he ladies’ Marine 8828 chronograph provides dazzling accommodation for the Breguet 1050 calibre, the smallest self-winding chronograph movement in the world in terms of volume. Dressed in rose gold, the case grants the crown the honour of wearing a blue sapphire cabochon and lights up the bezel and lugs in sparkling diamonds.
The iridescent face highlights the functions of the chronograph. The disc of natural mother-of-pearl that has been meticulously cut out to reveal the numerals of the elapsed-time counters is superimposed on a plate of gold. The manually operated engine-turning of the mother-of-pearl represents a feat of attention to minute detail and of dexterity. The chapter ring is engraved with Breguet Arabic numerals, the calligraphy of which adds its timeless flow to the entirety. The five-minute intervals are marked by shapely lozenges each punctuated by a luminous dot. The 30-minute and 12-hour counters face each other at 3 and 9 o'clock, while the small seconds run at 6 o'clock next to the dates aperture. In tribute to the history of the Marine timepieces, originally designed by Breguet for the royal navy of France, the 8828 chronograph opts for the motion of decorative waves. Seven diamonds form a billowing curve and meander glamorously on a dial engine-turned in a wave pattern. The buttons, the winding rotor and the folding clasp, also modelled in undulating shapes, harmoniously complete the piece.

hen I learned the art of making fine jewelry, I just fell in love with it. I always knew I wanted something of my own. And I have been so fortunate to meld these two desires together.” These are words of devotion, and a man clearly in love with what he does. Edward Shapiro and his wife Faina run one of the most sophisticated businesses in Bernardsville, Diamond Dream Fine Jewelers. He is an artisan, she is a businesswoman, they are buyers, proprietors, sales professionals, accountants, and designers. In other words, they do it all. They’ve proven that if you love what you do, it’s not work. Edward’s love affair began in the early Eighties when he took an apprenticeship with a jeweler in New York City. It was a production shop where he became intimately familiar with the various techniques by which fine jewelry is made. “I started from the bottom,” Edward says. To begin as an apprentice wasn’t easy, but after working for free for the first few months, the owner, and Edward’s boss, recognized the good work his young apprentice produced and agreed to give him a salary—a generous $2.50 an hour!
“W
As his interest deepened, Edward started to take work home, laboring in the evening hours after already having put in a full day. “I bought myself a jeweler’s bench and tools, and worked nights in order to sharpen my skills,” he says of that time. Edward hadn’t been in this country long, emigrating as a 19-year-old with his family from Ukraine to Minneapolis, Minnesota in 1979 and four years later to New York City. He fondly recalls that first summer and how enthralled he was with Manhattan. “All I wanted to do was get to know New York City,” he says. Edward soon found he was doing just that, seizing the opportunity to apprentice that fall. It would set the course for the rest of his life. Edward took a liking to his burgeoning profession immediately and little by little began fashioning his own line of jewelry, shopping it around to area stores for sale. The owner of the factory where he was working noticed Edward’s entrepreneurial spirit, as well as his talent, and offered him the chance to open a retail operation. Edward thought of the name Diamond Dream Jewelers for his new business and opened his doors in 1985 in Fairfield, New Jersey. Edward was living in Manhattan at the time and commut-

ing seven days a week by bus to New Jersey to run the shop, handling everything, from stocking to cleaning to ordering merchandise. It was about this time that Edward met Faina. Together, over the next 15 years, they expanded to four additional stores. With the increased retail operation however came increased management and administrative responsibilities. “Our involvement in the company changed dramatically,” says Edward of running five locations. “We lost touch with what was most important to us: our customers. We wanted to know their desires and how to make them happy,” Faina said. “That was when we decided to get back to a business where we could work together, each providing expertise and serving a loyal clientele.” With that thought in mind, they decided to focus exclusively on their Bernardsville store. With more than seven years in town, Faina and Edward have come to be widely respected throughout the community, known for their stellar merchandise, their impeccable service, and, most of all, their warmth. Their dedication to their town is easily evidenced by the transformation they made to their current store in the heart of Bernardsville on Mine Brook Road-Route 202- near the intersection with Mt. Airy Road and Anderson Hill Road.
“We constantly evaluate our collections and we’re in our store almost every day to assist our customers and see first-hand what people want and what interests them,” says Edward of his and Faina’s present schedule, one that seems to suit them perfectly. “When not in the store, we travel to trade shows, from Europe to those throughout the U.S., attending seminars and meeting with vendors so we can keep abreast of the trends and be aware of the newest and most desirable pieces out there to offer our customers.” And those desirable pieces are in abundance in the showcases inside. The shop carries very selective, sought-after collections, and those possessing a long legacy of craftsmanship. They offer the most exclusive collections, such as Breguet watches, the full line of Buccellati, including jewelry, watches, and silver, as well as Pomellato. But the hand-crafted pieces designed by Edward himself are their specialty. His training as an artist and master jeweler comes into play every week as he is asked to create engagement and wedding rings, pieces for anniversaries, or even jewelry to celebrate the birth of a

child or the anniversary of a first date. His enthusiasm for the beauty he creates shines through: “I love looking at something in the rough, and watching the raw stones and metal coming together into something beautiful,” Edward tells of his craft. “Every time it happens, I get excited.” Their loyal clientele is evidence of Edward and Faina’s constant attention to detail and customer service, pushing well beyond the borders of Bernardsville and the surrounding area. Some of their clients have stayed with Diamond Dream since its opening 20+ years ago; the couple has even sold pieces to the grandchildren of their original customers. Edward and Faina go out of their way to accommodate most every need, including maintaining client wish lists.
Recently, one client called while on a business trip in Europe. Realizing he would be out of town for his anniversary, he needed a special gift in short order. Edward quickly made some suggestions from the wish list of the gentleman’s wife, e-mailed photographs of the choices, the gentleman made a decision, and Edward personally delivered the gift to the door—along with a card and, unbeknownst to his client, flowers. “I’ve done this on a number of occasions,” he says in his customary unassuming manner. He and Faina feel very fortunate to share in special moments like these in their client’s lives, creating fine jewelry that is passed down from generation to generation.

PERSPECTIVES ON LIFE IN A SMALL TOWN By the Bernardsville Blogger
Bernardsville is the kind of town that is instantly appealing when you first see the beautiful hills, charming downtown shopping area and its stately homes. Look further and you will also notice that we have Friday night football games, a seasonal Farmer’s market and local events throughout the year that draw in crowds for art, music and entertainment. We’re an American town that, while close to both New York and Philadelphia, offers an escape for those who prefer life in the country. Our children benefit from the best of either public or private schools and are enriched by every sport and activity imaginable.

When something goes wrong, our community finds a way to come together and fix it. In recent months, I think we were all surprised to find ourselves in the midst of a hurricane. The aftermath left many residents without power for a full week, or more, in some cases. In that time, there were numerous acts of kindness shown to help those in need of water, showers and meals. What caught my attention most was that, while frustrations ran high, our people were not only resourceful in managing their needs but took care to help others. Local businesses and community organizations showed their stripes and lent a hand in every way possible.

THE ART OF TRADITION
"BEAUTY IS NOT AN AESTHETIC OCCURRENCE, IT IS A MYSTICAL THOUGHT" - Gianmaria Buccellati uccellati - a name synonymous with quality, elegance, a unique style and a long tradition of extraordinary talent, holds a special place in the history of gold and silversmithing. As one of the few jewelry firms in the world which has remained in the same family since its establishment in the early part of the 20th century, the House of Buccellati has upheld the original creative spirit and exquisite craftsmanship that Mario Buccellati created it with.

t the age of twelve Mario Buccellati became an apprentice at a wellknown jewelry shop in Milan. At the time the youngest employee in the factory, Mario showed an outstanding artistic and entrepreneurial talent, and in 1919 he took over the business and named it after himself. Early in his career, Mario found himself admiring the texture and harmony of an Eighteenth-century silver coffee-pot, which he then purchased. Decades later, after his death, it was discovered that the hallmark on the pot, the profile of a Moor with half-open lips, was that of his ancestor, Contardo Buccellati, a jeweler who had attained a large measure of respect and success centuries earlier. To some extent, Mario's destiny was predetermined and, without knowing it, he had acquired a precious family object.

he jewels designed by Mario were appealing to all as they were both classical and innovative. Not only were they clearly reminiscent of the Renaissance, but the very special artistic methods and techniques that Mario brought to the craft, made them easily identifiable as being by Buccellati. His jewels were a combination of skillful technique and enormous imagination, and were soon appreciated by important clients, including members of several European royal families. Following in the tradition of Mario, his son Gianmaria, is both an artisan and an artist. He has discovered every secret there is to know about metals; he bends them to his will by twisting, filing and taking them to the physical limits of creativity. As for gems, Gianmaria has discovered their essence by polishing and arranging them to best set off their color and brilliance. He prefers to give each stone its own setting. Gianmaria is very fond of unusually shaped pearls, and semi-precious and precious stones - often yellow, light blue and pink sapphires - combined with uncut diamonds to create jewels that are unique and visually dramatic, yet light and simple. His unequalled technical skill matches his creativity and aesthetic sensibilities. Now his three children continue this tradition of creating unparalleled objects of desire from stunning jewelry pieces and watches to silverware. Andrea, artistic heir of the third generation, codesigner with his father, manages production. Just as meticulous and precise as Gianmaria, his designs are more geometric. Gino manages the production of the silver items. Daughter Maria Cristina handles the advertising, image and communications of the company. The love and care which the third generation of Buccellati's and their artisans lavish upon their work is for both their own pleasure and the pleasure of those who appreciate it. Gianmaria designs all of his jewels personally or with his son Andrea. First they prepare a sketch of the piece and meet with the artisan to discuss fabrication, materials and proportion. Then they carefully follow the

progress through successive stages of creation, checking throughout for perfect quality and the fine balance between technique and aesthetic appeal. Once a piece has gone through the rigorous program it is signed to confirm its design authenticity. The Buccellati signature is the "mark" that even the tiniest detail has been given the greatest attention during its creation. Being of the very highest quality, Buccellati works have been appreciated and praised by popes, cardinals, royal families and intellectuals, and his workshop has attracted musicians, writers and famous artists. Their jewelry features an extraordinary series of filled and empty spaces that resemble lace or tulle and is both classical and new, simultaneously. One of the most important techniques Mario Buccellati invented among the many that typify his style is the elaborate and painstaking tulle or honey comb technique used even today. Classical-Renaissance in origin, its composition plays on the contrast of filled and empty spaces.

One-of-a-Kind heir jewel watches merge the precision of Swiss mechanisms with the best goldsmith's traditions, creating tools not only to measure time but also to enrich it in precious elegance. Classic sophistication is the hallmark of the Buccellati silverware collection, offering unparalleled beauty for that special table setting. Hidden behind each Buccellati work of art, there is a philosophy which expresses an aesthetic choice defining the canons of a style: discretion, class, harmony. In today's world where trends come and go the House of Buccellati remains proudly committed to lasting beauty. It is a passionate dedication to design, craftsmanship and quality that allows Buccellati to sustain the highest level of product integrity. Today the company is recognized as one of the world's foremost jewelers and silversmiths and the fourth generation of the Buccellati family inspires the business with a new silver collection, Buccellati Blossoms, marking the debut of Lucrezia, Carlotta and Saya.
Together they felt it was time to create a collection that held immediate appeal to the next generation of Buccellati customers. The designs merge Buccellati's artistic heritage and craftsmanship with designs that are fresh, fun and appropriate for everyday wear. Their initial Blossom collection (See page 45) depicts the heart of the Gardenia flower as Gardenias symbolize secret love, purity, joy and refinement. CLASSIQUE 5717 HORA MUNDI A world first he new Breguet Classique 5717 Hora Mundi watch features exceptional finishes, such as its translucent lacquered dial, and so seems likely to become a favourite of travellers who value beauty. This watch's most iconic complication is its instantjump time-zone display system with synchronised date, day/night and city indications, a world first for a mechanical watch. This function lets the wearer preselect, from among the cities listed for the 24 time zones, two cities for which he wishes to display local time. He can then change from one to the other by pressing on the combined crown/pushpiece at 8 o'clock, which triggers an instant jump. For example, assume it is 4 pm in Paris on the 25th of the month.
T
Rotating the combined crown/pushpiece reveals "Paris" in the window at 6 o'clock, then the crown at 3 o'clock is used to set the hands to 4 o'clock and the date to 25, taking care that the day/night indicator shows the sun. For quick display of the local time in Sydney, the crown/pushpiece is first rotated to bring up the name of the Australian city in the window at 6 o'clock; the watch then automatically sets itself to Sydney time. Since the difference in time is nine hours, the hour hand will move forward by nine hours. At the same time, the date will change to the 26th and the day/night indicator will turn to show the moon. When it is 4 pm in Paris, it is in fact 1 am the next day in Sydney. Once the watch has been preset, the double instant-jump time-zone display system will simultaneously change all the indications - hour, date and day/night - in a coordinated way from Paris time to Sydney time when the wearer simply presses on the crown/pushpiece. This complication will thus prove extremely useful for frequent travellers, or persons in contact with others living in distant countries; it allows them to get in touch with such people while being certain that they are not waking them up in the middle of the night. The new Hora Mundi is equipped with the 5717 selfwinding mechanical movement, which is based on Calibre 777 with a silicon escapement, in this case fitted with an additional module. Four patent applications were filed when it was designed. The first was for a timepiece comprising a mechanism with two time zones; the second covered the display of a time zone on demand via the main set of hands; the third was for a programmable and reprogrammable mechanical memory wheel for a timepiece; and the last for a mechanism for displaying a temporal dimension by means of a dragging hand.
BREGUET THE INNOVATOR The first wristwatch, 1810 In tribute to the first wristwatch created for the Queen of Naples in 1810, Breguet reinvents the ladies’ watch in a classic case with a contemporary profile. The various models in the Reine de Naples collection radiate a refined blend of expertise, elegance and precious materials, lending their aesthetic backdrop to an array of horological complications, art and jewellery.

BREGUET: THE LEADER IN MOVEMENTS WITH SILICON COMPONENTS In January 2006, Nicolas G. Hayek, President and CEO of Montres Breguet SA, officially announced the result of several years of research that were to lead to a technological innovation of crucial importance for the entire Swiss watch industry: the emergence of silicon. WHY SILICON? Silicon is the second most abundant elements on earth after oxygen. It is one of the main constituents of sand. Widely used in the semi-conductor industry as an component in steel alloys or in making silicon oils, silicon features properties that are extremely useful in watchmaking.. It enhances the mechanical performance of certain movement parts such as the escapement. The deep reactive ion etching method of producing silicon components makes it possible to manufacture extremely complex shapes with extreme precision. The balance-spring, for example, can be produced to an almost perfect degree of accuracy in the shape of its curves, thereby considerable improving the movement’s isochronism. A.-L. Breguet already stated 200 years ago: “Give me a perfect lubricant and I’ll give you a perfect movement”. The asset watchmakers most appreciate in silicon undoubtedly relates to its surface properties, enabling a standard lever to work entirely lubricant-free. Another equally appreciable advantage is that this material is impervious to magnetic fields, thus allowing the movement to continue running A.L. Breguet 1747 – 1823 smoothly even when the watch is exposed to magnetic fields such as those created by certain devices or by fridge magnets, for example. Moreover, its density (three times lower than that of steel or brass) serves to make lighter parts with lower inertia, while the material itself remains extremely sturdy and highly corrosion-resistant. SUBSTANTIAL RESEARCH Developing this new material and its production process called for substantial research relating to the adjustment of its frequency and its behaviour in respect to variations in temperature. Appropriate oxidation surface treatment has now rendered silicon thermally stable. Nivarox-FAR, a Swatch Group company that boasts unique expertise in the production of conventional balance-springs, has benefited from substantial investments in developing a new production line specifically dedicated to silicon and enabling it to supply the Swatch Group brands, and particularly Breguet, with new escapements.
A master craftsman hand engraves the Breguet signature letter “B” On the back of every Breguet watch.
TECHNOLOGICAL INNOVATION APPLIED TO CERTAIN BREGUET MOVEMENTS The new silicon balance-spring serves to improve certain performances of the movements of which it represents the beating heart. Silicon escapements, which are more reliable and require less maintenance than those made with existing alloys, are used by Breguet both in “all-silicon” “assortments” (sets of parts) and in “hybrid” assortments. The all-silicon models featuring a balance-spring, escape-wheel and lever made of silicon, have been fitted since 2007 in a new Breguet Calibre 8825A. The hybrid models (with a silicon lever and wheel, and a Breguet overcoil balance-spring in Anachron) are housed within Calibre 777. The hybrid models made it possible to maintain the compensating balance-spring with the Breguet overcoil (often referred to as the “Breguet spring”), with its wellknown regulating properties. Naturally dear to the brand founded by its inventor, this type seemed impossible to make from silicon because it is a non-plane component due to its famous curving overcoil. In 2010, the brand has achieved the remarkable technical feat of making the famous Breguet spring from silicon. Creating it entailed completely reinventing the entire production process. Thanks to the silicon Breguet spring, the overall improvements already provided by the silicon balance-spring can now be applied to all Breguet calibres, independently of their base construction. This new “silicon Breguet spring” is being introduced in the Tradition 7047 model with tourbillon and fusée-and-chain transmission.

! THE BEAUTY OF 1
Custom Made What could be more special than a one-of-a-kind necklace, ring, or pair of earrings? Edward Shapiro is known for crafting exquisite designs for his clientele at Diamond Dream Fine Jewelers keeping the art of fine jewelry very much alive. Here, he discusses the craft he loves and some of his more treasured designs. By Cindi Cook o have a piece of jewelry custom-made is admittedly a lovely tradition. A wonderfully crafted necklace or pair of luxurious earrings becomes a timeless heirloom when created by a client and a designer. Taking the time to craft just what a client wants is a regular occurrence for Edward Shapiro of Diamond Dream Fine Jewelers in Bernardsville. It is not only his work, but it is also his passion.
T
“To me, jewelry is personal. It shows your character and reveals a lot about you,” says Edward of his craft. “Everyone is different, with different tastes and different ideas about what they want out of a piece.” Edward has learned this over the years while making the many pieces he has for the many faithful clients who have come—and continue to come—through his doors.
“We carry a lot of lines that people can buy, but if someone wants a piece that’s unique to them, I love putting it together.” Edward will obtain stones for his clients, or if a client has stones of their own in the family, he can put those together too. “It’s worthwhile to sit down and design something that’s going to be cherished for the next generation,” he says. Part of what has formed Edward’s process is his start in manufacturing. He grew up in the business and learned from the beginning how to make everything. Is there anything he can’t make for a client? He says not, but works with a team of highly skilled professionals as well to bring his ideas to life. Does he have a signature piece? “My last piece is always my signature piece!” he quips. Each work he creates for a client springs anew each time. “They are like my children: I set them out into the world and have to let them go,” he says of each carefully crafted piece of work, but one that yields gorgeous results each time. “That’s the fun part: You never know what the challenges are and what someone will want.” Longtime customer Lori Rizzo stumbled upon Diamond Dream at their former Bernardsville location one day. “We walked in and were greeted by two of the most beautiful smiles,” she tells. “They were just so pleasant, and had wonderful designers in their shop.” Lori followed Edward (who owns Diamond Dream along with his wife Faina) to their next and present location. “They have such an eye and really know the business. It’s such a happy time when you walk in the door. You always feel welcome.”

“After re-styling my engagement ring, I told Edward I wanted something more modern. We threw around some ideas and what he came up with was perfect. I was so happy I didn’t know what to do with myself!” Lori knows very well what a keen eye Edward has. “After re-styling my engagement ring, I told Edward I wanted something more modern. We threw around some ideas and what he came up with was perfect. I was so happy I didn’t know what to do with myself!” says Lori of the resulting ring. As time went on however, she found herself wearing it less and less. “It was just too special for every day,” says Lori, “just too much ring.” Edward urged his client to bring the ring into the shop and told her he would remake it. After doing so, he had produced a ring that was even more perfect than the first. “Edward created exactly what I asked him to,” Lori says. “I couldn’t wait to put it on!”
Although he doesn’t specialize in any one piece more than another, bridal is by far the most popular category. Edward finds that what people ask for over the years hasn’t changed, merely the styles and the metals used to make them. For their male clientele, jewelry is very simple. “They want pieces that are more streamlined,” says Edward. What is it that women ask for again and again? “Women want more complex pieces and different types of stones.”

“I gave him a loose stone and asked him to create something with it, and he did. When I received it back, I was thrilled. He gave so much thought to it – He’s an artist.” The Miriam Salat woman is the new gypset
(gypsy + jetsetter). Eleanor Vince has also turned to Diamond Dream many times over to have specialty items made. “I saw work he did for one of my neighbors and loved it,” says Eleanor of Edward’s custom piece. “He’s an artist.” Eleanor has also taken in many pieces to Edward and let him wield his magic. “I gave him a loose stone and asked him to create something with it, and he did. When I received it back, I was thrilled. He gave so much thought to it!” Eleanor knows it’s not always the case that a designer can hit the nail on the head so accurately. “His work is always so suited for you, and is something you can be so proud of.” Breitling pays tribute to this landmark model in its brand history by launching a new collection also inspired by the spirit of great journeys and luxury long-haul aircraft. While the pure lines of today’s Transocean are strongly reminiscent of the finest classic chronograph of the 1950s, the new model reinterprets them in a resolutely contemporary style. The elegant case is distinguished by its perfectly understated design, magnified by a smooth, slender bazel with a beveled profile and streamlined lugs molding the wrist. The epitome of simplicity. The classic and round pushpieces, an nod to the first water resistant pushpieces, lend a subtle vintage touch, while the large “baton” type straight-line hands, highlighted by a luminescent substance, convey a more modern aura. A prime example of clarity and readability, the dial features meticulously refined details such as applied hour-markers, counters that are finely recessed and “snailed” and an 18k gold rendering of the initial B that served for many years as the brand emblem.

His client’s needs are always top of mind when Edward is out of the shop as well. After attending a show in Las Vegas, he came back with stones that he thought might be of interest to Eleanor for a new custom work. “They were very unique and would fit right in with my collections,” Eleanor reports. “How many people would do that?” Their relationship now many years standing, Eleanor can easily remark on Edward’s character as much as she can his superb talent. “He is so thoughtful—and, his work is extraordinary.” Happily, Edward remains extremely busy and his love for what he does continues. “I love to hear what a client wants and to be able give it to them. They can describe it and we can together bring it to life.”
For over 25 years, we have been custom creating jewelry. Each piece reflects the unique personality and style preference of the person we are designing for. These two rings, meticulously hand crafted in platinum with diamonds, are our latest creations. Stop in and talk to us about creating your next family heirloom. –Edward and Faina

EMILY ARMENTA: I come from a family of artists so I was introduced to beautiful works of art at a very young age. Surrounded by artists, I have always had a lot of support to express myself through my art work. As a result, I have been designing, sketching, and working with stones ever since I was a young girl and it has always been a passion of mine. Designing jewelry has been a vehicle for me to express my creativity, my thoughts and emotions. However, I did not realize that my passion could become a reality and a career path until I began the MBA program at Rice. While taking an entrepreneurship class at Rice, I was given an assignment to create a fictitious company and write a business plan. I chose to focus my project on my passion, which is designing jewelry. I was very fortunate to have the support of the school and an amazing mentor who not only believed in me, but also gave me a chance to fulfill my dream. My studio is a source of inspiration. I am inspired by the creativity that surrounds me on a daily basis. I cannot imagine outsourcing my art to another country and missing out on the creativity that takes place every day. Spending time at the studio provides an incredible opportunity for me to invent and create something that can never be duplicated.

ince 1884, the name of Breitling stands for chronographs. A specialist in technical watches, the brand played a key role in the development of the wristworn chronograph – for which in particular it invented the two independent-pushpiece control system. Thanks to its broad range of “instruments for professionals”, Breitling has actively contributed to the boom in sports, science and industry – in short, to all the main fields of an era of speed and records that no longer counts in days, hours, minutes but in seconds and fractions of a second. In 1999, its concern for precision led it to have all its movements chronometer-certified.

just-published study in Sleep Diagnosis and Therapy Journal (2010; V5 N5, 27-29 Breus and Rubik) provides the first clinical evidence that Philip Stein watches featuring Natural Frequency Technology provide improved sleep. The randomized, double blind, placebo-controlled study, authored by renowned sleep specialist Michael J. Breus, PhD, shows that study participants who wore Philip Stein watches fell asleep faster, stayed asleep longer and felt more refreshed in the morning.“These results provide the clinical evidence to support what we have known and heard from our clients all along – that the Natural Frequency Technology found in Philip Stein watches, enhance people’s overall well-being and promote better sleep,” says Philip Stein Co-Founder and President Will Stein. “To have these results published in a scientific journal is further validation of the testimonials we hear regularly.” Subjects in the study were both males and females who were poor sleepers and reported un-refreshing sleep for at least the past three months. Each of the participants was given a device, half which contained the Natural Frequency Technology found in Philip Stein products, half which did not. In all, 96 percent of subjects tested responded positively to at least one of the Natural Frequency Technology variables:
A
64 % reported waking up more refreshed 61 % reported having more pleasant dreams 43 % reported falling asleep faster 43 % reported sleeping longer 18 % reported lying awake less at night Natural Frequency Technology is a combination of natural frequencies generated by Earth. The technology, embedded in all Philip Stein watches is delivered via a metal disk that has been infused with key frequencies in a proprietary process. When worn on the wrist, the watch exposes frequencies and information to the biofield of the person wearing it. The biofield is the master energy field that regulates the body’s functions and informs the body to relax.“This is life-changing technology – a natural approach to improved well-being that is backed up by scientific evidence,” said Stein, adding that the company continues to study new ways to deliver Natural Frequency Technology to enhance people’s quality of life.

Town Favorites! RECIPES FROM OUR FAVORITE LOCAL CHEFS
MONTEREY TIRAMISU
Literally means “pick me up” in Italian, due to the espresso, sugar, cocoa, and Kahlua.
SPEZZATINO DI MANZO CON POLENTA
Slow Braised Beef Stew from Allan Russo, Executive Chef Sette Cucina Italiana
Ingredients: Yields approximately 4 servings 2 lbs bottom round roast beef cubed ¼ cup pearl onions ½ cup shitake mushrooms sliced ½ glass dry red wine ¼ cup carrots chopped 2 tbsp tomato paste 3 tbsp extra virgin olive oil (EVOO) 2 cups water 1 bay leaf salt & pepper Procedure: Begin to heat on a high flame extra virgin olive oil in a wide pot. Once EVOO is hot, add cubed beef and allow for braising. Once beef has a seared color, add sliced shitake along with the tomato paste. Gently begin to stir all ingredients until they are incorporated equally. Begin to add dry red wine and water. Once mixture begins to simmer, reduce flame. Add pearl onions, carrots & bay leaf. Season with salt & pepper to taste. Cover and allow to slow cook for 1.5 hours or until beef softens.
Desserts from the Monterey Gourmet Recipe Collection Ingredients: Yields approximately 8 servings 4 large egg yolks 11/3 cups sugar 1¼ cups Mascarpone cheeses 2 cups well chilled heavy cream 3 tablespoons Kahlua 24 Italian ladyfingers (biscotti di Savoiardi) ½ cup brewed espresso 1½ teaspoons unsweetened cocoa powder In a bowl with an electric mixer, beat the yolks, add the sugar, a little at a time, and beat the mixture until it is thick and pale. In a small bowl with an electric mixer, beat the Mascarpone with 1 cup of heavy cream until the mixture holds stiff peaks. In a chilled small bowl with the electric mixer, beat the remaining cup of heavy cream until it just holds soft peaks. Fold the Mascarpone mixture and the whipped cream into the yolk mixture gently but thoroughly and fold in the Kahlua. Dip 10 of the ladyfingers into the espresso and arrange them in a row 1/2 inch apart in a shallow casserole dish (or platter with raised edge). Spread one third of the cream mixture over the ladyfingers, arrange the remaining 6 ladyfingers on it, and spread the remaining cream mixture on top, forming the dessert into a loaf shape with a rubber spatula. Chill the tiramisu for at least 4 hours or overnight and sift the cocoa through a fine sieve over the top before serving. Serves 8.

Polenta Ingredients: ½ cup instant polenta 1 cup of water 1 tbsp salted butter ¼ cup of cream ½ cup parmigiano cheese Polenta: Bring water to a rolling boil. Add salted butter and cream. Slowly begin to whisk polenta and reduce flame. Once polenta begins to thicken add parmigiano cheese. Polenta should remain creamed. Plate polenta in the center of dishes and add the beef stew over allowing the red wine reduction to cover polenta. Side Note: Prepare Polenta when beef stew is ready to be plated otherwise it will thicken too much.

Breguet, the innovator
Invention of hand-guilloché dials, 1786 Around 1786, Breguet created a resolutely new style by introducing dials adorned with gold or silver guilloché work. Today, this form of authentic hand craftsmanship is still one of the distinctive characteristics of a Breguet watch. A heritage proudly perpetuated in the Classique 7337BR model with its silvered gold dial adorned with five different hand-guilloché patterns. History is still being written… www.breguet.com/inventions
