AMANDA’S TIPS FOR CAMP-COOKIN’ • Bring a cast iron pan with you. It’s super easy to clean and you can use it for so many things (like bacon!).

• Almost every site will have a fire ring that already has thick metal grate over it, but don’t cook directly on it — too sketchy! Pack your own grate if you want to cook directly on one. • When bringing cheese (you should definitely bring cheese), stick to the harder stuff. I like Fiore Sardo because it tastes smoky like a camp fire. • You can’t go wrong grilling burgers at camp. You also can’t go wrong with adding cheese and bacon to said burgers. Do this.
CAMPING IN STYLE WITH CHEESE
• Pre-make what you can at home before you get to the site. I love cooking strip steak over the grate, but I like to make the butter first at home. Bring a stick of butter to room temp. Add Roquefort cheese, thyme, garlic, and stir. Refrigerate and pop into a cooler. You’ve got yourself some fancy butter!
SOUPED UP BURGERS!
CAMPFIRE RECIPE: STIR-FRY PACKETS What is a stir-fry packet, you ask? It’s quite possibly the best and easiest way to make a gourmet meal over the fire. Basically, you fill single serving sizes of aluminum foil packets with delicious ingredients and put them on a grate over a fire. Poke it with a spatula to move the contents around inside to make sure it cooks evenly and — voila!

LEARN TO EAT ITALIANO WITH A TASTE OF EMILIO AND SCOTT’S RECENT TRIP TO ITALY. Every two years, an Italian food tradeshow called Cibus is held in Parma, Italy. This year, our VP of Culinary Pioneering, Emilio, and former cheesemonger/current buyer, Scott, traveled to Italy to attend Cibus 2016 and visit over 2,700 booths! After spending a few days in Parma, Emilio and Scott traveled to Busto Arsizio, just outside of Milan. There they met with cheese consolidators to work on plans to start flying in more fresh and soft-ripened cheeses directly from Italy to Di Bruno Bros. After Busto, they took a train to Spoleto, Umbria and visited with their friend Luigi Conti at Athenor, to see the production of Di Bruno Bros. Private Collection jams and honeys. Hopefully, they’ll bring back some new flavors for us all to slather on our next cheese plate!

Throughout their trip, Emilio and Scott feasted on all the deliciousness that Italy has to offer but were especially enthralled by the Aperitivo. The word aperitivo means “to open” and refers to the refreshing drink and enticing snack you enjoy before dinner to whet your appetite and get your palate excited for the next big course. Yep, the Italians have found a way to make in-betweenmeal-snacking sound suave. So throw down a hunk of Parmigiano Reggiano, a few ribbons of prosciutto, some bruschetta, artichokes, olives and good bread. Or throw together Scott’s new favorite dish, Eggplant Caponata, the night before. Pour a few fruity spritzers. Invite over friends and impress them with the cool new Italian word you just learned.
E G G P L A N T CA P O N ATA Dice one whole eggplant. Soak in cold salt water for at least an hour and then fry in a pan with olive oil. In another pan, cook down a diced onion in olive oil with a can of tomatoes, some Mahjoub capers, and Castelvetrano olives. Add a little bit of sugar and white wine vinegar. Mix in the eggplant. Add salt & pepper to taste. Refrigerate for 24 hours. Serve warm or cold with a spoonful of fresh ricotta and a crusty baguette. “It’s a sweet and sour eggplant dish. I was so inspired by it, when I got home I made it, and it’s so easy.” — Scott
