LOBSTER SOFT TACO WITH LIGHT POBLANO CREAM WITH ROASTED CORN SALSA Setting the stage for a spring fete for friends and family? Whether it’s Easter, Passover, or simply a gourmet spring fling, set your table with flair this season. Jot down these ideas to make your meal the most memorable of the spring party season. First, you’ll need to choose a color scheme. Spring’s trendiest hues this year include tranquil sky blues, vintage purples, and minty greens, often paired with contrasting pinky reds, vibrant yellows, and energetic spicy oranges. Neutral tans and subtle, elegant grays also play their part in the most elegant table settings of the season. Choose one or two soothing hues for a tranquil Easter brunch, or pick two opposing hues for an up-to-the-minute spring dinner party. After you choose your hues, flowers are the next element of your table setting, and often the most fun to select. What type? What size? What vases? How many on the table? For an elegant look, pair soothing blue hydrangeas with bright purple tulips for a punch of spring color. Or get a tropical look by mixing bright yellow and orange blooms together with a softer more elegant gray or white. This will surely bring the look of sunshine to your table. LIGHT POBLANO CREAM 4 poblanos, roasted and diced 2 shallots, sliced 3 garlic cloves, chopped 1 c. pumpkin seeds, toasted 1 qt. half and half 1 qt. heavy cream 2 cilantro bunches, chopped 3 c. spinach leaves 1 tbsp. lime zest 1/4 c. lime juice 1 tbsp. salt ROASTED CORN SALSA 4 fresh corn ears, fire roasted, cut kernels off cob 2 roasted poblano, small diced 2 roasted red bell pepper, small diced 1/4 c. cilantro, chopped 1 tsp. toasted ground comino 1 tbsp. toasted ground coriander 1 tbsp. fresh lime juice 2 tbsp. extra virgin olive oil Salt to taste LOBSTER MEAT AND SWEET POTATO MIX 16 oz. lobster meat, chopped 1 shallot, sliced 1 garlic clove, chopped 1 c. sweet potato, lightly roasted 4 oz. Monterey pepper jack cheese, cubed 1 jalapeño, minced 1/4 c. cilantro, finely chopped 4 oz. heavy cream LIGHT POBLANO CREAM In medium saucepan, sauté shallots and garlic until light in color. Add poblanos, and continue to cook for 1-2 minutes. Add pumpkin seeds, salt, half and half, and heavy cream. Bring to a light boil and then down to simmer until lightly thickened. Place in blender and puree on high, adding cilantro and spinach. Add lime zest and juice and taste for seasoning. Strain through fine hole sieve to finish. ROASTED CORN SALSA Mix all ingredients together and season well. LOBSTER MEAT AND SWEET POTATO MIX In a small sauté pan, add a touch of blended oil, lightly sauté shallot, garlic, and sweet potato to soften and bring to a translucent state. Add lobster meat and cheese, continuing to cook for 1-2 minutes until cheese melts. Add jalapenos, cream, and cilantro. Season to taste with salt and keep warm. TO ASSEMBLE THE LOBSTER TACO Place a flour tortilla onto a heated non-stick pan or griddle to warm for a few seconds. Place warmed tortilla on to a work surface and spoon about 3 oz. of the lobster filling on tortilla. Roll the lobster filled tortilla as you would a sushi roll with seam facing down. Place lobster soft taco on plate, ladle poblano cream over taco, and garnish with corn relish. Finish with some sour cream and cilantro leaves for presentation.
