People are talking. My ears have been ringing and that’s a good thing in my opinion. Well, I should clarify, not ringing about me specifically but rather The Shops at West End as a whole. There isn’t a day that we walk around the shopping center that we don’t hear people comment how unique the area is. We have you to thank for our continued growth. Your referrals to our stores, restaurants and theater don’t go unnoticed. This issue I thought I’d share with you some general “happenings” around the shopping center. We have a new concept joining our merchant lineup! Blast Blow Dry Bar will occupy the space in between Charming Charlie and Love Culture. Blast will stick to a simple regimen: wash, blow dry, style, for $35. This concept is hot on the West Coast and new to the Twin Cities market. Blast is also opening a second location at the Aloft Hotel in downtown Minneapolis.

Parmida Home (pronounced par-me-da) has started construction on their 11,000 square foot space on the South end of the property. And, Phresh Spa Salon will also begin construction shortly. They are located in the Arcade between Omaha Steaks and Pink Champagne. More details on Parmida and Phresh can be found in this issue on page four; both are projected to open early summer. Our leasing team continues to seek out many unique additions to the merchant line up here. Keep your eyes peeled for what’s next! The West End Apartments being built by the Excelsior Group are slotted to start construction this spring on the parcel of land just East of Noodles and Company. This will be a 120 high-end unit, five story residential complex. Living at the West End…now that’s convenience! Lastly, as a special way of giving back to you, our loyal customers, we’re holding a number of special events this summer to celebrate our awesome community. On May 11, CRAVE in downtown Minneapolis is rolling out the pink carpet in celebration of the 20th anniversary of Susan G. Komen Race for the Cure. The downtown restaurant will close for the ticketed event. I
went to a handful of yoga classes in the late ’90s at a fitness center in Los Angeles. At that time Madonna was one of the few celebrities leading the trend, Gaiam was the only known name in mats and accessories and Hard Tail Forever sportswear was the preferred yoga pant. Now, 13 years later, I am a devoted yogi reaping the benefits of yoga along with countless celebrities (and, gasp, non-celebrities). Yoga clothing and accessory lines have become household names, and yoga classes are offered everywhere from Seattle to Maine.

Right now we live in a very fast-paced, instantaneous world. People are under a tremendous amount of stress from school, work, their environment and expectations from the media. Yoga is a great way to slow down and find the stillness within us. There are also many styles to choose from, making it popular with many different ages and fitness levels. – Jessie Forston, founder of Learning Tree Yoga Forston noted that children who practice yoga set a lifelong foundation for well-being. YOGA Aside from the obvious physical benefits of strength and flexibility, the growing trend of people falling in love with yoga has to do with so much more. Yogis focus on the breath, and specific breath work can provide a wonderful sense of well-being and calm that last well beyond the yoga classroom. People often claim that after yoga class they find that they are more likely not to have strong reactions to life situations, but are better able to respond in a way that is calm and clear. – Jennifer Gray, owner and founder of Yoga Center of Minneapolis Grey noted yoga has many health benefits for adults and seniors. It is great exercise for osteoporosis, arthritis and aches and pains due to general back, joint and muscle issues. Yoga is excellent for the metabolism and immune system and can be a key part of making permanent healthy lifestyle change. Unlike other exercise fads (Tae Bo comes to mind), yoga has been a tried and true practice dating back to the third Century B.C. Yoga arrived in the Western world during the 19th century. One wonders if they had a “goal corset” they aimed to get back into. It’s unfortunate every century didn’t have a Madonna to aspire to. Darcy’s Story
A SHOPS AT WEST END retailer becomes healthier to live the life her store embodies By Sarah Howard
W
hen the Nutrishop at The Shops at West End opened in 2010, owner Cody Haislet asked his mother Darcy to work with him at the store. While she was happy to say yes, something made her hesitate. “I realized I didn’t look the part!” she says. The 61-year-old knew it was time to make a change. “I was the typical scenario of a lot of women and I was starting to huff and puff a bit up stairs,” she says. “For every 10 years you go after 30, you begin to put on weight without consciously knowing it.” The grandmother of two knew that she was busy and kept fairly active, but she wasn’t paying attention to her diet. After talking with Cody, Darcy decided to jump into work at Nutrishop and learn as she went. She began to review what she was eating and discovered that the devil is in the details. “I found out that my diet was sending me into a spiral of weight gain. THE POPULAR MEXICAN RESTAURANT IN WEST END has been open nearly two years. In that time, they’ve sold enough tequila to be offered a chance to create their own blend of the popular alcohol — an honor often saved for only those in Las Vegas, Los Angeles and New York. 16

We were Flattered! This is something that only happens to restaurants in Las Vegas and Los Angeles. In the short time Rojo Mexican Grill has been open, the restaurant has become a top-seller of tequila in the state. With 100 brands of tequila at its bar, the restaurant already has one of the largest selections of the popular liquor in the Twin Cities. And because of the high volume of tequila Rojo sells, the restaurant was offered the chance to expand its tequila selection even further. In fall 2011, manager Adam Lehr was contacted by his liquor representative with a special opportunity: the chance to go to Mexico to custom design a barrel (or 240 bottles, or 64 gallons) of the restaurant’s own unique tequila. Lehr, along with front-of-house manager Matt Linse, headed off to Casa Herradura, a family-owned distillery known for creating Herradura Tequila that is located in the Tequila region of Jalisco, Mexico (the only place in the world where true tequila is made). There, they tasted every type of tequila, rode donkeys out into the agave fields, talked to the agave farmers and met family members at the distillery. “This was a once-in-a-lifetime experience,” said Lehr. “I really felt like part of their family. They really taught me so much.” The tequila-making process is a mystery to many. It’s labor intensive and is an intricate process. “Before going on this trip, I understood tequila, but I never knew the process in this much detail,” Lehr says. “To see tequilamaking at every stage was eye-opening.”

Unique Liquors Found Around The Shops at West End Rojo’s tequila isn’t the only unique booze on the block. From unique labels to creative cocktails, the liquor options at The Shops at West End allow for creativity and fun! 2 GINGERs a new whiskey hits the block The infamous Big Ginger got a remake when Kieran Folliard, former owner of Kieran’s and The Local in downtown Minneapolis and Cooper in The Shops at West End, unveiled his own brand of whiskey in time for 2011’s St. Patrick’s Day. The Irish whiskey is aged in barrels for four years and is only distilled twice, as opposed to the traditional three times, so the citrus and caramel flavorings stand out. At first, the Irish whiskey was poured only at his restaurants. Now the liquor is entering the off-sale world. In late 2011, Folliard’s 2 Gingers became available in liquor stores across Minnesota. Of course, it’s still available in such drinks as the famous Big Ginger (which is 2 oz. of whiskey in ginger ale and garnished with a lemon and lime) at Folliard’s restaurants, but now you can enjoy it in your home as well. 2gingerswhiskey.com
CoppoLA an oscar-winner’s tie to the shops at West end Wine is an important sidekick to many dishes. But it is arguably most important with Italian meals. That’s why, when investigating wines for Sopranos Kitchen, the management was mindful of having a good, buzz worthy house pour to complement its tasty, succulent dishes. The answer came in Coppola wine. And yes, it’s associated with that Coppola. You know, the Italian, Oscar-winning director Francis Ford Coppola. Soprano’s house selection of Coppola wine comes from Francis Coppola Winery in California and is available in white (Bianco) and red (Rosso) varieties for $8 per glass or $31 per bottle (with half-priced bottles on Thursdays). The wine is stored in a temperate wine cellar and general manager Julie Blanton says that the restaurant goes through about one barrel of Rossa every week and one barrel of Bianco every two to three weeks.
CRAVE’s CREAtIoNs craveworthy cocktails abound at this popular restaurant The high-end, popular restaurant is well known for its chic décor and its meat and sushi options, but it also offers an array of signature cocktails and martinis found only at Crave. The Crave Creations list features seven custom-made drinks and featured tequila, vodka and rum-based drinks, including the Prickly Pear Margarita, Corpse Reviver and the Torched Mojito. And given the restaurant’s sushi options, there is, of course, sake to complement. Their seven sake choices can be bought by the glass or bottle – pick your poison.

The process of making tequila starts with blue agave plants, which take anywhere from eight to 10 years to fully ripen. When the plants are ripe, the leaves are stripped and the core (which can weigh upwards of 80 pounds) of the plant is used. The cores are then cut and roasted in a distillery, where the starches turn to sugar. A press then squeezes the juice from the core and this juice is brought to fermentation tanks. Yeast is added and the juice ferments for about two days and is distilled two or three more times. At this point in the process, the alcohol is a silver tequila, or tequila blanco, which is used for cocktails and shots. Often, the alcohol is moved to oak barrels for about two months. After this aging process, the tequila is known as Oro or gold tequila, which is used to make margaritas and other tequila-based cocktails. Reposado (or rested) tequila is aged up to one year and is considered a sipping tequila, due to its smooth taste and flavor. “There are so many different flavor families when it comes to tequila,” Lehr said. “We really got to try the flavor profiles and taste tequila in every process, and I consider myself an expert in tequila now!” So after all of that tequila tasting, what did Lehr and Linse decide on? The Rojo tequila is a Repasado, or an easy drinking tequila that is aged six months. “We wanted a flavor as smooth as possible,” he said. “One that every guest would enjoy.” The tequila has, of course, become Rojo’s house pour. It can be enjoyed straight up as a shot or in Rojo’s Herradura Double Barreled Reposado Coinstyle Margarita — a unique cocktail that features a blend of Rojo’s own tequila, Brazilian orange liqueur, agave nectar and Rojo’s signature margarita mix. This drink complements the multiple tequila-based cocktails and margaritas on Rojo’s already extensive drink list.

And, according to Lehr, having your own personalized tequila is quite an honor. “We were flattered,” he said, adding that not many restaurants in the Midwest sell enough tequila to be offered this type of opportunity. “This is something that only happens to restaurants in Las Vegas and Los Angeles.” And Rojo is taking this opportunity to really showcase the new tequila, as well as the additional tequila options at Rojo. Lehr says the restaurant hopes to finish their personal barrel in a year to have a new batch of Rojo Tequila created every year as an annual tradition. “It’d be great to make it an annual thing and to change up the flavor every year,” Lehr said.
And the tequila has hit Rojo at the perfect time. Cinco de Mayo is on a Saturday in 2012, and Rojo has quite the party planned. On the Mexican holiday, which honors Mexican culture and celebrates freedom and democracy during the American Civil War, Rojo will host an outdoor, day-long block party with drink specials, food and music – plus the opportunity to celebrate Rojo’s own blend of tequila. Rojo DE Mayo Rojo Mexican Grill is excited to host their second annual Cinco de Mayo Fiesta on Saturday, May 5. Nothing says summer quite like the smell of a good barbecue wafting from your neighbor’s backyard. And whether you’re making a quick meal for the family or hosting your own deck shindig, The Shops at West End retailers are here to help. If you’re a bit clueless as to what meat cuts are best for grilling or how to tell when meat is done, the answers come in a surprising place. At Creative Kidstuff (yes! A children’s store!) a hidden gem for grillers can be found: the America’s Test Kitchen Family Cookbook. The book offers hundreds of recipes to be used for side dishes, plus there’s a whole section about meat, including an illustrated guide and tips for knowing when meat is done. It’s an easy-to-use guide with all of the answers. So, once you know what kind of meat you’d like to cook (and how to cook it), it’s time find your meat. And with grilling, you’ve got to start with high-quality meat. Omaha Steaks offers every cut of beef a griller could want: filet mignon, strip steak, ribeye, top sirloin and flat iron steak. Make sure your grill grates are always cleaned to prevent meats from sticking while cooking.

Have a hot grill before putting any meat on the grill (400 degrees is good), and be sure to oil down the grates before use.

Try using flavored charcoal like hickory or add wood chips of your choice, soaked in water to make sure they burn longer.

Always season your meat on both sides, and don’t be afraid to add a significant amount since some will fall off and the rest will infuse into the meat during cooking.

Do not play with your food while it’s cooking! Let the meat cook and try to only touch it when turning or flipping it.

Sopranos Shares A Recipe Caramelized Red Onions
Executive chef J.P. Samuelson shares a recipe for the grilled beef ribeye with fingerling potatoes, caramelized red onions, arugula and balsamic vinaigrette. Get ready to wow your guests.
Ingredients 2 red onions sliced in 1/2 inch-thick rings 1 t. sugar 1 t. salt 1 T. extra virgin olive oil 1 T. sherry vinegar
Ingredients 6 10-oz. beef ribeyes 1/2 pound baby mixed greens 2 caramelized red onions 3 oz. balsamic vinaigrette freshly ground sea salt freshly ground black pepper 2-3 oz. extra virgin olive oil PREPARATION Begin by either pre-heating a cast iron pan over a low flame or starting a grill. Season the beef with the salt and pepper. Brush beef with olive oil and place on the hottest part of grill or pan. Cook approximately 8-10 minutes for a medium-rare steak. When finished, let the beef rest on a plate for 2-3 minutes at a minimum. Dress the beef lightly with the balsamic vinaigrette. PRESENTATION To serve, place potato in the middle of the plate or platter topped with the caramelized onions. Dress the arugula in the remaining vinaigrette. Season to taste and arrange the mixed greens around the onions. Place the beef on top of the onions, pour the liquid on the plate over the beef and serve immediately.
PREPARATION Marinate the red onions with sugar and salt in a non-reactive bowl. Let stand five minutes and then cover with the olive oil and sherry vinegar. After the onions have marinated 30 minutes, grill them on both sides or sear them in a very hot cast iron pan. Finish roasting the onions in a 350 degree oven for 15-20 minutes. Set aside and hold at room temperature or refrigerate for later.
Balsamic Vinaigrette Ingredients 2 c. balsamic vinegar 2 c. grapeseed oil 2 1/2 c. extra-virgin olive oil 4 diced shallots 1/4 c. freshly diced herbs (thyme, rosemary and Italian parsley) 2 T. sugar 2 t. sea salt PREPARATION Place the shallots in non-reactive mixing bowl and add the salt and sugar. Let stand for 5 minutes and then add the balsamic vinegar. Once the sugar is dissolved slowly whisk in all of the oils. Add the chopped herbs and place in a sealed container. Will last up to two weeks in the refrigerator. Best if allowed to sit overnight.

Craveworthy Chicken Crave culinary director Jim Kyndberg shares his recipe for Beer Can Chicken. Ingredients 1 (3-1/2 pound) whole chicken 2 T. olive oil 2 T. kosher salt 1 t. freshly ground black pepper 3 T. of your favorite dry spice rub 1 12 oz. can beer Sprigs fresh rosemary and thyme Lemon cut into small enough pieces to fit into beer can Directions Prepare coals for grill in charcoal starter chimney. Once coals are completely covered in gray ash carefully dump on bottom grate of grill and stack neatly in a pile on one side of grill. Place lid on grill and adjust dampener to open halfway. Remove neck and giblets from chicken and discard. Rinse chicken inside and out, and pat dry with paper towels. Rub chicken lightly with oil, then rub inside and out with salt, pepper and dry rub. Set aside. Open beer and drink half. If you are not 21 please skip this step. Add fresh rosemary, thyme and lemon pieces into beer and place can on a solid surface. Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can. Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its two legs and the can like a tripod. Cook the chicken over medium-high, indirect heat (i.e. no coals or burners on directly under the bird), with the grill cover on, for approximately 1-1/4 hours or until the internal temperature registers 165 degrees (F) in the breast area and 180 degrees (F) in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife. Remove from grill and let rest for 10 minutes before carving.
