SEARED AHI TUNA APPETIZER Ingredients: 4 oz sashimi-grade ahi tuna 1 Tbsp white sesame seeds 1 Tbsp black sesame seeds 2 oz olive oil 2 oz buckwheat soba noodles, cooked 1 roma tomato, diced 2 scallions, sliced 3 shitake mushroom caps, julienne 1 oz olive oil 2 oz Wildfish Hong Kong Broth 1 tsp wasabi, prepared 1 tsp pickled ginger 1 tsp daikon radish sprouts Procedure: Season tuna with salt & pepper, coat well with sesame seeds. Heat oil in sauté pan until very hot. Sear tuna quickly on both sides. In separate pan, heat oil until very hot. Add shitakes. Sauté until caramelized, then add tomatoes, scallions, and noodles. Add Hong Kong Broth. Slice tuna into ¼” slices. Arrange stir-fry in center of bowl. Pour broth over stir-fry. Fan sliced tuna around noodles and vegetables and garnish with wasabi, ginger, and sprouts.
