What do you particularly like about the EASY collection? The EASY collection is a line of universal kitchen utensils that you will find in any period of time, any culture, anywhere. A simple wooden spoon or spatula is on one hand looking more or less the same everywhere; on the other hand each item is unique when you pay attention to detail; like the choice of materials, the shape and the level of craftsmanship.

So far the collection has won two international awards for outstanding design­­ —­the Design Plus award 2015 and the prestigious Red Dot 2015 ­—“Best of the Best” design award.

Is there a certain design approach that you pursue? Simplicity is key. If it is not essential to the design, it should probably not be there. What inspires you? Everyday life is always a good starting point for identifying details to improve, discovering things that could be done a tiny bit better. Is there a product that you have always dreamed of realizing someday? A greenhouse, a bike basket, a door handle … How do you define design quality? High quality design stands the test of time—both when it comes to the durability of the material and remaining aesthetically pleasing.

Luscious lemon meringue The luscious lemon meringue is a mouth-puckering dessert with a fabulous contrast of textures. It is sweet and tart, soft and crisp. The delicate meringue is served with softly whipped double cream mixed with lemon curd and decorated with fresh raspberries. MEthod

Ingredients

To make the meringue first beat the egg whites until soft peaks form. Then add the sugar, one tablespoon

Lemon whipped cream Lemon curd is a type of lemon marmalade that can be bought in most supermarkets. Using a handheld mixer, whip the cream until soft peaks form. Next, add the lemon curd and gently fold the mixture. Taste—and add lemon juice to your liking. Just before serving gently place the meringue onto a serving plate, top with a generous dollop of lemon whipped cream and decorate with fresh raspberries, mint leaves and lemon zest. The lemon whipped cream can be made up to 6 hours in advance.

What makes a good kitchen product ? As many of us live in apartments these days, kitchen space is limited. Thus, in order to save space—I like to design kitchen items that are both beautiful and practical so one can use the same items for both cooking and serving. As a result, I also minimize the time spent on doing the dishes. My designs have to look attractive on the dining table. Dining should always be a journey of taste, while also being visually appealing.

Industrial designer Jens Fager works with everything from large interior decoration concepts to small functional tools. He keeps his design philosophy simple: “I always try to focus on the main function of the product­— like peeling, chopping, mixing etc. and then I add a bit of humor or poetry …”

What can we expect in the years to come ? Do you sense a change in our needs for kitchen products ? Despite we all have busy lives, I believe we will spend more time in the kitchen in the future. Thus, quality is key both in terms of design and choice of material. I believe more products will be made of ­natural materials. In general, kitchen tools need to be smarter and more material efficient. What are your key design principles ? My designs are always straightforward and simple to use. People should not need to reflect too much on how to use a kitchen product. It should just be there and serve you when you need it. In terms of quality, it should last for generations.

Despite your French Canadian background it seems you have a great understanding of Scandinavian design ? I think it is due to a combination of my p ­ ersonality, my education and the fact that I have lived and worked in Copenhagen since 1999. My dad is an ­architect and when he was younger he was very much ­inspired by classic modern American and Nordic design; so I grew up, more or less, in a Scandinavian

type of home. This has certainly had an effect on developing my intuitive understanding of it, creating my own sense of Danish design. How do you define Scandinavian design ? In my opinion, Scandinavian design is about finding the right balance between the emotional and the functional elements, the extraordinary and the obvious. It is about simple and beautiful solutions for everyday needs. What trends will drive the future of interior design ? I believe there will be more focus on well-being and sustainable living. More people will try to reduce their household’s environmental footprint and have a preference for products they can keep and use for a long time. Tactile materials will be used to counter­ balance the flatness of the digital world that we experience from screens and tablets. How did you come up with the COOL-IT carafe? I wanted to design a carafe that would fit into the fridge door and was easy to pour from. I felt inspired by the typical vintage milk bottle with its simple and functional ceramic closure. I started sketching and got this idea of putting a ball on top of a glass bottle, and then I challenged myself to find a way to keep it in place without adding an extra component. The result, after much experimentation, is an innovative one-piece flip-top. I love the COOL-IT carafe because it is a symbiosis of form and function; by flipping the ball to open and close the carafe adds a bit of fun to everyday life and it works really well.

Props and accessories add personality and meaning to photos. What is your best styling tip in terms of props ? Use natural ingredients (fruits and vegetables) and keep it simple. Don’t overstyle. What colour combinations are suitable for food styling ? I do not have a set of colours I use as reference. I always use colours I find pleasing to the eye. Sometimes, they have strong contrast, at other times they are just shades of the same colour. Where do you draw your inspiration from ? I find inspiration on Instagram, blogs, Pinterest, magazines and in nature. Who inspires you on social media ? There are so many amazing food ­photographers on Instagram that inspire me. Find me on Instagram and see whom I follow, then you will see.
