Desert Hot Springs Celebrates America’s Birthday on July 5th with a bang! By Carolyn W.Gaines The Five Years Long awaited, FIREWORKS returned to the Desert Hot Springs July 5, 2014, the event took place at Mission Lakes Marketplace. The Independence Celebration was colorful, happy, friendly, excited, filled with plenty of love. Organized by Mayor ProTem Russell Betts, the event

was made possible by many people stepping in to help. The DHS Pick-Up Crew, Neighbors, Friends, Moms, Dads, Child Stars, Grand Parents a few flew in from Washington State. Talented-youth showed up for an intermission presentation that had big smiles on those in the audience and had Mayor Adam Sanchez singing and

dancing. A San Diego band called Gin Piston turned up the heat with a two-hour concert. Gin Piston out of San-Diego didn’t retrieve their name from the late great “Muddy Waters” song just like the Rolling Stones. The Rock Band made everyone’s zany in love with the song called Alabama. By KMIR News Staff CATHEDRAL CITY, Ca. - A judge today appointed a psychologist to examine a 22-year-old man suspected of making explosive devices at a Cathedral City-mobile homee. Sean Stewart Clarke pleaded not guilty to nine felony counts -- including possession of an explosive device, arson, assembling a booby trap and disposing of hazardous waste and a misdemeanor count of being under the influence of

a controlled substance -- for allegedly having an explosive device and keeping bombmaking materials at a unit at Sungate mobile home park on June 24. Riverside County Superior Court Judge Michael Naughton granted a defense attorney’s request for the mental health exam at a hearing today at Indio’s Larson Justice Center, and ordered the psychologist’s report filed by Aug. 8, according to court records.

organization provides housing programs and other services to male military veterans in need, through two Desert Hot Springs locations, which have a total of 18 beds between them. Through the organization’s

program, vets are provided services in collaboration with the VA in Loma Linda, receiving: • Vision and dental services • Having health needs addressed and treated • Psychiatric and psychological needs addressed and treated Some of the program requirements include attending Alcoholics Anonymous and/ or Narcotics Anonymous, or Celebrate Recovery, a ChristCentered 12-Step program for anyone who has any kind of “Hurt, Habit or Hang-Up.” Transportation to church services, events, and programs such as Celebrate Recovery (The Desert Hot Springs location for Celebrate Recovery is at Christian Center of Desert

Hot Springs, on the corner of 8th Street and Palm Drive; Assemblies of God Church.) Transportation is also available to attend other 12-Step meetings; some are held at the organization’s housing locations. Other requirements include attending educational counseling sessions, budgeting skills and character development classes, and work on breaking isolation traits by attending “movie night” at the housing locations, where the vets may socialize with one another, attending groups that help the vets identify triggers that bring back to their minds old habits and how to use coping skills when the triggers occur. The organization provides transitional housing for homeless male veterans who are in a financial crisis or are recovering from alcohol and/or drug addiction, through the Veteran’s Affairs grant program, “Grant Per Diem,” or GPD. There is a three goal treatment plan set by GPD: 1. Residential stability, where homelessness issues are addressed: • Drug and alcohol abuse • Emotional well being • Attending all medical and dental appointments • Nutritional health and exercise • Hygiene needs • Legal obligations, such as child support, traffic fines and convictions 1. Increasing income: • Obtaining credit reports in order to restore credit • Obtaining employment and setting aside 30% of their income toward move-out expenses (the vets are allowed to stay in the VA housing between 22 and 24 months.) • Learning to use coupons and watch for shopping deals, through the budgeting skills program

• Obtaining competitive employment through attending college, changing careers, building on current employment • EDD Veteran Counselor Connection: Resume preparation Utilizing proper attire (The Jewish Center in Palm Springs helps provide clothing to the vets for employment.) • Seeking food pantries (Food Now has helped a lot.) Connected to the Ranch and Senior Center, that let the vets volunteer; those on SSI/ SSDI are required to volunteer 20 hours per week to the organization of their choice, provided the vet is accepted by said organization to volunteer for them. 1. Self-determination and actualization • Once the first two goals are realized, the vets begin to feel much better about themselves. According to program director and owner/president of the organization Daniel Yeboah; the program began in February of 2009. Yeboah said homeless male veterans are contacted on the streets, in sweeps of areas where the homeless congregates. A Loma Linda liaison then screens prospective participants for qualifications set by VA standards. There have been many success stories of vets who have completed the program: • 200 homeless vets have become financially stable, and have obtained permanent housing • Since the beginning of 2014, more than 10 participants gave graduated the program. Through Hope for Future Leaders, these veterans can lead healthy and productive lives once more. Yeboah started sober living programs in 2002.

by Art Kunkin                                                           Mr. Life Extension In his book “The SelfTalkSolution,â€? author Shad Helstetter states very correctly that one of the greatest problems of our time is that many people have uncritically become creatures of habit and lack selfesteem. He believes this is the case because every negative word heard by each child has been programmed into that child’s brain just as if the child was an electronic computer.  In making this important observation, Helmstetter says that “As we grew it made no difference to our subconscious minds, whether what we were saying or accepting about ourselves was true or false. Our subconscious minds, just like desk-top computers, simply accepted what we and others programmed into them – whether the information was accurate or inaccurate, healthy or unhealthy, helpful or unhelpful.  â€œIt is precisely because of how our brains work that we become creatures of habit. Because of our programming, we form patterns – repetitive styles, actions and thoughts – in our subconscious minds. And we tend to repeat those behavior patterns that are the most strongly programmed...  â€œWe do receive good programs, of course, but not enough of those. The result is that we grow to maturity with some of the most inappropriate and self-hindering programs imaginable stuck permanently in our subconscious minds, where they will affect every action we will ever take and every thought we will ever think,

He then offers the reader a variety of carefully constructed sentences to resolve various problems. He suggests reproducing one or more of these positive statements on cards to put on bathroom mirrors or other places where they will be frequently seen and can change one’s mental programming for the better.  Here are some of the phrases Helmstetter has developed to help a person easily go to sleep and thereby overcome any physical or psychological issues that might prevent a restful nights sleep. A good way to use this self-talk is to record the desired self-talk on a portable recording device and whenever convenient, play the recording in the background as one goes about daily life. So if you, the reader, would like to resolve a sleeping problem, choose one or several of these phrases and use them for your own self-talk reprogramming. Feel free, of course, to change the wording to suit yourself.Â

Matt Garrison Brings Wealth of Experience to Desert Christian Academy By Desert Star Staff Bermuda Dunes, Calif.,Desert Christian Academy (DCA) is very pleased to welcome Mr. Matt Garrison as our new Director of Athletics, overseeing our extensive Conqueror sporting programs. Mr. Garrison comes to DCA from a professional head basketball coaching position in Niigata, Japan, where he led a team of excellent athletes to the playoffs and set a single-season record for number of wins. Prior to his international coaching position, Mr. Garrison was a coach at JSerra Catholic School in San Juan Capistrano, so he is familiar with and appreciative of the needs of a faith-based educational program. He has also participated in unique youth sports programs with great NBA players like LeBron James, Michael

Jordan, and Kobe Bryant. “Matt Garrison exemplifies what we are trying to instill in our student-athletes,” says Debbee Scott, DCA Head of School. “He knows the importance of Christ in our students’ lives, and understands that these kids must excel in the classroom and on the playing field. 3 Killed in Plane Crash Near Lake Elsinore

By KMIR News Staff LAKE ELSINORE, Ca. -A woman lost her husband, father and uncle when a small plane crashed in the Santa Ana mountains off Ortega Highway near Lake Elsinore over the weekend, killing all three men aboard, relatives said.

‘Tim’s Vermeer’ & ‘Ernest & Celestine’ Art lovers will be fascinated by the clever “Tim’s Vermeer,” a film, now on DVD, that attempts to solve the puzzle of Dutch master Johannes Vermeer’s art style and technique. How did Vermeer create paintings with such photographic realism long before the camera was invented? This question intrigued Tim Jenison, a Texas-based inventor who set off on an artistic quest that spanned a decade and was captured on film by director Teller of the magic duo Penn and Teller. Penn Jillette produced the film and serves as a narrator in this intriguing documentary. Jenison’s quest takes him to Holland, then on to the north coast of Yorkshire to meet with noted artist David Hockney and eventually to Buckingham Palace. His search for answers is exhausting, and at one-point Jenison says he would have given up if he weren’t being filmed. Both Jenison and Hockney agreed that Vermeer might have used a camera obscura to create such realistic works of art. This optical device was an invention that eventually led to photography and the invention of the camera. What is so astonishing is witnessing all the exhaustive preparation that went into Jenison’s research and the

techniques, he used to create a replica of a Vermeer painting. Even more surprising is the fact that the inventor is not an artist. It also has a fine voice cast with Forest Whitaker as Ernest and Makenzie Foy as the adorable little Celestine. Other voices include Lauren Bacall, Paul Giamatti, William H. Macy and Megan Mullally. The storyline is a bit bizarre, dealing with collecting bear’s teeth for use by mouse dentists. Celestine would rather draw pictures of bears than collect their teeth, but it’s a job she has to do to earn her keep. On one of her gathering expeditions, she comes face to face with Ernest, a hungry bear in search of food. She cleverly talks him out of thinking of her as a snack, and in a while the two become friends, proving that friends come in all shapes, sizes and species in this case. But along with their budding friendship, there are some pretty scary adventures, which only serve to bring this odd, but lovable duo closer together. There are DVD extras and a feature on the making of the animated film which is rated PG for some scary moments.

Waves of Memories in Oceaside, ca

Photo Credit: Spring Hill Suites By Pamela Price A perfect home base for a family friendly getaway is Oceanside, CA, thanks to its being near Legoland, Sea World, Disneyland, the San Diego Zoo and Safari Park. And that’s in addition to the city’s Historic Ocean Pier, built in 1987, which is the longest wooden pier on the West Coast spanning 1,942 feet. View the panorama at sunset from the new Spring Hill Suites which opened this year. It’s near an Oceanside landmark, The Top Gun House. If you’ve seen the film Top Gun with Tom Cruise and Kelly McGillis you’ll recognize this Queen Ann Victoria Cottage built in 1887 at 102 Pacific Street and with a fresh coat of yellow paint. The challenge while spending a night, here was finding the best beach, one that could take days, that’s why I am returning to continuing the explorations. You could twitter all day getting opinions but here

is a start, Buccaneer Beach, the smallest beach with a lifeguard tower, with its wide sandy shore, idea for waders, swimmers and body boarders, Breakwater Way just south of Oceanside Harbor with a volleyball court and for surfers, a jetty where the Ocean meets the San Luis Rey River and for a family picnic (and dog friendly) and Tyson St. Beach with picnic tables, a children’s playground with stairs for beach access from Pacific Street. Now, you could compare and argue indefinitely about the “best beach” in Oceanside, but that’s the catch. You have to return, and while that endless adventure ensues, you might catch the Grunion Run ( that’s the marine fish found only along the coast of Southern California and Northern Baja)with runs scheduled June, July and August; the runs start after midnight. The event is a California classic. Just

the thought of that era activates waves of memories such as piling into one of those “woody” station wagons and heading for the beach at a moment’s notice. Oceanside is one of those rare beach cities that holds fast to the past when it comes to surfing history and home to the California Surf Museum founded in 1986. This “storefront” museum preserves surfing heritage and history has world recognition such as coverage in the Smithsonian Magazine, National Geographic and BBC television. “The spiritual triangle of Oceanside” is s story worthy of exploration since this alluring city is located in the center of three religious philosophies that attract visitors from around the world. Tours are available

at the Rosicrucian Fellowship, the Mission San Luis Rey de Francia, a Franciscan Mission to the East and the Prince of Peace Benedictine Abbey to the North. In these troubled times, a place to quietly meditate can be a meaningful respite. The architecture of each reflects peace and tranquility. The annual St. Frances & Blessing of the Animals takes place this year October 11th, Saturday. The event is organized by notfor-profit animal rescue groups. Pets are invited to participate in costume; the admission is free. I hit the jackpot by arriving at the Spring Hill Suites on Thursday because that is when the streets closed for the Sunset Market, an international weekly gathering of cuisine from around the world

prepared on site. “Its like the United Nations of Cooking,” explained my colleague who insisted that if I visit Oceanside it had to be on Thursday between 5 PM and 9 PM. I understood after perusing every cooking imaginable from goat meat from Nigeria to a giant lemon cupcake large enough for a quartet of cake lovers. From Bosnian specialties to Brazilian sandwich style omelets this was a fantasy of earthly delights. Spring Hill Suites, the newest beach property in Oceanside is convenient to the beaches, shopping and the irresistible Sunset Market. Adjacent to Hello Betty Seafood House, where you will find specialties on the menu such as shrimp and cheese stuffed jalapeños and grilled platter from Mexican yellow tail to the ‘daily catch’. Whether you catch a wave or favor the flavors of the sea, Oceanside has what it takes to hasten your return. This pristine beach city is also known as “San Diego’s North Shore,” it still hangs on to the mid century surf culture captured in films of yesteryear, such as Gidget. Riverside Council to Decide Fate of Red Light Cameras

By KMIR News Staff RIVERSIDE, Ca. -The Riverside City Council could decide tonight to shut down the municipality’s divisive red light traffic camera enforcement program. A public hearing is scheduled at 6:30 p.m. for the council to consider whether to deactivate the system installed in 2006. Councilman Mike Soubirous told City News Service that the majority of residents are in favor of unplugging it. ``Most people see this as a revenue tool, not an educational tool or deterrent,’’ Soubirous said. ``The data doesn’t support the argument that these cameras are preventing wrecks. There are red light runners who complain about the cameras. But 85 percent of the people I’m hearing from -- even though they’ve never been ticketed -- hate these things. The cameras scare them, freak them out. They’re uneasy about even going through a yellow light at intersections.’’ Soubirous said Riverside is suffering a negative image by keeping its system gong. ``It’s too harsh on visitors,’’ the retired California Highway Patrol lieutenant said. ``Makes us look bad to outsiders.’’ Councilman Mike Gardner, who along with Councilman Steve Adams has been a strong supporter of the program, acknowledged that ``most people don’t like it’’ but said there’s a lot of ``misinformation’’ that turns off residents. ``A lot of folks are under the impression that the fines for a red light camera-recorded violation are higher than if a police officer was writing the ticket. That’s not true,’’ Gardner told City News

Service. ` ` P e o p l e a l s o d o n ’t realize that 75 percent of the camera-activated violations are discarded,’’ he said. ``The cameras can be triggered by a number of things. But more than three-fourths of the violations turn out not to be worthy of a citation.’’ The city utilizes retired police officers and sheriff’s deputies to function as ``operators’’ of the system, analyzing alleged violations recorded by still and video cameras. Many times, the defendant in a red light camera case can receive a citation signed by one ``operator’’ only to be confronted by another when it comes time for trial. D e f e n d a n t s a re n o t routinely given the opportunity to ask questions of the original citation signer or the parttime technicians who position the cameras and adjust their settings. Such practices have led to appellate court challenges, and in at least two published cases in Los Angeles and Orange counties, the defendants were successful in getting their red light camera convictions overturned as violations of the U.S. Constitution’s Sixth Amendment, which guarantees the accused the right to confront the ``witnesses against him.’’ At its peak, Riverside’s red light traffic camera enforcement system relied on 30 cameras. Fourteen are now active, according to the Department of Public Works. The agency said that between fiscal years 2006-07 and 2013-14, the system generated $16.69 million in revenue from fines. That amount, however, does not take into account

operational expenditures -- the funds spent leasing the camera equipment, paying maintenance and personnel costs. According to city officials, current operational costs total around $92,557 per month. The city contracts with Australia-based Redflex Traffic Systems Inc. for its photoenforcement system. ``That $500 ticket is going through six different levels before its value is totally gone,’’ Soubirous said. ``There’s money going overseas that could stay right here and be spent on something better.’’ He said the ``deterrent effect’’ so often advanced as an argument for the cameras doesn’t wash. ``People who are texting while driving -- or worse, who are driving drunk -- aren’t paying attention anyway,’’ Soubirous said. ``They’re going to run the

red light, no matter how bad the consequences. But somebody ticketed for a slow rolling right turn? That doesn’t justify having a camera at an intersection. ``We have nearly two-dozen traffic officers in this city. But I have yet to hear from the police department whether any of them are actually out enforcing intersections,’’ Soubirous said. ``Let’s get them back out there.’’ Gardner said he had no issues with drivers being fearful of camera-enforced intersections. ``People should be afraid of running red lights,’’ the councilman said. ``Since the camera enforcement program began, accidents at intersections have dropped significantly. I grant you that the system is not without faults. But I think there are more benefits than faults.’’ Between 2006 and 2011, the number of broadside collisions at

intersections citywide dropped 46 percent, while over roughly the same period, the number of red light infractions at cameraenforced intersections fell 64 percent, according to statistics cited in a city staff report. Voters in Murrieta approved an initiative in 2012 seeking to end that municipality’s sixyear-old red light traffic camera program. Supporters pointed to a surge in rear-end collisions at camera-enforced intersections and noted the unfriendly reputation the cameras gave the southwest Riverside County city. A judge invalidated the ballot measure based on arguments that it encroached on the city council’s authority. But less than six months later, the council voted to deactivate the system anyway. Man Arrested for Crashing Golf Cart While Drunk Free Admission to Power Game

By Wesley Rossenrode LA QUINTA, Ca. -A La Quinta man has been arrested for crashing his golf cart while drunk, according to La Quinta Police. Police were led to the crash by a woman covered in dried blood. This all happened around 2:25 a.m. Monday, July 7th at PGA West.

Police say the a woman approached the main gate with dried blood on her face, but no visible wounds to her body. The woman said she passed out on the golf course and that she remembered being with a man. That led police to 73-year old Gary Osborn of La Quinta. According to police, Osborn was found passed out near a golf cart that had

crashed into a tree. Police also say a home nearby was damaged. Osborn was taken to the hospital then to the Indio jail. Priscilla Presley tells Upset fans to ‘Calm Down’

(AP) Priscilla Presley is asking fans of her late ex-husband Elvis Presley to “please calm down” after a report that two jets once owned by the singer could be removed from Graceland. Fans have posted critical comments on Facebook since The Associated Press reported last week that Elvis Presley Enterprises informed the owners of the Lisa Marie and the Hound Dog II to prepare to remove the planes when their agreement ends next April. Elvis Presley Enterprises operates the Graceland tourist attraction, and OKC Partnership owns the planes. On July 2, Priscilla Presley posted a comment on her Facebook page saying: “I see your posts about the planes. Please calm down, we’re in the midst of negotiations. It’s as simple as that. Thank you.” On Sunday, she posted another statement. “I’m reading what you are saying, but listen, the people who own the plane put the release out to intentionally upset everyone. We’re on top of it. Thank you for your trust in us. We will soon be putting out a release about some new and exciting things happening at Graceland.” It was not clear from the posting if the mention of negotiations means there’s a possibility the planes could remain at Graceland. Some of the Facebook comments were

supportive of Priscilla Presley. The planes were bought by Elvis Presley in 1975 and used on concert tours. They were sold after his death on Aug. 16, 1977, and were eventually purchased by OKC Partnership in Memphis. OKC Partnership and Graceland agreed to bring the two jets to Graceland in the mid1980s. Their agreement called for OKC Partnership to receive a cut of ticket sales in return for keeping the planes there.

Earlier this year, Elvis Presley Enterprises sent a letter to OKC Partnership’s K.G. Coker, asking Coker “to make arrangements for the removal of the airplanes and the restoration of the site on or shortly after April 26, 2015.” Coker said Monday that the contents of the letter were released after he was contacted by a reporter and he has not negotiated with Elvis Presley Enterprises since the AP story was published. Coker has acknowledged that he and his

partners would lose money from ticket sales if the planes were removed. Meanwhile, Elvis Presley Enterprises and OKC Partnership are embroiled in a lawsuit filed May 27 in Shelby County Chancery Court over a dispute about how tickets to the airplane exhibit are sold. The tickets have been bundled in a package that includes the tour of the Graceland mansion, but Graceland’s operators want

to “unbundle” it and sell the airplane tours as a separate ticket. The pricing for the packages, which offer different levels of access, are currently $37, $42 and $72 for adults, according to Graceland’s website. A ticket for the selfguided airplane tour and the “’68 Special” attraction, featuring an interactive video experience about Elvis’ December 1968 televised event, is currently $12.

6 tablespoons melted butter, divided use 12 maraschino cherries, stems removed and patted dry 1 (20 ounce) can crushed pineapple 1/4 cup brown sugar *1½ cups all purpose flour, plus more for kneading the biscuits 1/4 cup powdered milk 1 teaspoon sugar 3/4 teaspoon kosher salt 2½ teaspoons baking powder 3/4 teaspoon baking soda 1/4 cup (1/2 stick) cold unsalted butter, cut into pieces 1/4 cup vegetable shortening 1 large egg 1/2 cup buttermilk Preheat oven to 450°F. Brush a standard muffin pan with 1 tablespoon of melted butter. Place a maraschino in the bottom of each muffin tin. Drain the pineapple, reserving the juice. Combine the pineapple with 4 tablespoons melted butter and the brown sugar. Spoon the mixture evenly into the muffin tins. Place the all purpose flour (or substitute the gluten-free ingredients below), powdered milk, sugar, salt, baking powder, and baking soda into a food processor and pulse a few times to combine. Add the cold butter and shortening and pulse the mixture several times until it resembles coarse crumbs. Add the egg and buttermilk and pulse to combine. Flour a work surface with some all purpose flour (or for gluten-free, use sweet rice flour), dump the biscuit batter onto it and knead a few times until the dough is no longer sticky. Divide the dough into 12 equal sized balls and flatten them so they are the size of the muffin tins. Place the biscuits on top of the pineapple mixture. Mix 2 tablespoons of the reserved pineapple juice with the remaining tablespoon of melted butter and brush on top of the biscuits. Bake for 12 - 15 minutes or until the biscuits are golden brown, let cool in the pan for 2 minutes then flip onto a plate to release the biscuits. Makes 12 biscuits *Go gluten-free! – Replace flour with 1½ cups all-purpose gluten-free flour blend OR make your own using 3/4 cup white rice flour, 1/2 cup tapioca starch, and 1/4 cup sweet rice flour, plus more for kneading the biscuits.

cup all-purpose flour cup unsweetened cocoa powder teaspoon baking soda teaspoon kosher salt cup unsalted butter, at room temperature cup brown sugar, packed cup sugar large egg teaspoon pure vanilla extract cup maraschino cherries without stems, chopped 1 cup bittersweet or semisweet chocolate chips *2/3 cup white chocolate chips 1 teaspoon vegetable shortening 1 tablespoon red sugar crystals Preheat oven to 350°F. Line two cookie sheets with parchment paper or silicon baking mats. Whisk the flour with the cocoa powder, baking soda, and salt. With an electric mixer on medium-high speed, cream the butter and sugars together until fluffy, about 3 minutes. Beat in the egg and vanilla. Add the flour mixture and mix just until combined, add the chopped cherries and chocolate chips, stir in well. Drop by tablespoons onto prepared cookies sheets (a small ice cream scoop works well for this) and bake for 10 – 12 minutes. Let cool on the pan for 5 minutes then remove to a cooling rack placed over a piece of parchment or waxed paper to finish cooling. Mix the white chocolate chips and shortening together in a microwave safe bowl and microwave on high power for 60 – 90 seconds. Stir until smooth and creamy. Scrape the mixture into a small plastic bag, snip off the very tip of one of the corners and drizzle the white chocolate over the cookies. Top each cookie with a pinch of sugar crystals. Makes about 2 dozen cookies *Go gluten-free! – Replace flour with 1 cup all-purpose gluten-free flour blend OR make your own using 1/3 cup white rice flour, 1/3 cup tapioca starch, and 1/3 cup sweet rice flour, and 1/2 teaspoon xanthan gum. cups white grape juice cup pomegranate juice cup freshly squeezed orange juice (13.5 ounce) jar maraschino cherries with stems 1 orange (preferably organic), thinly sliced 1 lemon (preferably organic), thinly sliced 2 cups white grapes, frozen Ice Mint sprigs for garnish Combine the grape, pomegranate, and orange juices in a large pitcher. large eggs, separated cup pastry flour teaspoon kosher or fine sea salt teaspoon baking soda cup buttermilk tablespoons maraschino cherry juice cup non hydrogenated vegetable shortening, at room temperature 12 tablespoons unsalted butter, at room temperature – divided use ¾ cup sugar 2 teaspoons pure vanilla extract, divided use ¾ cup chopped pecans, divided use 1½ cups coconut flakes, divided use 8 ounces cream cheese, at room temperature 3½ - 4½ cups powdered sugar 12 maraschino cherries, with stems, patted dry Preheat the oven to 350 degrees. Line a standard 12 cup muffin pan with paper liners. Beat the egg whites until stiff with the whisk attachment of a mixer or a handheld mixer. Whisk the flour, salt, and baking soda together in a mixing bowl. Mix the buttermilk and maraschino cherry juice together. In the bowl of an electric mixer, preferably fitted with the paddle attachment, cream the shortening, 4 tablespoons butter, and sugar together until light and fluffy, about 3 minutes. Add 1 teaspoon vanilla and mix well. Add the egg yolks, one at a time, mixing well after each addition. With the mixer on low, add half the flour mixture, then the buttermilk, and finally the remaining flour. Using a spatula, scrape the bottom and sides of the mixing bowl well to ensure all ingredients are fully combined. Fold in the beaten egg whites. Fold in ½ cup of the pecans and 1 cup of the coconut. Divide the batter among the prepared muffin tins and bake for 15 minutes or until the cupcakes spring back when lightly touched and a tooth pick inserted into the center comes out clean. Let cool in the pan for 5 minutes then remove to a rack to finish cooling. While the cupcakes cool, make the frosting. In the bowl of an electric mixer, preferably fitted with a paddle attachment, beat the remaining 8 tablespoons of butter and the cream cheese until smooth. Add the vanilla and 3 ½ cups powdered sugar and beat until combined. Add more powdered sugar as necessary until the frosting is thick and smooth. Frost the cupcakes and sprinkle with the remaining ¼ cup pecans and coconut. Top each cupcake with a maraschino cherry. Not Your Average Carne At El Matador By Dan Marinelli DESERT HOT SPRINGS – In the Mexican food-laden Coachella Valley, finding a decent spot to get a burrito is not rocket science. In Desert Hot Springs, however, the go-to place during the day – or late at night – is El Matador, right off Palm Drive. El Matador is small, quaint and not as modern looking as a more-corporate restaurant, but the savory and delicious food most certainly picks up where the décor is lacking. El Matador is a Mexican restaurant, but owner Martin Mesa draws influence from cuisines across the globe. “The food is a combination from Ecuador, Spain, Guadalajara and Guatemala,” Mesa said. “The rice recipe is originally from Spain, the beans and meats are from Guadalajara and some of the ingredients for the ranchero sauce is from Guatemala.” From 11 am. – 9 pm., El Matador is open as a sit-down restaurant. The mom-and-pop shop’s menu boasts traditional Mexican items like tacos, burritos, tortas (sandwich), chile rellenos, tamales and various Mexican seafood dishes. The best part about El Matador might be at sundown, when Martin opens the window on the façade of his restaurant

and sells authentic Mexican street tacos. “When we got the place, it had been running 14 years as a Mexican restaurant already,” Mesa said. “My world was a taco shop – which was why we started selling tacos six years ago. “ Desert Hot Springs is lucky Martin opened his delectable Guadalajaran bistro. The taco stand is essentially everything that is offered in the restaurant, but is highlighted by more affordable items and a wider meat offering. “Tacos are a little bit cheaper, Mesa said. “When the economy went down, instead of spending 10 dollars inside, you can eat for four or five dollars outside, and its good quality because we use fresh, high-quality ingredients.“ The diverse meat selection at El Matador stands out among similar eateries. Many Mexican restaurants like to keep their menu safe, only offering meat selections intended for a novice pallet, like chicken, beef, and pork. In addition to offering the risk-averse meats, El Matador also offers carne for the more adventurous eater, such as lengua (tongue), tripas (tripe), buche (pork stomach), birria (beef in a savory chile sauce) and even cabeza – which is meat from the head. More delicious Mexican favorites

that El Matador offers are carnitas, chorizo, saudero (tender, fried beef) and al pastor (sweet, chile pepper-seasoned pork). The aforementioned meats are not common at all Mexican restaurants in the Coachella Valley, which is why El Matador is a place that must be visited. Most importantly, the quality of El

Matador’s meats is always topnotch, meaning little or no fat and gristle. “We tried to bring something here from Guadalajara, and in Guadalajara, you can get 12 different kind of meats. The reason we serve so many here is because we want to be more special than other Mexican restaurants.“

Martin Mesa’s restaurant is a cut above, and definitely worth a try. El Matador is open seven days a week and the taco stand closes at midnight.

By Justin Juozapavicius Associated Press TULSA, Okla. (AP) Oklahoma farmer Kevin Whitney thought his iPhone was lost for good when it fell into a grain elevator last year. Eight months later, his phone was returned unscathed after a trip to Japan. Whitney, the manager of the Apache Farmers Co-Op in Chickasha, Oklahoma, lost his phone in October after it slipped out of his shirt pocket as he was unloading grain from a truck into a silo holding roughly 290,000 bushels of grain. “I knew it was lost forever and there was no retrieving the thing,” said Whitney, 53. Whitney went out and bought a replacement phone the next day. But the loss of the phone was tough: He had taken a picture of family photos from his daughter’s wedding and vacation

stored on there, much like some people carry in a billfold. What Whitney didn’t know was that his phone was just beginning its journey. The phone traveled to another Oklahoma grain facility before going down the Arkansas and Mississippi rivers to a depot in Convent, Louisiana. From there, the grain was loaded onto ships bound for another grain depot on the island of Hokkaido, Japan. In late May, Whitney received a phone call from Eric Slater with the Zen-Noh Grain Corporation. “Lo and behold, I get a call from a guy who works with this grain company in Convent, Louisiana, saying a guy at a feed mill in Japan found the phone,” Whitney said. Slater, manager for ZenNoh’s terminal in Convent, said he charged the phone and scrolled

through to find Whitney’s pictures and called him. “I knew if that was my phone, I’d probably want it back,” said Slater, who added it’s not uncommon for cellphones to accidentally fall into grain shipments. “Frankly, I field about a phone a month.” Whitney was shocked the phone made it through such an ordeal in pristine condition. “ I t ’s c r a z y b e c a u s e everyone’s walking around with a cracked iPhone,” he said. After its global odyssey, the “old” phone came back in June, and is sitting in Whitney’s desk drawer, safe at home. Whitney said he’s still shocked he got the phone back. “It’s amazing he didn’t just throw it in a Dumpster or something, let alone send it back to somebody,” Whitney said.

Haigh says the cow slipped past city police and Skagit County sheriff’s deputies who tried to keep it out of the street and away from a nearby wedding. When officers tried to catch it a few blocks away, Haigh says

it charged an officer, tossing him into the air. He wasn’t seriously hurt. The cow escaped again by jumping on the hood of a patrol car, trotting across it and running off. Haigh says police and the cow’s owner finally agreed

Injured Champ Froome faces Trouble at Tour By Jamey Keaten Associated Press LILLE, France (AP) - Back on the race’s home turf after three days in England, the Tour de France pack faces a first possible shakeout on Wednesday over nine patches of bone-rattling cobblestones in northern France. Many riders were expressing dread that the forecast is for rain, meaning the cobbles will be slick. For defending champion Chris Froome, a crash that scuffed up his left knee and elbow and injured his wrist Tuesday in a nervous, crosswind-swept Stage 4 couldn’t have come at a worse time. Astana team leader Vincenzo Nibali of Italy, who kept the yellow jersey, decried a “crazy race” in Tuesday’s 163.5-kilometer (101-mile) ride along the Belgian border. Froome and two-time champ Alberto Contador are among 20 riders trailing Nibali by two seconds. KITTEL MAKES IT THREE Marcel Kittel got his third stage victory in this Tour and the seventh of his Tour career on Tuesday. Unlike his wins in Stages 1 and 3, when he made victory look easy, Kittel eked out victory by a half-wheel length at the end of the ride from Le Touquet-Paris Plage to Lille Metropole.

Kittel, of the Giant-Shimano team, didn’t celebrate this time, but panted. The gesture at the line came from runner-up Alexander Kristoff of Norway, who swatted the air in frustration after being beaten by the barreling German. French rider Arnaud Demare was third. After a difficult day of crosswinds, pockets of rainsmattered roads, and jumpy nerves in the peloton, Kittel said: “It’s never easy ... (I was) lucky just enough at the finish line.” THE CHAMP CRASHES Minutes into the stage, Team Sky leader Froome went tumbling after one rider bumped another - like a succession of dominoes - who crossed the Briton’s front wheel. He skinned up his left knee, left elbow and hurt his left wrist, but got back on his bike. Clinging to the race doctor’s car, he got bandaged up and rejoined the peloton. Then a teammate dropped back to get a splint at Sky’s car, and pedaled it up to the ailing Froome. Race doctor Florence Pommerie told French TV his injuries amounted to “essentially a few scratches.” Nibali, said his team informed him through his earpiece about Froome’s mishap, and went back to see whether he was

OK. Froome responded, “more or less,” according to the Italian. The Sky leader went straight into the team bus and didn’t speak to reporters after the stage. Dave Brailsford, the Sky team boss, said Froome described feeling good at the end. Froome was undergoing X-rays after the stage, but the team didn’t

immediately comment on the results. LOSE ENERGY AGAIN? In the sixth stage of the Criterium du Dauphine race last month, Froome took a spill during a descent and banged up a hip, shoulder and elbow. The next day, he lost the race’s yellow jersey to Contador - citing stiffness in his thighs and a loss of energy from the crash. An aching wrist could mean pain ahead for Froome. The cobbles on Wednesday’s 155.5-kilometers (97-miles) from Ypres, Belgium, to Arenberg Port du Hainaut, could make it difficult for him to keep his hands on the handlebars. It includes stretches of bumpy road familiar to riders of the famed Paris-Roubaix one-day classic. “It’s going to be a crazy stage for everyone tomorrow,” said Philippe Mauduit, a sports director for Contador’s Tinkoff-Saxo Bank team. “We’ll do whatever we can to stay near the front to avoid getting involved in crashes or held up by any pile-ups but that’s what everybody wants and therefore

Let’s hope it’s not raining.” Before the fourth stage, 2010 winner Andy Schleck of Luxembourg dropped out because of an injury in a crash a day earlier. On Sunday, British sprinter Mark Cavendish quit the race after crashing in the final sprint in Stage 1 and damaging his right shoulder. Kittel has already acknowledged that his job is easier without Cavendish in the race. The Giant-Shimano rider is not a threat for the yellow jersey: Kittel is not a good climber and lost nearly 20 minutes to Nibali in an up-and-down Stage 2. Europcar rider Thomas Voeckler and Luis Mate, a Spaniard with Cofidis, jumped out of the pack early in the stage, setting the pace.
