Taste of North Carolina Guests, NCRLA would like to thank you for attending this event and showing your support for the industry, the hospitality award winners, and the food and beverage producers from around North Carolina. The Taste of North Carolina strives to bring you a night of fun, networking, and delicious foods that will not soon be forgotten. This event began as a concept in 2009 to showcase the kind of remarkable culinary delights can be constructed using only North Carolina products. In 2010, the Taste debuted with 18 food, beer and wine partners and a sellout crowd of 350 guests. The 2011 Taste of North Carolina will feature over 25 food, beer and wine partners, and will once again be a hot-ticket event. The goal of this event is to encourage hospitality owners and operators to ‘think NC’ when ordering food products for their restaurant or hotel. As you can see from the wide variety of products at this event, North Carolina is home to almost any kind of food or beverage you could possibly desire. The aforementioned 25 food and beverage partners are listed in this reference guide, and we encourage you to think about them when ordering products to serve in your restaurant or hotel. NCRLA would also like to thank The Washington Duke Inn & Golf Club for serving as a staggeringly good host to the first two Taste of North Carolina events. Butterball Butterball LLC, which manufactures food products in the United States and internationally, specializes in turkey, cured deli meats, raw roasts and specialty products such as soups and salads, sandwiches, and entrÊes. Butterball LLC was a joint venture of Smithfield Foods and Maxwell Farms Inc., an affiliate of the Goldsboro Milling Co. Seaboard Corporation bought Smithfield’s stake in Butterball in 2010. The company sells over one billion pounds of turkey a year, including one in every five turkeys sold in the United States and operates the world’s largest turkey-processing plant (675,000 square feet) in Mount Olive, North Carolina. Though the Butterball brand has been formally recognized since 1940, Butterball LLC was formed in 1985. Beginning in late 1981, Butterball opened a toll-free telephone line called the Turkey Talk-Line to help customers with cooking and preparation questions. Eleven thousand people called in 1981, and in recent years the number has grown to over 200,000 each holiday season. Each of the operators holds a degree in either dietetics or home economics, roughly half of which are Masters-level. The most frequent question asked is how long a turkey takes to defrost.

Junior Johnson’s Country Ham Junior Johnson is one of the most famous race car drivers of all time. Robert Glen Johnson, Jr. (born in Wilkes County, North Carolina), was a moonshiner in the rural South who became one of the early superstars of NASCAR in the 1950s and 1960s. He won 50 races in his career before retiring in 1966. In the 1970s and 1980s he became a NASCAR racing team owner; he was elected to the Hall of Fame in 1991. In 1994, Junior and several partners started Suncrest Farms, Inc. It’s first product was the Junior Johnson Brand Country Ham which features and old-fashioned, secret curing process. It was soon followed the Junior Johnson Brand Pork Rinds and now includes the Junior Johnson Brand Bacon. It is the largest distributor of country ham in the United States. NCRLA thanks Junior Johnson for making a special appearance at the 2011 Taste of North Carolina!

NC Pork Council The North Carolina Pork Council (formerly the North Carolina Pork Producers Association) was organized as the North Carolina Swine Industry Association. It was chartered in 1962 as a North Carolina non-profit corporation. It is the oldest state pork producer organization in the nation that has operated under a mandatory checkoff funding system since its inception. Their mission is “To promote and educate to ensure a socially responsible and profitable North Carolina pork industry.” Through their public policy and advocacy efforts as well as their research, producer education, promotion, and consumer information programs and services, the North Carolina Pork Council is the respected voice of North Carolina’s pork industry. As a viable and proactive organization, the Council provides meaningful leadership for the state’s dynamic pork industry while engaging the diverse segments of the industry. More than 46,000 North Carolina citizens work full-time in pork production and over 80% of North Carolina’s hog farms are owned and operated by individual farm families.

The North Carolina Egg Association is a statewide organization that was established in 1960 to promote table eggs for the egg producers and processors. Ranking twelfth in egg production in the United States, North Carolina has about 9 million layers that produce over 7 1/2 million table eggs per day. Eggs are North Carolina’s eighth largest cash farm product. The North Carolina Egg Association works closely with the North Carolina Department of Agriculture, North Carolina State University, and the North Carolina Cooperative Extension Service to utilize their marketing programs, 4-H projects and research to educate consumers of all ages about eggs. The association consists of approximately 75 members. The association maintains a full-time staff and the operating funds of the North Carolina Egg Association are derived totally from its membership.

Accent Partners A truffle is the fruiting body of an underground mushroom. The ‘Truffles NC’ farm, dubbed the ‘Keep Your Fork’ farm, is at the foot of Sauratown Mountain with a beautiful view of Pilot Mountain. The Keep Your Fork farm specializes in growing Black Périgord Truffles, which is named after the Périgord region in France and grows exclusively with oak. Black Truffles have their highest perfume in January, and are a rarity in North Carolina, as they are primarily grown in France and other parts of Europe. Like many pharmacists, he had a soda fountain in his drugstore, where he served his customers refreshing drinks, many of which he had created himself. His most popular drink was something he called “Brad’s drink” made of carbonated water, sugar, vanilla, rare oils, pepsin and cola nuts. “Brad’s drink,” created in the summer of 1893, was later renamed Pepsi Cola in 1898 after the pepsin and cola nuts used in the recipe. Milk/Ice Cream Partner Hunter Farms gets milk from Producer Associations or Milk Cooperatives. Hunter Farms works 24 hours-a-day, 5 days a week to turn out 7,200 gallons of milk per hour, 100,000 gallons per day, and that means about 22 million gallons per year! This includes; skim, half percent, 1%, 2% whole milk, buttermilk and chocolate milk. When it comes to ice cream, Hunter Farms produces 2.3 million gallons per year for Harris Teeter and other grocery stores.

Piedmont Distillers Piedmont Distillers opened its doors in 2005, with their first spirit Catdaddy Carolina Moonshine. In May of 2007, moonshine and racing legend Junior Johnson became part owner of Piedmont Distillers and together they introduced Junior Johnson’s Midnight Moon. It is based on the Johnson family’s generationsold moonshine recipe. It is also born in a copper still, made from corn, crafted in small batches and triple distilled. While their first two spirits are moonshines, Piedmont Distillers does not consider itself strictly a moonshine distillery. Rather, their focus is on hand-crafted, superior quality spirits that are made one small batch at a time.
