In this issue of Compass we highlight small business owners who have set up shop at the West End. From restaurants and boutiques, to specialty stores and spas, these business owners have poured their hearts into getting them off the ground. You’ll learn how these successful entrepreneurs have made their businesses thrive, and learn about the passion it takes to succeed. Speaking of success, great things keep happening here. We’re excited to announce that Bonefish Grill and [solidcore] are now both open at The Shops at West End. We’re excited to have these new concepts at the shopping center. Both have a history of proven success in other parts of the country; we’re proud to welcome their first locations in Minnesota. Plus, in 2015 we’ll be announcing some new merchants opening their doors here. Until then, we need to get through a long Minnesota winter. It seems people either love or hate it. When 9-year-old Liam Farrell, nicknamed “Liam Bobiam”, first started drawing, he had no idea that he had the power to change lives. Bonefish open for business. Bonefish Grill opened at The Shops at West End in early November. As the “Fresh Fish Experts,” Bonefish Grill specializes in market fresh fish cooked over a wood-burning grill. MOSAIC UNVEILING AND JURIED ART EXHIBIT St. Louis Park Friends of the Arts’ “Our Town 2014, Arts and Nature”, was an amazing success! Hundreds of community members participated in creating a mosaic that now permanently hangs at The Shops at West End. The official “100 Hands Mosaic” unveiling and a Juried Art Exhibit took place on October 10-11 at the West End. As an extension of the southwest style, there are numerous poncho options available—from chunky and fringy to delicate and simple. Business Owning small, thinking big You love their shops, but do you know the person behind the brand? Meet these small business owners who live and breathe their business and bring life to The Shops at West End. By Sarah Howard


B

eing a small business owner comes with many challenges: Start-up costs, inventory, hiring staff, brandbuilding . . . the list goes on. For small business owners at The Shops at West End, the hard work is worth it. “It is an incredible feeling to see your vision evolve on a daily basis,” said Alyssa Jacobson, owner and chief inspirational officer of [solidcore] MSP. “I love that I wear so many hats,” said Rick Fiebiger, owner of phresh spa salon. For these store and franchise owners — who own only one or two locations — The Shops at West End has provided an oasis of both engaged customers and a hotspot location. “We have a large group of frequent [customers],” said Christine Frandsen, owner of Forever Yogurt. “It’s fun getting to know them all.” Here, we take a moment to appreciate those who keep our favorite stores running and our favorite products coming.

Rojo Mexican Grill For Michael McDermott, owning restaurants is not only his passion, it’s in his blood: his father founded both Chi-Chi’s (named after McDermott’s mother) and Fuddruckers. “I always thought I’d work in restaurants in some capacity,” he said. “I always had it in the back of my head.” So in the 1990s, McDermott opened Kona Grill, a steak and sushi chain that grew to 23 locations nationwide. After going public and being bought out, McDermott moved his sights to a new restaurant concept: Rojo. McDermott, and business partner Jason Merritt, oversaw the concept and menu for Rojo, and its first location opened at the West End in 2010, with a second location opening in 2013 at Southdale Center in Edina. At the West End, McDermott has seen his business flourish. “Everything [at West End] just compliments our business,” he said. “When we go into projects, we look for good synergy and a good destination—the West End has both.”

With Rojo booming, McDermott continues to create restaurant concepts. Most recently he opened Ling & Louie’s on Nicollet Mall and plans to open sushi bar Shag in the North Loop in early 2015. “I’m always doing different things,” McDermott says of his restaurant concepts. “I love to create something and absolutely love what I do.”

phresh spa salon When Rick and Tracy Fiebiger opened phresh spa salon, they not only wanted to open a successful spa and salon, but they wanted to change how business was done in the industry. Veteran hairdresser Tracy had recently retired after spending 20 years in the salon industry. Even though she worked with talented people, she experienced a lack of teamwork toward a common goal due to a system set up for individualization that breeds competition. Later, when Rick became director of business development for Best Buy’s now-defunct EQ Life spa concept, he saw salon life firsthand. So when the couple of 30-plus years sought to open their own spa/salon concept, they had a vision of creating a culture that shapes beauty industry professionals into becoming kind, caring, passionate adults who want to make the world better and keep the guests at the center of everything. Enter phresh, where a team-based model (versus commission or chair-based models, which reward individual results) allows technicians, stylists and hairdressers to work toward a common goal. “The team-based model is about operating a successful business with a loyal following. The couple, who lived in Golden Valley when the West End opened, always had aspirations for a west-side salon and were contacted by the shopping center. “West End liked our brand and that we were local and unique,” said Rick. “And we really liked West End’s location. So it was a win-win.” Balancing locations on each side of the river makes for busy days and long nights, but the Fiebigers wouldn’t have it any other way. “You have to have an amazing work ethic,” said Rick. “It’s different to work for yourself. We’re working twice as hard and twice as long but when you love what you’re doing, it doesn’t matter.”

Darcy: I came into the business at age 60 with no nutrition experience and have since become a Certified Sports Nutritionist and took my own (and Cody’s!) advice and lost 40 pounds. [solidcore] [solidcore] owner Alyssa Jacobson was in a common spot for many fitness lovers: her routine had become stale, repetitive and boring. That all changed when the athlete and self-proclaimed “fitness fanatic” tried [solidcore] for the first time while on vacation with her husband, Tom, in Washington, D.C. “We left humbled and addicted to a workout unlike anything else,” she said. “The spark in my fitness routine was back.” With five locations in the Washington, D.C. area, Jacobson knew she had to bring the workout to Minneapolis. “Minneapolis is notorious for being one of the fittest cities in America,” she said. “It was ready for this experience.” The 50-minute workout offers a total body workout on a MegaFormer, which isn’t as scary as it sounds. The patented machine uses slow and controlled movements with constant tension to work muscle fibers to failure, allowing them to rebuild stronger and leaner than before. As of October 2014, the experience has come to the West End. “We have lived in St. Louis Park for years and love the area,” she says of choosing the West End. “There is a great community, convenience and culture at the West End.” For Jacobson, the real highlight is being part of her customer’s fitness and well-being. “We have the ability to change the way a person feels about himself or herself,” she said. “Whether it’s relieving stress from a busy day, providing a strong feeling of accomplishment or helping someone break through their perceived limitations, our biggest reward comes from the success of our clients.”

WHY DID YOU DECIDE TO OPEN BRUSH STUDIO? A few years ago, we were having coffee and talking about a fun business for the next chapter of our lives. After working in everything from small business to a Fortune 500 company, we were both ready to try something new and fun together. WHAT DOES BRUSH STUDIO OFFER GUESTS? The Brush Studio experience is unparalleled. The spacious studio’s ambience is a very important element that allows the customer to feel relaxed and encourages creativity and camaraderie. There is nothing better than the excitement on our customer’s faces when they see what they have created. WHY DID THE WEST END MAKE SENSE FOR BRUSH STUDIO? When we first approached the owners about our concept, they were a little unsure as to where we fit in the mix of retail and dining. But we produced a video describing what were about and they were sold! We wanted to be in a location where our customers could enjoy a fun, social night at Brush Studio and easily go out to dinner and enjoy time out on the town before or after our event.

Bergstrom Jewelers Who would have guessed that setting up a computer system could set you on a path to owning a jewelry business? That’s what happened to Cindi Kranz and Bob Zagaros, owners of Bergstrom Jewelers. It all started with Kranz’s grandfather, Gustav Bergstrom, who started the business in 1923. In 1954, her father Glenn and uncle Harold took over the store. In the 1970s, Kranz and Zagaros joined the business. But it was the task of setting up a computer system in the 1990s that led Kranz and Zagaros on their path. The two collaborated on the project and it became clear they were a good team. “We had a great partnership and synergy,” said Zagaros. So in 2001 when Kranz’s father was looking to retire, he asked the two to take over and since then they have continued the principles that Gustav founded the store under: the customer is at the center of the business. “When it comes to jewelry, it’s not just purchasing an item, you’re selling emotion,” Zagaros said. “We get great satisfaction in being part of these huge moments of people’s lives.” More change came for the long-standing business in 2010 when the partners decided it was time to leave the downtown Minneapolis spot the store had called home for nearly 90 years. Through thoughtful tracking, Zagaros had determined that 75 percent of the business was coming from customers who lived west of downtown. So with blessings from family, they set their sights on the West End. “We loved the area, and our customers have liked the change too,” Zagaros said. “We love our store. We feel like we’re in the right place.”

It’s definitely a plus having ongoing support, especially in the preopening stage. Green Curry Lentil Soup

• 4 cups vegetable or chicken

stock/broth • 2 cups water* • 1/2 teaspoon salt, or to taste • Fresh lemon juice, to taste

DIRECTIONS: Heat oil in stock pot on medium high heat. Add onions, potatoes, bay leaf, cumin, curry powder and paprika. Cook until onions are softened and mixture is fragrant, about 3-5 minutes. Stir in lentils, garlic, broth and water. Bring to a boil, then reduce heat to low. Simmer soup until potatoes and lentils are tender, 25 to 40 minutes. Puree 1/2 of the soup and add back to the pot for a creamier texture. (Optional) * Thin soup with more water, if desired.


Butternut Squash Apple Soup Makes about 4 quarts INGREDIENTS: • 4 slices bacon, chopped • 2 cups white or yellow onions, chopped small • 2 tablespoons garlic, minced • 2 bay leaves, whole • 4 pounds butternut squash, halved, seeded and roasted • 1 pound Granny Smith or other tart apple, peeled, cored

and chopped small • 4 quarts low sodium chicken broth • Salt and pepper, to taste • Sour cream or créme fraiche (optional)

DIRECTIONS: In a heavy stock pot, cook bacon on medium heat until crisp; remove from pan and set aside. Leave bacon fat in pot. Add onion, garlic and bay leaf and cook on medium heat until onions are tender, about 3-5 minutes. Add cooked squash, apples, and broth and simmer until apples are tender, about 15 minutes. Simmer an additional 15 minutes, then discard bay leaves.

White Chicken Chili Serves 6

INGREDIENTS: • 1 tablespoon butter or olive oil • 1 cup onions, diced small • 1/2 cup (4 ounce can) medium hot green chilis, finely

If desired, whisk in sour cream or créme fraiche. Garnish soup with a dab of sour cream or créme fraiche, some crumbled bacon, pumpkin seeds and serve.

Stir in beans, broth and water; bring to a boil, then reduce to low heat. Simmer, stirring occasionally, for at least 30 minutes but ideally two hours. Season with salt and pepper.
