Southwestern Pico de Tuna INGREDIENTS: 1 (6 ounce) can tuna in water, drained ¼ cup red onion, chopped ½ cup tomatoes, chopped 1/3 cup corn 1/3 cup black beans 1/3 cup green bell pepper, deseeded, chopped ¼ cup minced cilantro ½ lime, juiced Tsp cumin Salt and pepper to taste DIRECTIONS:

In a medium bowl, combine all the ingredients together. Toss well to blend and allow to chill before serving. Serve with warm corn tortillas or baked tortilla chips (*see baked tortilla chip recipe below). Recipe: adapted from allrecipes.com *Baked tortilla chips: 12 corn tortillas 1 Tbsp canola oil Salt to taste Preheat oven to 350 degrees. Brush both sides of tortilla w/oil. Stack tortillas and cut into triangles. Spread single layer on a baking sheet. Season w/salt and bake for 12-15 minutes or golden brown and crisp.
