Nestled in the scenic landscapes of southern Arizona, Kartchner Caverns stands as a mesmerizing underground wonder. Discovered in 1974 by adventurous cavers Gary Tenen and Randy Tufts, the caverns remained a closely guarded secret until their public unveiling in 1988. ARIZONA'S AMAZING MOUNTAINS ARIZONA'S AMAZING MOUNTAINS

Conjure up visions of Arizona and most people think of deserts and canyons. So it may surprise you to learn that more than half of Arizona consists of mountains and plateaus. In fact, the Grand Canyon State boasts 194 mountain ranges! Created millions of years ago from volcanic activity and shifting subterranean plates, these numerous peaks are the perfect backdrop for some serious mountaineering treks as well as easier hikes closer to home.

Starting in north central Arizona, you’ll find the San Francisco Mountains, the result of more than 600 erupting volcanoes millions of years ago. These mountains are just north of Flagstaff and are known by locals as “The Peaks.” This is where you’ll find the state’s highest summit, Humphreys Peak, clocking in at an elevation of 12,633 feet. Humphreys is for serious climbers; it keeps its snow on the highest elevations in summer and is one of the most prominent peaks outside of the Rockies. This range is also home to the second highest mountain, Agassiz Peak, with an elevation of 12,360 feet. The northern 40 percent of Arizona is home to the Colorado Plateau, which also covers parts of Utah, Colorado, and New Mexico. It’s where you’ll find the Grand Canyon as well. Eastern Arizona near the New Mexico border is home to the White Mountains, which are cooler in climate and similar to mountains in the Northwest, making them ideal for family vacationing. In southern Arizona, less than an hour’s drive from Tucson, hikers can enjoy the Santa Catalina, Rincon, Santa Rita, Tucson, and Tortolita Mountains, with some peaks up to 9,500 feet.

Smack in the middle of Phoenix are the smaller Phoenix Mountains, with most summits less than 1,000 feet making them perfect for family day hikes. Here is where you’ll find the popular Camelback Mountain, Piestewa Peak, and Lookout Mountain. On the west side of the valley lie the White Tank Mountains, with most summits above 3,000 feet. To the south lies the Sierra Estrella, most often seen in photos of downtown Phoenix, as well as the South Mountains. And finally to the east are the Superstition Mountains, the largest of the mountain ranges surrounding Phoenix. These rugged, rocky, and cacti-filled peaks boast numerous hiking trails, plus the lure of the Lost Dutchman Gold Mine, hidden within the hills and rumored to be full of gold. So get outdoors and explore all this majestic state has to offer.

POTATO SEITAN PANCAKES

INGREDIENTS

11/2 lbs large russet potatoes, peeled, grated and squeezed dry 1/8 tsp ground black pepper

2 oz Traditional Seitan Strips, chopped 1/4 cup canola oil, divided

1 cup yellow onion, grated 1/4 cup mango chutney

1 tbsp ground flaxseeds 1/4 tsp salt

DIRECTIONS

Combine potatoes, onion, flaxseeds, seitan, salt and pepper in large bowl. Heat 2 tablespoons oil in large skillet over medium heat. Scoop about 1/4 cup potato mixture into skillet and spread each one to an even thickness. Cook about 3 minutes per side or until golden brown. Cook remaining pancakes, adding the remaining 2 tablespoons of oil.

Transfer the pancakes to a paper towel-lined plate to drain. Serve the potato pancakes topped with mango chutney and garnished with chopped chives.

Southeast Valley Cities Neighborhood Activity Report

Market Update:

The August real estate market was as expected with some positive momentum. In most of the Southeast Valley we saw the following:

• Total of New listings were down month over month.

• Total listings Sold was up month over month.

• Median price point increased.

• Average Days on Market increased slightly.

While interest rates are still a concern, my advice to Buyers is DON’T wait to purchase a home. While you’re waiting prices continue to increase with no real expectation that will slow or change. So, if you qualify for a home, buy sooner than later or you may not be able to buy the same home down the road because it will be more expensive.
