Durch die redaktionelle Arbeit konnte das DELUXE-Team über die Jahre ein umfangreiches Adressverzeichnis zusammenstellen, das heute unseren Kunden für Business-toBusiness-Kontakte, Eventorganisation und Reiseplanung zur Verfügung steht. Erwähnenswert ist hier die Kooperation mit der Erlebnisplattform jochen-schweizer.de, für die wir derzeit Abenteuer auf den Balearen vorschlagen. Gemeinsam mit Sternekoch Holger Stromberg konnten wir, passend zur Jahreszeit, die Marke PureNice auf Mallorca einführen. Das trendige Speiseeis aus rein natürlichen Zutaten lässt sich auch mit Soja- und Reismilch zubereiten und wird bereits in ausgewählten Restaurants serviert. Weitere Partner sind im Gespräch. ummer at last! It is the start of the long summer holidays, and the influx of tourists and the high season in the Balearics has begun. New businesses on the Island mostly choose Easter as the best time to open. Like RBC Santa Ponsa, whose opening party was covered by VOX TV for their series ‘Goodbye Deutschland’. From June to September there are lots more social events to look forward to. The golf tournament with Heiner Lauterbach, the Rolls-Royce Come Together, and live concerts by international artists such as Supertramp singer Roger Hodgson are all excellent reasons to pay a visit to the Island, quite apart from the sun, sea and sand. You will find the most important dates under Events on the magazine’s Facebook page. Also now available online is the new sitcom from Bettina Zimmermann and Kai Wiesinger, and Jochen Horst’s latest project fatcherry.de. We talked to Sonja Kirchberger, too, about her role of cook – on stage at the Bad Hersfeld Festival. Over the years the DELUXE team has built up through our editorial work an extensive address book. This is now available to our clients for business-to-business contacts, events organisation and travel planning. Here we ought to mention our collaboration with experience website jochenschweizer.de, for which we are currently recommending adventures in the Balearics. Together with Michelin-starred chef Holger Stromberg we were able to introduce PureNice to Mallorca, just in time for summer. This completely natural ice cream, free from artificial additives, also comes as a vegan version made from soya and rice milk, and is already being served at selected restaurants. Further outlets are under discussion. We will bring you more about this in the autumn edition of DELUXE.

Copa del Rey 1st – 8th August 2015 The 34th Copa del Rey Audi Mapfre, one of Mallorca’s most prestigious regattas, begins on 1st August. Up to 2011 King Juan Carlos of Spain was one of the most prominent participants. It has not yet been confirmed, but the awards ceremony on 8th August may be held in his presence.

Club Yachting Life International (CYLI) Regatta 2015 4th – 7th June 2015 The 27th CYLI Regatta will take place at the beginning of June. Dahm international’s reorganisation of the event has made it ‘wind and weatherproof’ for future years with a very attractive programme of events on land, and competitive sailing legs. The 2015 route goes from Formentor via Port de Sóller to Camp de Mar. 4. – 7. Juni 2015 Die 27. Ausgabe der traditionellen CYLI-Regatta wird Anfang Juni ausgetragen. Moros y Cristianos in Pollença On 2nd August the festival in honour of the patron of the town, La Mare de Déu dels Àngels, is celebrated with a mock battle between Moors and Christians. Shortly before dawn, around 5am, the Pollença town band plays the Patrona anthem ‘L’Alborada’ in the market square. Am 2. August findet in Pollença die nachgestellte Schlacht „Moros y Cristianos” statt, anlässlich der Feiern zu Ehren der Ortspatronin La Mare de Déu dels Àngels. At the beginning of June, Michael Gleissner, General Manager of Procar Automobile Rolls-Royce Motor Cars Cologne, is inviting car enthusiasts to the marina in the south-west of the Island, to show them two vehicles from the current range. In addition to those in Sylt and St. Moritz, a ‘Come Together’ in Mallorca has long been part of Michael Gleissner’s events calendar. For the Peter Maffay Foundation he committed to canvas a new interpretation of the dragon Tabaluga, and he has also donated work to the dolphin aid foundation. This year a painting by Kordes is one of the lots to be auctioned at the gala evening after the golf tournament. Juni dann wird das Rolls-Royce Come-together 2015 gemeinsam mit Atlantic Yacht Partner in Port Adriano stattfinden. Der Pop-Art-Künstler Horst Kordes, ein Schüler und Landsmann des Österreichers Friedensreich Hundertwasser, wird dort seine Arbeiten zeigen – eine Premiere auf Mallorca. Horst Kordes wurde Ende der 90er Jahre bekannt und war bereits auf Ibiza mit Werken im Rahmen einer Privatausstellung vertreten. Zugunsten der Peter Maffay Stiftung hatte er den Drachen Tabaluga auf Leinwand neu inszeniert, und auch für die Stiftung dolphin aid war Kordes bereits tätig. In diesem Jahr dürfen sich die Teilnehmer der Tombola nach dem Turnier auf Son Gual über ein Gemälde des Künstlers freuen, das zur Versteigerung gelistet ist. rench graffiti artist Zevs displays the influences of his new life in Mallorca in very personal works of art under his real name, Aguirre Schwarz. Danish curator Toke Lykkeberg has transformed a number of exhibition rooms at the CCA art centre in Andratx into darkrooms that provide views of Zevs’ art only under special lighting conditions. In the entrance visitors are greeted by sandy beaches and palms in high-gloss reworkings of David Hockney’s A Bigger Splash that the artist has furnished with comments of social criticism. The exhibition reveals the intricate dynamics of people, power, possessions and pleasures that have facilitated the social ascent of Aguirre Schwarz – and his ultimate alienation from the mundane world of art, culture, politics and anything that has disturbed the peace of mind he has sought for so long. This exciting exhibition is one of the most highly regarded at CCA Andratx. It will run until Andratx 15th July 2015.

Der französische Graffiti-Künstler Zevs zeigt die Einflüsse seines neuen Lebens auf Mallorca in sehr persönlichen Arbeiten und unter seinem richtigen Namen Aguirre Schwarz. Einige der Ausstellungsräume des Kunstzentrums CCA in Andratx wurden dafür von einem dänischen Kurator in Dunkelkammern verwandelt, die nur bei besonderen Lichtverhältnissen den Blick auf Zevs Kunst gewähren. Im Eingangsbereich empfangen Sandstrände und Palmen von David Hockneys A Bigger Splash in Hochglanzbearbeitungen die Besucher, die der Künstler mit sozialkritischen Kommentaren versieht. Die Ausstellung entfaltet die komplizierte Dynamik der Menschen, der Macht, des Besitzes und der Freuden, die Aguirre Schwarz den „sozialen Aufstieg” ermöglichten, und seine ultimative Abgrenzung von der mondänen Welt der Kunst, von Kultur, Politik und von allem, das seinen lange gesuchten Seelenfrieden gestört hatte. After 16 years of thrilling audiences around the world, the Orquesta Buena Vista Social Club® is set to bid ‘Adios’ with a farewell world tour, including a concert at the marina on 23rd July. The Cuban band grew out of the 1997 release of the Grammy-winning, best-selling album Buena Vista Social Club, and its line‐up continues to include a number of the original artists featured on the landmark recording and film. On 4th August Roger Hodgson (formerly of SUPERTRAMP) will delight Port Adriano with a very special concert. He is the singersongwriter behind some of the most iconic songs of his time, such ‘It’s Raining Again’, ‘Dreamer’ and ‘Logical Song’. Just four days later, on 8th August, Los Secretos will set the final highlight with their live show at the marina. This iconic Spanish pop group from the 80s will play their best-known hits as well as songs from their new album.

Owner Emilio Ingrosso already manages several restaurants on the Island, all serving Italian cuisine, and of which Ribello in Palma’s old town is the best known. In the eighties, Ingrosso had a very successful career as a music producer in Sweden, which explains in part why it is very difficult to get a table there without a reservation. His new restaurant La Perla has a leafy green terrace for sunny days and on Sundays it serves brunch from 11am to 4pm serving focaccia, mini burgers and popular Italian pasta dishes such as lasagne with dried vegetables. For those with a sweet tooth, there are pancakes or waffles with fresh berries. Closed on Mondays.

Golf Son Gual Clubhouse The clubhouse at Golf Son Gual is of course primarily a great place for players to relax. The terrace is situated at the 18th and last hole, and guarantees views of thrilling duels between golfers at the end of their round. The menu of new restaurant NOLA in Santa Catalina describes its cuisine as Cajun-Creole (NOLA is short for New Orleans, Louisiana). It is the only one in Palma and for that alone it is worth a visit!

Situated on Cala Agulla, the Buddha lounge on the roof terrace of the restaurant is the perfect place to enjoy brunch, pizza or pasta. You will also find salads, fruit and wraps on the menu.

It is all about experiencing things for yourself. Jochen Schweizer loved adventure from his earliest childhood and quickly found his calling. He appeared as a stunt man in Willy Bogner’s 1990 action film ‘Fire, Ice and Dynamite’ – with a bungee jump from 220 metres. Schweizer popularised in the years that followed what was at the time an emerging sport, with increasingly daring performances, until in 1997 he finally made it into the Guinness Book of Records with a bungee jump of 1,000 metres, the longest bungee jump of all time. Today you will find bungee jumps among the more than 1,700 experiences on his website www.jochen-schweizer.de. Since 2004 it has offered both fast and furious, and de-stressing experiences. From house running with work mates to a spa day with your partner, there is something there to suit everyone. The loft-style headquarters of the company occupies three floors of a former Munich factory and houses more than 250 employees who are

constantly researching new extreme challenges to experience yourself or to give as a gift – “You are what you experience”. Meanwhile, Schweizer himself has been developing innovative concepts for entertainment shows and theme parks. Two major projects are currently under construction. The ‘Jochen Schweizer Erlebniswelt’ near Munich will offer indoor surfing, indoor skydiving, and outdoors a high rope climbing garden – 365 days a year, with free entry. It is due to open in 2016. And in Berlin, VOLT, a combined shopping centre, hotel and theme park with surf waves and a wind tunnel, is set to open in 2018. As one of the investors in ‘Die Höhle der Löwen’ (The Lion’s Den), the German version of ‘Dragons’ Den’, he passes on his business expertise. Season two of this award winning VOX series is currently in production. The adventure maker talked to DELUXE about experience holidays and what sports are popular at the moment.

Herr Schweizer, are there any new fashions in sport that we don’t know about yet that are going to catch on in the near future? On our website we now offer more than 1,700 experiences, 700 of which are sports related. Whether an experience will really ‘catch on’ as you put it, is very difficult to predict in advance. For years our top sellers have been the tandem parachute jump, the tandem paragliding flight and the candlelit dinner for two. But there are some weird and wonderful ideas, especially in the adventure and sports categories, like ‘Flyboarding’ for example. Here you are propelled up out of the water by water rockets strapped to your feet with jet nozzles that provide the thrust. However, when we purchase new experiences, setting new trends is not our main aim. We want above all to provide our customers with what they want and give them ways in which to spend their leisure time. What new sporting activities are a good investment for young companies? Where do you see potential for growth? Generally speaking it is rather difficult to look at a trend in terms of investment. When considering an investment three factors play a crucial role. First and foremost is the entrepreneur and the team behind the idea. Above all, entrepreneurs must be passionate about their ideas and be able to convince investors of their commitment and their competence. Secondly, there is the potential size of the market. There can only be potential for growth if entrepreneurs get to know their market in advance. A third decisive factor is a sustainable, comprehensive concept that is easily scalable and can last beyond the initial trend.

With two unusual experiences under development and a television programme on the air, 2015 is going to be a year of expansion for Jochen Schweizer. It is not for nothing that the group of companies that bear his name stand for a love of adventure.

The Lindner Group, which also has a hotel in Mallorca, will be opening one at VOLT Berlin, too. What advice would you give hotel operators looking for new leisure concepts for their guests? Where is the trend going? We are delighted to have partners like Lindner on board. At VOLT Berlin, the hotel group will be building the prototype for its new lifestyle boutique hotel concept. With its high-quality interiors and the latest in communication technology, it captures the urban lifestyle of Berlin

and carries forward the VOLT spirit of adventure. Particularly in the current climate hotels are trying to make their guests’ stay as exclusive and enjoyable as possible, and it is rare to find a hotel without a spa. With the VOLT Berlin concept we are going a step further. Guests will not only be able to enjoy the firstclass ambiance that typifies a Lindner Group hotel, they will also have the opportunity to surf a standing wave or fly in a wind tunnel in the mall.

Are you offering experiences in Mallorca too? Yes, we are currently in the process of significantly increasing our portfolio of experiences in Mallorca and we have already purchased a large number. You will soon be able to find them online. You know the Island from previous visits, what would you recommend? What should everyone have experienced in Mallorca at least once? An experience from Jochen Schweizer, of course (he laughs). The great thing about the

Island is that there are so many different sides to it, so everyone can find something they like. Starting with a relaxed swim in the sea, for me that would turn into a two-kilometre competitive swim. Our increased focus on Mallorca means we have further adventurous experiences, too, like the Flyboarding I mentioned before, and driving a Monster Buggy. On a Monster Buggy you experience the Island in a completely different way, whether you are riding along the beach or on an off-road course. It is an action ride, right up my street, and one I can definitely recommend to anyone. Last year you took over Spontacts, an online portal for finding like-minded people to join

out the world. This brings me peace and tranquillity and slows everything down, even time. When it comes to work-life balance, it is the responsibility of both employees and employers. A lot of people don’t spend enough time at the end of the working day to unwind and concentrate on themselves. A great piece of advice from the Dalai Lama is, “Spend some time alone every day”. I try to follow this example. As a result I am more mindful, and I have learned to listen to myself and my needs. And now a question about adrenalin. What personal happiness do you derive today from your action-packed life? In my life I have experienced both highs and lows, and I have learnt that at the end of the

And now a personal question. You are known for your daredevil antics, but you have also been practising yoga for a long time. How much time do you set aside every day for sport? Do you have any tips for a good work-life balance? For me a healthy way of life is very important. I watch carefully what I eat, I do some kind of sport every day, and for more than 50 years I have been kayaking and doing yoga. Unlike when I was younger, I increasingly use these activities to concentrate on myself and block

We are the market leaders in Germany for experiences and experience gifts, and we now have more than 1,700 experiences on our books. Our group of companies employs more than 500 permanent and freelance staff who help customers with the answers to questions such as, what gift should I give? and what should I do this weekend? In the TV programme ‘Die Höhle der Löwen’ you invest in young companies. What stimulates you to invest in someone else’s idea? It is less than ten years ago that I had to convince other people about my idea for my experience gift website. They had two things that I didn’t have: time and money. Today I am on the other side of the table and I want to use some of my experience and success to help others achieve the same success. I want to encourage young entrepreneurs and support them in developing an idea and seeing it through. What is your reply to the accusation that the investors in ‘Die Höhle der Löwen’ are only there to further their own interests. The start-ups shown on the show are mostly companies or ideas that are still at a very early phase. This means they are often only an idea

preneur who is motivated and hardworking, and who will put all their energies into promoting their idea. But I will only have a motivated entrepreneur if I leave him or her a percentage of their business with which they can clearly relate. For the start-ups I was interested in, I always tried to make an offer that offered a win-win situation for both parties. How would you describe entrepreneurship in Germany, and what advice would you like to pass on to your fellow entrepreneurs? I would like to give people the courage to take a chance. In the past Germany was the land of inventions, today there is a real fear of standing on your own. I think that ‘Die Höhle der Löwen’ can have a real impact on the spirit of German entrepreneurship. Because only those who dare, win. Or to put it another way: Those who take risks can also lose. But those who don’t take risks are guaranteed to lose. Herr Schweizer, thank you for talking to us. Die Jochen Schweizer Erlebniswelt bei Mü nchen soll 2016 Indoor-Wellenreiten, Indoor-Skydiving und einen Hochseil-Klettergarten im Außenbereich bieten – an 365 Tagen im Jahr bei freiem Eintritt. In Berlin entsteht das VOLT, eine Fusion aus Shopping-Center, Hotel und Sportanlage mit Surfwelle und Windtunnel. Die Eröffnung ist fü r 2018 geplant. Sein Know-how als Unternehmer gibt Schweizer in der preisgekrönten VOX-Sendung „Die Höhle der Löwen“ weiter. Die zweite Staffel wird gerade produziert. Herr Schweizer, gibt es neue Sportarten, die noch unbekannt sind, sich aber demnächst durchsetzen werden? Auf unserem Portal bieten wir mittlerweile über 1.700 Erlebnisse an, davon über 700 sportive. Ob sich ein Erlebnis wirklich „durchsetzt“, wie Sie es nennen, lässt sich im Vorfeld schwierig voraussagen. Seit Jahren zählen der Tandemfallschirmsprung, der GleitschirmTandemflug und das Candle-Light-Dinner für zwei zu unseren Topsellern. Aber gerade im Bereich Abenteuer und Sport gibt es ausgefallene Ideen, wie zum Beispiel „Flyboarding“. Dabei steigt die Person mit Wasserraketen aus dem Wasser empor – der Auftrieb erfolgt durch sogenannte Fußdüsen. Wenn wir neue Erlebnisse einkaufen, ist unser Ziel jedoch nicht vorrangig, „Trends“ zu setzen. Wir möchten vor allem auf die Wünsche der Kunden eingehen und ihnen neue Möglichkeiten für ihre Freizeitgestaltung bieten. Welche Trendsportarten sind eine gute Investition für junge Unternehmen? Wo sehen Sie Chancen auf Wachstum? Generell ist es eher schwierig, das Thema Investition im Zusammenhang mit einem Trend zu sehen. Bei Investitionen spielen drei Punkte eine entscheidende Rolle. Der Gründer und das Team hinter der Idee stehen dabei an erster Stelle. Es geht vor allem darum, dass die Gründer für ihre Idee brennen und die Investoren von ihrem Einsatzwillen und ihrer Gründerkompetenz überzeugen können. An zweiter Stelle kommt dann die potenzielle Größe des Markts. Wachstumspotenzial kann es nur geben, wenn sich die Gründer im Vorfeld mit dem Markt auseinandersetzen. Ein dritter ausschlaggebender Punkt ist ein nachhaltiges und umfassendes Geschäftskonzept, das leicht skalierbar ist und über einen Trend hinaus Bestand hat.

Ruhe und Stille übertragen sich dabei auf mich und alles entschleunigt, auch die Zeit. Mit dem Thema Work-Life-Balance müssen sich sowohl Arbeitnehmer als auch Arbeitgeber beschäftigen. Dadurch erlebe ich mich bewusster und lerne, auf mich und meine Bedürfnisse zu achten. Eine Frage zum Adrenalin. Welches Glück

Wir sind heute in Deutschland Marktführer für Erlebnisse und Erlebnisgeschenke, und die Anzahl unserer Erlebnisse liegt mittlerweile bei über 1.700. Wir beschäftigen bei der Unternehmensgruppe derzeit über 500 feste und freie Mitarbeiter, die den Kunden Antworten auf die Fragen geben: Was verschenke ich? Und was mache ich am Wochenende? In der Sendung „Die Höhle der Löwen“ investieren Sie in junge Unternehmen mit innovativen Ideen. Was reizt Sie daran? Es ist noch keine zehn Jahre her, da musste ich als Gründer meines Erlebnisgeschenkeportals andere Menschen von meiner Idee überzeugen. Diese hatten zwei Dinge, die ich nicht hatte: erstens Zeit und zweitens Geld. Heute sitze ich auf der anderen Seite des Tisches und möchte einen Teil meines Erfolgs und meiner Erfahrung einbringen, damit andere ebenso Erfolg haben können. Ich will jungen Entrepreneuren Mut machen und sie unterstützen, eine Idee zu entwickeln und darauf zu setzen. Was sagen Sie zu dem Vorwurf, dass die Geldgeber bei „Die Höhle der Löwen“ nur auf ihren eigenen Vorteil aus sind? Bei den in der Show gezeigten Start-ups handelt es sich zum Großteil um Unternehmen oder Ideen, die sich noch in einer sehr frühen Phase befinden. Das heißt, es besteht oft nur die Idee ohne Vertriebs- und Betriebsstruktur, teilweise sind nicht einmal die Produkte ausgereift. Auf dieser Basis müssen die anderen Löwen und ich dann in ungefähr 60 Minuten eine Bewertung des Unternehmens vornehmen. Hinzu kommt, dass die antretenden Entre-

der Eindruck entsteht, dass die Löwen nur auf ihren eigenen Vorteil aus sind. Meiner Meinung nach ist der größte Vorteil für einen Investor ein motivierter, hart arbeitender Gründer, der seine Idee mit aller Kraft nach vorne bringen will. Einen motivierten Gründer bekomme ich aber nur dann, wenn ich ihm einen Anteil an seinem Unternehmen lasse, mit dem er sich identifizieren kann. Bei für mich interessanten Start-ups war ich deshalb immer bestrebt, ein Angebot zu machen, das für beide Seiten eine Win-win-Situation darstellt. Wie würden Sie das Unternehmertum in Deutschland beschreiben und was möchten Sie Gründern in diesem Zusammenhang mit auf den Weg geben? Ich möchte den Menschen Mut machen, etwas zu wagen. Früher war Deutschland das Land der Erfindungen, heute herrscht eine große Angst vor der Selbstständigkeit. Ich denke, „Die Höhle der Löwen“ wirkt sich gesellschaftsverändernd auf das deutsche Unternehmertum aus. Denn nur wer etwas wagt, der kann gewinnen. Oder anders ausgedrückt: Wer etwas riskiert, der kann verlieren. Aber wer nichts riskiert, der verliert garantiert. Herr Schweizer, wir bedanken uns für das Gespräch. If the saying ‘You are what you eat’ is true, then Holger Stromberg’s cuisine is world champion. The chef, from Waltrop in Germany, was born in 1972 and cooks for the German national football team. He has shared his creations with a wider audience through his television work, appearing on shows such as ‘Lanz kocht’ (ZDF), ‘Stadtgeflüster’ (TV München), ‘Angemacht’ (WDR) and ‘München Live’ (RTL). He also writes for magazines, from Feinschmecker to Vogue. Born into a family of restaurateurs, the proud owner of one Michelin star now runs Gasthaus Stromberg in his home town, previously run by his parents, and several other restaurants in Munich where he has introduced the concept of the restaurant-lounge. And now he is cooking in Ibiza, too.

Herr Stromberg, in your TV show ‘Meister Mischa und sein Stromberg’ you create dishes in Ibiza. Why the title, ‘Hippies Cooking’? We are trying something a little different. It’s not a fully developed format, more an idea for a TV show that a friend and I came up with one evening. He is an Ibicencan chef and longstanding friend and culinary companion. The concept is: two generations of cooks, two different culinary philosophies and one dish in a single pot! We visit the market together, buy ingredients that appeal to us on the day and then cook them together, making it up as we go along, with no recipes. And all the time we discuss and debate the similarities and differences in our cooking philosophy. It is very lively and lots of fun. In all of this we are completely free to do what we want, just like hippies used to do in Ibiza. Hence the title ‘Hippies Cooking’. Where is new cuisine going? When we talk about New Cuisine, we are moving in the direction of urban street food and system gastronomy: a single theme, shorter menus, better quality. Wenn der Satz stimmt, dass wir sind, was wir essen, dann ist Holger Strombergs Küche Weltmeister. Der Chef aus Waltrop (Nordrhein-Westfalen), Jahrgang 1972, kocht für die deutsche Fußballnationalmannschaft. Und macht seine Kreationen einem breiten Publikum bekannt: Stromberg war etwa in „Lanz kocht“ (ZDF), „Stadtgeflüster“ (TV München), „Angemacht“ (WDR) oder „München Live“ (RTL) zu sehen. Ebenso schreibt er in Magazinen vom „Feinschmecker“ bis zur „Vogue“. Herr Stromberg, bei Ihrer TV-Sendung „Meister Mischa und sein Stromberg“ kreieren Sie Speisen auf Ibiza. Aber was ist das – „Hippies Cooking“? Das stellt sich ein bisschen anders dar: Es handelt sich nicht um eine fertige Fernsehsendung, sondern um eine Konzeptidee fürs TV, die mit einem langjährigen Freund und kulinarischen Weggefährten, einem ibizenkischen Koch an einem Abend entstanden ist: zwei Generationen Köche, zwei verschiedene KochPhilosophien, ein Gericht in einem Topf! Das heißt, wir gehen zusammen auf den Markt, kaufen die Lebensmittel, die uns spontan ansprechen, und kochen dann gemeinsam, ganz frei Schnauze ohne Rezept. Währenddessen diskutieren und debattieren wir über Gemeinsamkeiten und Unterschiede in der Koch-Philosophie, es geht lebendig und lustig zu. Bei alldem sind wir aber völlig frei, wie Hippies früher auf Ibiza. Daher der Titel „Hippies Cooking“. Wo bewegt sich die neue Küche hin? Wenn wir über die New Cuisine sprechen, bewegen wir uns in die Richtung Urban Street Food und Systemgastronomie: ein Thema,

Die Authentizität der Speisen wird größer und wichtiger und ich glaube, es wird immer mehr Mikro-Gastronomien geben à la Airbnb im Bereich Gastro und Gästebewirtung, sprich: „Dinner für Fremde in den eigenen vier Wänden“. Vor zehn Jahren noch galt Ferran Adrià mit seiner Molekularküche als Pionier. Ferran Adrià wird auch immer der Pionier der Molekularküche bleiben. Aber nach zehn Jahren ist dieser Part natürlich auch nicht mehr neu. Das liegt in der Natur der Sache. Aber seine Molekularküche hat die Welt des Kochens immens bereichert, hat uns einen völlig neuen Blickwinkel beschert und ist heute auf Caterings oder Veranstaltungen nach wie vor noch sehr oft sichtbar. Wo liegt Deutschlands Gourmet-Hochburg? Meines Erachtens hat München die Nase vorn, gefolgt von Hamburg – eine Meinung, die ich übrigens mit der „New York Times“ teile. Der Süden Deutschlands kann auf eine sehr lange, vielfältige und bunte Geschichte der gehobenen Küche blicken, die unter anderem durch die ersten großen Sterne-Restaurants begrün-

det ist, weiter durch die so gute, bodenständige und ehrliche Küche und sicher auch durch den Einfluss der südlichen Nachbarn. Und in den letzten Jahren ist München zudem um unzählige größere und kleinere tolle, mutige, zeitgeistige Restaurants, Läden und Ecken reicher geworden. Wo sind die Franzosen, die einst weltweit die Küche dominierten? Die Franzosen sind nach wie vor sehr von ihrer Küche überzeugt, sind vielleicht nicht so offen für Neues und nicht so global, wie der internationale Geschmack sich heutzutage weiterentwickelt hat. Aber wir sprechen über die französische Küche, und die ist superb! Wenn Sie für die deutsche Nationalelf kochen: Stehen Genuss oder Diät im Vordergrund? Diät findet bei der deutschen Fußballnationalmannschaft überhaupt nicht statt, denn hiervon halte ich nichts. Hier stehen, wie übrigens per se bei mir sonst auch, Genuss und die Qualität der Lebensmittel im Vordergrund. Meine Philosophie ist: Kein Gericht der Welt ist grundsätzlich ungesund, Qualität steht an erster Stelle. Wenn ich für die deutsche Fußballnationalmannschaft koche, müssen die

Gerichte selbstverständlich auf die Bedürfnisse der Mannschaft abgestimmt sein. Mit guter Ernährung allein kann man kein Spiel gewinnen, aber sie macht jeden Spieler leistungsfähiger. Das gilt übrigens auch für Hobbysportler und Nichtsportler: Nur wo Qualität drin ist, kommt auch Qualität raus. Insofern ergibt ein entsprechendes Zusammenspiel an Kohlenhydraten, Fetten, Eiweiß, Ballaststoffen, Vitaminen und den richtigen Getränken unseren Kraftstoff. Was mögen Sie an der spanischen Küche besonders – und was gar nicht? Die Produkte in Spanien sind ziemlich einzigartig. Das beginnt schon im Supermarkt. Hinzu kommt, dass die Zubereitung der Speisen relativ einfach ist, aber durch die hohe Qualität der Lebensmittel geschmacklich einen enorm großen Effekt hat. Und durch die Revolution von großen avantgardistischen Köchen wie eben Ferran Adrià hat sich eine Mischung ergeben, die Spanien kulinarisch auf ein enorm hohes Level hebt. Sie haben mit „PureNice“ ein neues Eis auf den Markt gebracht, das auch als vegane Variante erhältlich ist. Ich habe mit einem langjährigen Freund und absoluten Eiskonditor-Profi aus Italien, den ich schon von klein auf kenne und der die Materie Eis von der Pike auf erlernt, aus Interesse und Leidenschaft über Jahre erkundet und durchdrungen hat, eine Eismasse entwickelt, die frei von künstlichen Stoffen ist. Ein reines Natureis, das durch die besondere Zusammensetzung des natürlichen Bindemittels ein Drittel weniger Zucker aufweist und dabei wahnsinnig cremig und wirklich einmalig im Geschmack ist. Durch diese besondere Entwicklung des Bindemittels funktioniert das Eis nicht nur mit Kuhmilch, sondern auch mit Sojamilch, so dass wir die Eiscreme auch in der veganen Variante anbieten können. Wir selbst stellen aber nicht das Eis als Endprodukt her, sondern die Grundmasse, so dass jedermann mit wenigen Handgriffen seine persönlichen Geschmacksvarianten von A wie Apfel über K wie Kokos bis Z wie Zitrone individuell beimischen kann. Alles, was dazu erforderlich ist, sind die Zutaten und eine Eismaschine, weswegen unsere Zielgruppe Eisdielen, Restaurants, Hotels und Cafés bilden. “Be kind to yourself” Sonja Kirchberger is appearing on stage at the Bad Hersfeld Festival in June – as a cook. It is a role that she assumes from time to time in her second career as restaurateur.

When she opened her restaurant Ca’n Punta in Portixol in the middle of 2014, Sonja Kirchberger made headlines – not only on the Island, but also in Germany and of course in her native Austria, where the actress recently did a photoshoot for Markus Morianz. DELUXE Magazine reveals these new photos and talked to the actress about her current projects.

You now own Ca’n Punta, which was for you a long-held dream. Do you have plans for the restaurant that you still want to carry out? Ca’n Punta is a small harbour-side restaurant and through my recipes, interior decor and music I would like to turn into a kind of harbour idyll. Harbours release in me both homesickness and wanderlust at the same time, which explains my vision of an internationalMediterranean menu. We also tweak traditional dishes like fish and chips, anchovies, Wiener schnitzel and our Ca’n Punta XXL burger, and we produce first-class versions of these old favourites. Our vegan brownies made without flour and sugar are already legendary. Everything is home-made. Our chip, dips, sauces and dressings are all made by us and even the rolls for the burgers are made to a recipe that is exclusive to Ca’n

Punta. I even designed the menus and staff aprons myself, which are made from my own jeans. Lots of fellow actors visit you at Ca’n Punta when they are on holiday on the Island. Ralf Bauer, Sven Martinek and Katy Karrenbauer have all been spotted there. We are a harbour-side restaurant where people from all over the world come together to eat good food, drink good wine and enjoy its special atmosphere. Every guest is equally important to us, and it is precisely this special mix that gives Ca’n Punta is truly unique ambiance. But to answer your question, yes, we are very fortunate that many of our creative colleagues from Germany, and also international guests like Colm Meaney and politicians from Germany and Austria feel at home with us. You are still working as an actress. Director Dieter Wedel has engaged you for the Bad Hersfeld Festival, what role will you be playing? A cook called Emmelina in Shakespeare’s Comedy of Errors, and he didn’t even make me cook for him :-) Have you any other engagements in the near future? Another movie in November, but otherwise I am trying not to take on anything else, and for the present I want to create new dishes with my team for our weekly menu and spend as much time as possible at Ca’n Punta. You have been so successful in juggling children and career that you have just won an award for it in your native Austria. What tips would you pass on to young women today? Be kind to yourself. For even when you give your very best it is never enough, as you have

usually set your expectations way too high. For years you have faced the quandary of what to wear to red carpet events. At the Golden Camera award in February you wore an outfit by Berlin vegan fashion label Umasan. How did you come to work together? I grew up vegan. Diet was and still is an important subject for us as a family. I am no longer exclusively vegan, but I am always happy to support young companies with an innovative approach. I admire their courage, and once you have worn something by Umasan you will certainly want to do so again. You commute between Berlin and Palma, are there boutiques on the Island that you could recommend? Yvonne Rohé in Palma’s Calle San Feliu, for her casual punk glamour. What is the story behind them? How do you like to see yourself? „Freundlich mit sich selbst bleiben“ Sonja Kirchberger steht ab Juni auf der Bühne der Bad Hersfelder Festspiele – als Köchin. Eine Rolle, die sie auch für ihre zweite Karriere als Gastronomin ab und an einnimmt.

Mit der Eröffnung des Ca’n Punta in Portixol sorgte Sonja Kirchberger Mitte 2014 für Schlagzeilen – nicht nur auf der Insel, sondern auch in Deutschland und natürlich in ihrer Heimat Österreich. Dort stand die Schauspielerin kürzlich vor der Kamera von Markus Morianz. Das DELUXE Magazin zeigt die neuen Fotos und fragte die Schauspielerin nach ihren aktuellen Projekten.

Sie sind Inhaberin des Ca’n Punta, ein langersehnter Wunsch, wie Sie sagen. Gibt es Pläne für das Restaurant, die Sie noch umsetzen möchten? Ca’n Punta ist ein kleines Hafenrestaurant, das ich mit Rezepten, Inneneinrichtung und Musik noch mehr in Richtung Hafenidylle bewegen möchte. Häfen lösen bei mir immer Heim- und Fernweh im selben Moment aus. Deswegen auch meine Idee für eine mediterran-internationale Speisekarte. Wir spielen aber auch mit Klassikern wie Fish and Chips, Sardellen, Wiener Schnitzel oder dem Ca’n Punta XXLBurger und bereiten Altbekanntes hochwertig zu. Unser Brownie vegan, ohne Mehl und Zucker ist jetzt schon legendär. Bei uns ist alles homemade. Unsere Pommes frites, Dips, Soßen und Dressings sind hausgemacht, und selbst das Brot für den Burger ist ein Rezept, das nur für Ca’n Punta hergestellt wird. Ganz abgesehen von den Speisekarten und Kellner-

schürzen, die ich entworfen habe und die aus meinen Vintage-Jeans genäht wurden. Viele Schauspielkollegen besuchen Sie im Ca’n Punta, wenn sie auf der Insel Urlaub machen. Wir haben Ralf Bauer, Sven Martinek und Katy Karrenbauer schon dort gesehen. Wir sind ein Hafenrestaurant, in dem sich Menschen aus aller Welt treffen, um gutes Essen, gute Weine und eine besondere Atmosphäre zu genießen. Fazit: Jeder Gast ist uns gleich wichtig, denn genau diese besondere Mischung ergibt im Ca’n Punta eine wirklich einmalige Stimmung. Aber um Ihre Frage zu beantworten, ja, wir haben das Glück, dass sich viele kreative Kollegen aus Deutschland, aber auch internationale Gäste wie zum Beispiel Colm Meaney oder auch Politiker aus Österreich und Deutschland, bei uns zu Hause fühlen. In Ihrem Beruf als Schauspielerin sind Sie weiterhin tätig. Intendant Dieter Wedel hat Sie für die Bad Hersfelder Festspiele verpflichtet. Welche Rolle werden Sie dort übernehmen? Eine Köchin mit dem Namen Emmelina in Shakespeares „Komödie der Irrungen“, und das, ohne dass ich für Herrn Wedel Probe kochen musste. :–) Gibt es weitere Engagements in nächster Zukunft? Noch einen Kinofilm im November, aber sonst werde ich versuchen, nichts mehr anzunehmen, und auch dazwischen will ich mit meinem Team neue Gerichte für die Wochenkarte erarbeiten und so viel wie möglich im Ca’n Punta anwesend sein. Kinder und Karriere meistern Sie so erfolgreich, dass man Ihnen in Ihrer Heimat Österreich bereits einen Preis dafür verliehen hat. Welchen Tipp würden Sie jungen Frauen mitgeben? Freundlich mit sich selbst bleiben. Denn auch, wenn man wirklich sein Bestes gibt, es wird nie

Ernährung war und ist bei uns ein sehr großes Thema. Ich ernähre mich zwar nicht mehr ausschließlich vegan, aber ich unterstütze immer wieder und sehr gerne junge Unternehmen mit einem innovativen Ansatz. Ich bewundere deren Mut, und wer Umasan einmal getragen hat, wird es auch wieder tun. Sie pendeln zwischen Berlin und Palma, gibt es Boutiquen auf der Insel, die Sie empfehlen würden? “The story is the star” Actress Bettina Zimmermann and partner Kai Wiesinger have filmed a sitcom about the crises experienced by couples in their 40s. In her private life she looks for peace and quiet in Mallorca. One of German television’s most sought-after actresses, Bettina Zimmermann, born 1975, has appeared in ‘Alarm für Cobra 11’, ‘The Airlift’ and the successful series ‘A Case for Two’. Now, with her partner Kai Wiesinger she is breaking new ground. The couple have filmed ten episodes of a new relationship comedy that, for the first time, is only available online. “We wanted to create entertainment for people in their forties,” says director Kai Wiesinger. According to MyVideo, the over 30s are the fastest growing user group of social media and video websites. We asked Bettina Zimmermann how the sitcom came about, and whether she could envisage living on the Island herself. Frau Zimmermann, your new comedy ‘Der Lack ist ab’ with Kai Wiesinger is about a couple going through their midlife crisis. It is not exactly their midlife crisis. It’s about a couple, she is almost 40 and he is mid-forties, who have been together for 20 years, and

now that the children are about to leave home are faced with the question: Was that it or is there still more to come? You still feel as though you are twenty, but your body lets you know that you are already half way through your life. ‘Der Lack ist ab’ is an honest, fresh and funny web series that is so close to reality that you will recognise yourself and realise you are not alone. In this social media age, does ageing affect the over forties more than previous generations? 40 is the new 30. If you think back, in the past 40-year-olds looked much older, and behaved older too. Today it is very difficult to pinpoint the age of someone between 35 and 45. It also has something to do with lifestyle. Our generation eats more healthily, does sport and looks after itself better. You have the feeling that you can stay 30 forever. Most people don’t want to accept that their bodies will eventually tell them it’s not so, as the media lead us to believe otherwise. It is a natural process and one we treat with humour in our web series.

The episodes can only be viewed online. What potential do you seen in the internet as an entertainment medium? The internet offers endless possibilities for bringing content to its users. It is going in the direction of content coming directly to the viewer, and it is no longer a case of the audience having to be in a certain place at a certain time to see what they want. This means a good story will become the star and not just a prime time slot. You are in a relationship with Kai Wiesinger and you both have children. What inspiration have you drawn from this? It is not our lives that you see in the series. The inspiration really came from conversations like the funny ones Kai has had with friends over a meal, where everyone talks about all the trials and tribulations of getting older. They gave him the idea for the web series, and he started to write down the stories. You know what it’s like, you find yourself asking, “Is the light in the restaurant dimmer than before, or has the print in the menus got smaller?” You have written a book for children. How did you come up with the idea? As a mother I am always on the lookout for suitable books for my children. And I realised that there are very few that deal with everyday life. Ones that raise questions like, “What actually happens at night? Can one get up then and begin the day?” And, “Why do my parents make all the decisions?” So I started writing a series of children’s books, the first of which is called ‘Mo – Ich bin jetzt wach’. The second will be published in September and is all about making decisions. Some of your fellow actors live in Mallorca. You have recently visited the Island, could you envisage ever living in Mallorca? Of course you often think how nice it would be if the temperature in Germany didn’t fluctuate so much, and you had a longer summer. But with school age children it is something you have to think about carefully. When they have left home it might be an option to spend at least half the year in the sun. Where is your favourite place on the Island? I like the interior and places with a slower pace of life. Certainly nowhere touristy with lots of parties and cram-packed beaches. I’m thinking rather of romantic corners where you can eat in small restaurants where the mother still does the cooking and the fish has come straight from the sea. Mit Partner Kai Wiesinger betritt sie jetzt Neuland: Das Paar hat zehn Folgen einer Ehe-Komödie eingespielt, die erstmals nur online zu sehen ist. „Wir wollten Unterhaltung für die Zielgruppe der 40-Jährigen schaffen“, sagt Regisseur Wiesinger. MyVideo zufolge sind die über 30-Jährigen die am schnellsten wachsende Gruppe bei sozialen und Video-Portalen. Wir fragten Bettina Zimmermann nach den Hintergründen der Sitcom. Und ob sie sich ein Leben auf der Insel vorstellen kann. Frau Zimmermann, in Ihrer neuen Komödie „Der Lack ist ab“ mit Kai Wiesinger geht’s um ein Paar in der Midlife-Crisis. Nicht direkt in der Midlife-Crisis. Es geht um ein Paar – sie gerade kurz vor der 40, er Mitte 40 –, das seit 20 Jahren zusammen ist und sich

nun, da die Kinder bald ausziehen, die Frage stellt: War’s das jetzt oder kommt da noch was? Eigentlich fühlt man sich noch wie 20, aber der Körper zeigt einem, dass man eher schon in der Lebensmitte steht. „Der Lack ist ab“ ist eine ehrliche, frische, lustige Webserie, die so nah an der Realität ist, dass man sagt: Ja, so ist es! Ich bin nicht allein. Trifft das Altern in Zeiten des Social Webs die heute über 40-Jährigen stärker als frühere Generationen? 40 ist die neue 30. Denkt man an früher, sahen 40-Jährige doch viel älter aus und verhielten sich auch so. Heute kann man kaum jemandem zwischen 35 und 45 das richtige Alter zuordnen. Das hat auch mit den Lebensformen zu tun. Unsere Generation ernährt sich gesünder, treibt Sport, achtet mehr auf sich. Man hat das Gefühl, man bleibt ewige 30. Dass der Körper einem aber irgendwann zeigt, dass dem nicht so ist, das wollen die meisten nicht wahrhaben, da die Medien einem etwas anderes vorgaukeln. Es ist ein natürlicher Prozess, und den behandeln wir mit Humor in unserer Webserie.

Die Folgen sind nur online zu sehen. Welches Potenzial sehen Sie im Internet als Unterhaltungsmedium? Das Web bietet unendliche Möglichkeiten, Inhalte an den User zu bringen. Es wird dahin gehen, dass der Inhalt zum Zuschauer kommt und nicht mehr der Zuschauer einen bestimmten Sendeplatz aufsuchen muss, um dort den Inhalt zu sehen. Das heißt, eine gute Geschichte wird der Star sein und nicht mehr ein guter Sendeplatz. Mit Kai Wiesinger sind Sie auch privat liiert, beide haben Sie Kinder. Welche Anregungen schöpfen Sie daraus? Es ist nicht unser Alltag, den wir in unserer Serie zeigen. Die Anregungen kamen eher durch lustige Gespräche wie zum Beispiel einmal, als Kai mit Freunden beim Essen saß. Jeder erzählte über immer öfter auftretende Alterswehwehchen. Da kam ihm die Idee zur Webserie, und er hat begonnen, die Storys dafür aufzuschreiben. Man kennt das ja, wenn man sich fragt: Ist das Licht im Restaurant jetzt schummriger als früher oder haben die die Schrift in der Speisekarte kleiner gedruckt? Sie haben ein Kinderbuch geschrieben. Wie kam es zu der Idee? Selbst Mutter, bin ich immer auf der Suche nach geeigneten Büchern für meine Kinder. Mir fiel auf, dass es nur wenige gibt, die den Alltag begleiten. Fragen aufwerfen wie: Was ist eigentlich nachts los? Kann man da aufstehen und den Tag beginnen? Oder: Warum bestimmen immer nur die Eltern? Daher fing ich eine Kinderbuchreihe an, der erste Teil heißt: „Mo – Ich bin jetzt wach!“. Der zweite erscheint im September, und darin geht es ums Bestimmen. Einige Ihrer Kollegen leben auf Mallorca, Sie haben die Insel kürzlich besucht. Käme Mallorca auch als Wohnsitz infrage? Natürlich denkt man oft, wie schön es wäre, wenn die Temperaturunterschiede in Deutschland nicht so groß wären und man den Sommer länger vor der Tür hätte. Aber mit schulpflichtigen Kindern überlegt man sich das. Wenn sie aus dem Haus sind, dann wäre das eine Option, zumindest die Hälfte eines Jahres in der Sonne zu verbringen. Wo auf der Insel gefällt es Ihnen am besten? Im Hinterland und in Orten, wo es ruhiger zugeht. Keinesfalls dort, wo es touristisch ist, wo viel gefeiert wird und die Strände voll sind. Ich denke eher an eine romantische Ecke, wo man in kleinen Restaurants noch von der „Mutti“ bekocht wird und der Fisch gerade frisch gefangen wurde. In Zusammenarbeit mit Landsmann und Songwriter Isaias Matiaba (32), der in Griechenland seit Jahren die Charts anführt und der dort gerade bei Dancing with the Stars mitgewirkt hatte, entstand eine Ballade mit Tiefgang, die ein neues Kapitel schreibt in der bereits beachtlichen Musikgeschichte der beiden. „Die Idee war, den griechischen Text zu übersetzen, damit die Lyrik des Tracks auch in Deutschland zu verstehen ist. Griechisch ist eine der Sprachen, die nicht ohne Weiteres zu verstehen sind für Besucher”, kommentiert Costa Cordalis. Die deutsche Fassung wurde von Lucas Cordalis in seinem Mallorca-Studio aufgezeichnet. It concerns the future of a country that millions of Germans recall fondly as a holiday destination. Much of it is like Mallorca: beaches and bays, and the hustle and bustle of the narrow streets that in the summer only really come to life in the evening. In summer 2014, singer Costa Cordalis visited his homeland to make a programme for television channel VOX. He revisited places that had shaped his teenage years before his successful career in Germany still as a young man. The trip inspired his latest single ‘Ich träume’ (‘I dream’). In collaboration with songwriter and fellow Greek Isaias Matiaba (32), who has topped the charts in Greece for years and who has appeared in the Greek version of Dancing with the Stars, he

has written a thoughtful ballad that marks a new chapter in both their already impressive music careers. “The idea was to translate the spirit of the Greek way of life into lyrics that will also be understood in Germany. The Greek language is not easily understood by visitors to the Islands,” says Costa Cordalis. The new German version was recorded by Lucas Cordalis in his studio in Mallorca. For the new album they hope to include a duet with Isaias Matiaba’s chorus, in the original Greek. “In Greece Isaias is considered to be one of the most talented musicians of his generation. He brings with him a successful mixture of southern lifestyle and contemporary arrangements. Coaches at the new Fussicamp Mallorca football camp teach children the art of shooting goals, football tricks and technique, while having fun with football. The team of DFB-licensed coaches have experience at all levels, from grassroots level to professional football. Five days of football school from 10am to 1pm costs 139 euros and includes a shirt, shorts and socks, a graduation photo, and fresh fruit and drinks every day. The training sessions will be held at S’Alqueria Blanca and Santanyí, both excellent small football stadia with artificial grass, where the Mallorquin clubs also train their youth squads.

A delightful place to linger and enjoy the excellent cuisine Celebrity chef Jan Brüske opened the gourmet restaurant La Gourmeda in Puerto de Andratx as a traditional, family-owned business.

t was largely the climate that motivated the Brüske family to make the move from the North Sea to the Mediterranean. “In Mallorca the outdoor season lasts well into December and instead of a grey German winter, you generally get sunshine here,” says Antje Brüske cheerily. This was reason enough for the family to make a new start and move to Port Andratx from Föhr, where they had lived from the 1990s to 2010 running the ‘Scheune’, the best restaurant on the island. They found the perfect place in spring 2014 – a small two-storey finca opposite Port Vela marina, standing in its own grounds. Following refurbishment, La Gourmeda celebrated its opening last August and it has been incredibly popular ever since. The large beautifully designed garden invites you to linger and has a cocktail lounge area which also serves as a stage for weekly musical events. The creative crossover cuisine with Asian and Arabic influences is prepared with market-fresh ingredients, organic wherever possible, and has proved a great hit. Chef Jan Brüske assisted by sous-chef Steffen Schappert conjures up traditional dishes such as saddle of lamb with a thyme sauce, fillet steak with potato carpaccio and a port sauce,

and turbot on fresh seasonal vegetables with a champagne sauce as well as contemporary vegetarian and vegan dishes. Favourites here are the lupin strips in a delicate cream sauce (on request with dairy-free cream) or the spicy baked sheep’s cheese with paprika foam. There is a constantly changing three and fourcourse gourmet menu on offer every evening. What sets La Gourmeda apart from other restaurants are the handpicked ingredients, usually sourced from local organic farms, and the time-consuming manual work in the kitchen. “All ingredients are freshly prepared and the vegetables are cooked to order,” explains Jan Brüske. “Every sauce is cooked for more than an hour to get the flavour just right. And we make all the desserts ourselves, from the freshly baked lemon tart to the light and fluffy chocolate mousse.” Sous chef Steffen Schappert, who joined the team at the beginning of March, brings with him experience from his time in London, Amsterdam, Tel Aviv, New York and Tokyo. To accompany this first-class cuisine there is excellent entertainment provided by a range of musicians. Tuesday evening is ‘Music à la Carte’, Thursday is ‘Barbecue Night’, and on Sundays there is music to accompany the

popular gourmet brunch and ‘Tapas around the world’ in the evening. The outside bar serving sushi is open from June onwards. At the rear of the garden, next to the restaurant’s own organic herb garden, there is a second lounge area in oriental style. Here guests can relax and enjoy the balmy summer nights. ‘Gourmet to Go’ is a service aimed at owners of yachts moored in the marina, property owners and day visitors, where they can order their take-away lunch for their trip to the Island. La Gourmeda also offers event catering, and recently catered the opening of the RBC studio in Santa Ponsa. The invited guests were thrilled by the healthy smoothies and the vegetarian tapas. And to complement the excellent cuisine and beautiful location there is attentive service to match, overseen by Marie Brüske. Antje Brüske is a nutritionist, and is responsible for the Nova Vita shop. They are soon to open their own shop in Port Andratx for organic products and highly effective dietary supplements. Currently superfood products such as coconut purée and oil, xylitol sugar substitute, Moringa and Maca powder and home-made uncooked pralines are available in the restaurant. Nova Vita stands for a new experience in the field of healthy eating. Together with her daughter Marie, Antje runs smoothie workshops once a month on a Saturday from 3 to 6pm. They form an excellent preparation for the week-long ‘BioRechange’ retreats with nutritionist and bestselling author Christian Opitz – on offer from the autumn onwards. “With BioRechange we have developed together with renowned scientists and doctors a sustainable approach to changing your diet that reflects what the body needs. The aim is to integrate food with a high nutritional content into everyday life thus providing the body with all the essential nutrients it needs for regeneration and for strengthening the immune system. ecently actor and director Til Schweiger made headlines when he mentioned at the premiere of his film ‘Honig im Kopf’ that he had undergone genetic testing to find out whether he is at risk of developing Alzheimer’s disease. Luckily for him, the test came back negative. His engagement with the disease raised public awareness of the possibilities of predictive genetic testing. Deciphering the human genome has now become affordable. Through the use of more than one thousand individual tests human genetic testing laboratories can detect hereditary diseases. The human body is made up of some 50 trillion cells, most of which have a nucleus containing chromosomes (DNA) – the blueprint of the human body. This genetic code consists of approximately 3.2 billion ‘letters’. Only one percent of this code contains our genes, some of which determine the colour of our eyes while others are responsible for how we absorb nutrients after we have eaten. Genes are responsible for someone being lactose intolerant, but as long as they do not consume any dairy products they will remain perfectly healthy. If you know that you are susceptible to something in particular, you can in many cases

take precautionary measures and prevent diseases. Diagnostic companies are already offering genetic lifestyle tests via the internet, which only require a simple saliva sample. The client determines the scope of the analysis through their choice of test package. These detect food intolerances and identify allergies, and can be carried out without a doctor. Others require a blood sample to identify a hereditary predisposition to high blood pressure or diabetes, for example. rst kürzlich hatte Schauspieler und Regisseur Til Schweiger von sich reden gemacht, als er zur Premiere seines Films Honig im Kopf angab, einen Gentest gemacht zu haben, um herauszufinden, ob er die Veranlagung zu Alzheimer in sich trägt. Sein Befund war negativ – glücklicherweise. Sein Umgang mit der Krankheit hat die öffentliche Aufmerksamkeit auf die Möglichkeiten der Gendiagnostik gelenkt. Die Entzifferung eines Gesamtgenoms ist erschwinglich geworden, in über tausend Einzeltests können humangenetische Labore Erbanlagen aufspüren. Der menschliche Körper besteht aus etwa 50 Billionen Zellen, in denen meist ein Zellkern mit Chromosomen (DNA) steckt – der Bauplan des Körpers. Dieser genetische Code besteht bei jedem Menschen aus etwa 3,2 Milliarden Buchstaben. Nur ein Prozent dieses Codes enthält unsere Gene, von denen einige für die Farbe unserer Augen und andere für die Nährstoffaufnahme nach dem Essen zuständig sind. Verträgt man aufgrund einer Genvariation keine Laktose, ist man dennoch vollkommen gesund, solange man keine Milchprodukte zu sich nimmt. Auch ohne Gentest haben viele laktoseintolerante Menschen die Ursache der Beschwerden erkannt und meiden laktosehaltige Nahrungsmittel. Ähnlich ist es mit der Glutenintoleranz. Das sind zwei Beispiele, bei denen Nutrigenetik schon seit Jahrtausenden Anwendung findet. Heute ist es möglich, noch viel genauer in den Bauplan des Menschen hineinzusehen und die Ernährung entsprechend anzupassen. RBC Santa Ponsa Opening German television channel VOX covered RBC’s big opening party attended by a host of celebrities he RBC team invited guests to a ‘Lighter Life Party’ in Santa Ponsa at the end of March, to celebrate the opening of the Royal Body Concept studio. Owners Prince Karl-Heinz von Sayn-Wittgenstein and Dr Andreas Leonard from the German Medical Centre are behind this new concept for a ‘lean and healthy life in three simple steps’. Celebrities including Costa and Lucas Cordalis, sister Kiki and mother Ingrid were among the guests as were actor Jochen Horst with his wife Tina and millionaire’s wife Svetlana Nadel. Publisher Dr Wilhelm Bing travelled from Germany together with his wife Stephanie. Television channel VOX had already followed artist Bettina Nuschei as she decorated the studio and was also there to film the party for ‘Goodbye Deutschland’. In keeping with the RBC philosophy healthy snacks were served, provided by La Gourmeda, the restaurant in Port Andratx managed by nutritionist Antje Brüske. Younger guests were delighted with the retro ice cream cart from Adriano Ice Cream. “First of all we determine the biological metabolic age of the client, which is more important than the age shown in their passport. For the opening party of NURU in Santa Catalina, manager Jerome Harksen and his team invited DJ Giulia Siegel from Munich to provide the musical entertainment. The art to be seen on the walls of NURU is by Spanish Hollywood star Jordi Mollà, who also travelled to Mallorca for the party. This popular new restaurant is to be a family-run business. Jerome Harksen, who has much experience in the restaurant trade, will be working with his brothers Julien and Joel. Lutz Minkner shows Werner Wöber Werner Wöber has enjoyed great success as an architect. In addition to architecture he also studied art at the Academy of Fine Arts in Düsseldorf. Over the past twenty years he has given his creativity free rein and has painted refreshingly direct paintings embracing contemporary art trends. Lutz Minkner exhibited his works in Santa Ponsa at the beginning of April. Als Architekt hat Werner Wöber große Erfolge gefeiert. Neben Architektur hat er Malerei an der Hochschule für bildende Künste in Düsseldorf studiert. He last appeared in Mallorca at the big Inselradio birthday party, where he played in aid of the Aspanob Foundation. Max made his name as a member of the successful Parov Stelar project.
