WHY A COOKBOOK AROUND COCONUT MILK? Some may ask. Coconut milk has been consumed and used for cooking for centuries in our region, it plays a big role in shaping our culinary identity; so much that almost all signature Southeast Asian dishes have some coconut milk in them!

Since young, we love the distinct aroma and fragrance of coconut milk; its creamy texture and good nutrition as well. It’s definitely a pantry item for every household in Singapore. Nevertheless, as we become busier than ever, we struggle to find time to cook, or to research what new dishes we can make so our family doesn’t find our food boring. Therefore, Ayam Brand and YoRipe teamed up to bring you this cookbook with 24 original recipes that offers inspiration, easy ingredients and step-by-step videos so cooking for ourselves and our family becomes manageable and more fun.

HONEY COCONUT MILK GREEN CURRY PASTA 4 pax

Wash and chop up kale, set aside.

Cut boneless chicken legs into bite-sized pieces and add into a large bowl.

Add the marinade into the bowl and give the chicken pieces a quick massage. Set aside for 15 minutes.

Boil water in a large pot, add pasta and a good pinch of salt. Cook the pasta until it is 2 minutes short of done as per instructions on packaging.

While the pasta is cooking, heat a pan over medium heat with some oil and add in the marinated chicken, including the marinade sauce.

Stir fry for approx 3-4 minutes until the chicken is cooked. Remove from the pan and set it aside.

Into the same pan with the juices and fat rendered from frying the chicken, add 2-3 tbsp of Thai green curry paste.

Fry it until the sauce is fragrant, add the kale. Cook until the kale is wilted, add the coconut milk. Give it a light stir to mix and let it come to a gentle simmer.

The pasta should be ready by this point, so drain and add the pasta to the lightly simmering sauce. Add the cooked chicken into the pan as well and toss it well coated with the sauce. If it’s too dry, add 1-2 ladles of pasta water.

Cook it for 2 minutes and then plate and serve immediately with Chinese parsley.

COCONUT MILK RICE PUDDING 3 pax

Add butter, cinnamon stick, ¼ cup soaked short grain rice and saute for 1 minute.

Add water, cooked rice, coconut milk, condensed milk, and sugar. Let it cook on a low flame for 20 minutes. Stir in between.

Once pudding done, add dry fruits, pinch of salt and vanilla extract. Let it cool down completely, chill in the refrigerator for 3-4 hours and serve it!

Roti Kerca

INGREDIENTS

Blend pandan leaves with water. Drain and set aside.

Add all the ingredients for roti kerca, including the pandan water, into a blender. Blend until smooth.

Heat a lightly oiled pan over low heat. Pour 1 ladle full of batter onto the pan and swirl to spread the batter into a thin crepe.

Cook over low heat. Roll the crepe while still warm.

5

Cut diagonally into pieces about 1-inch thick. Keep covered until time to serve.

Blend onion, garlic and ginger with about 2 tbsp of water.

Heat about 3 tbsp of oil in pan over medium heat. Stir fry the blended paste until fragrant.

Stir in chilli paste, tamarind paste and sugar and continue cooking until it thickens and the colour deepens.

Add in tuna flakes, and stir to combine. Season to taste.

Serve warm with Roti Kerca.

In a bowl, whisk together Ayam Brand Coconut Milk, egg, white sugar, vanilla extract, and 1 tbsp of melted butter.

Once well-combined, sift flour and ¼ tsp salt into the same bowl. Whisk the batter until smooth.

Cover and chill the batter in the fridge for at least 30 minutes.

4

Melt ½ tbsp butter in a heated pan.

5

Add brown sugar and stir until fully dissolved in the butter.

Add apples, cinnamon powder, and ¼ tsp of salt to the pan.

Using a spatula, stir until all the apples are coated.

8

Leave the apples to simmer for 3-5 minutes.

Remove the pan from heat once the sauce thickens.

Butter a mini pan and pour 1 tbsp of crepe batter into it. Tilt the pan to spread the batter thinly across the pan.

When the crepe browns on one side, flip it.

Cook the crepe until it browns on the other side.

Once the crepe is done, transfer it onto a plate.

Place 1 tsp of apple filling on the center of the crepe.

Fold and roll the crepe.

CLEAN THE FRIDGE COCONUT CURRY 3 pax

Heat the vegetable oil in a large pot or skillet over medium heat.

Add the cubed tofu to the pot and cook for a few minutes, allowing it to brown slightly.

Push the cubed tofu to one side, add the onion, garlic, and red chili. Sauté until the onion becomes translucent and fragrant.

Add the mixed vegetables to the pot and stir to combine.

Add the seasonings and stir to coat them evenly.

Add coconut milk. Simmer for about 10 minutes, covered.

Sprinkle the shredded cheese over the top of the curry and let the cheese melt for a few minutes until it becomes gooey and creamy.

Once the cheese has melted, remove the pot from the heat. Serve the tofu curry with cooked rice.

ONE-POT COCONUT BUTTER CHICKEN RICE 3 pax

Marinate chicken thighs with ginger, soy sauce and pepper.

Wash rice at least 3 times.

Pour in coconut milk, chicken broth, diced carrot, frozen corn and shredded coconut together into washed rice.

Pan fry marinated chicken thighs with butter on stove for 3-4 minutes until browned. Transfer them into the rice cooker.

On rice cooker and let cook till done. Leave rice mix to steamer for another 10 minutes.

Transfer chicken thighs to another plate to slice.

7

Squeeze some juice from 2 limes over rice and fluff.

Dish out rice and lay chicken slices on top to serve.

In a saucepan, combine quinoa, water, coconut milk, cinnamon and vanilla extract. Bring to a boil, then simmer until most of the liquid is absorbed and the quinoa is tender, about 15 minutes.

Preheat the air fryer at 180°C.

Place cooked bow pasta evenly spread out on tray and lightly toss with oil. Air fry for 10-12 minutes at 150°C, lightly toss them to have even browning.

Sauté garlic in a pan with oil until fragrant, add in chilli paste.

Mix egg, coconut milk and sugar in a bowl.

INGREDIENTS

Soak the bread slices in the egg mixture until the bread fully absorbs the liquid.

Heat up the pan with a bit of oil.

Pan fry the bread slices until both sides turn golden.

Set aside the French toast.

Heat up the pan with 1 tsp sugar and 1 tbsp water.

Lightly stir until sugar caramelizes.

Add chopped bananas, lightly stir until the banana is fully coated with the caramelized sugar.

Can I add coconut milk directly to food or do I need to cook it? Yes, all of our coconut milk are ready to eat.

What’s the difference in taste between the original coconut milk and the trim coconut milk? The trim coconut milk does not have much taste difference, but has thinner consistency and has 45% reduced fat.

What is the difference between coconut milk 200 ml tetra pack and 330 ml bottle with screw cap? Besides the screw cap, the 330 ml is enhanced with coconut water.

Can I cook coconut milk at high heat over a long time? Excessive heat may cause curdling and a grainy texture, it’s better to simmer it gently.

Always shake the can or pack of coconut milk before opening. And any unused portions should be transferred to a clean and airtight container and refrigerated immediately. It should last 3 days in the refrigerator.

An interesting fact about canned coconut milk is that when you refrigerate it overnight, there will be a thick semi-solid layer of coconut milk, which is essentially coconut cream! It’s great for thickening curries and soups, and imparting a rich coconut flavour.

I used trim coconut milk because it is low in fats, 45% lesser than the normal one. I usually will seal it after opening and put in the air tight container then in the fridge.

For cake, I prefer to use the coconut cream since it has less water content, therefore easier to adjust the recipe. For cooking, I prefer to use coconut milk since it won’t ‘break’ easily compared to coconut cream. After opening, I will transfer the leftover to an air-tight container and place it in fridge.
