In this February issue of Grande, we return to the theme of love and romance, fitting in a month during which we celebrate Valentine’s Day. They say there is someone for everyone, and for me, that someone is certainly Michael G., to whom I’ve been married for nearly 37 years. More than anyone, Mike understands – and seemingly has always understood – what makes me tick, the strange quirks and sometimes frustrating and inexplicable foibles that are an intrinsic part of my personality, what I like to call “the ghost in the machine.” He understands, for example, that I need long periods of quiet to refill my creative well, and he has never fussed – much – when I spend more than I ought to on books and art materials. More than anything else, Mike pushes me to be the very best version of myself and has for decades been my number one cheerleader. He makes me feel like I can do anything. We thought a lot about love and romance as we set out creating this month’s issue of Grande. One of the things we talked about was the novel and surprising ways people find to propose marriage, and Brian Argabright has brought us an interesting story on one such proposal from Del Rioans Scott Fooshee and his bride Kristen. We know you’ll enjoy their love story. We also thought about romantic dinners, and I want to thank our community of readers for suggesting their favorite places in Del Rio to have a romantic meal. We couldn’t pick a favorite, so we decided to visit all three of the restaurants suggested and talk to their proprietors about the food of romance. At Lou’s the heart-shaped pizza is on the menu all the time, as are the excellent steak dinners available at Cripple Creek. At Fragola’s Catering, a romantic meal could be something as simple as a cup of soup and a sandwich shared with your love or the lovely meal she created especially for Grande. I want to thank Lou Echavarria, Tirzah Starnes and Amanda and Polo Del Rio for accommodating us! I also appreciate the students in Chef Adan Cortez’s culinary arts program at Del Rio High School, who came up with a recipe for delicious Valentine’s Day brownies for this issue, then sent along a box of them for us to try. A Life of Adventure

Scott and Kristen Fooshee and their children Kate, Will and Jack enjoy a visit to the beach during one of their family outings. The Fooshees will celebrate 17 years of marriage this year, but it all started with an onstage proposal in April 2002.

E

very great love story has a beginning. For Kristen and Scott Fooshee, that beginning came on an October night in a now defunct dance hall in San Antonio and led to a marriage proposal that literally stole the show. “I knew that I loved her the second week that we were together. I probably knew the night that we met but I didn’t … I didn’t want to be honest with myself because that doesn’t happen, right? That happens in movies but it doesn’t happen in real life,” Scott Fooshee said about his then-fiancée, now wife, Kristen.

Scott and Kristen will celebrate 17 years of marriage in March. Along the way they’ve welcomed three children – Kate, Will and Jack – and have traveled around the world with Scott’s job as an air traffic controller for the United States Air Force. But while the couple’s love story has its roots firmly planted here in Del Rio, it actually began at Midnight Rodeo in San Antonio on Oct. 24, 2001. Kristen, who originally called Pennsylvania home, had moved to San Antonio for a teaching job. Scott, who grew up in a military family and moved often in his youth, was


stationed at Laughlin Air Force Base but called San Antonio home because that’s where he graduated high school. On that night, Kristen decided to go to Midnight Rodeo to learn to line dance. It just so happened that Scott was in town that day, visiting family, when they decided to go to Midnight Rodeo as well. The two met and a few weeks later, the couple began dating. She stayed in San Antonio and he remained in Del Rio, so there was a lot of driving back and forth for both of them. A few months later, Scott said he made the decision that he wanted to take the next big step in his relationship with Kristen. The rest of the details would fall shortly into place. In April 2002, Scott was a part of the The Upstagers’ cast as they presented the Western musical “The Singing Cowboy.” Kristen knew theater was one of Scott’s passions and made an effort to attend his shows. She always sat in the front row so Scott would see her and know she was there. As fate would have it, this particular show was going to feature plenty of special guests. Not only was Kristen going to attend, but so were her parents. In addition, Scott’s parents, his grandparents and other members of his family were going to be in attendance as well. Scott had already asked Kristen’s parents for permission to marry her, and they gave their blessing. Now all that was left was the big moment. And what better time to propose than on closing night of the show. “We had some of the saloon girls, which were Terra Wade, Cindy Spencer and Diane Hernandez, come out during curtain call and they said, ‘Before y’all go, we have more one thing,’ and they came off stage and went to Kristen,” Scott said. “They grabbed her and brought her on stage. I was in the back, because I wasn’t one of the leaders, so I came through the crowd, and while I can’t remember what I said, I know I went down on one knee. But, I had to stand back up because I was wearing cowboy jeans and they were really tight, and I couldn’t get the ring out of my pocket.” “I stood to get the ring out and said

something, I’m sure it was something cheesy, and asked, ‘Will you marry me?” Kristen’s reaction as far from the Hollywood reaction of screaming ‘Yes!’ and then throwing her arms around her new fiancé’s neck. “Because I’m on stage, in front of all these people, I had my hand on my face the entire time. I don’t know why. Maybe I didn’t want anyone to see me?” she said. Scott said Kristen’s hand just shook, but no sound escaped from her mouth, making the situation even more uncomfortable and nerve-wracking. “She never said anything. She was just shaking. I was holding the box and she wasn’t saying anything. And, like, all of these people were there and the whole cast was there, too, and I was like, ‘Oh no,’ and I stood back up, while she was nervous and I go, ‘I need you to say something,’” Scott said. “She never actually said yes. She just took the ring out of the box and stuck it on her finger, and she just kind of looked adorably terrified.” “And Rob Wade comes over and he goes, ‘Well I guess that’s a yes,’ and they all pulled out their six shooters, and they had blanks, and they just started shooting and everybody clapped,” Scott added. “I had no doubt she would say yes. Maybe it was confidence, maybe it was naiveté.” Kristen said it was the nervousness and the excitement of the moment, especially in front of their actual family and the theater folk who have become family ever since, that left her speechless. 12

Despite the lack of a verbal answer, Kristen did agree to marry Scott, and the two souls who met in a dance hall in San Antonio began a new life together as husband and wife on March 15, 2003. Since then the Fooshees have moved from Del Rio, moved back to Del Rio, and resumed life in the place they now both happily call home. Kristen said their marriage has been filled with plenty of ups and downs, fights and tears and laughs, but through it all they’ve maintained the belief that the secret to a long and happy marriage comes from three things – honesty, communication and a willingness to fight for the marriage. “You’ve got to fight for your marriage because there’s so many things that are going to come against you in life. Relationships are hard to begin with, but then when you are actually married to that person, you’re living together, and then you have children together, life changes and you’ve got to change with it. You’ve got to fight for what you truly love and what’s truly important. You’re gonna go through some lows, but you have an option to either run away from those lows or to fight until those highs come back again. Communication and being honest with one another but fighting the good fight. We’re in it to win it It’s not always going to look pretty and it’s not always pretty, but we’re in it to win it for ourselves, for each other and our kids,” Kristen said. “Being in love, that puppy dog love, only lasts for a while. You actually have to become love. You can’t just be in it; you have to be it. Be love to that other person,” Scott added.

And as for planning your special proposal, both Kristen and Scott had advice on that, as well. “Regardless of how the proposal is done, just looking your loved one in the eyes and forgetting everything else that’s around and remembering why you loved them and what you anticipate the future like to be with that person is going to determine your answer to that and your feelings to that,” Kristen said. “Regardless of all these people surrounding us, I

was so enthralled with the man in front of me and the man that was asking me this question. And then just be honest. Give an honest answer.” “As far as when you’re planning it out, my advice would be know the person that you’re asking. And if they’re okay with big gestures or if they just wanna be private. If you go too big and the person just wants to be private it could go terribly wrong,” Scott said. •

el Rio’s Cripple Creek Steakhouse and Saloon offers Valentine’s Day diners a trifecta of romantic experiences: great food, great service and a great location. Amanda and Polo Del Rio have owned Cripple Creek Steakhouse and Saloon, 5667 U.S. Highway 90, since 2014. Originally opened by George Aubrey, then owned and run by businessman Armando Riojas, Polo Del Rio called Cripple Creek “one of Del Rio’s iconic restaurants.” “When the restaurant was closed, it was kind of disappointing for the local people, knowing that such a nice restaurant in Del Rio was closing, so I saw the opportunity to buy the restaurant and reopen it and decided to do that,” Del Rio said. Several months before re-opening the eatery, Del Rio said, he visited with George Aubrey, the original owner. “He expressed happiness to know that his restaurant was going to be back up and running,” Del Rio said. He said he also worked with several members of the Aubrey family, after George passed away, on recipes from the original steakhouse. “I told them that my plan was to bring back the same atmosphere as he had back then,” Del Rio said. After about six months of planning and work, Cripple Creek reopened. Amanda Del Rio, who co-owns the restaurant,

also manages the eatery, along with the Del Rios’ daughter Bridget. The restaurant lends itself to a romantic evening out. Walking into the eatery is like walking into your very own cabin out in the woods. Cripple Creek’s walls are made of pine planks with the rough bark left in place, and the walls are hung with artwork depicting cowboys and horses and other Old West themes, along with historical black-and-white photos from Del Rio’s bygone days. Del Rio said a romantic meal at Cripple Creek could include a steak for two, including its iconic 32-ounce Tomahawk. “This is a very nice piece of steak. It’s really too big for one person, so it’s made to share with someone. For two people, it’s a good meal,” he said. “It’s a different atmosphere, not just the meal, but enjoying yourself. We have lots of different celebrations in there, especially anniversaries, and we also do a lot of birthdays, because of the nice environment,” Del Rio said. He said although typically Cripple Creek doesn’t vary its menu for Valentine’s Day, the kitchen does prepare a variety of special desserts. “It’s a very busy time for us, especially this year, when Valentine’s Day falls on a Friday,” he said. He said he is also waiting to arrange for live music on the patio for patrons can enjoy while they are

waiting for a table. “When we open, I had a vision of a fine-dining restaurant, and though it’s not really that, I took the time to select my dishes, my silverware. We wanted to elevate dining in Del Rio as much as we could,” Amanda Del Rio said. Amanda said she also tries to visit every table and speak with every diner about his or her experience. “It’s important for me to get that one-on-one with our guests. C

ooking and food are Tirzah Starnes’ love language. Starnes, owner and chef of Fragola’s Catering and The Kitchen, 105 E. Fourth St., said she started cooking seriously after her mother died. “I really started cooking because I noticed that all of us were gaining a significant amount of weight. We were eating out a lot, because although my dad lived here, he traveled a lot for work, and I was 17 and my sisters were 15, 13 and 10, so we just ate out all the time because although I knew how to cook, I didn’t really do it,” Starnes said. She said she would watch The Food Network and tell herself, “I could do that.” She recalls the first real dinner she ever cooked – hamburger steak and mashed potatoes for her father and a friend of his – was a disaster. “I burned the steak, and everything was too salty, and I felt just awful, because my dad and his friend were saying this is so good, this is so good, and I knew it tasted terrible,” she said. Starnes has come a long, long way from that first failed meal, and she has never given up on her vision. “Cooking is how I express myself. Cooking makes me happy. There’s a sign in my kitchen here (at Fragola’s Catering) that says, ‘This is my happy place.” What I do is my happy place,” Starnes said. “When I first decided this is what I wanted to do, there was a sign my mother-in-law gave me when we bought our house,

and it says, ‘Pursue your happiness,’ and I thought about what makes me happy: God, my family and cooking,” Starnes said. “Cooking makes me happy, so I decided to pursue that. I always knew I wanted to be in the service industry. I wanted to own a restaurant. I knew I wanted to cook. I knew I wanted to cater for people, because it makes people’s lives easier, and there is so much that goes into that. “I knew I had to do something that would help my family by making an income, and I wanted to do something where I would still be able to be mom to my kids. That was always my number one priority, because we had a mom that was mom, and she was there for all the things, and that was important to me. I needed to be that for my children, because I think children deserve that from their parents, but I also wanted something that would be meaningful to me and to create something I could pass on to my kids, where they could one day say, ‘I remember mom busting her butt in that tiny little kitchen.’ And making it into something, and I hope one day they can look back and say that,” Starnes said.

Starnes’ children will also be able to look back one day and see how their mother followed her dreams. Once Starnes made her decision what she wanted to do, there was no turning back. “For the first three years of my business, it was just me in my little bitty home kitchen, and I made a business and then Kendall, my sister, who was living in San Antonio, and I was about to open up The Kitchen, and I told her if she moved to Del Rio, I’d have a job for her,” she said. Starnes said one of her favorite outlets for her creativity is creating home dinner parties for 15 to 20 guests and three to five courses. “It’s like fine dining, but in your own house,” Starnes said. Fragola’s Catering and The Kitchen was also one of three local eateries nominated by Grande readers as great places to enjoy a romantic dinner. We asked Starnes to create a romantic meal just for the magazine. Starnes selected pan-seared scallops with a bourbon cream

sauce served on a bed of spicy collard greens atop smoked gouda grits. For dessert, she served a white chocolate raspberry mousse topped with fresh raspberries. “This is very Valentine’s Day inspired. I picked scallops because they’re just sexy, and you can’t get scallops here. Also, they’re super-easy to make. You just pop them in a sauté pan with a little olive oil, and they caramelize themselves, basically,” Starnes said. Starnes said she elected to serve the elegantly-seared scallops with collard greens and grits. “Grits and collard greens are very everyday foods, comfort foods, but here they’re elevated. The ingredients are the highest quality, so they’re a high-quality comfort food, and that’s really what I’m about and what I want people to enjoy,” she said. This year for Valentine’s Day, Starnes said, she is planning a special lunch menu at The Kitchen. “It won’t be one of our normal lunches. We’re planning something a little more upscale,” she said. •

alentine’s Day usually means dressing up and dining at whatever is deemed a romantic restaurant by the couple. One pizzeria celebrates the holiday by offering a heart-shaped pizza. Lou Echavarria opened Lou’s Woodfire Pizza in 2014. He offered the heart-shaped pizza as a way to tie in with Valentine’s Day, but it is also requested by customers throughout the year. When a person walks into Lou’s Woodfire Pizza, they see a welcoming restaurant with employees on top of their tasks and making sure the clients are taken care of. Even the owner, Echavarria, works behind the counter on many of the pizzas, especially during busy hours. Even though Echavarria can appear to be a quiet and solemn person, that’s just him staying professional on the job. When he’s able to find a bit of rest time, Echavarria lights up with joy and loves talking about his business. Echavarria’s passion for pizza began when

he was a child and the Teenage Mutant Ninja Turtles, a popular cartoon at the time, was airing on television. “It (the pizza) was right in your face. You’d see it all the time,” Echavarria said. Yet, Echavarria didn’t start out looking to have a pizza restaurant. Initially, Echavarria left to San Antonio and attended San Antonio Community College, later graduating from the University of Texas at San Antonio with a degree in education. But his passion was pizza. “To me a slice and a soda can give me enough energy for the day … I’ve always loved pizza,” Echavarria said. Readers would think a pizza owner would get sick of seeing or eating pizza, after working all day, yet Echavarria can’t get enough of it. Pizza is like tortillas with butter to Echavarria. “I love pizza that much, I probably have marinara sauce in my blood. That’s how much I love pizza,” Echavarria said. So how does the heart-shaped pizza come into play? Simple, Echavarria loves to

share his passion for pizza with all his customers. “It came from love of making pizza and wanting to give my heart and energy out to everybody,” Echavarria said. Each pizza is crafted and shaped by Echavarria and his employees, thus no two ever look the same. The restaurant is booked with requests for the heartshaped pizza the week of Valentine’s Day, according to Echavarria. Yet, the restaurant already began receiving requests as early as January 9 this year. The pizza not only is covered with the customer’s preferred toppings, but Echavarria and his team will try to experiment by adding messages, such as “I love you” or “Be mine”. There’s even a possibility some Del Rioans have used the heart-shaped pizza to propose to their significant other. Echavarria couldn’t confirm if it was true, but the idea of that happening brought a giant smile to his face. “It would be super flattering if they did (propose using the pizza)” Echavarria said. Some other requests Echavarria has received include making a Pokéball, an item from Japanese video game and cartoon franchise Pokémon, a broken heart and more. “A lot of people have creative ideas and sometimes it’s better when it’s an idea,” Echavarria said. Echavarria has a built a base of customers that remain loyal to his pizza and he shared a story of one such customer. One of Echavarria’s customers, who is situated in New Mexico, went all the way to New York to learn the trade, with plans of purchasing his oven as well. Upon returning, the customer told Echavarria the pizza didn’t taste the same and preferred Echavarria’s pizza. Echavarria is a virtuoso when it comes to pizza and the time he dedicates on each order, customer service and the overall experience are a few of the reasons people come going back. Whether or not the heart-shaped pizza is meant for a significant other or it’s meant for a family relative, Echavarria is ready for the high demand. •

Anita Pruneda takes the idea of love and romanticism to a different level, by giving Del Rioans unique and one-of-a-kind experiences. Pruneda first began in the event industry as an intern during her college years at the University of Texas at Austin. She graduated with a degree in public relations. She focused primarily on events for the university and as her experience grew, so did her passion for those events. “I’ve always liked the organizational aspect and I’m really creative, so it’s like marrying the two,” Pruneda said. Organizing events has given Pruneda the opportunity to challenge herself, while still being creative and making memorable

moments. “I’ve been in the business for nearly 10 years. I got my start in Austin,” Pruneda said. Pruneda spent eight years working with a luxury wedding company, before coming to Del Rio, and now has dedicated two years to Del Rio clientele. Organizing events in Del Rio is completely different to organizing events in Austin, according to Pruneda. The Austin scene gave her the opportunity to organize corporate and nonprofit events, whereas in Del Rio it’s primarily social events, such as weddings, quinceañeras and holiday parties. The biggest event she has done in Del Rio was a quinceañera that consisted of almost

650 people, according to Pruneda. Pruneda works on 30 to 60 events per year. she said. The idea of the one of kind dinners sprouted as an opportunity for Pruneda to keep her creative juices flowing in between bigger events. “I think these bigger events take from 12 to 14 months, a minimum of six months. When you’re working on a project like that for so long, you can only be creatively pushed (so far),” Pruneda said. Doing these smaller events has also given Pruneda the opportunity to meet more clients and tailor them more to the person’s wants. “I really wanted to tailor these personalized experiences for the client,” Pruneda said. Working directly with the clients, the personalized dinner gives Pruneda the opportunity to see everything is made to the client’s liking. “When you see the smiles on their faces, and they’re laughing … It’s rewarding to see the work we put into those smaller events can be directly enjoyed by the client,” Pruneda said. Yet, before a small event is brought to life, Pruneda asks the clients as many questions as possible, such as how they met, their favorite food, favorite place together and more. One such memorable moment was the event Pruneda organized for Wendy Rodriguez and Jesse Rodriguez. The moment included a dinner by Fragola’s Catering, a cake by Sylvia Gonzalez, photography by Haus of Londyn; all set outdoors by the water or near a private residence in Spring Lake Estates, Pruneda said. The bride asked Pruneda for something beautiful to recreate the magic of their wedding night, whereas the husband just wanted his wife to feel lovely, while they both enjoyed a romantic dinner.

“They love being outside, they love a really beautiful dinner and they love music,” Pruneda said The couple also enjoyed listening to a playlist of their favorite songs, including the song from their first dance. Pruneda tries to incorporate live music when possible, including some local musicians such as Peter lll and Angel Baena. The busiest time of the year for personalized events is after the holidays,

according to Pruneda. She explained this is due to engagements taking place during the holidays, November through December, people want to celebrate those engagements during January and February. “We create custom, personalized experiences for these clients,” Pruneda said. Del Rioans need an open mind, when meeting with her, but also be as creative as possible while trying to stay within their own budget. •

E

very month we try to feature a recipe that is significant to Del Rio. I reached out to Career and Technical Education Culinary Arts Instructor Adan Cortez and his students, because they have been making waves recently with their baked goods. Although the recipe they used is from AllRecipes, courtesy of C. Nelson, they put dedication and time into making this treat perfect for Valentine’s Day. It’s easy to do and repeat at home, because sometimes the best things in life are the simple things.

Ingredients • • • • • • • • •

1 cup butter, melted 2 cups white sugar 1/2 cup cocoa powder 1 teaspoon vanilla extract 4 eggs 1 1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 cup walnut halves (optional)

Method

• Begin by preheating the oven for 350 degrees Fahrenheit, and make sure to grease a 9x13 inch pan. • Now combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder and salt. Spread the batter into the prepared pan. You can decorate the batter with the walnut halves during this step, it is optional so it can be skipped. • Place pan into the oven and bake for 20-30 minutes or insert a toothpick to determine if it’s ready. The toothpick should come out with crumbs, not wet, when the brownies are done. • After it’s finished baking, place on a wire rack and let it cool. Now you can enjoy the treat and share with your loved ones.

Classic CHERRY VANILLA Milkshake Recipe and photo by KAREN GLEASON

I

s there anything more romantic than sharing a milkshake with your sweetie? We’re not sure, but we picked a classic cherry vanilla milkshake to prepare for this month’s drink, so you could make one and share it with the person you love best this Valentine’s Day. The key to a great milkshake is simple, high-quality ingredients.

Ingredients

Method

• 1 cup dark, sweet frozen cherries or • 1 6-ounce jar of maraschino cherries without stems, drained • 1 cup vanilla ice cream (We picked Blue Bell Ice Cream Homemade Vanilla) • 1 cup organic whole milk • Whipping cream, coarse sugar sprinkles or red-hot candy hearts for garnish

• Place cherries, ice cream and milk in blender jar. You can vary the recipe: For instance, if you like a very cherry taste, add more cherries; fewer if you only want a hint of cherry. • You can also make the mixture more liquid by adding more milk or more like ice cream by adding less milk. • Blend thoroughly until all ingredients are combined and the mixture is a thick liquid. • Pour into a pretty glass – thank you, Rosa Garcia! – and garnish as desired. • Serve with two straws. • Any leftover liquid can be stored in the refrigerator.

Ruben and Sandy Mora

Once in a while in an ordinary life, love gives us a fairy tale. I was fortunate to find that fairy tale in Ruben and Sandy Mora’s story. They are absolutely perfect for our February’s Grande theme of “Love is in the Air”. While the Moras are definitely an inspiring and gorgeous couple, they are also the epitome of a loving and dedicated couple. I want to thank my good friend Mayte Casas for all the help to make this possible, it was such a beautiful experience.

Origins Dr. Mora was born in San Antonio, Texas but now considers Del Rio his home. He graduated from the University of Texas Health Science Center in San Antonio and moved to Del Rio in 2008 to practice general dentistry. Sandy was born in Mexico City and relocated to Del Rio in 1984. After graduating from Del Rio High School she attended UTSA and went to begin a teaching career at a private school in San Antonio until 2008 when the couple decided to move to Del Rio. The Moras love spending time with their five daughters, family members and friends. “Ruben’s sister actually lived here, and he had been visiting her since he was in high school. Sandy said.


“I have a pair of diamond earrings Ruben gave me that I wear daily. I had a pair as a young adult, and lost one of the earrings, so he got me a new pair and made me promise to never lose these,” she jokes.

“My wedding ring was “upgraded” on our 7th anniversary. When he first proposed he was in dental school and I was teaching at a Montessori School, so we didn’t have any “extra” for an engagement ring. Ruben always wanted to get me a ring on his own because my mom actually gave him the first diamond he proposed with. Together we chose the one I wear now, and will hopefully wear for the rest of my life.”

Fashion Icon: “Ruben, I don’t think has one. He admires men of intellect and faith, not so much fashion. Me, not sure, not any one person in particular, I like piecing things together and creating my own style,” Sandy said. Favorite Shops: Their taste is simple yet elegant, and they usually shop at Nordstrom and Lululemon. How did you meet? “Ruben and I met through a mutual friend from Del Rio, Monica Fuentes. She attended St. Mary’s with Ruben. I was out one evening with friends and he came to say hello to Monica. From that moment on, we never took our eyes off of each other. We were married, just nine months after we met, and are about to celebrate 14 years. We definitely struggled financially at the beginning; we even lived with our parents for the first year. Mainly because he was still in school, and I was teaching at a private school, like I mentioned before,” she recalled. “We have always supported each other unconditionally and through the years we have established a strong, respectful, loving relationship.” Sandy’s tone is so warm and genuine as she continues to recount their very special story: “Ruben proposed at Holy Spirit Catholic Church, where we later married. I do not have a relationship with my dad, so Ruben confided to me that since he wasn’t able to ask my dad for my hand in marriage he wanted to ask me in front of our Heavenly Father. To this day it still melts my heart to think about it. I am grateful to be married to someone that values their faith and incorporates it into his daily life. We are raising our girls, not by imposing our faith and values upon them, but hoping to guide them with them.” “You know, I have prayed for my husband since I was 12. A few months after my dad left I began to pray for him each day. I’m just so happy we found each other” she continues to share. “We love to travel! 1-2 trips a year with the girls and 1-2 trips alone. We think the best gift we can give our children is a happy marriage so we take those few days to reconnect and recharge. This April we are taking the girls on a cruise, and we are all very excited!!!” •

“This was my first gift from Ruben. We had just met when he went on a backpacking tour of Europe. He brought this back from Italy and I was touched that he thought about me while being so far away”

S

onia L. Soto believes anything is possible. Soto, the owner and manager of Happy Balloons, 510 Veterans Blvd., started her business from scratch just a few months after she moved to Del Rio from her hometown of Ciudad Juarez, Chi., Mexico, more than 20 years ago. “When I came here, I said, what am I going to do in this town? I used to be in business administration, with the tourism industry. In tourism, we do a lot of hospitality work. I said to myself, I’m really going to get bored here, so I asked my husband to try to transfer, but he said he had to be here at least four years,” Soto recalled. Three months after moving to Del Rio, with only a $20 bill in her wallet, Soto borrowed an additional $100 from her mother and set out to bring her vision to life. “It was hard for me in the beginning, a new town. I didn’t know anybody. I didn’t speak English. But my backpack was full of dreams. I believe everything is possible. So I saw these flower shops here, and I had always dreamed I could have something like that. My dream was always to do what I liked to do. I was not thinking about money. It was to do crafts, flowers, table decorating,” Soto said. She used some of the money she borrowed to have business cards made in Mexico, and she started handing them out wherever she went. “My first stop was the bingo, and I started giving cards to people. I said, ‘I know how to do balloons, I know how to do this and that, I can run tablecloths.’ So that’s how it started. I was doing everything out of my house, and with the money they gave me as a deposit, I was investing to get the party done, and put it all back into the business,” she said. “The next week I had three customers in my house and then four, and then five, and then six, seven, eight, nine, 10, and one day my husband said, ‘Are we going to have customers every day? Have you thought about getting an office?’” she said. Soto said she moved the Happy Balloons operation out of her home after only a few months. Happy Balloons has been at its current Veterans Boulevard location for the past three years. For 10 years, her business was located farther south on Veterans Boulevard, and she has been in two other locations during the business’ 21 years in Del Rio. “My business, I’m a full-service florist, and I specialize in weddings, quinceañeras and any social events where flowers are needed,” she said. Soto helps her customers select the types of flowers needed for their event, designs the bouquets and delivers them to the

event venue. “You can tell me the theme of your wedding or event, and I will design something for you. I have the vision to create what you are thinking,” she said. Soto said she can also coordinate the event itself. “If you’re going to get married and you hire me, the only thing you have to bring is the groom,” Soto joked. “I love what I do. For me, it’s like I’m not working,” Soto said. Soto said flowers are the perfect gift for Valentine’s Day, but said there are many alternatives to the traditional red roses. “Flowers have their own life. There is research that shows that getting flowers changes your mood, your body chemistry, your aura, everything. No other thing gives you that,” Soto said. “Ninety-five percent of the customers who come for Valentine’s are men, and I’ve discovered that they don’t always know what women like. They think that we only like red roses, and that’s not necessarily true,” Soto said. One dramatic and sensual alternative to roses is the Stargazer lily. “Stargazers are very unique flowers because they have a wonderful smell, and they come in Valentine’s Day colors, red, hot pink, magenta. It’s a very nice flower,” Soto said. She said peonies, tulips and flower arrangements containing a variety of flowers could also be substituted for an original and one-of-a-kind Valentine’s bouquet. Soto said if roses are selected, she recommends trying them in different colors, like magenta. “I have more than 25 varieties and colors of roses for clients to choose from,” she said. Soto said she has kept her vision alive through the two decades she has been in business here. “One of the things I want to say is that I am in this business thanks to God, thanks to my husband, Juan Soto, and I want to mention I have always worked ridiculously hard to do my best,” she said. “I am also blessed by my wonderful customers, who have supported me through praying, renting, referrals, buying and thank you to Del Rio. I love Del Rio now, and to my teammates. I couldn’t be here without my team. My vision became reality,” Soto said. “One of the things I always tell myself is that everything is possible. I tell my employees that. This is a huge country, and you can do anything here. In this country, the door is open for whoever wants to take that step, so that’s what I did,” Soto said.•

Last Look Happy Valentine’s Day or Single’s Awareness Day! Whether Grande readers choose to celebrate with a significant other, family, friends or just by their lonesome, the feeling of love and friendship is in the air. Personally, this month was a time to enjoy the family I have before moving on to the next major chapter of my life: marriage. Just the thought of marriage makes people assume my generation and younger prefer to stay single. Yet, it is thanks to the older generations that we grew up believing in true love. Sure, financial stability plays a role in today’s society, because let’s face it, Prince Charming isn’t randomly going to walk up to your house. There’s a secret love hidden in Del Rio and some of the proposals Del Rioans have done showcase that. I remember watching the Mamma Mia! proposal, and yanking Brian Argabright’s arm to ensure he got a photo. Unfortunately, he did not, but that moment reminded me of all the effort Joseph Alarcon put into proposing to me. Del Rio has a rich history of locations, and food, for date nights. Alarcon’s and mine is trying out a new recipe, and hopefully not burn the kitchen down. Some will choose Lou’s Woodfire Pizza and their special heart-shaped pizza, and others may opt for a more personalized experience with Anita Pruneda. Overall, enjoy the moment of happiness. It’s one day out of the whole year, but Del Rio carries that sense of kindness every time people arrive for the first time.
