STEAM OR ROAST WITH FLAVOR TO BOAST

INGREDIENTS: 4 slices bacon ½ Red Onion, thinly sliced on Mandoline 2 cups Collards 2 cups Kale 3 tsp FRENCH PANTRY Tomato Herb Mustard 1 tsp FRENCH PANTRY Herbs de Provence Herb Blend FRENCH PANTRY pepper of choice FRENCH PANTRY Sel Gris Salt 1 Honeycrisp Apple, diced with Eco-Chop

MICROWAVE DIRECTIONS: Place Large Round Mold on a microwave safe plate. Place bacon in Large Round Mold and cover with Octagonal Bonmat. Microwave on high for 3 minutes. Once bacon is cooked, remove bacon from Large Round Mold and place on a paper towel. Chop once cooled.

Keep 1-2 tbsp bacon grease (or substitute oil of choice) in Large Round Mold and add sliced onions, cover with Octagonal Bonmat, and cook in microwave for 1 minute.

Add greens to onions, cover, and steam in microwave for 2 minutes. Add mustard, herb blend, salt, and pepper. Toss to combine, cover with Octagonal Bonmat, and microwave for 1 minute. Remove from microwave, add chopped bacon and apple. Toss to combine.

OPTIONAL: Top with a poached egg or add eggs on top of greens before the final minute of cooking. Cook until eggs are done to your likeness, approx. 1-2 minutes. Keep the nutrients! No need to add water after washing. Simply place in Round Mold (page 11) and cover with Octagonal Bonmat (page 5).

roasted balsamic brussels

INGREDIENTS: 2 lbs. Brussels Sprouts, trimmed & halved ¼ cup FRENCH PANTRY Sweet Basil Oil 1-2 tablespoons FRENCH PANTRY Traditional Dark Balsamic FRENCH PANTRY pepper of choice FRENCH PANTRY bon Salt of choice

OVEN DIRECTIONS: Preheat oven to 400°F. Place your Flexiflat on the Perforated Baking Sheet. Add Brussels sprouts to Flexiflat. Add olive oil, salt, and pepper (to taste) and toss. Spread mixture out evenly on the Flexiflat. Roast 20-30 minutes until tender and browned. Remove from oven and drizzle immediately with Traditional Dark Balsamic and toss to combine. Enjoy!

OPTIONAL: For added flavor, add 4 oz. Pancetta, sliced ¼ inch thick, cut into 1/2 inch cubes. Try different FRENCH PANTRY oils or create your own custom combination. QUICK MICROWAVE STEAMING

INGREDIENTS: 9 large egg whites, room temperature 1 1/3 cups superfine sugar A pinch of cream of tarter

DIRECTIONS: Preheat oven to 200°F. Place Bonmat on Perforated Baking Sheet. Whisk egg whites and a pinch of cream of tarter on medium-low speed until foamy. Add sugar very slowly (1 tbl at a time) and whisk until sugar dissolves and soft peaks form. Gradually increase speed to medium high and whisk until stiff glossy peaks form.

Using the pastry bag, create mounds on your Bonmat about an inch apart. Place in oven and bake for 1 ½ hours. Turn off the oven and allow meringues to continue drying for several hours.
