You may not even want to leave your hotel, such is the standard of entertainment.

3. The Symphony of Lights on a Monday, Wednesday and Friday night is a MUST.

A great vantage point is the Avenue of Stars which pays tribute to the great actors of the East like, Bruce Lee, Jackie Chan and Chow Yun Fat. To watch the buildings across the water come alive to the sounds of music is a spectacle to behold. And the Avenue of Stars itself is lively and festive and often there are ‘live’ performances to keep you entertained. Another great way to enjoy the ‘light’ display is on the water, so maybe take a harbour cruise and drink in the spectacle that is Hong Kong by night.

7. Catch a cable car,

try the Crystal Cabin, so called for its glass bottom, from Tung Chung to explore Lantau Island and visit the famous Big Buddha, the cable car experience is known as the Ngong Ping 360. Visit the Ngong Ping Village and the Po Lin monastery. This is a full day excursion, so give yourself time.

8. Lan Kwai Fong and Soho at night is alive and the

funny thing is, you will hardly find any locals around. Ex-pats abound and the air is jolly and festive. Nightclubs, restaurants, live music and great fun. The worlds longest covered escalator can be found in Staunton Street, Soho. But if you’re going to be walking around, ladies careful with those high heels, the small, roads can be treacherous for heels. The area is quite hilly and when walking from one bar to the next, it can be a little tricky.

9. Visit the Peak Tramway…the views are breathtaking, you’re literally walking in the clouds and a bonus is that Hong Kong’s Madame Tussaud’s is at the bottom so you get both the attractions at one stop.

Kong for me, was a pleasant surprise. The people are gracious and friendly. Language is not a problem, everyone speaks English and the service levels are something we can learn from. Hong Kong is a vibrant city, and by night it is even more so. The streets are always busy, the restaurants are always full and the street food scene is insane. The sights and sounds of Hong Kong are unlike any other city, it has an identity all its own.

Paul René MCC Brut Paul René is the product of WONDERFONTEIN WINE ESTATE located just outside the vibrant country town of Robertson on the famous Route 62. This area is not only home to champion wines, race horse studs, the magnificent Breede River, colourful people and true wine country hospitality, but is now also producing some of the finest MCC’s in South Africa. The Wonderfontein Estate is planted to noble vineyards, and besides the production of Paul René MCC, also produces a selection of beautifully hand-crafted wines, reflecting the unique terroir of the area. For Paul René only the finest Chardonnay grapes were hand picked in the early

morning and then chilled overnight. Crate by crate they were passed into the press before the whole berries were crushed. But this is only the beginning of a 3 year journey of detailed planning and careful attention to create the current vintage of Paul René MCC Brut. Each bottle is fermented for no less than 20 months on the lees. This process creates a vibrant mousse, apricot and green apple freshness, with an emphatic and persistent dry finish, and an amazingly vibrant bubble structure. Only 3 000 bottles are produces annually, all hand labeled and packed. After harvesting the first Pinot Noir grapes in 2013, be sure to look out for the first vintage of Paul René Brut Rosé.

What started out as a modest venture with only six bedrooms, a bar, restaurant and small conference venue, has developed and evolved over the years to become one of the firm favourites in the Natal Midlands. Over the last few years, Fern Hill Hotel has undertaken building projects designed to expand the business’ repertoire of hospitality offerings. This year’s project included the construction of a chapel to host wedding ceremonies for brides and grooms getting married in the Midlands. friends and started The Courtyard CafĂŠ and Bakery, where, working from a tiny kitchen, Martin and his wife Jane grew the business to the point where during the course of last year, they were bursting at the seams. They then decided that it was time to take the next step and with a menu concept in mind, the hunt for suitable premises began. In January of this year a neighbouring existing restaurant, moved out, and without any hesitation, The Courtyard expanded gaining much needed kitchen space, breathing room and a lovely new restaurant. After developing a new menu for evenings, Martin then was able to implement his much anticipated gourmet boerewors lunch menu, which has been eagerly embraced and supported by the local patrons in Clarens. Martin and his team are working on plans to develop the Courtyard Restaurant into a small function venue, which can cater for all types of events.

For the past 9 years the International Hotel School has been running the “Ticket to Life” Bursary Competition at all three South African campuses. IHS realized that there was a need in the market for students wanting to attend IHS and they wanted to give bursaries to deserving students in each region. Deciding to adopt a ‘get to know you’ approach rather than a random selection, the competition was born. The successful candidates would be those who would represent the IHS brand in a positive light, was deserving and who showed true passion for the industry. These students would become the IHS brand ambassadors. In light of this unique selection process, the IHS embarks on a countrywide search for enthusiastic matric learners who have an appetite for the hospitality industry and this year the talent in Durban was so exciting that they decided to up the ante and increase the value of the prizes. The elimination process was grueling but after tough preliminary rounds, the Five finalists were then put through their paces in a real-life work environment

zest all the finalists were eager to show their talent, spending time in all the different departments, Kitchen, Banquetting, Housekeeping and Front of House. The Deputy General Manager, at the Gateway Hotel and the esteemed Chef Darshan enthusiastically welcomed the finalists and were eager to get them involved in the daily running of the hotel. One week, sore feet and not much sleep later and one would think that someone in the group would have changed their minds about being a part of the industry which requires long hours and a steady smile, but no…every single one of the participants said the same thing, “their career choice had been confirmed” The five finalists, Elvette Cronje, Micheala de Villiers,Raymond Cronje, Anderson Pillay and Sarina Naidu, had certainly proven their worth. They cleaned toilets, waited tables, smiled at reception and showed exactly why they were Top 5. But there was one in particular who shone in all areas. Helpful, eager to learn, intuitive and with a strength of character,quite rare in one so young. Heads of Department glowed when they spoke about him and staff members smiled with pride when they said his name. He would be an asset to the industry they said. This young man has beaten the odds of his past, put himself through school and

Sweet, Sweet Sugar

We’ve all listened to Celebrity Chefs going into rapture about Muscovado or Demeraro, but why the fuss? Well, firstly, I must say that ALL types of sugar are not good for you, ‘empty calories’ etc. BUT, if you’re going to use it, then the depth of flavour and divine aromas of these less refined sugars make regular sugar pale in comparison. More expensive and usually classified as ‘Specialty Sugars”, they definitely add a different dimension to your cooking and baking and offer a greater health benefit.

Lets explore the different types:

ALL raw sugar is slightly brown when extracted from the sugar cane due to the presence of molasses;

Regular White or Brown (Refined

sugar) White sugar has all the molasses removed and brown sugar is regular white sugar with a little molasses added back. Brown sugar has a slightly richer taste than white sugar. All purpose use.

Turbinado

Relatively unprocessed , unrefined and is crystallized through evaporation. Made from the first pressing of sugar cane and retains some natural molasses. The crystals tend to be large with an off-white colour. It has a light caramel flavor that makes it a good replacement for regular white sugar.

Demerara

Muscovado

Unrefined with a dark brown colour. Flavored from sugarcane juice left in during the production process. Has a sticky, moist texture and strong molasses flavour. Can be used just like brown sugar. Excellent in savory dishes like barbecue sauces and marinades.

Unrefined and with very large crystals. Similar to Turbinado with large, irregular grains and a light brown color. The sugar still has lots of natural molasses , giving it a ‘toffee’ flavour .A popular sweetener for teas and as a replacement for brown sugar. It works in most recipes that call for plain sugar, although the resulting cookies will sometimes have a slightly crunchier texture and cakes may have a less-fine crumb.

INGREDIENTS 1 saddle of venison, cut into steaks of 200g each

For marinade

1 tbsp ginger paste 1 tbsp garlic paste ½ tbsp salt 1 tbsp ground red chilli 2 tbsp lemon juice 2 tbsp Greek yoghurt 1 tsp garam masala

For the pickling sauce

Best to be served medium either with masala mash or pilau rice.

3 tbsp mustard oil ¼ tsp black onion seeds ¼ tsp cumin seeds ¼ tsp fenugreek seeds ¼ tsp fennel seeds ¼ tsp carom or caraway seeds 2 whole dried red chillies 1 bay leaf 2 medium white onions, finely chopped ¼ tsp turmeric 300ml natural yoghurt, stirred 2 green chillies, slit 100ml lamb or chicken stock 2 tsp salt 1 tsp sugar

METHOD How to make roast saddle of venison with pickling sauce 1. Marinate the venison steaks with ginger paste, garlic paste, salt, red chilli powder and lemon juice and set aside for 1 hour. 2. Marinate the steaks again by mixing in the yoghurt and sprinkling garam masala over the meat. Set aside for a minimum of 45 minutes before cooking. 3. For the pickling sauce, heat the mustard oil in a thick-bottomed pan and let it smoke. Take the pan off the heat to cool, then reheat the oil and add the black onion, cumin, fenugreek, fennel, carom or caraway seeds, red chillies and the bay leaf and let it crackle. 4. Add the onions immediately without letting the spices burn and cook on a slow heat till they turn pink. Add the turmeric and stir. 5. Now reduce the heat and slowly add in the yoghurt little by little, stirring continuously without letting the yoghurt split. 6. Keep stirring till the sauce begins to a boil; add in green chillies and the stock and cook further until the sauce is reduced and thick. 7. Now add the salt and sugar and the coriander leaves. The sauce is ready to be served. 8. To cook the venison, pass a skewer through the steak and cook in a hot tandoor oven for 5 minutes and rest in a warm place for another 5-8 minutes before serving. 9. Alternatively you could sear the steak in a hot pan for 3 minutes each side and cook in an oven at 175°C for 5 minutes and rest for 5 minutes before serving.

INGREDIENTS Serves 4 4 black bream fillets (or any white fish),pin-boned 1 tablespoon vegetable or corn oil 1 quantity of Roasted Aubergine, Tomato and Potato Crush For the kachumber 1/4 small cucumber, deseeded and cut into 3mm (1/8-inch) dice 1/2 carrot, cut into 3mm (1/8-inch) dice 1 tomato, deseeded and cut into 3mm (1/8-inch) dice 1/2 teaspoon salt 1 teaspoon sugar juice of 1 lemon 2 tablespoons good olive oil 1 tablespoon finely chopped fresh coriander For the marinade 1 teaspoon salt

1/2 teaspoon fennel seeds 1/2 teaspoon black onion seeds 1/2 teaspoon red chilli flakes

SEARED BLACK BREAM WITH ROASTED AUBERGINE, TOMATO AND POTATO METHOD 1. First make the kachumber. Place the diced cucumber, carrot and tomato in a mixing bowl. 2. Whisk together the salt, sugar, lemon juice, olive oil and coriander to make a dressing and mix it with the diced Vegetables. Check the seasoning. 3. Mix together all the ingredients for the marinade, rub them over the fish and set aside for 10 minutes. 4. Heat the oil in a large, non-stick frying pan, add the black bream fillets, skin-side down, and sear for 3–4 minutes, until well coloured underneath. 5. Turn and cook for another 2 minutes or until just cooked through. 6. To serve, place the Roasted Aubergine, Tomato and Potato Crush in the centre of each plate and put the fish on top, then drizzle the kachumber around the plate. DID YOU KNOW? A Graphic Designer by profession, and the owner of a small design and print business for nearly 15 years in Johannesburg, Martin swapped his printing machines in the rat race for dough machines in the country, moving to Clarens a little under 5 years ago. Martin is a self taught chef, who, with a small group of loyal locals who are only too happy to be used as guinea-pigs for all new offerings, has developed a reputation for wholesome, home cooked food bursting with flavour; beautifully presented, his food has set a new standard for fine dining in Clarens. The Graphic Designer turned Chef is a self confessed “Adriano Zumbo – Junkie” and loves to play with anything related to food gastronomy. His next mission is to build a green house in the garden behind the restaurant and guesthouse, to grow vegetables and herbs that are difficult to obtain in this part of the Free State. “Ideally I would love to have my own kitchen garden with everything from herbs to exotic veggies and micro herbs …. It would be great to play around in a hothouse, see what we could produce, and then change our menu accordingly.”

Split the sugar in half. Beat the egg yolks and half the sugar into a sabayon. Beat the egg whites and the other half of the sugar to a soft peak meringue Spread onto a tray and bake at 200”c for 8 to 10 minutes.

SIMPLE SYRUP 455g sugar 480g water Khulua to taste

Boil the sugar and water with a dash of lemon juice.

Add the liqueur and allow to cool.

COFFEE BUTTERCEAM 450g sugar 230g egg whites 120g water 680g butter 7 vanilla extract flavouring 15g coffee paste 15g brandy 1 tsp vanilla extract

Boil the sugar and water to a soft ball stage. Beat the egg whites to a soft peak stage and add the hot sugar water to the egg whites in a thin steady stream whilst still whipping in order to make an Italian meringue. Beat the mixture until smooth and until it has cooled to room temperature. Fold the meringue into the butter and smooth in the coffeepaste.

HARD GANACHE

900g dark chocolate chopped 480g heavy cream Heat the cream to just on boiling point and remove from the heat – add the chopped chocolate and stir until smooth Assemble the torte by layering the above components starting with a jaconde sheet. End with a layer of ganache on top.

PRAWN PATE WITH SMOKED SALMON AND MELBA TOAST 400g Frozen peeled prawns ½ tsp Chilli powder ½ tsp garlic salt ¼ tsp grate nutmeg 2 tsp grated lemon rind 1 tbsp lemon juice 3 tbsp butter 250g creamed cottage cheese lemon pepper seasoning Defrost the prawns and season with the chilli, garlic, nutmeg, lemon rind and lemon juice. Heat the butter until it begins to brown and add the seasoned prawns. Fry them until firm and pinkish and allow them to cool slightly. Put the cottage cheese into a food processor, add half the prawns and process until smooth. Add the remaining prawns and any butter that is left over. Pulse this mixture – you don’t want it completely smooth, you want to keep a bit of texture. Taste, and season with lemon pepper. Divide the mixture into small ramekin dishes and place, covered, into the fridge until completely cold. Garnish with salmon roses and caper berries, and serve with melba toast slices on the side.

Moroccan Lamb Shank for 2 INGREDIENTS 2x 400g trimmed Lamb shank 4 Whole Carrots peeled 1 Medium onion peeled quartered 1 red pepper (de-seeded) Cut into chunky squares 3 cloves of garlic (peeled) Hand full of celery leaves roughly chopped or 2 stalks chopped 6 Large button mushrooms (Whole) 2Tbsp Cumin (Jeera) powder 2Tbsp Smoked Paprika 2Tbsp Coriander Powder (Dhania) 1 Glass dry white wine 2 Tbsp tomato puree 1tsp Salt 1tsp Pepper ¼ cup Oil for frying Chopped Parsley to garnish

METHOD 1 heat about ¼ cup good quality vegetable oil in a heavy based pot, and fry the shanks until nicely browned all over. In another pan heat up some oil (2Tbsp) and brown the vegetables lightly, add the glass of wine and celery leaves or stalks and reduce to about half (about 5 minutes). Add the tomato puree and mix. Once done, set aside. When the shanks have cooled, mix all spices together and coat the shanks all over. Then fit snugly into an oven proof casserole dish, and pour over the vegetable wine mix, and top up with water to just cover the shanks. Place a piece of greased proof paper directly over the ingredients making sure that it touches the stock and meat. This is called a cartouche. Cover the dish with foil, and put in the oven at about 170 degrees for 1 ½ hrs – 2 hrs, or until the meat is soft succulent and tender. Drain the remaining liquid from the solid ingredients, and reduce in a pan until it becomes thick enough to coat the meat like a gravy. Check for seasoning and adjust to your tastes. Serve the shanks so that the bone faces upwards, and put some of the reserved veggies around the shank and cover generously with the sauce. Sprinkle with parsley and serve with our delicious boiled potatoes with butter and parsley.

Farmhouse Apple Crumble

FOR THE PASTRY

INGREDIENTS 2 cups cake flour ½ cup sugar 125g butter or full fat margarine 1 large egg 2tsp baking powder 5ml Vanilla essence

FOR THE FILLING

INGREDIENTS 1x 385g can apple quarters ¼ cup raisins ¼ cup chopped mixed nuts Cinnamon and sugar METHOD 1. Cream butter and sugar until pale and fluffy. Beat in the egg

2. Add the sifted flour and baking powder, and work to a manageable consistency 3. Press half the dough into a greased 20cm tart tin. Add all the filling ingredients and sprinkle with the sugar and cinnamon. 4. Grate the remainder of the pastry over the tart (Use the coarse side of the grater). 5. Bake in the lower half of the oven for about 40 minutes, or until nicely golden. 6. Cool completely and dust with icing sugar. To serve, warm individual slices in the microwave. Whipped cream, custard or vanilla ice cream will work equally as well, or just have all three.
