Exchange Rates • Against the $, sterling opened the month at 1.61 and is down at 1.57 as of 11th February.

• Against the €, sterling opened the month at 1.203 and ended at much lower at 1.173 as of 11th February.

Crude Oil and Fuel Crude oil prices rose this month as the global Purchasing Managers Index, a key indicator of global manufacturing activity, increased to 51.5 from December’s 50.1. A value over 50 is a sign of growing activity. Prices rose 5% for both light sweet crude oil on NYMEX US and Brent crude oil on ICE London. Wholesale fuel prices rose in Europe with heavy oil up 9%, petrol 8% and diesel 2%.

Fats and Oil Prices for most vegetable oils rose, driven by concerns about the possible deterioration of the weather in Argentina, the world’s largest soyabean oil exporter. Soyabean oil prices rose by 8% across most regional markets including CBOT in the US, Rotterdam and Argentina.

Rapeseed oil prices firmed by 5% in Rotterdam as global rapeseed oil production in 2012/13 is forecast to fall by 3% year-on-year to 23.5m tonnes. Despite good levels of global supplies, palm oil prices increased in Rotterdam by 7%, following the trend in other vegetable oil markets. Increases were also seen for sunflower oil and for olive oil in Spain. Palm kernel oil was also up in Rotterdam by 6%.

Wheat Milling wheat prices were 4% lower in Germany and Canada and were down by 2% on LIFFE Paris.

Dairy

Fresh milk prices were up last month, rising by 4% on the continent and by 1% in the UK due to continued tight supply as EU monthly milk deliveries have been below their year-ago levels since July 2012.

Butter prices rose marginally in Western Europe by 2%. Private storage aid (PSA) stocks of butter were reduced further to 18,000 tonnes by the second week of January, down from 133,000 tonnes in mid-August 2012.

UK cream prices rose 4% while EU SMP prices increased by 2%, keeping in line with world prices. WMP and whey prices were little changed but UK cheddar prices were up by 2%.

Cocoa Cocoa bean prices were unchanged on LIFFE, but fell on ICE by 2%, influenced by the stable progress of the cocoa marketing reform in Ivory Coast and expectations of lower demand from Europe and the US. Cocoa powder fell 4% in the UK, while cocoa butter rose by 2%.

Morris’s Quality Bakery BAKO North Western would like to congratulate, Morris’s Quality Bakery, of Coppull, Chorley, who recently celebrated their 100th Birthday.

It certainly is a great milestone and something to be very proud of.

Morris’s originally started as a Butchers in 1912 by Walter Morris, but it wasn’t until the 70’s that it became the business we know today. It was during this time that Henry Morris, who still runs the company to this day with his wife Christine, took their expertise in quality produce within their butchers and made them into pasties and sausage rolls. The new lines were such a big success it changed the direction of the business, and products such as barm cakes and soups were also added to diversify the company.

Slowly but surely they picked up larger contracts such as Leyland Motors and later the Park Hall Hotel before becoming the very well respected and recognised business, we know and serve today.

They have come a long way over the last 100 years, but their commitment to quality and innovation has never changed. They are rightly proud of their company and you can taste the pride in every loaf baked.

Luxury French Glacé Cherry Flapjacks

Easy to make, sweet and fruit snack y !

Ingredients:

Method:

Qty • Butter 905g • Demerara Sugar 543g • Condensed Milk 513g • Golden Syrup 317g • Honey 317g • Oats 1809g Glacé Cherries 377g • French • Sesame Seeds 145g • Blue Poppy Seeds 145g

• Melt all the ingredients; butter, sugar, condensed milk, syrup and honey in a saucepan on a medium heat, until they are fully melted and all the granular sugar has dissolved.

• Add the melted ingredients to the machine bowl containing the oats and seeds.

• Mix on first speed until clear.

• Add the French Glacé cherries, mix on first speed until clear – be careful not to over mix.

• Deposit onto prepared silicone paper lined sheet trays or tray bake foils.

• Bake at 180oC until golden brown.

• Allow to cool and portion in to desired slices or squares.
