MODOLET BRUT BIANCO SPUMANTE METODO CHARMAT The grapes used for Modolet sparkling wines are grown on the hills of Rocca Bernarda. These grapes were chosen for the fortuitous combination of the characteristics of the soil and climate in this limited space. The vines are the very best because both Pinot Nero, Pinot Bianco and Chardonnay, delicate grapes requiring great care, encompass a number of exceptionally well-orchestrated and propitious factors. The must derives from a light pressing, so that even Pinot Noir grapes produce a white must, which then undergoes the first fermentation. A certain amount of time must pass before the wine becomes clear, and only then is the sparkling wine process started by the addition of selected yeasts in order to achieve the desired softness. Elegance and vitality are the qualities of a sparkling wine. A fine perlage is its soul. The term brut indicates a sparkling wine that has almost no residual sugar, equivalent to the term "dry" used for other wines. Brut is the most common and popular kind because it represents the most elegant sparkling wine inasmuch as a brut has no sugar to hide imperfections or temper its distinctive character which harmonizes with its pronounced acidity. Its nose is evocative of cheese and blends wonderfully with Pinot's varietal aroma. Serving suggestions: An exuberant aperitif, Modolet Brut Bianco is also a fine accompaniment to a wide range of dishes, emphasising their flavours, and goes well with cold or hot hors d'oeuvres, fine charcuterie, grilled shellfish; and plain cakes and biscuits.
