California Roll California Roll (makes one roll): 2/3 cup prepared sushi rice 1/4 cup cucumber, 1/4” diced 1/3 cup snow crab mix (see below) 1 T. Tobiko caviar vegetable spray Take a 5” ring mold and spray it with vegetable spray. Set ring mold in the center of plate. Place rice into the ring mold. Use a metal spoon (soup spoon) dipped in water and lightly pack down rice. Evenly distribute diced cucumber over the rice. Place the crab mixture on top of the cucumber. Use spoon to spread the crab into an even layer. Spread the Tobiko evenly over the top of the crab. Gently pull the ring mold off. Garnish: Krzami Knori, seaweed strips 1/4 avocado, fanned 2 pieces snow crab leg meat 10-12 stems daikon radish sprout 1/2 tsp. pink ginger 2 Tbs. soy wasabi sauce 1 tsp. sesame oil 2 tsp. Sriracha sauce 1/4 tsp. toasted black and white sesame seeds
