• 4 cups sweet potatoes, 1/2-inch cubes • 1 (15 oz.) can black beans, rinsed and drained • 1 cup uncooked quinoa • 1 cup frozen corn, thawed • 2 cups vegetable broth • 1 tsp. chili powder • 2 tsp. cumin • 1 tsp. garlic salt • 1/2 tsp. dried thyme • 1/2 cup green onions, chopped

Optional add-ons: • Avocado • Sour cream • Salsa • Side of greens • Serve with an egg cooked your favorite way • Preheat oven to 375° • Spray 9 x 13 baking dish with cooking spray • Combine all ingredients except for green onions into baking dish and bake, covered with tin foil, for 45 minutes • Remove tin foil and continue baking for additional 15-20 minutes until liquid is mostly absorbed and potatoes are tender • Remove from oven and let the dish sit for 5 minutes so that remaining liquid can be absorbed • Sprinkle with green onions • Serve and enjoy
