Thanksgiving

The most important cooking tip of all

by: Chef Todd Mohr

O

f the many Thanksgiving cooking tips I can give you, this is perhaps the most important. It can be the difference between a triumphant meal and an undercooked case of food borne illness. I get many questions on email about correct roasting temperatures. “What temperature should my oven be for turkey”? “What is the correct temperature for chicken”? “How hot should my oven be for…?” All these questions can be answered simultaneously with the one important tip I told you about. Forget your oven temperature. Your oven is wrong anyway. It’s probably been lying to you. Your oven temperature is different from your neighbors, and it’s much different from my commercial kitchen, so why cook by EXTERNAL bird temperature? Cooking by INTERNAL temperature is the only way to assure and quantify that your item is fully cooked. An instant read digital thermometer will tell you EXACTLY when your thanksgiving cooking efforts are complete. 2

You don’t need to guess. You don’t need to poke anything with a fork or gash it with a knife. A thermometer is insurance from overcooked turkeys and especially from the dangers of undercooked poultry. Most people’s household ovens have a range of 200F to 500F. What’s in the middle? 350 degrees is exactly in the middle. Is this why most recipes just say “cook at 350 degrees”? Would your turkey be ruined if you cooked at 375 degrees or 325 degrees? No, probably not. Your turkey is completely cooked and safe when the thickest part of the bird reads 165F. This means if its cavity is filled with stuffing, take the temperature there. If it’s not stuffed, at the deepest part of the thigh. You can choose any roasting temperature, as long as you understand the basic cooking method of roasting. Roasting is a dry-heat convective cooking method. It uses hot air to transfer heat to food. Roasting is the best way to dry out an item because of the indirect use of hot air to cook foods. The higher the Desert Local News November 23, 2010

temperature, the faster that moisture will evaporate, proteins will stiffen, and sugars will caramelize and turn brown. Whatever temperature your oven tells you it is, whatever temperature you choose to roast your bird, just assure you have a thermometer to tell what the internal temperature is. Internal temperature is much more important than external when it comes to thanksgiving cooking. About The Author See the entire Thanksgiving Cooking video by clicking now. A Thanksgiving Celebration for All Ages Tips and Recipes EveryGeneration Will Enjoy ECES

While Americans of all ages share many Thanksgiving traditions, a new Butterball® survey found generational differences in cooking methods and flavors for the holiday meal, as well as celebratory activities. For example, most family members prefer traditional recipes1, but 60 percent of the Millennial generation (ages 18-30) are looking for new, experimental recipes to help contemporize their Thanksgiving meal.2 “Whether it’s first-timers or veteran cooks preparing the Thanksgiving feast, we support all cooks and embrace how every generation puts its own spin on the most anticipated meal of the year,” said Mary Clingman, director of the Butterball Turkey Talk-Line®. “That’s what America is all about – constantly adding to traditions to give them new life and meaning.” Starting November 1, 2010, experts at the Butterball Turkey Talk-Line (1-800-BUTTERBALL), which is celebrating its 30th year, will be taking calls and helping cooks of every generation enjoy their Thanksgiving traditions. Butterball will also be sharing tips and information on Facebook, Twitter and Butterball.com.

Something for Everyone Butterball’s new holiday recipes make it easy for cooks to impress guests of all generations this Thanksgiving by incorporating classic, favorite dishes infused with contemporary flavors. • Savor the Flavor: Millennials and Gen Xers (ages 3144) are looking for contemporary versions of classic holiday dishes, as well as ethnic recipes to help spice up the meal.3 Try Butterball’s Roast Turkey with Spicy Rub to take the flavor up a notch. • Put a Twist on Tradition: Despite their affinity for grandma’s traditional cooking, 60% of Millennials are also seeking new, experimental recipes to contemporize Thanksgiving. Rather than a baked potato try a sweet potato bar where guests can pile on the ingredients and toppings they love. Or instead of plain dinner rolls, add fresh herbs like parsley, thyme and basil to Pillsbury Crescent Rolls, then roll and bake for a simple but elegant side. • Desserts from Simple to Spectacular: Try an easy-tomake pumpkin pie with pre-made pie crust and filling. Or go for something more decadent and traditional with Praline Topped Apple Cranberry Bread Pudding with Butter Rum Sauce!

Survey Says…Each Generation Has Their Own Thanksgiving Traditions • Passing the Turkey Torch: Four in 10 Millennials and Gen Xers say they look forward to more Thanksgiving responsibilities, while Baby Boomers (ages 45-64) and Matures (age 65+) are happy to pass the torch.4 • Baby Boomers Find Time for Fun: Nearly one quarter of Baby Boomers (23%) will be joining Millennials (31%) and Gen Xers (32%) playing Wii or Playstation during the Thanksgiving festivities.5 • To Help, or Not to Help: Nearly half of Matures and more than one-third of Millennials say they will stay out of the kitchen on Thanksgiving, leaving the hard work to Gen X and Boomers.6 1-6 The Butterball generational survey was conducted to determine differences and similarities in Americans’ Thanksgiving celebrations. Fielded by StrategyOne in March 2010, the study surveyed 1,019 American adults (aged 18 and older) nationwide via phone. Survey findings have a +/- 3 percent margin of error.

Wind Turbine Energy to Heal the World

Š

Submitted By: Elaine Shay

Environmental issues have become essential in our day to day life. Our world is being destroyed, so we need to take some action now. Using renewable energy sources can be a wonderful option to do so. Wind and solar power are some of the sources for additional energy supply. Wind turbine energy kits for domestic use are getting more popular these days. They are quite easy to install and really affordable for any householder. Commercial and larger wind turbine energy systems can be too expensive for residential use. That is why DIY wind turbines are an outstanding opportunity to reduce your ecological impact on the environment and save some money. Many DIY windmill constructing guides are available online. These manuals have great information about how to build your own wind turbine energy system or how to recondition free forklift batteries for your windmill. They are quite cheap and the can provide the perfect assistance on very stage of the building process.

Congratulations

“Good Samaritan of the Year

Residential wind turbine energy systems offer many advantages over the regular electricity supply. First of all, wind is everywhere. I may blow slow or quite fast, but it is always there. There is no way we could eve run out of wind. As the sun, wind is a renewable energy source, so it is completely environmentally friendly and much better than fossil fuels, because wind turbine energy does not generate any pollutants. It is known that 1% to 3% of the energy provided by the sun turns into wind power. This is about 50 to 100 times the amount of energy obtained from plat life and biomass over the entire planet. The installation of a wind turbine energy system is much simpler than solar panels setup. Besides, homemade wind turbines are smaller and need less space to be placed on. In fact, their size is perfect for a roof in a residential property. In order to meet legal regulations, it is essential that you get the established permission before you install the turbine. Wind turbine energy can supply your electricity requirements and save you almost 80% of your electric company bill. What is more, you will never have to worry again about the electric company energy supply during a fierce storm or bad weather, because you will be able to power your home in an independent way. Most of the wind turbine energy systems have a set of batteries to store the exceeding energy generation and use it when required.

Board of Directors President Barry & Kay Williams with Marcelle and Adam West <Batman> with DeAnn LuBell Photo Pat Krause

Wind Is Our Friend Regarding the production of wind turbine energy, much more advanced technologies have been developed. That is the reason why these windmills can generate energy even when the wind does not blow so strong and direct where it is needed in an efficient way. Even though homemade wind turbine efficiency does not reach 1000 KW capacities, your domestic electrical requirements can be totally covered with it. Wind turbine energy systems are an exceptional possibility to save some money and they are also a great opportunity to use renewable energy sources to supply your routine necessities. AND RIGHTLY SO Have a Blessed and Happy Thanksgiving By Matt Weyuker

W

e Americans, from the time of President George Washington, have had a day of Thanksgiving, as our great nation’s founding President Proclaimed on October 3, 1789: “a day of public thanksgiving and prayer to be observed by acknowledging with grateful hearts the many signal favors of Almighty God…” President Abraham Lincoln, declared the 4th Thursday in November to be a holiday exactly 74-years later. Most Americans have kept the tradition of offering thanks to God on the 4th Thursday in November since then. I’m taking this opportunity to especially offer my personal thanks for so many of the blessings that I’ve received and experienced. First: I’m thankful to have been born in the United States of America – the freest nation in the world. I was often wonderstruck when, as a youngster, I studied the magnificent history of our opportunity-laden country, 6

Three time Mayor of DHS Matt Weyuker

and its struggles to mature and to assert our republican form of government in the international arena. Next: was my good fortune to serve my country in the US Naval Air Force during The Korean War. I used the term “good fortune,” because of the most life-fulfilling blessing I had received in my life, up to then – I met and married my wife Marlene. In fact it was a Thanksgiving Day many years ago, when I asked her, to be my “steady girl,” and she said “yes,” and she has been my girl these many years. Another memorable Thanksgiving Day marked the day after my return from overseas. We celebrated in our small apartment in San Diego, with Marlene roasting a chicken in an iron skillet because we didn’t have a suitable roasting pan. Over the years of our marriage, Marlene and I have been blessed with four sons and a daughter – and I am very thankful to have such talented, bright, and loving adult Desert Local News November 23, 2010

children who call me “Dad.” I am especially thankful for my faith in Jesus Christ – He has made all the difference in my life, and made a stronger marriage linking Marlene and me as one. I’m thankful to have been given the opportunity to serve my friends and neighbors as an elected member of two Orange County school boards – and in my later years, to have been able to serve the folks in our community of Desert Hot Springs as their mayor for three-terms. Even though I’ve been incapacitated with ALS, (Lou Gehrig’s Disease), I’m nevertheless thankful that I still have my thinking ability, even with my body failing me. When I awake each day, I thank God for another day, and I ask Him to help me to be a positive influence in someone’s life. Have a Blessed and Happy Thanksgiving – and rightly so.

Going for Green the Season ECES

All year long we look forward to the holidays and the merriment with family and friends that comes with celebrations. Unfortunately, these gatherings often tempt us with overly decadent dishes that can inflate waistlines and put our health at risk. Incorporating healthy snacks into our holiday routine, such as pistachios, can help us avoid some of the party pitfalls. Powerhouses of vitamins and antioxidants, pistachios are a festive, flavorful and a fantastic “green” to add to your meals. Here are five tips from TheGreenNut.org to help you through the holidays in a healthy way. • More Than a Handful: When your body goes into hibernation mode, try snacking on pistachios. At 49 nuts per serving (yes, that’s more than any other snack nut), The Green Nut delivers a filling, healthy snack you don’t have to feel guilty about! • Control Overeating: Hydrate, hydrate, hydrate. Drinking a minimum of eight glasses of water a day will help keep you feeling full. Many people often mistake hunger for thirst. • Delicious Decor: Impress your guests with color coordinated holiday-themed dishes. Try sprinkling pistachios atop any dish to add a touch of festive green. • Curb Blood Sugar Spikes: Eating pistachios with some high carbohydrate foods (as most holiday dishes are) may help you maintain a lower-than-expected blood sugar level. • Feel the Burn, Even as Temperatures Plummet: Don’t fall victim to giving up your exercise routine just because of a little winter chill. Look for activities like dancing or a favorite work-out DVD to keep your metabolism burning all winter long. The proof is in the pistachio pudding, or actually research! According to research published by the Federation of American Societies for Experimental Biology Journal 2007, eating pistachios with a carbohydrate-rich meal may result in a lower than expected blood glucose level, in a dose-dependent manner. In other words, the more pistachios in your diet, the more blood sugar may go down, as long as you don’t increase your calorie intake. Another later study, also published in the Federation of American Societies for Experimental Biology Journal 2010, found that individuals with type 2 diabetes who regularly eat nuts, such as pistachios, may have a lower level of HbA1c, a long-term marker of blood sugar control, and a lower level of LDL (bad) cholesterol.

She told about some of the antics of her youth that got her in trouble with such great names as Eleanor Roosevelt. One of her Friends Natalie Wood got her a first date but the date thought Margaret was too square. Playing with co-stars like Liz Taylor, June Allyson, and Janet Leigh in Little Women was one of her favorite movies. She remained friends with most of her co-stars all of her life. One friend and co-star, Elinor Donahue, attended this dinner and her stand-in as a child, Maureen Lee Kluck was also present. She sold some of her memorabilia to Michael Jackson. She mentioned her trips to Palm Springs and the Ingleside Inn. Mel Haber has made great renovations to the hotel and restaurant and she was looking forward to coming back many times. The Inn is a beautiful Get Away for celebrities and visitors. Mel Haber is going to continue the series with one of two a month. Story and Photos by Pat Krause The Desert Symphony Encore Series featured Big Bad VooDoo Daddy at the McCallum Theatre on Nov. 18th. Music lovers filled the theatre and the Symphony was at their best led by Musical Director, Gary Berkson. They started the evening with The Nutcracker as prelude to the Christmas Show. They changed the format and played, The Shadow of your Smile. The compliment of Strings, Horns, Drums and other instruments brings goosebumps because they are that good. The tempo changed again when they played “Billy Jean”. Michael Jackson would have been proud of this Orchestra and that arrangement. The Orchestra will be doing A tribute to Michael Jackson Concert. They again changed themes by going south with the Jamaican Rumba. Intermission was held and then the main event came on stage. Big Bad VooDoo Daddy was here 3 years ago and made another return engagement. They started out with toe tapping music and it never ended. Their new CD is a tribute to Cab Callaway songs which they played for the guests. The Orchestra accompanied them on every song. What a thrill to hear the big band Desert Local News November 23, 2010

sound again. Big Bad VooDoo Daddy plays music you don’t get to hear very often. A comeback to great songs of the 30’s.40s’ and 50’s. They play the part with the long jackets, baggy pants and hats complete with vintage shoes. Each member had an opportunity to display his talents during the concert. Boogie Woogie, Jumping Jive, BeeBop, Jitterbug and depression era music brought memories of a yesteryear. Remember “Hey Now, Hey Now” and “Hi De Hi and Ho De Ho”? Theirs is a special brand of music. The Band has been together with all its original members for 17 years. The audience gave them a standing ovation when they finished and brought them back for an encore. They stood again and didn’t want them to leave the stage. The group went into the lobby and signed CDs and autographs. Upcoming Desert Symphony events include The Contours on Dec. 17, The Texas Tenors on Jan 13, Marilyn McCoo and Billy Davis Jr on Feb. 9. Music of Michael Jackson on March 16, American “G”enius on April 7and Tito Puente, Jr on May 7. 23

‘Ruined’

POWERFUL PULITZER PRIZE WINNING PLAY SCORES WITH AUDIENCE

By Jack Lyons Theatre Critic & Reviewer For most of us life is full of choices. Sometimes we make the right choices and sometimes we make the wrong choices. But what if you don’t have the luxury of being able to make a choice at all? What if you’re locked into situations over which you have no control to make a choice? That is the situation the characters in the Pulitzer prize-winning play “Ruined”, written by Lynn Nottage, find themselves in. The powerful and provocative drama is being presented at the La Jolla Playhouse as a co-production with the Huntington Theatre Company and Berkeley Repertory Theatre. La Jolla Playhouse Artistic Director Christopher Ashley’s production makes a very compelling statement for worldwide awareness, understanding, and a call for action to the plight of Congolese women ravaged by the Civil War that has been raging in the Democratic Republic of Congo (DRC) for years. “Ruined” tells the story of characters in a small war-torn town in the DRC where Mama Nadi (wonderfully played by Tonye Patano) runs a cozy brothel where a soldier can put down his weapon and spend the evening in the company of young and beautiful women – for a price. Mama Nadi both protects and profits from the young women who work for her, and she is determined to keep the war at bay and the money coming in at any cost. The women, all of whom have been brutally raped (savage and monstrous rape of the country’s women is a tactic of war employed by both sides during African civil wars as a way to terrorize the population into submission for each side’s cause) are marked with a social stigma called

“ruined” - making them unacceptable for marriage and outcasts in their own country. Disenfranchised and powerless, Nottage’s Congolese women, through hope, grit, indomitable spirit, and courage, find a way to move forward with their lives despite the overwhelming odds. “Ruined”, boasts a high-octane ensemble cast of thirteen, and includes actors, dancers, and musicians. Together they bring into sharp focus the differences between European, American, and African cultural mores. Featured are: Tonye Patano, Oberon K.A. Adjepong in a solid and sensitive performance as Christian, the friend of Mama Nadi, who harbors a soft spot for her; Pascale Armand as Salima, Carla Duren as Sophie, and Zainab Jah as Josephine, are the three women who must “serve” the customers. As each woman achingly reveals details of her life, the inhaling and exhaling by the opening night audience was palpable and heightened to the breaking point. One could hear a pin drop. Even in plays of dark and disturbing themes, however, actors and audiences alike look for the moments of comedy to balance the charged air of the on-stage action. “Ruined” is rich with humor and music, which serves to underscore the celebration of the human spirit of the Congolese people. Jason Bowen as Fortune, Wendell B. Franklin as Jerome Kisembe, Joseph Kamal as Mr. Harari, Kola Onaodwan as Laurent, Okieriete Onaodowan as Simon, and Adrian Roberts as Commander Osembengal, are riveting and intimidating in their intensity and loyalty, each, to their particular political faction. Odukogbe are two on-stage musicians, who provide the beat and tempo in the nightclub scenes. The production’s creative team, led by the deft and steady hand of director Liesl Tommy, complements the sound design and original music direction of “Broken Chord”. Clint Ramos’ lush-looking scenic design provides a colorful backdrop for the costume designs of Kathleen Geldard; thanks to the various scenes painted by the lighting designs of Lap Chi Chu. The fight scenes staged by fight director Steve Rankin, were among some of the best I’ve seen in a long time. Pulitzer prize-winning playwright Nottage is no stranger to controversial themes. I first noticed her work in her award-winning play “Intimate Apparel” seen at the Mark Taper Forum a few years back. She is a bold writer who has compelling human stories to tell and share. Her insightful writing style and ideas have definitely moved her into the top tier of emerging American playwright’s. Of late, the American stage is in a retro mode. Most Broadway productions now seen are revivals of revivals. There is a real concern for the future of live theatre due to a paucity of quality playwrights in the pipeline. Fortunately, Ms. Nottage doesn’t have to worry about that concern. “Ruined” performs at La Jolla’s Mandell Weiss Theatre through December 19th. Miss California USA Pageant at Agua Caliente Casino

Story and Photos by Pat Krause Rancho Mirage was teeming with beautiful women and teenagers for the Miss California USA Pageant held in the fantastic “THE SHOW” at Agua Caliente Casino Resort Spa in Rancho Mirage. This pageant is an annual 3 day event that ran this year from Friday Nov. 19 thru Sunday Nov. 21.

Alyssa was chosen. Very exciting and tense moments. Some of the local women in the contest were Miss Palm Springs, Keeley Boess and Miss Greater Palm Springs Shana Johnson. Both did very well in the competition.

Over 200 women vied for the title of Miss CA USA for 2011. Almost 200 teenagers also tried to win the Miss Teen CA USA. Contestants from all over the state came to Rancho Mirage for this contest. It is a great opportunity for young women. Prizes for the winner of the title total over 75,000. They include scholarships, travel, complete wardrobes that include shoes, purses, Jewelry, Make up and even a doll fashioned after her image. Another perk is member ships in clubs, interviews for modeling and movies plus many other gifts. Miss CA USA, Nicole Johnson of 2010 relinquished her crown to the new Miss CA USA. She said the new winner must enjoy every day of this great honor. The WINNER is Miss Hillsborough, Alyssa Campanella, who is just 20 years old. She was poised and confident when she answered her question posed by the judges. She wore a gorgeous blue gown and was handed a bouquet of red roses. They put the new Tiara on her head and the Miss CA USA sash over her gown before she made her way down the Red Carpet for all to see. A very emotional and excited young woman walked the aisle. It was very difficult for the judges to choose just one winner from all 200 plus girls. They broke it down to 20 before making another decision to reduce that amount down to 10. The final five were chosen and it came down to the last two women before

What an experience for these women. Miss Rancho Mirage USA, Allie Ibara, made it into the top 10 finalists wearing a gown created for her by local designer Michael Costello of TV fame in “Project Runway”. Another beautiful girl from our Valley.

Miss Rancho Mirage, Allie Ibarras

Emcees for the event were Keith Lewis and Shanna Moeckler. Both had great things to say about Miss CA USA 2010. They had built a friendly bond with her for the past year and are looking forward to being there for Alyssa for 2011. The first runner-up was Miss Laurel Canyon USA, Katie Blair. She will take over the crown if Alyssa cannot fulfill her obligations. The others in the top 5 were Miss LA USA, Miss Venture USA and Miss LA County USA. Other awards were given to some of the contestants such as Miss Congeniality, Swimsuit and Gown Competitions and other contests. Each girl walked away with some great memories and friends. The pageant officials kept them busy from 6 in the morning until later than 10 at night. Many girls got by on less than 4 hours sleep each night as they had to be ready to go,dressed and make up on by six every morning. Everyone I talked to said it was all worth it and would do it again. Many of the contestants have entered this pageant before.
