Betsy Helmuth is the owner of Affordable Interior Design and a nationally celebrated interior designer with a unique ability to transform modest spaces into beautiful environments on a budget. Betsy is a dynamic personality who is passionate about her craft. She has appeared on the TODAY Show, HGTV, DIY Network, CBS, NBC, and in dozens of magazines and newspapers. She also recently penned a popular DIY design book, “BIG DESIGN, SMALL BUDGET, Create a Glamorous Home in Nine Thrifty Steps” (Skyhorse), and hosts a monthly home decorating podcast (syndicated on iTunes) by the same name. Her firm, Affordable Interior Design, has grown to serve clients in New York City, New Jersey, Westchester, Long Island, and parts of the Hudson Valley. Betsy also helps clients virtually in other parts of the country with online classes and a weekly Facebook Live chat where she dishes out design wisdom for free. Best-Ever Egg Muffins

INGREDIENTS

Cooking spray 3 slices turkey bacon 1 small yellow onion chopped 1 red bell pepper-chopped 2 c. chopped baby spinach 6 large eggs 3 tbsp. milk 1/4 tsp. paprika 1/2 tsp. garlic powder Kosher salt Freshly ground black pepper 1/2 c. shredded mozzarella

DIRECTIONS Preheat oven to 350º and grease a 12-cup muffin tin with avocado or coconut oil cooking spray or coconut oil. In a large nonstick skillet over medium heat, cook turkey bacon until crispy, 6 to 8 minutes. Drain on a paper towel-lined plate, then crumble.


Add onion and bell pepper to skillet and cook until soft, 5 minutes. Add spinach and cook until wilted, 2 minutes more.Â

In a small bowl, whisk eggs, milk, paprika, and garlic powder and season with salt and pepper. Fold in cooked vegetable mixture, turkey bacon, and mozzarella. Pour mixture into prepared muffin tin. Bake until cooked through and golden, 30 to 35 minutes. Let cool, then store in the fridge in an airtight container until ready to eat.


Muesli Crunch Whole-Grain Muffins


INGREDIENTS 1/2 c. gluten-free rolled oats 1/2 c. dried cranberries 1/4 c. whole millet 2 tbsp. flax seeds 1 1/4 c. Silvana's Kitchen Gluten-Free All-Purpose Flour


1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. ground cinnamon 1/2 c. goat milk yogurt 1/2 c. light brown sugar 2 large eggs 1/4 c. canola oil 1 tbsp. unsulfured molasses 2 tsp. pure vanilla extract Warm honey DIRECTIONS

Preheat oven to 350 degrees F and fill 12 muffin cups with paper liners. In a medium heatproof bowl, combine oats with cranberries, millet, and flax seeds. Cover with hot water and let stand until plumped, about 20 minutes. Rinse the mixture and drain well.In a large bowl, whisk flour with baking powder, baking soda, salt, and cinnamon.In a medium bowl, whisk yogurt with brown sugar, eggs, oil, molasses, and vanilla. Add wet ingredients and oat mixture to dry ingredients and stir until combined.

Spoon batter into muffin cups and bake for 25 to 30 minutes, until a toothpick inserted into the center comes out clean. Let cool for 5 minutes. Transfer muffins to a rack, brush with honey and let cool completely.Looking for more breakfast recipes? Breakfast Egg Rolls by Lena Abraham

INGREDIENTS 12 egg roll wrappers 1 tbsp. butter 8 large eggs, beaten Kosher salt Freshly ground black pepper 2 tbsp. freshly chopped chives 1 1/2 c. shredded Cheddar 6 slices bacon cooked and chopped Vegetable oil, for frying 1/4 c. ketchup1 tbsp. hot sauce (such as Cholula)


DIRECTIONS

In a medium nonstick pan, melt butter over medium-low heat. Pour egg mixture into the pan and drag the eggs with a spatula or wooden spoon to create curds. When the eggs are almost cooked to your liking, season with salt and pepper. Fold in chives and remove from heat.Assemble egg rolls: Place an egg roll wrapper on a clean surface in a diamond shape. Add approximately 2 tablespoons of cheddar, 2 to 3 tablespoons scrambled eggs, and a sprinkle of bacon into the center of egg roll wrapper. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water. In a large skillet over medium heat, pour enough oil to reach 1" up the side of skillet. Heat until oil starts to bubble when a drop of water is added. Add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate to cool slightly.In a medium bowl, whisk to combine ketchup and hot sauce. Serve egg rolls with spicy ketchup for dipping.

She also is a consultant on issue campaigns and works with advocacy groups on their political strategies.Previously an instructor at the Harry van Arsdale Jr. Center for Labor Studies at SUNY Empire State College, Amaru was recruited to co-lecture with then-Public Advocate Letitia James, the first woman of color elected to citywide office in New York City. In this position she educated students on how to be actively-engaged constituents, equipping them with a clear understanding of their power to impact government decisions and public policy.


Advocating for Greater Civic Engagement and Women in LeadershipWhether at the grassroots or national level, Amaru passionately advocates for everyday people to step into their full power and potential by pursuing various leadership and organizing roles in their communities, as well as the non-profit and public sectors. Presently she is working with local community groups on the Let New York Vote campaign, educating and mobilizing constituents to engage in various tactics aimed at bringing voting reforms to New York.Amaru is a vocal proponent of women claiming their place as political and social power brokers with the capacity to lead communities and create change. In 2017 she was tapped as a featured speaker at the historic Women’s March, where she spoke on how to influence public policy and ensure accountability of elected officials.


She was also a key founding member of the New York Organizing Committee to develop a new chapter of Emerge America, an advocacy group that recruits and trains women to run for Democratic office. She also travels across the country and serves as a national trainer with Vote Run Lead, the nation’s largest and most diverse training program for women to run for public office and win.

Elizabeth Ricci Esq.


Elizabeth Ricci has worked in the area of immigration law since 1989 and holds a "10.0 'superb'" rating by Avvo. She has been an expert witness in litigation regarding immigrant employment issues and has co-counseled with personal injury attorneys representing immigrant plaintiffs. Attorney Ricci received her Bachelor of Science in International Business from Barry University and her Juris Doctor from Nova Southeastern University where she studied immigration law under renowned immigration expert and author, Ira Kurzban and argued in Washington, D.C. for the Moot Court Honor Society. Attorney Ricci was an Adjunct Instructor in Legal Studies at Barry University where she taught immigration, among other subjects.

Ms. Ricci received the 2015 Second Judicial Circuit Florida Bar President's Pro Bono Award for outstanding contributions for the good of the public. Ms. Ricci was honored in November, 2014 by the National Association of Professional women for her "outstanding leadership, commitment within [her] profession and employment at Rambana & Ricci, PLLC. Holly: Human resources plays very integral part to the day to day operations of an organization whether a company has thousands of employees or a small business with just a few employees.



I enjoy working with people and educating them on benefits of understanding the intricacies of HR. Whether that be empowering employees and managers to read the HR manual, developing trainings on topics such as conflict resolution or workplace safety, or down to consulting others on professional development and career coaching. I believe in sharing my HR knowledge and personal experiences to help people create opportunities.

Who Rock with Success: How do you share the strategies for effective Human Resource policies? Holly: I share strategies for effective human resource policies by either creating presentations or holding a class/meeting to educate colleagues on what the policies and expectations are for the organization based on the manual. Further, I do share strategies on my social media on the importance of reading the manual and just becoming familiar with the issues that can impact you as an employee. A final strategy I use from time to time is to invite someone to a one on one to discuss the policies and clarify any polices that may be confusing or discuss new policies being implemented.


Who Rock with Success: How can employees become more informed through Human Resource policies? Holly: Employees can become more informed about understanding the expectations set forth for each policy. For example, reading the human resource policies to understand taking time off, when are performance reviews conducted, applying to internal postings, or how to report issues with another employee or manager. All these issues are outlined in human resources policies so by empowering employees to gain the knowledge this will allow them to ensure they aren’t being mistreated or how to approach situations, like taking time off from work for a personal situation. As an HR consultant the number one tip I give employers and professionals starting new jobs is to always make sure time is set aside to go over the HR policies to make sure the employee and employer are on the same page from day one about expectations and understanding of the policies. Who Rock with Success: How has this been rewarding to your career as an HR consultant?


Holly: Being a HR consultant is very rewarding because I enjoy helping professionals from all industries and various stages in their career create new opportunities whether that’s me helping them with their resume to secure a higher paying job or just recommending certain steps in their professional development they should take in their journey (I.E. getting a professional certification). I understand what it’s like to want to elevate professionally and sometimes the right recommendations can make all the difference. I enjoy getting feedback from my clients on how I’ve helped them on their personal and professional journey. Women Who Rock with Success: What are some of the rights for employees when their rights have been violated? Holly: Now, while there are federal laws that provide protections for employees, it’s important that employees check the laws in their state to see if a violation has occurred and to seek legal consultation if they don’t feel comfortable going to their company’s HR department with their issue or to seek clarification.


Its important employees review the manual for the process for filing a complaint with HR and organizations have a hotline employees can call to report issues anonymously if they don’t want HR to know it’s them. Again reviewing the HR policies should outline this process of when rights are violated and employees should become familiar with them or see HR consultation for explanations on the policies. Women Who Rock with Success: Tell us about your HR Consulting Firm? Holly: HR Connection with Holly Noon, SHRM-CP started out as ResumesByHolly where I used to draft resumes and cover letters for clients from various industries and at different professional stages in their career. People began reaching out for additional services such as LinkedIn profiles and interview prep which I then expanded to offering small to medium sized business my consultation services to provide solutions for HR issues. My business officially started in January 2019 and transformed quickly these past several months to provide more services to meet the demand for individuals and businesses. I’m about provide HR solutions for all!


Women Who Rock with Success: How can clients learn from your brand virtually? Holly: Clients can learn from my brand virtually by following my posts on my business Facebook page https://www.facebook.com/HRConnectionLLC/ .On my Facebook business page I post topics on creating an attractive resume, work/life balance as a working parent, and discuss my own professional journey on issues I face day to day all with open discussions, live videos, encouraging posts, and sharing samples of my work. Soon I plan to launch online courses to share my expertise on other HR topics. Women Who Rock with Success: Are their community workshops to impact employees of how to become an effective stakeholder (employee)? Holly: Absolutely! I always recommend employees if they can spare the time to join a professional group for networking so you can get different perspectives on how employees deal with issues and approach situations within their own organization. I believe an amazing resource that offers free resources is the SHRM website as they have free webinars and numerous articles on various HR topics that impact employees daily.


Women Who Rock with Success: What are some takeaways from your HR firm? Holly: The key takeaways from my firm that I tell all my clients is first to never be afraid to go after your goals and come up with a plan so you can prepare and be ready for that next opportunity. Secondly, educate yourself as an employee on your rights as a worker and review the HR policies at the company you work for periodically, not just the first week. Finally, professional and personal development never stops and being adaptable is an important to handling changes in your life and career much more seamlessly. Women Who Rock with Success: What would you like to leave with the readers as a consultation firm to an employee? Holly: I want the readers to be patient with the process when it comes to professional development whether that’s seeking a new job or how to attain a promotion at your current job. It’s a marathon, not a sprint so sometimes when you don’t get a job or the promotion in that moment. Take that situation as a learning opportunity and reflect on how you can grow more as an individual whether that means getting a professional certification, going back to school, or building technical skills in certain applications or soft wares.
