Oktoberfest Essentials
BEER-BRAISED BRATS AND ONIONS
Serves 4 / Prep 5 minutes / Cook 45 minutes
4 bratwursts (try Schaller & Weber™) 2 tablespoons butter 4 sprigs fresh thyme 1 large yellow onion, sliced ½ teaspoon kosher salt ½ teaspoon fresh cracked black pepper 12 fl uid ounces von Trapp® Oktoberfest Beer Whole grain mustard for serving (try Schaller & Weber™) 1. In a heavy-bottomed skillet, add brats, browning them over mediumhigh heat. Cook 1 to 2 minutes per side until golden brown. Remove from the skillet and set aside.
2. Add butter to the skillet and lower heat. Add thyme, onion, salt and pepper. Gently stir as onion browns and softens, about 10 minutes. 3. Add beer to skillet, scraping up any browned bits. Nestle brats into the onions and simmer on low heat until the beer has been reduced and just coats the brats, about 30 minutes.
Serve sliced with whole grain mustard as an appetizer or on a roll.
